근적외선 투과 분광분석법을 이용한 가향액 중 가향제 분석 (Rapid Near Infrared Transmittance Analysis of Ingredients on the Casing Materials)

  • It is very important to add uniformly casing materials on tobacco for taste and flavor. However, analysis of casing materials was spent much time, effort and money. The object of this study was the development of a rapid method for the determination of glycerine, propylene glycol(PG), sucrose, glucose, fructose and water in the casing materials using the NIR transmittance method. Hundreds of calibration samples, with extended ranges (50%, 75%, 100%, 125%, and 150% of standard addition) in each constituent, were prepared in the casing materials at the various temperatures $(25^{\circ}C\;and\;30^{\circ}C)$. Calibration equation was developed by modified partial least square (MPLS) method using second derivative. The standard error of calibration and $R^2$ between added value and NIR estimated value results were $0.007{\sim}0.034\;and\;0.996{\sim}1.000$ for the casing sample set, respectively. The standard error of prediction and R2 between added value and NIR estimated value results were $0.010{\sim}0.034\;and\;0.997{\sim}1.000$ for the casing sample set, respectively. The analysis result was not different significantly between the NIR and added value. These results show that the NIR measurement system is an effective tool to ensure quality on the casing materials.

에탄올 혼합비에 따른 3중 충돌형 인젝터의 분무특성 (Effects of Ethanol Mixing Ratio on Spray Characteristics of Triplet Impinging Injector)

  • Spray characteristics of a unlike triplet injector were investigated experimentally. Spray images and SMD of droplet were measured to evaluate the spray characteristics injected by liquid/gas combinations. G-L-G(Gas-Liquid-Gas), L-G-L(Liquid-Gas-Liquid) type of injector were used by changing the gas and liquid feed lines. The SMD graph shows that the droplet sizes decrease in the out of radial direction at a fixed gas Reynolds number. The SMD value of decreasing tendency shows that the more ethyl alcohol ratio increase, the more SMD value decrease.

냉동 자연 송이버섯의 피클 조리법 표준화를 위한 연구 (A Study on the Characteristics of Pine-tree Mushroom(Tricholoma matsutake Sing.) Pickle for the Standard Recipe)

  • This study investigated the rheological and sensory characteristics of pickle with frozen pine mushroom. P3(Developed pickle seasoning) was the best by preference among three kinds of pine mushroom pickle seasoning. For flavor and functionality, pine mushroom pickle was processed by using three kinds of method(P3-1: P3+cinnamon 10 g, P3-2: P3+licorice 10 g and P3-3: P3+licorice 5 g+cinnamon 5 g). As a result, the product from P3-3(P3+licorice 5 g+cinnamon 5 g) was the best preferred pine mushroom pickle. The pH value of P3-3 was 2.15, 42.9 degrees Brix, and its color value was L(54.65), a(-1.61), b(17.87). Its texture level was higher than that of other products, but it would be lowered on storage. Until the 28th day of storage, microorganisms in pine mushroom pickle seasoning were detected less than 30 CFU/mL.

도축 사슴의 체조직내 카드뮴 함량에 관한 조사 연구 (Cadmium contents in tissues of slaughtered deer in Korea)

  • In order to clarify the cadmium(Cd) contents of normal deer, tissue samples including kidney, liver, muscle, spleen, heart, lung, rumen, abomasum, intestine, skin and bone were collected from 18 deer which were slaughtered in Korea. All samples were burned to ashes and analyzed for Cd contents by atomic absorption spectrophotometric method. The mean Cd contents in \mu\textrm{g}$/g wet matter for 18 deer were liver 0.013, kidney 0.286, muscle 0.010, spleen 0.001, heart 0.007, lung 0.005, men 0.019, abomasum 0.016, intestine 0.018, skin 0.016 and bone 0.312, respectively. Two samples in kidney, one sample in muscle out of 18 deer showed higher Cd contents than normal limit value of 0.50\mu\textrm{g}$/g for liver and kidney, 0.10\mu\textrm{g}$/g for muscle. In addition, three deer also showed higher Cd contents in one body tissue than normal limit value which reported foreign countries.

