Recipe Standardization of Native Local Foods in Gijang Region(The First Report) - Myeolchijjigae, Galchijjigae, Maejipjjim - (기장 향토음식의 조리표준화(제1보) - 멸치찌개, 갈치찌개, 매집찜 -)

  • The purpose of this study was to contribute to merchandising of native local foods. This study was designed to standardize the recipes and to analyze the nutrients of native local foods in Gijang region such as 'Myeolchijjigae', 'Galchijjigae' and 'Maejipjjim'. The test recipe for each food was prepared according to the information obtained from the personal interview of Gijang natives and then supplied for the sensory evaluation. After that, CAN Pro 2.0 was used for the nutritional evaluation. The results are as follows : Myeolchijjigae was preferred when radishes and traditional soybean paste were added. Galchijjigae was more liked when young pumpkins, mixed soy sauce and soybean paste were added. Maejipjjim was preferred with Aeji(Codium adhaerens), Warty sea squirt(Styela clava), soybean paste and powdered perilla seed(Perilla frutescens var. japonica) added. The analysis of nutrient composition revealed that in general energy content was low whereas protein content was as high as recommended requirement in Myeolchijjigae and Maejipjjim. Calcium and phosphorus were high in Myeol-chijjigae, vitamin A in Galchijjigae, and vitamin A, B_6$, folic acid, phosphorus and iron in Maejipjjim.

  • This study was designed to standardize the recipes of native local foods in Gijang region such as 'Miyeokseolchi', 'Molseolchi', 'Gijangumuk' and 'Seokbakji' and analyze their nutrients. The test recipe for each food was prepared according to the information obtained from the personal interview of Gijang natives and then applied to sensory evaluation. The results are as follows: Both Miyeokseolchi and Molseolchi were preferred with soybean sprouts added but Miyeokseolchi with fermented red pepper paste added. Gijangumuk was preferred with dissolved ceylon moss added, not filtered. Seokbakji was preferred with salt-fermented gizzard shad added. Nutrient analysis was performed according to the established standard recipe. In general, it appeared that energy content was low and amino acid contents such as glutamate, aspartic acid, leuicine and arginine were high. Major fatty acids in Miyeokseolchi and Molseolchi were a linoleic acid and Seokbakji has a palmitic acid and EPA.

  • By analyzing the sea surface temperature (SST), phytoplankton and NOAA/AVHRR satellite data of Gijang, located at the eastern coast of the korean peninsula during the period of 2001 to 2003, we have analyzed the daily variation in the upwelling cold water, phytoplankton, and chlorophyll a. The SST of Gijang coast appealed rapid change due to the temporal and spatial variation of the upwelling cold water. This in turn led to an increase in the number of phytoplanktons and other varieties of organisms inhabiting in the Gijang coastal region.

Analysis on the Effect of Meteorological Factors related to Difference of Ozone Concentration at the Neighboring Areas in Gijang Busan (인접지역간 오존 농도 차이에 대한 기상요소의 영향분석(부산광역시 기장군을 대상으로))

  • Ozone is the secondary photochemical pollutant formed from ozone precursor such as nitrogen dioxide and non-methane volatile organic compounds(VOCs). The ambient concentration of ozone depends on several factors: sunshine intensity, atmospheric convection, the height of the thermal inversion layer, concentrations of nitrogen oxides and VOCs. Busan is located in the southeast coastal area of Korea so the ozone concentration of Busan is mainly affected from the meteorological variables related to the sea such as sea breeze. In this study the ozone concentrations of Busan in 2008~2010 were used to analyse the cause of the regional ozone difference in eastern area of Busan. The average ozone concentration of Youngsuri was highest in Busan however the average ozone concentration of Gijang was equal to the average ozone concentration of Busan in 2008~2010. The two sites are located in eastern area of Busan but the distance of two sites is only 9km. To find the reason for the difference of ozone concentration between Youngsuri and Gijang, the meteorological variables in two sites were analyzed. For the analysis of meteorological variables the atmospheric numerical model WRF(Weather Research and Forecasting) was used at the day of the maximum and minimum difference in the ozone concentration at the two sites. As a result of analysis, when the boundary layer height was lower and the sea breeze was weaker in Youngsuri, the ozone concentration of Youngsuri was high. Furthermore when the sea breeze blew from the south in the eastern area of Busan, the sea breeze at Youngsuri turned into the southeast and the intensity of sea breeze was weaker because of the mountain in the southern region of Youngsuri. In that case, the difference of ozone concentration between Youngsuri and Gijang was considerable.

