커피 로스팅 공정에서 발생되는 향기물질의 유해성 고찰 및 노동자 건강보호 방안 (A Review on the Hazards of Flavoring Chemicals in Coffee Roasting Proces)

  • Objectives: This study was based on the occurrence of a coffee roasting process-related disorder(bronchiolitis obliterans; published by NIOSH in the US) among workers exposed to chemicals called diacetyl in a coffee processing facility. Flavorings added to coffee contain diacetyl and 2,3-pentanedione, all of which are subject to exposure in a number of food manufacturing processes, including coffee roasting, grinding, and packaging. Therefore, this study aims to review the toxicity to workers related to food processing and food additive manufacturing to prevent occupational diseases. Methods: We surveyed the related literature, domestic and international references, and the status of relevant domestic and foreign professional organizations. The present situation of workers was investigated by reviewing literature on the safety and health of workers in the coffee roasting process using domestic and foreign literature and presentations. Expert advisory opinions were reflected, and experts were consulted by participating in domestic and overseas academic conferences. Results: Most of the fragrance materials for coffee were harmful and hazardous substances according to the GHS classification, and research was carried out through a second external consultation. A literature review on the measurement of air pollutant emissions from coffee roasters and the estimation of air pollutant emissions during coffee roasting examined the characteristics of pollutants emitted during coffee roasting. Conclusions: Two chemicals identified as causing bronchiolitis obliterans in the coffee roasting process are believed to explain why the disease is difficult to treat. This information can be used effectively in the future prevention of this disease. Future studies should clearly identify the potential for toxicity of alpha-diketones and the bases of OELs in relation to the occurrence of obstructive bronchiolitis, including measurement of various organic compounds and alpha-diketones from ground coffee, as well as various coffee grinds and coffee bean varieties. In particular, it is necessary to clarify the current understanding of the dose-response relationship between alpha-diketone and lung disease in workers involved in coffee roasting.

Physical characteristics of ceramic/glass-polymer based CAD/CAM materials: Effect of finishing and polishing techniques

  • PURPOSE. The aim of this study was to compare the effect of different finishing and polishing techniques on water absorption, water solubility, and microhardness of ceramic or glass-polymer based computer-aided design and computer-aided manufacturing (CAD/CAM) materials following thermocycling. MATERIALS AND METHODS. 150 disc-shaped specimens were prepared from three different hybrid materials and divided into five subgroups according to the applied surface polishing techniques. All specimens were subjected up to #4000 grit SiC paper grinding. No additional polishing has been done to the control group (Group I). Other polishing procedures were as follows: Group II: two-stage diamond impregnated polishing discs; Group III: yellow colored rubber based silicone discs; Group IV: diamond polishing paste; and Group V: Aluminum oxide polishing discs. Subsequently, 5000-cycles of thermocycling were applied. The analyses were conducted after 24 hours, 7 days, and 30 days of water immersion. Water absorption and water solubility results were analyzed by two-way ANOVA and Tukey post-hoc tests. Besides, microhardness data were compared by Kruskal-Wallis and MannWhitney U tests (P<.05). RESULTS. Surface polishing procedures had significant effects on water absorption and solubility and surface microhardness of resin ceramics (P<.05). Group IV exhibited the lowest water absorption and the highest microhardness values (P<.05). Immersion periods had no effect on the microhardness of hybrid ceramic materials (P>.05). CONCLUSION. Surface finishing and polishing procedures might negatively affect physical properties of hybrid ceramic materials. Nevertheless, immersion periods do not affect the microhardness of the materials. Final polishing by using diamond polishing paste can be recommended for all CAD/CAM materials.

  • Because of their cleanliness, low friction, and high stiffness, aerostatic bearings are used in numerous applications. Aerostic bearings that use porous materials as means of flow restriction have higher stiffness than other types of bearings and have been successfully applied as guide bearings, which have high motion accuracy requirements. However, the performances of porous bearings exhibit strong nonlinearity and can vary considerably depending on design parameters. Therefore, accurate prediction of the performance characteristics of porous bearings is necessary or their successful application. This study presents a porous bearing design and performance analysis for a spindle used in wafer polishing. The Reynolds and Darcy flow equations are solved to calculate the pressures in the lubrication film and porous busing, respectively. To verify the validity of the proposed analytical model, the calculated pressure distribution in the designed bearing is compared with that derived from previous research. Additional parametric studies are performed to determine the optimal design parameters. Analytical results show that optimal design parameters that obtain the maximum stiffness can be derived. In addition, the results show that cross-coupled stiffness increases with rotating speed. Thus, issues related to stability should be investigated at the design stage.

