쌀가루 입자크기와 녹차첨가량을 달리한 녹차다식 개발과 품질특성연구 (Quality Characteristics and of Green Tea Dasik Processing with Varied Levels of Rice Grain Particle Size and Green Tea Powder)

  • Quality characteristics of dasik were studied with varied the levels of rice grain particle size and green tea powder and compared them with commercially sold dasik. Among the samples with the same number of grinding times, the sample groups with the higher amount of green tea showed significantly the less mosture content(p<0.05). Hardness was higher in the samples containing higher amount of green tea among the ones with the same grain size (p<0.05). The M13G0.5 was evaluated to have the highest savory aroma with significance (p<0.05), and C1 to have the highest sweetness by sensory analysis. The developed dasik samples with lower rice grain particle size had significantly lower adhesiveness, chewiness, gumminess, and cohesiveness compared to those of commercial sample groups. In sensory tests, the compared groups showed significantly the higher savory aroma and flavor and very lower hardness when compared to those of commercial sample groups. With the results above, dasik with with varied the levels of rice grain particle size and green tea powder were developed with improved qualities compared to those of commercially sold dasik.

자운영 및 보리 재배 혼입처리에 따른 벼의 생육과 수량 (Paddy Rice Growth Yield as Affedted by Incorporation of Green Barley and Chinese Milkvetch)

  • 본 연구는 벼 재배 전에 녹비작물로서 자운영과 풋베기 보리를 재배한 뒤 혼입한 조건에서 벼의 관행 재배방법을 실시하면서 완효성 비료 LCU, 수도용 복합비료 및 질소 감비 시용에 따른 녹비작물 혼입처리 효과를 검토하고자 수행하였다. 벼 이앙 전 녹비작물 재배로 생산된 지상부 신선중량은 풋베기 보리가 $668kg\;10a^{-1}$. 자운영이 $3,492kg\;10a^{-1}$로서 질소 함량으로는 각각 3.9, $17.8kg\;10a^{-1}$이 논에 투입된 것으로 환산되었다. 녹비작물 재배 혼입처리로 인하여 유수형성기와 출수기 벼의 초장과 분얼수가 증가하였으며 수량구성요소 중 수당입수의 증강에는 영향하지 않았으나 화학비료 처리량이 많아질수록 입수가 증가하였다. 또한 등숙율은 녹비작물 혼입처리와 함께 화학비료 처리량이 많을수록 감소하는 경향을 보였으나 자운영 재배 혼입조건의 질소 감비처리에서는 수량 구성요소인 수수와 입수 확보가 가능하였다. 정조수량은 녹비작물 무재배 조건의 표준시비구의 수량 $494kg\;10a^{-1}$를 수량지수 100으로 환산하였을 때 녹비작물 무재배구의 LCU와 복합비료 추천 시비량구의 수량이 표준시비구와 비슷하였으며, 자운영 재배 혼입조건에서는 무비료구를 제외한 모든 처리에서 1-5% 이상의 수량이 증가하였고 수비질소 30% 감량 처리에서도 표준시비구의 수량을 확보할 수 있었다. 벼 생육기간중 토양내 $NH_4-N$ 함량은 녹비작물 무재배 조건에 비해 재배 조건에서 높았다. 또한 녹비작물 무재배 조건의 $NH_4-N$ 함량은 8월 5일 조사 시부터 급격히 감소하여 수확기에는 $2.7-5.7mg\;kg^{-1}$까지 감소하였으나 녹비작물 재배 조건에서는 완만한 감소로서 풋베기 보리와 자운영 재배 혼입조건에서는 10월에도 각각 4.8-10.4, $5.5-9.9mg\;kg^{-1}$의 범위로 유지되었다. 수확기의 벼 경엽과 현미 중 질소함량 및 흡수량은 비료처리 수준과 함께 증가하였고, 녹비작물 무재배 조건보다 녹비작물 재배 혼입조건에서 식물체의 질소 함량 및 흡수량이 높은 것으로 나타났다. 수확 후 공시토양의 관입 저항경도는 녹비작물 무재배 조건이 자운영이나 풋베기 보리를 재배하여 혼입시킨 처리에 비해 토심 10 cm와 15 cm 깊이에서 각각 7.9 및 $10.5kgf\;cm^{-2}$로서 저항경도가 높은 것으로 나타났다.