돼지후지육 첨가 넙치(Paralichthys olivaceus) 스테이크의 제조 및 품질 특성 (Processing and Quality Properties of Olive Flounder Paralichthys olivaceus Steak Added with Pork Leg)

  • This study was performed to obtain basic data regarding the development of fish steak products using olive flounder and pork leg. Olive flounder and pork leg were ground separately in a chopper. The methods used for processing were as follows. Chopped olive flounder (100 g) and other ingredients (bread crumbs, 13 g; onion, 12 g; garlic, 4 g; egg wash, 18 g; salt, 0.05 g; pepper, 0.05 g) were mixed in a chopper. The mixture was molded into a steak shape ($12{\times}7cm$) and roasted in an oven at $180^{\circ}C$ for 12 min (OF). FP consisting of a mixture of olive flounder (70 g) and pork leg meat (30 g) and OP consisting of pork leg meat alone (100 g) were processed according to the same procedure as described for OF. Various factors (viable bacterial count, chemical composition, pH, salinity, hardness value, color value, total amino acid content, free amino acid content, fatty acid composition, mineral content) were measured, and sensory evaluation was conducted. Based on the results of the sensory evaluation and hardness value, OP was deemed to be the most desirable, followed in order by FP and OF. There was a slight but significant difference between OP and FP.

연어 Frame 육의 식품성분 특성 (Food Component Characterization of Muscle From Salmon Frame)

  • 연어 가공 부산물의 효율적 이용을 위하여 연어 frame 유래 근육의 식품성분 특성에 대하여 살펴보았고, 아울러 연어 fillet와 비교하여 살펴보았다. 연어 frame 근육의 일반 성분은 수분의 경우 73.2%이었고, 건물 100 g 당 조단백질, 조지방 및 조회분 함량은 각각 76.9%, 15.7% 및 4.1%이었다. 연어 frame 근육의 pH 및 휘발성염기질소 함량은 각각 6.63 및 16 mg/100 g으로 신선하여 수산가공원료로 사용 가능하였다. 연어 frame 근육의 헌터 색조는 명도, 적색도 및 황색도가 각각 55.34, 16.60 및 19.99이었고, 색차가 48.83이었으며, 이는 fillet 근육에 비하여 명도의 경우 높았으나, 적색도, 황색도 및 색차의 경우 낮았다. TCA 가용성 질소 함량은 연어 frame 근육이 542 mg/100 g으로 연어 fillet 근육의 612 mg/100 g에 비하여 낮았다. 연어 frame 근육의 지방산 조성, 총 아미노산 함량 및 칼슘, 인 함량과 같은 영양성분은 물론이고, 색조 및 냄새와 같은 관능평가의 결과도 연어 fillet 근육과 차이가 없었다. 이상의 결과로 미루어 보아 연어 가공 부산물인 frame 유래 근육은 연어 가공소재로 재이용 가능하리라 판단되었다.

마른 오징어의 품질평가 및 보존기간 (Quality Evaluation and Shelf-life of Dried Squid)

  • In order to obtain the objective indices which can assess the quality and the shelf-life of dried squid, nonenzymatic browning, carbonyl value, trimethyl amine (TMA) and trimethyl amine oxide (TMAO) decrease and panel test were determined in dried squid at various water activity levels. When the data of nonenzymatic browning fit a zero order equation, $r^2$ value were more than 0.92 except aw 0.52 for 0.8241. Through variance analysis for the data of browning extent and TMAO decrease, the confidence limits of regression equation were $99\%$ and their limit values of shelf-life were shown 0.45390 O. D./g. solid and 190.322 g/g respectively. In case of TMAO, $r^2$ value was calculated more than 0.95. Linear regression equation for the correlation between browning data and average panel score was Y=0.6138-0.053X and its $r^2$ value was 0.9285. Also in TMAO decrease, the equation was InY=2.0314+0.08269x and $r^2$ value was 0.7854. The shelf-life, evaluated by nonenzymatic browning, TMAO decrease and panel test, was 110-170 days at aw 0.45-0.76 except aw 0.15.

반응표면 분석에 의한 참외잼의 제조조건 최적화 (Optimization of Preparation Condition on Oriental Melon Jam by Response Surface Methodology)