Characteristics of Bio Pellets from Spent Coffee Grounds and Pinewood Charcoal Based on Composition and Grinding Method

  • One type of biomass that has promising potential for bio pellet production is spent coffee grounds (SCGs). However, previous studies have shown that SCGs in bio pellets cause a lot of smoke. Therefore, they need to be mixed with a material that has a higher calorific value to produce better quality pellets. One material that can be used is pine wood because it has a natural resin content that can increase the calorific value. The aim of this study was to examine the quality of bio pellets produced with SCGs and pine wood charcoal at different particle sizes. The charcoal was ground using either a hammer mill (HM) or a ball mill (BM). Pine wood charcoal was mixed with SCGs at ratios of SCGs to pine wood charcoal of 4:6 and 6:4 by weight, respectively, and the adhesive used a tapioca with a composition ratio 5% of the raw material. The bio pellets were produced using a manual pellet press. The quality of the bio pellets was assessed based on Indonesian National Standard (SNI) 8021-2014, and the physical observations include flame length, burning rate, and compressive strength. The average water content, ash content, and calorific value of the bio pellets were in accordance with SNI 8021-2014, but the density and ash content values were below the standard values. The BM variation of bio pellets had a higher compressive strength than the HM variation, and the 4:6 BM variation had the longest burning time compared with 4:6 HM.

유산균 발효 생두를 이용한 에스프레소 커피의 품질 특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activity of Espresso Coffee Prepared with Green Bean Fermented by Lactic Acid Bacteria)

  • 본 연구에서는 유산균으로 발효시킨 발효 생두를 이용하여 제조한 에스프레소 커피의 품질 및 항산화 효과를 분석하였다. 먼저 Lactobacillus acidophilus KCTC 3145를 이용하여 10, 20, 30%(w/v) 함량의 커피 생두를 $37^{\circ}C$에서 0, 12, 24시간 동안 발효시켰다. 그리고 발효된 커피 생두를 건조한 다음 로스팅 및 분쇄하여 얻은 커피 분말로 에스프레소 커피를 제조하여 pH, 산도, 가용성 고형분 함량, 갈색도, 색도, 항산화 활성 및 관능검사를 비교 분석하였다. 발효 중 유산균수의 변화는 발효를 위한 생두의 함량과 유산균 발효시간이 증가할수록 전체적으로 완만히 증가하는 경향을 나타내었다. 발효시간이 증가할수록 발효 생두를 이용한 에스프레소 커피의 pH 및 색도(L*, a*, b* 값)는 감소했지만, 총산도, 가용성 고형분 함량 및 갈색도는 증가하는 경향을 나타내었다. 발효 생두의 함량이 증가할수록 에스프레소 커피의 pH는 감소한 반면 총산도는 증가하였고, 색도, 가용성 고형분 함량 및 갈색도는 유사하게 나타났다. 그리고 항산화 효과에서는 발효시간 및 발효 생두의 함량이 증가할수록 총 폴리페놀 함량과 DPPH 및 ABTS 라디칼 소거능은 모두 증가하였으며, 관능특성으로 맛, 색, 향 및 전체적인 기호도에서 EFB30이 가장 높은 선호도를 나타내었다. 따라서 본 연구에서는 유산균 발효 생두를 이용하여 제조한 에스프레소 커피의 품질 및 항산화 특성을 상호 비교하고 관능적 특성을 확인함으로써 유산균 발효를 통한 에스프레소 커피의 품질 및 기능성 효과 향상 가능성에 대한 자료를 제시하였다고 생각된다.

$MoSi_2$ 금속간화합물 복합재료의 미세구조와 방전가공특성 (Microstructure and EDM Processing of $MoSi_2$ Intermetallic Composite)

  • This paper describes the machining characteristics of the $MoSi_2$ based composites by electric discharge drilling with various tubular electrodes, besides, Hardness characteristics and microstructures of $Nb/MoSi_2$ laminate composites were evaluated from the variation of fabricating conditions such as preparation temperature, applied pressure and pressure holding time. $MoSi_2$ -based composites has been developed in new materials for jet engine of supersonic-speed airplanes and gas turbine for high- temperature generator. Achieving this objective may require new hard materials with high strength and high temperature-resistance. However, With the exception of grinding, traditional machining methods are not applicable to these new materials. Electric discharge machining (EDM) is a thermal process that utilizes a spark discharge to melt a conductive material, the tool electrode being almost non-unloaded, because there is no direct contact between the tool electrode and the workpiece. By combining a nonconducting ceramics with more conducting ceramic it was possible to raise the electrical conductivity. From experimental results, it was found that the lamination from Nb sheet and $MoSi_2$ powder was an excellent strategy to improve hardness characteristics of monolithic $MoSi_2$. However, interfacial reaction products like (Nb, Mo)$SiO_2$ and $Nb_2Si_3$ formed at the interface of $Nb/MoSi_2$ and increased with fabricating temperature. $MoSi_2$ composites which a hole drilling was not possible by the conventional machining process, enhanced the capacity of ED-drilling by adding $NbSi_2$ relative to that of SiC or $ZrO_2$ reinforcements.