Establishment of suitable rice cultivar in relation to improvement soil physical and chemical properties on paddy field

  • Rice has important role as a primary food resource in especially the Asia, Korea, China, India, Indonesia and Japan. After development and increasingly using artificial chemical fertilizer, rice is getting high quality and quantity to satisfy ever-increasing people. On the other hand, the earth environment is more polluted each day. Nowadays consumers are looking for the organic crops or foods that were grown with eco-friendly method and in pure farmland. With the immergence of this trend, it is time to development environmentally-friendly agriculture. One of the methods is growing green manure crops in winter or spring on the fields. For this reasons, growing rye and Italian ryegrass are useful to use green manure to enhance rice production without chemical fertilizers and make the property of the soil eco-friendly. To know how improve the quality and quantity of rice with green manures, rye and Italian ryegrass, first the characteristics of green manure corps were measured. Dry matter yields of the rye and Italian ryegrass were 2.21 and $1.81t\;Ha^{-1}$. And the percentages of the dry matter were 28 and 32%. And, analyzed mineral components in rye and Italian ryegrass were nitrogen, organic matter, $P_2O_5$, CaO, $C_2O$ and MgO. Specially, the percentages of the organic matter and the CaO between rye and Italian ryegrass have difference appreciably. the height of the rice on the Italian ryegrass-fertilized field was the highest among the variant fields. The height of the rice on the non-fertilized field was the lowest. Yield of the Italian ryegrass-, rye- and non-fertilized rice are 805.2, 639.9 and $415.3kg\;10a^{-1}$. At the result, Italian ryegrass is the most effective green manure among the 3 treated-fertilized.

유색미 화학성분의 품종간 차이 (Varietal Difference of Chemical Composition in Pigmented Rice Varieties)

  • 유색미의 이화학적 특성을 구명하고자 현미 색깔이 서로 다른 품종을 재배하여 색도, 일반성분, 지방산, 무기질, 비타민, 식이섬유 등 주요 화학성분을 비교 분석하였다. 그 결과 현미의 색도 L값은 흰색 > 녹색 > 적갈색 > 흑자색의 순으로 낮았고, a값은 적갈색 > 흑자색 > 흰색 > 녹색의 순이었다. 단백질함량은 $7.01{\sim}10.74%$의 범위를 나타내어 현미색에 따른 차이가 컸고 그 중 흑자색인 C3GHi계통이 가장 높았다. 지방함량은 $2.6{\sim}3.3%$의 범위로 큰 차이가 없었다. 비타민 $B_1,\;B_2$ 함량과 식이섬유함량은 흰색에 비하여 녹색에서 현저하게 높은 값을 나타내었다. 지방산조성을 분석한 결과 흰색은 올레산과 레놀레산의 지방산 조성비율이 비슷하였으나 흑자색은 올레산보다는 리놀레산의 비율이 높았고, 적갈색은 반대로 리놀레산 보다 올레산의 조성비율이 더 높게 나타났다. Fe, Zn, Mn을 제외한 대부분의 무기질 함량은 유색미가 흰색 보다 높은 값을 보였고 그 중에서도 녹색이 가장 높았다.

Algorithm for Discrimination of Brown Rice Kernels Using Machine Vision

  • An ultimate purpose of this study is to develop an automatic brown rice quality inspection system using image processing technique. In this study emphasis was put on developing an algorithm for discriminating the brown rice kernels depending on their external quality with a color image processing system equipped with an adaptor for magnifying the input image and optical fiber for oblique illumination. Primarily , geometrical and optical features of sample images were analyzed with unhulled paddy and various brown rice kernel samples such as sound, cracked, green-transparent , green-opaque, colored, white-opaque and brokens. Secondary, an algorithm for discrimination of the rice kernels in static state was developed on the basis of the geometrical and optical parameters screened by a statistical analysis(STEPWISE and DISCRIM Procedure, SAS ver.6). Brown rice samples could be discriminated by the algorithm developed in this study with an accuracy of 90% to 96% for the sound , cracked, colored, broken and unhulled , about 81% for the green-transparent and the white-opaque and about 75% for the green-opaque, respectively. A total computing time required for classification was about 100 seconds/1000 kernels with the PC 80486-DX2, 66MHz.

