The Effect on the Sensory and Mechanical Characteristics of Functional Muffin using Glycyrrhizae radix Extract (감초추출물 첨가량을 달리하여 제조한 기능성 머핀의 관능적ㆍ기계적 특성)

  • The sensory and mechanical characteristics of muffin using different levels (0, 20, 40, 60, 80 and 100%) of Glycyrrhiza radix extract were investigated. The lightness of crust and crumb of the muffins were significantly (p〈0.05) decreased, but the redness was increased with increasing content of Glycyrrhizae radix extract. The mechanical texture parameters, such as hardness, gumminess and chewiness, were significantly (p〈0.05) low in the groups with 40∼80% Glycyrrhizae radix extract. With regard to the sensory evaluation, a brown crust, yellow crumbs, surface roughness, Glycyrrhizae radix flavor, roasted nutty taste, sweetness, bitterness and springiness of the muffins were significantly increases with increasing content of Glycyrrhizae radix extract. However, the hardness was significantly (p〈0.05) low without the addition of Giycyrrhizae radix extract, the overall acceptability was excellent in the group with the addition of 60% Glycyrrhizae radix extract. As a result, with the addition of Glycyrrhizae radix extract to the muffin, the sensory and mechanical properties were improved therefore, Glycyrrhizae radix extract could be prepared as a useful functional additive to sugar free muffins.

  • The effects of Glycyrrhizae Radix (GR) on the metabolism of acetaminophen (AA) were examined in male Sprague-Dawley rats. The methanol extract of GR (500 mg/kg) was administered orally to rats for 6 days. AA and its metabolites excreted in bile, urine and blood within 120 min after dosing of AA (150 mg/kg, i.v.) were assayed by HPLC. Treatment of rats with the methanol extract of GR significantly increased the cumulative biliary excretion of AA-glucuronide (156% of the control) and decreased that of AA-sulfate (63% of the control). The cumulative urinary excretion of AA-glucuronide was also significantly increased to 132% of the control. GR treatment significantly increased total (biliary plus urinary) excretion of AA-glucuronide (172% of the control) without influencing thioether and sulfate conjugates of AA. The results clearly show that GR enhances UDP-glucuronosyl transferase-mediated detoxication of AA, but may not influence sulfotrans-ferase-mediated and cytochrome P-450-mediated metabolites formation.

  • A survey of total aflatoxin levels was conducted on 145 samples(carthamiflos, thujae semen, giycyrrhizae radix et rhizoma) collected in Yakyeang markets in Seoul. Aflatoxin levels were quantified by the immunoaffinity column clean-up method followed by performance liguid chromatography(HPLC)-fluorescence detector(FLD). Aflatoxins were found in 10(6.9%)samples including 5 Arecae semen, 4 Thujae semen, 1 Zizyphi semen with a range of $0.45{\sim}79.15\;{\mu}g/kg$. Generally These results show that the contamination level of aflatoxins in Herb Medicines consumed in Korea is high compared with the standard in Korea Herb Medicine Code($10\;{\mu}g/kg$ as aflatoxin B1).