분쇄방법에 따른 고려홍삼분말의 품질특성 (Quality Characteristics of Korean Red Ginseng Powder with Different Milling Methods)

  • 홍삼 분쇄의 신 가공 기술로서 비충격 분쇄방식인 cell cracker의 공장 적용 가능성을 제시하고 홍삼분말의 품질고급화에 기초자료로 활용하고자, 기존의 hammer mill(충격분쇄방식)과 cell cracker에 의한 분쇄방식으로 홍삼분말을 제조한 후 물성, 표면구조적 특성 및 관능적 특성을 측정하였다. 입도분석에서 sieve shaker로 분석한 결과, 100 mesh 이상은 모두 95%수준으로 비슷한 분포를 나타냈고 120 mesh 이상은 hammer mill로 분쇄한 홍삼분말이 높았으며 그 밖의 각 mesh별 입도분포는 큰 차이를 나타내지 않았다. Laser scattering analyzer로 분석한 결과 hammer mill로 분쇄한 홍분말의 입도분포는 최소 0.77$\mu\textrm{m}$에서 최대 128.07$\mu\textrm{m}$으로, cell cracker로 분쇄한 홍삼분말 4.24~180.07$\mu\textrm{m}$보다 분포가 넓었으며, 평균 입자 크기는 cell cracker로 분쇄한 홍삼분말이 크고 표준편차는 hammer mill로 분쇄한 홍삼분말이 크게 나타났다. 비표면적은 hammer mill로 분쇄한 홍삼분말이 1.42 $m^2$/g로 cell cracker로 분쇄한 홍삼분말 0.59 $m^2$/g보다 높게 나타났고, 표면구조적 특성은 hammer mill로 분쇄한 홍삼분말은 크고 작은 입자가 불균일하게 분포하고 있으며, 개별입자의 형태는 부등형의 거칠게 연마된 돌 모양에 가깝고 표면은 작고 부드러운 솜털모양을 하고 있는 반면에, cell cracker로 분쇄한 홍삼분말은 입자크기가 상대적으로 고르게 분포하고 있으며 개별입자의 형태는 부등형의 조각난돌 모양의 형태로 관찰되었다.

Hydroxyapatite 피막 처리된 임프란트에 대한 여러가지 기계적 표면처리방법이 임프란트 표면조도 및 성상에 미치는 영향 (EFFECT OF VARIOUS MECHANICAL TREATMENTS OF HYDROXYAPATITE-COATED IMPLANT SURFACES)

  • 구강내 노출된 임프란트를 건강한 상태로 유지하기 위해서는 임프란트 매식체 표면을 처치하여 주위조직과 잘 적합할 수 있는 표면구조를 만들어 주어야 한다. 실패한 임프란트의 처리방법으로 구연산이나 air-abrasive system과 같은 여러 가지 방법이 소개 되었으나 HA 피막 처치된 임프란트와 같은 거친 표면이 구강내로 노출된 경우에는 구연산이나 air-abrasive system을 이용한 표면 처리방법을 세균독소 제거에는 효과적이나 HA 피막 처리된 매식체의 거친 표면 제거는 어렵기 때문에 계속되는 치태침착을 방지하기에는 효과적이지 못하므로 세균독소를 제거하는 한편 표면성상을 변화시키지 않고 평활한 표면을 만들기 위한 처리방법들을 알아보고자 하였다. IMZ사에서 제작한 HA 피막 처리된 disc에 high speed diamond bur, low speed diamond bur, stone bur, rubber point, jetpolisher를 처치하고 표면평활도를 알아보기 위하여 표면조도측정 및 주사전자현미경으로 표면상태를 관찰하고 표면성분 변화 유무를 알아보기 위하여 EDX를 이용하여 표면성분을 분석한 결과 다음과 같은 결과를 얻었다. 각 시편에 대한 표면조도 측정 결과는 실험 I군 $2.11{\mu}m$, 실험 II군 $4.17{\mu}m$, 실험 III군 $7.28{\mu}m$, 실험 IV군 $8.61{\mu}m$, 실험 V군 $39.44{\mu}m$의 최대높이값을 나타내므로써, I, II, III, IV, V군 순으로 표면이 평활하게 나타났다. 주사전자현미경 관찰에서는 실험 I군은 비교적 평활한 면을 보였고, 실험 II군은 HA 입자가 거의 삭제되었으나 잔존하는 일부의 HA 입자로 인하여 I군보다 약간 거친 표면을 보였다. 실험 III군과 IV군은 삭제되지 않고 잔존하는 HA 입자가 많아 거친 양상을 보였으며 실험 V군인 HA 피막 처리된 면의 경우는 깊은 홈과 돌출된 부분을 가진 매우 불규칙한 표면 구조를 보였다. 시편의 단면 관찰에서는 실험 I군은 균일한 면을 보였으며 실험 III군과 IV군에서는 삭제되지 않고 잔존하는 다량의 HA 입자로 인해 거친 표면을 보였으나 HA 피막의 두께는 상당량 감소되어 나타났다. 또한 실험 II군과 I군과 유사한 양상을 보였다. 실험 V군의 경우는 일정하지는 않지만 약 $40{\mu}m$의 두께를 보였다. EDX에 의한 표면성분 분석 결과, 삭제가 가장 우수한 실험 II군에서는 calcium과 phosphorus가 소량 나타났고, 삭제가 완전하지 않은 실험 III, IV군에서는 calcium peak와 phosphorus peak를 보였다. 모든 군에 나타난 aluminum은 제조과정 중의 혼입으로 사료된다. 모든 실험군에서 titanium, aluminum, calcium, phosphorus 이외의 다른 성분은 나타나지 않았다.