현미녹차인절미의 녹차 첨가량에 따른 Texture 특성 (Sensory and Mechanical characteristics of Heunmi-nokcha-injulmi supplemented by Green tea powder)

  • The purpose of this study was to investigate effect of the amounts of unpolished glutinous rice flour with green tea powder difference of adding amount on the sensory and objective characteristics of Heunmi-nokcha-injulmi which is KOREAN TRADITIONAL RICE CAKE supplemented with green tea. The results were as follow : According to sensory evaluation of Heunmi-injulmi, the score of the color, flavor, chewiness, and overall of adding green tea were higher than those of no-adding green tea, especially the best acceptance was shown in adding 2% green tea. The more the amount of green tea powder was increased, the more the hardness and gumminess of Heumni-injulme was increased in the textural profiles, whereas the cohesiveness and elasicity of those was decreased. The moisture content of Heunmi-injulme adding green tea powder was ranged to 42-45%, and it was increased as the amount of green tea powder be increased. The more the amount of adding green tea powder was increased, the more yellow and green color was changed darker and stronger. Refer to this study with the advisable recipe for as follow : Heunmi-nokcha-injulmi adding 294g(98%) unpolished glutinous rice flour and 6g(2%) green tea powder.

수도중심(水稻中心) 작부별(作付別) 토양환경(土壤環境) 변화(變化)와 작물수량(作物收量) (Changes of Soil Physico-Chemical Properties and Crop Yieds at the Different Rice-Based Cropping Systems)

  • 답이작(畓裏作) 형태별(形態別)로 토양환경(土壤環境) 및 후작(後作)벼의 생산성(生産性) 변화(變化)를 구명(究明)하기 위하여 하성충적지인 미사질양토(微砂質壤土)에서 수도단작(水稻單作) 관행(慣行)으로 풋마늘-수도(水稻), 청예호밀-수도(水稻) 및 알타리무우-수도(水稻) 작부(作付)를 대상(對象)으로 포장시험(圃場試驗)하였다. 1. 토양(土壤)의 물리성(物理性)은 전작물(前作物) 수확후(收穫後) 작물별(作物別) 차이(差異)가 있었으며 이들의 잔류효과는 후작(後作)벼 이앙후(移秧後) 60~70일(日) 정도(程度)까지 유지(維持)되었다. 2. 전작물별(前作物別) 통기성(通氣性)은 청예호일, 풋마늘, 알타리무우 순(順)으로 컸으며 후작(後作)벼 재배시(裁培時) 감수심(減水深) 변화(變化)도 이와 유사(類似)한 경향(傾向)이었다. 3. 표토(表土)의 화학적(化學的)은 작부별(作付別) 시비량(施肥量)에 따라 달라졌고 전작물별(前作物別) 시비량(施肥量) 차이(差異)는 후작(後作)벼 수확기(收穫期)까지도 영향(影響)을 미쳤다. 연간(年間) 3요소(要素) 시비량(施肥量)과 흡수량비(吸收量比)로 볼때 청예호밀-수도(水稻), 알타리무우-수도(水稻), 수도단작(水稻單作), 풋마늘-수도(水稻) 작부(作付) 순(順)으로 효율적(效率的)이었으며 이를 감안(勘案) 후작(後作)벼의 시비량(施肥量) 조절(調節)이 요망(要望)되었다. 4. 후작(後作)벼 뿌리분포(分布)는 청예호밀 재배지(栽培地) 심토(深士)까지 고루 분포(分布)되었으며 표토(表土)에 양분잔존량(養分殘存量)이 많은 풋마늘, 알타리무우 후작(後作)벼 뿌리는 표토(表土)의 분포률율(分布率)이 높은 경향(傾向)이었다. 5. 전작물별(前作物別) 후작(後作)벼 수량(收量)은 풋마늘, 알타리무우, 수도단작(水稻單作), 청예호밀 순(順)이었다.