Molecular Identification of a Sea Anemone (Cnidaria: Anthozoa: Actiniaria) Obtained in Gijang, Busan (부산 기장에서 채집된 말미잘의 분자생물학적 방법을 이용한 동정)

  • In this study, we tried to identify a sea anemone collected from the coast of Gijang, Busan. The anemone was morphologically similar to species belonging to the genus Anthopleura, but its morphological characteristics did not allow for confirmed identification to species level. Multiple genes from mitochondrial cytochrome oxidase III, 12S and 16S rRNA, and nuclear 18S and 28S rRNA, were amplified for multilocus sequence typing (MLST) analysis using genomic DNA extracted from the sampled anemone and a different primer set. Based on the MLST analysis, the anemone obtained in this study was identified as Anthopleura artemisia. Also, the sequence of internal transcribed spacer-2 was most closely related to A. artemisia, indicating that this single region might be useful for anemone identification. This study shows significance of molecular identification for sea anemones, and will be helpful in studies of sea anemone identification using genotyping-by-sequencing.

New record of the family Porcellidiidae Boeck, 1865 (Harpacticoida, Copepoda) in Korea

  • Kushia zosteraphila Harris V.A. & Iwasaki, 1996 is newly collected and described from macroalgae in the intertidal region of Gijang-gun, along the southeastern coastal region of Korea. Kushia zosteraphila can be distinguished from congeners by following morphological characteristics: the length of the first dorsal seta similar with the second dorsal seta of female P5, the length to width ratio of the female caudal ramus, and the presence of a conspicuous comb on the accessory lobe of the male antennule. Although there are some minor discrepancies, the main diagnostic characteristics of the specimen from the study area are well-matched with the original description. We herein provide detailed morphological descriptions and illustrations of this species. According to a survey of the location of the reported porcellidiid species in Korea, this specimen is the second record in Korean waters of the genus Kushia. A key to species of the family Porcellidiidae in Korea is provided. A partial sequence of the mitochondrial COI gene was obtained and provided as a DNA barcode for this species.

Detection of Cold Water Mass along the East Coast of Korea Using Satellite Sea Surface Temperature Products (인공위성 해수면온도 자료를 이용한 동해 연안 냉수대 탐지 알고리즘 개발)

  • This study proposes the detection algorithm for the cold water mass (CWM) along the eastern coast of the Korean Peninsula using sea surface temperature (SST) data provided by the Korea Institute of Ocean Science and Technology (KIOST). Considering the occurrence and distribution of the CWM, the eastern coast of the Korean Peninsula is classified into 3 regions("Goseong-Uljin", "Samcheok-Guryongpo", "Pohang-Gijang"), and the K-means clustering is first applied to SST field of each region. Three groups, K-means clusters are used to determine CWM through applying a double threshold filter predetermined using the standard deviation and the difference of average SST for the 3 groups. The estimated sea area is judged by the CWM if the standard deviation in the sea area is 0.6℃ or higher and the average water temperature difference is 2℃ or higher. As a result of the CWM detection in 2022, the number of CWM occurrences in "Pohang-Gijang" was the most frequent on 77 days and performance indicators of the confusion matrix were calculated for quantitative evaluation. The accuracy of the three regions was 0.83 or higher, and the F1 score recorded a maximum of 0.95 in "Pohang-Gijang". The detection algorithm proposed in this study has been applied to the KIOST SST system providing a CWM map by email.