  • 참외를 이용한 적절한 가공식품 개발의 일환으로 참외잼을 제조하였으며, 참외잼에서 중요한 인자로 작용하는 참외 페이스트 함량(40, 45, 50, 55, 60 g), 첨가당에 대한 과당의 비율(20, 35, 50, 65, $80\%$) 및 펙틴함량(1.0, 2.0, 3.0, 4.0, 5.0 g)을 달리하면서 참외잼을 제조하였다. 당도가 가장 높게 나타난 참외잼 제조조건은 첨가된 과당함량의 비율이 $48.10\%$, 참외페이스트의 함량이 41.04 g 및 펙틴함량이 2.12 g일 때 61.48 $^{\circ}$Brix로 가장 높게 나타났다. Softness는 첨가된 과당의 함량이 $79.46\%$, 참외 페이스트가 45.06 g 및 펙틴함량이 2.71 g일 때 였으며, 젤리강도가 가장 낮게 나타난 조건은 첨가된 과당의 함량이 $63.0\%$, 참외 페이스트가 47.8 g 및 펙틴함량이 1.99 g일 때 $0.04\;g{\cdot}cm$로 나타났다. 관능검사 결과 전반적인 기호도에 대한 관능점수가 가장 높게 나타난 조건은 첨가당에 대한 과당의 비율이 $73.19\%$, 참외페이스트 함량이 55.65 g 및 펙틴함량이 2.42 g일 때였다. 참외를 가지고 잼을 제조하기 위해서는 참외 페이스트 55.2 g, 과당 $76.3\%$, 구연산 0.3 g, 펙틴 2.5 g을 첨가 혼합한 후 가열하여 제조할 때, 가장 우수한 품질의 참외잼이 제조됨을 알 수 있었다.

포도당 환원을 이용한 천연 인디고 염색 (Natural Indigo Dyeing by Using Glucose Reduction)

  • Dyeing process of the natural indigo powder onto ramie and silk fabrics was investigated by using glucose and calcium hydroxide as a reducing system. Effect of reduction and dyeing conditions such as temperature and time of reduction/dyeing, and concentrations of glucose and calcium hydroxide on the dyeing process were explored. Indigo powder was obtained by drying the conventional niram paste in an oven at $50^{\circ}C$. Color strength of the dyed fabrics was evaluated by K/S value measured at the wavelength of maximum absorption(${\lamda}$max). Munsell color coordinates(H V/C) were used to compare fabric colors of ramie and silk. Ramie fabric showed purple-blue color for all the temperature and time. On the contrary, silk fabric showed wide range of color including brown, brown-green, green at the different temperature. With the increase of K/S value, the coordinate of value(lightness) decreased for both of ramie and silk fabrics. The coordinate of hue(shade) changed drastically with the increase of K/S value for silk fabric, compared with that of ramie fabric which showed nearly constant value at the whole range of K/S value. Optimum concentrations of calcium hydroxide were for 6 g/L for ramie and 4 g/L for silk at $60^{\circ}C$ and 50 min. K/S value increased with the indigo concentration. Maximum K/S value was shown at $10{\sim}12$ g/L of glucose concentration. For both of ramie and silk fabrics, the colorfastness of washing and light was lower than that of rubbing. All the colorfastness values were improved with the increase of color strength.

상대적 외적 가치 지향과 삶의 만족 간 자기회귀교차지연 효과 검증 (Testing the Auto-regressive Cross-lagged Effects Between Relative Extrinsic Value Orientation and Life-satisfaction)

  • 상대적 외적 가치 지향은 내재적 가치(e.g. 사회적 관계, 자기수용 등)에 비해서 외재적 가치(e.g. 부유함, 사회적 인정 등)를 상대적으로 더 중요하게 여기는 경향성이다. 본 연구는 자기회귀교차지연모형을 적용하여 상대적 외적가치 지향과 삶의 만족도의 인과적 관계를 확인하고, 이러한 관계에 성별 차이가 있는지 검토하였다. 이를 위하여 한국아동·청소년패널조사(KCYPS) 중1패널의 3차, 5차, 7차 년도 조사 자료(N = 2,259; 남자 1,140명, 여자 1,119명)를 분석한 결과는 다음과 같다. 첫째, 이전 시점의 상대적 외적 가치 지향과 삶의 만족도는 이후 시점의 상대적 외적가치 지향과 삶의 만족에 유의한 정적 영향을 주었다. 둘째, 이전 시점의 상대적 외적 가치 지향은 다음 시점의 삶의 만족에 유의한 부적 영향을 주었다. 그러나 이전 시점의 삶의 만족은 이후 시점의 상대적 외적 가치 지향을 설명하지 못했다. 끝으로 이러한 관계는 남녀 집단 간에 차이가 없었다. 이러한 결과는 삶에 대한 불만족이 내재적 가치보다 외재적 가치를 지향하게끔 만드는 것이 아니라, 상대적 외적 가치 지향이 높을 때 삶의 만족도가 낮아질 수 있음을 시사한다.