선천치와 신생치의 임상적 특성과 치료에 관한 후향적 연구 (Retrospective Study of Clinical Characteristics and Treatments in Natal and Neonatal Teeth)

  • 선천치와 신생치는 출생시 맹출했거나 조기에 맹출하는 치아로 다양한 합병증을 가지고 있으나, 많은 부모들이 이에 대한 정보부족으로 적절한 치료 없이 불편을 겪고 있다. 본 연구는 2006 - 2015년에 경희대학교 치과병원 소아치과를 내원한 환아에게서 발견되는 선천치와 신생치의 특성을 평가하고자 한다. 환아들의 성별, 부모의 주소, 임상적인 특징과 합병증 및 치료법을 조사하여 후향적 연구를 진행하였다. 환아들 가운데 69%는 선천치를, 31%는 신생치를 가졌으며 모두 하악 절치였다. 여환이 남환보다 많았고 내원 주소로는 부모의 걱정이 가장 많았으며 병원 의뢰와 리가 페데병(Riga-Fede disease) 그리고 수유시 통증이 그 뒤를 이었다. 치료방법으로는 발치가 가장 많았으며 치아 유지와 치아 다듬기도 행해졌다. 선천치와 신생치는 다양한 특성과 합병증을 가지고 있으므로 치과의사는 아이의 전반적인 건강을 위해 이러한 치아의 병리에 대해 정확히 이해하는 것이 중요하다.

초고속 용사 적용 고속 초고압 왕복동 펌프 플런저의 내구성 특성에 관한 연구 (A Study on Characteristics of Durability for Plunger of High Speed and Ultra-High Pressure Reciprocating Pump Using High Velocity Oxygen Fuel Spraying)

  • The high velocity oxygen fuel spraying (HVOF) is a kind of surface modification process technology to form the sprayed coating layer after spraying the powder to molten or semi-molten state by the ultra-high speed at the high-temperature heat source and conflicting with a substrate. It is desirable to melt completely the thermal spray powder in order to produce the coating layer with an optimal adhesion, however, because a semi-molten powder in a spray process has the low efficiency and become a factor that degrades the mechanical property by the inducement of pore-forming within the coating layer. To improve the wear resistance, corrosion resistance and heat resistance, in this study, the plungers of high-speed and ultra-high pressure reciprocating hydraulic pumps for oil and water used in ironwork are produced with $420J_2$ and the coating layers of plungers are formed by the powders of WC-Co-Cr and WC-Cr-Ni including the high hardness WC. The surface of these plungers is modified by the super-mirror face grinding machine using variable air pressure developed in this laboratory, and then the characteristics of cross-sectional microstructure, and surface roughness and hardness values between no operation and 100 days-operation are examined and made a comparison. The fine tops and bottoms on surface roughness curve of oil-hydraulic pump plunger sprayed by WC-Cr-Ni are molded more and higher than those of water-hydraulic pump sprayed by WC-Co-Cr because the plunger diameter of oil-hydraulic pump is 0.4 times smaller than that of water-hydraulic pump and the pressure of oil-hydraulic pump exerted on the plunger is operated with the 70 bars higher than that of water-hydraulic pump. As a result, it is found that the values of centerline average surface roughness and maximum height for oil-hydraulic pump plunger are bigger than those of water-hydraulic pump plunger.