유기 반추동물 전용 수입산 유기사료 및 국내산 유기 부산물의 사료적 가치 평가 (Nutritional Evaluation of Imported Organic Feeds and Locally Produced Agricultural By-products for Organic Ruminant Farming)

  • This study was conducted to evaluate the nutritional value of locally produced organic agricultural by-products to substitute imported organic feeds for organic ruminant farming. Imported organic feeds (corn grain, soybean meal, soybean seed, oat grain, barley grain, wheat grain, buckwheat, sunflower seed meal) and byproducts (rice bran, grape seed meal, rice straw, soybean hull, soybean curd, rice hull, green kernel rice, and crushed rice grain) were analyzed for chemical composition and NDF, ADF, mineral, and amino acid contents and anti-nutritional factors. Dry matter, NDF and ADF contents in organic feeds were higher than those in conventional feeds. Especially, the 9.65% fat content of organic soybean meal was 6 times higher than the 1.95% fat content of conventional soybean meal. Fat contents of rice bran, grape seed meal, green kernel rice, and crushed rice grain were 25.66, 6.09, 3.57 and 1.59%, respectively. Protein contents of soybean hull and soybean curd were 14.68 and 19.87%, respectively, which are highest among organic by-products. Levels of aflatoxin in all feeds were below the safety level. Therefore, organic rice bran, green kernel rice and crushed rice as energy source, and soybean hull and soybean curd as protein source could partial replace imported feeds for organic ruminant farming.

녹비작물 무 환원-벼 작부체계에서 질소와 인산수지 평가 (Evaluation of Nitrogen and Phosphorus Balance in Green Manure-Rice Cropping Systems without Incorporation of Green Manure Crops)

  • 본 연구는 녹비작물-벼 재배 작부체계에서 볏짚과 녹비작물을 전량 회수하여 사료작물로 활용시 농경지 비옥도 관리를 위한 양분수지를 평가하였다. 녹비보리와 헤어리베치 혼파비율에 따른 녹비작물 생산량은 B75H25에서 가장 높게 나타났다. B75H25 처리구의 벼 수량은 NPK 처리구 대비 90%를 보였다. 녹비작물과 볏짚을 전량 회수시 NPK, B100, B75H25, B50H50, B25H75, H100 처리구의 질소 수지는 각각 2.0, -80.8, -104.0, -93.5, -82.9, 76.2 kg N/ha 이었다. 그리고 질소 수지가 가장 낮은 B75H25 처리구의 인산수지는 -50.3 kg P/ha로 가장 낮았다. 따라서 녹비작물-벼 재배 작부체계에서 녹비작물과 볏짚을 전량 사료로 활용시 농경지 비옥도 유지를 위해서 각각 약 90 kg N /ha, 50 kg P/ha의 질소와 인산 시비가 필요한 것으로 나타났다. 그리고 금후 녹비작물을 사료로 활용하고자 할 경우 화학비료 시용량과 적정 녹비작물의 회수량에 관한 연구가 필요한 것으로 판단된다.

Variation of γ-Oryzanol by Incorporation of Green Manure Crops in Korean Rice Cultivars

  • The ${\gamma}$-oryzanol, ferulic acid esters, which are well-known for their function on cholesterol lowering and prevention of inflammation, diabetes and cancer, are found in the seeds of cereal crops such as rice, corn, wheat and rye. Among them, rice has been reported to contain the highest ferulic acid esters. Since rice cultivation with green manure as a N source is an environmental friendly agricultural practice, it is necessary to identify and quantify as well as evaluate the variations in these compounds in rice samples as affected by different green manure conditions. A total of ten components of ${\gamma}$-oryzanol were isolated and cycloartenyl ferulate, 24-methylenecycloartanyl ferulate, campesteryl ferulate and sitosteryl ferulate were identified as the major components in Korean rice cultivars, 'Unkwang' and 'Hopum'. Comparing the ${\gamma}$-oryzanol contents of these varieties, 'Unkwang' showed clearly similar pattern with conventional type. With the PLS-DA (partial least squares of discriminant analysis) using SIMCA 11.0 ver., the specific pattern and cluster of ${\gamma}$-oryzanol scores with green manure conditions were confirmed, and thus distinguishing green manure effects were possible.