Characteristics of Marine Algal Communities in the Spring at Gijang-gun, Busan (부산시 기장군 연안의 춘계 해조 군집 특성)

  • Quantitative and qualitative surveys were conducted during scuba diving activity between May 2017 and June 2017 in order to analyze spring marine algal community structure at Gijang-gun, Busan. A total of 121 species including 13 (10.7 %) Chlorophyta, 18 (14.9 %) Phaeophyta, and 90 (74.4 %) Rhodophyta were identified. The species count in the subtidal zone (110 species) was twice as high as in the intertidal zone (56 species). In terms of regions, 88,76, and 75 species were found in Mundong, Gongsu, and Daebyeon, respectively. Mean biomass for the whole study area was 1,501.5 g·m-2, higher for the subtidal zone (1,869.4 g·m-2) than for the intertidal zone (1,133.5 g·m-2). Mean biomass by region values were 2,234.0 g·m-2, 1,228.1 g·m-2, and 1,044.4 g·m-2 for Mundong, Gongsu, and Daebyeon, respectively. Ulva australis, Sargassum thunbergii, and Corallina pilulifera had high biomass in the intertidal zone, while Sargassum macrocarpum, Undaria pinnatifida, and Phycodrys fimbriata had high biomass in the subtidal zone. The composition ratio of marine algal functional forms suggests that the entire study area had 'Low' status, and all sites fell within 'Low' to 'Moderate' status. Results indicate that opportunistic species are widely distributed throughout the Gijang-gun coast, hence potential effects of disturbance and environmental pollution should be considered. Seaweed farming in particular - a major activity along the Gijang-gun coast -, together with effects of other anthropogenic activities such as national fishing port development and the coastal improvement project, could have long-term effects on marine algal communities. Therefore, long-term monitoring and management plans for marine algal communities will be required.

Recipe Standardization and Nutrient Analysis of Native Local Foods in Gyeongsangnamdo Region (경상남도 일부지역 향토음식의 조리표준화 및 영양분석)

  • This study was designed to standardize the recipes and to analyze the nutrients of native local foods of Gyeongsangnamdo region, such as 'euneo-bab', 'aeji-jjim' and 'gijang-eomuk.' The test recipes for each food were prepared according to the information obtained from personal interviews and then supplied to sensory evaluation. All the characteristics of each food were evaluated as 'moderate'. The results of the nutrients analysis of the native local foods using CAN Program 2.0 were as follows: protein and iron were high in 'euneobab', iron and folic acid were high in 'aeji-jjim', and zinc, vitamin A, B$_{6}$, and folic acid were high in 'gijang-eomuk', while all three native local foods were low in calories. In case of amino acid composition, all three native local foods were high in glutamic acid, aspartic acid and arginine content. 'Gij ang-eomuk' was higher in fatty acid contents than the other foods, especially, high in linolenic acid and linoleic acid.

A Study on the Promotion Plan and Effect Factors of Riding a Bicycle According to Characteristics of the Region (지역특성에 따른 자전거이용 활성화 접근방안과 영향요인에 관한 연구)

  • Recently, Interest in the riding of bicycles increased, but existing researches on the effect of bicycle facilities and the supply analysis and evaluation bike analysis of the importance of the item is most fulfilling. Those do not reflect characteristics of the region and the current satisfaction on the riding of bicycles. Therefore, this research will classify Gu Dong of Busan into good region, possible region and difficult region on the riding of bicycles to reflect characteristics of bicycles with the non-power and characteristics of riders with the main purpose of the exercise. Maintenance of bicycles classified according to the region will be decided to the Line-to-Line maintenance as to connect the main point of regions and to the Point-to-Point as to link the main point within region. Then, step-by-step bicycles activation of Busan differentiated by region offers. Also, Survey on Gangseo-Gu, Sasang-Gu, Gijang-Gun with good bicycle conditions and Busan-Jin-Gu with the best maintenance effect will be about the bicycle. The structure model of consciousness-based on the use of bicycles will be made by using Survey results and considering the region characteristics. This structure model will show a correlation of the current satisfaction, the bicycle-related facilities maintenance policy needs, region characteristics and the next intends to riding the bicycle.
