Two kinds of samples were prepared from the loin in the carcass with grade B2 and D, which were chilled for 24 hour after slaughter. The fresh beef in this study were obtained by chilling the loin for 1 day after wrapping them. On the other hand, the chilled beef were obtained by cutting the loin by 500 g and chilling them for 30 day after vacuum packing. The experiment was carried out to compare the palatability related with characteristics of loin with grade B2 and D and to investigate the chilling effect of the loin with grade D. In the case of fresh beef, it was found that the loin with grade B2 has better meat color, but lower pH, lactic acid content, and myoglobin content, than them of the loin with grade D. Also, the loin with grade B2 has lower tenderness due to its low hardness and chewiness, and high myofibrillar fragmentation index (MFI). Furthermore, it has high monounsaturated fatty acid/saturated fatty acid (MUFA/SFA) and ATP content, and good raw meat aroma. It also shows an excellent palatability of cooked meat, although it has low cooking loss and heat shotening. On the other hand, the loin with grade D has higher chilling effect on hardness, chewiness, MFI and MUFA/SFA, than them of the loin with grade B2. However, in the case of chilled beef, the loin with grade D shows much worse tenderness, cooked meat aroma, and palatability than them of the loin with grade B2.

This study was carried out to investigate the protective effects and detoxification of oriental herb extracts mixture (Saururus chinensis, Taraxacum platycarpum, Ulmus macrocarpa, Glycyrrhiza glabra, Rhynchosia nulubilis) on TCDD-induced oxidative stress. Thirty five male rats were divided into 5 groups: normal control group received saline; vehicle control group received DMSO and acetone; only TCDD-treated group received multiple intraperitoneal injection of TCDD ($100{\mu}g/kg$) and saline; post-treated group of OHEM (400 mg/kg/day) received oral administration for 5 weeks after TCDD treatment; and pre-treated group of OHEM (400 mg/kg/day) received oral administration for 6 weeks from 1 week before TCDD treatment. The elevated serum activities of alanine transaminase (AST), aspartate transaminase (ALT), alkaline phosphatase (ALP), lactate dehydrogenase (LDH) and atherorganic index due to TCDD were significantly decreased by the treatment of OHEM (p<0.05); the pre-treatment of OHEM was especially effective. Hydropic lesions and cytoplasmic vacuolizations in the liver of TCDD-treated rats were inhibited by the treatment of OHEM. Also, OHEM treatment reduced edemas in small intestine villus of TCDD-treated rats. These results suggest that OHEM from various oriental herb extracts might be a useful protective and detoxification agent against TCDD.
The effects of ultrasound-assisted extraction (UAE) on the physicochemical and sensory characteristics of coffee beverage were investigated. Coffee powder (4 g) was soaked into 80 mL distilled water and extracted for 15, 30, 60, 120, 180, 240, or 300 sec at $60^{\circ}C$ in an ultrasonic bath (40 kHz, 300 W). Hot-water extraction (HE) at $80^{\circ}C$ for 300 sec was used as a control. Content of soluble solids in coffee beverage prepared by UAE (60~300 sec) was same or higher than those of HE, however, no significant differences were observed among the four beverages extracted for more than 120 sec. Clarity and browning index of beverage prepared by UAE (15 sec) and by HE were significantly higher and lower, respectively, compared to those of the other. Content of phenolic compounds was lower and higher respectively, in beverage prepared by UAE (15 sec, 30 sec) and UAE (60~300 sec) than by HE. DPPH radical scavenging activity was highest in beverage prepared by UAE (15 sec) and HE. Sensory evaluation showed that color, aroma, taste, and overall acceptability were rated with the best score for beverage prepared by UAE (15 sec) and the worst score for beverage prepared UAE (120~300 sec). Therefore, ultrasound-assisted extraction can be used for improving quality of coffee beverage.
The exchange rate change has been increased since the time when the floating exchange rate system was introduced in Korea. As a result, the increase of the exchange rate changes raised the risk in international trades in Korea. Also after Bretton Woods System broke down, the increasing exchange rate fluctuation raised the risk in international trade. The purpose of this dissertation is to study whether this incomplete pass-through exists in Korean export industry and furthermore to measure the markup rate of the export price using real data since Global Financial Crisis. The estimation results of the export price determination model by Error Correction Model shows that the export price of Korea has been greatly influenced by the export prices and exchange rates against U.S. Dollar of rival countries, domestic producer price as well as the Korean Won-U.S. Dollar exchange rate and also business coincidence index of U.S. in demand. Particularly, the pass-through rate of Korean Won-U.S. Dollar exchange rate to export price is estimated to be incomplete, which contrasts with the propositions of traditional exchange rate determination approach, e. g. elasticity approach, monetary approach, etc.

Background: Health care utilizations and costs of the patients with degenerative lumbar spine disease in Korea increased dramatically. We analyzed whether hospital market competition is associated with charges and length of stay for patients with degenerative lumbar spine disease. Methods: We used Medical claims data of 2002 and 2010 from the nationwide representative sample of National Health Insurance Service of Korea. The study subjects were inpatients with degenerative lumbar spine disease (N=24,768) in 2002 and 2010. We employed a multilevel linear mixed model that included patient- and hospital-level variables in hierarchical data. Results: Higher hospital competition was associated with lower charges (${\beta}=57.5$, p<.0001 in 2002; ${\beta}=353.7$, p<.0001 in 2010) and shorter length of stay (${\beta}=0.3$, p<.0001 in 2002; ${\beta}=0.9$, p<.0001 in 2010) in both 2002 and 2010. Compared to 2002, the magnitude of such association became greater in 2010. However, subgroup analyses show that the influence of competition on charges and length of stay differed by hospital size. Conclusions: This study showed that hospital market structure (e.g., hospital competition) affects hospital efficiency (i.e., hospital charges and length of stay). It is necessary to continue to monitor how changing market structure influences hospital outcomes, including more detailed outcomes such as patient satisfaction.

The purpose of this study is to investigate the effect of capsulated slurry phase change material (PCM) on the thermal crack in mass concrete by experimental work and FEM analysis. In this study, three conditions of samples were prepared for evaluating the level of hydration heat, i.e., a material condition, a cement paste condition and a concrete condition. Also, a compressive strength test was conducted for FEM inverse analysis. Based on the results of the experiment, exothermic function coefficients of concrete with encapsulated slurry PCM were deducted by the inverse analysis. After that, they applied to FEM analysis of the mass scale concrete structures. From the results of this experiment, $31^{\circ}C$ capsulated slurry PCM had no super cooling phenomenon in the material condition. In the cement condition, hydration heat decreased by 34.61J when PCM of 1g was mixed. In the concrete condition, PCM of 6% was deducted as the best level in hydration heat absorption. In FEM inverse analysis, rate coefficient of reaction gradually decreased when PCM mixing ratio increased. But, temperature-rise coefficient increased when PCM mixing ratio exceeded 6%. For the inversed exothermic function coefficients applying to large scale concrete structures, a thermal cracking index increased by 0.05 when PCM of 1% was mixed.

The world faces several issues of energy crisis and environmental deterioration due to over-dependence on single source of which is fossil fuel. Though, fuel is needed as ingredients for industrial development and growth of any country, however the fossil fuel which is a major source of energy for this purpose has always been terrifying thus the need for alternative and renewable energy sources. The search for alternative energy sources resulted into the acceptance of a biofuel as a reliable alternative energy source. This work presents the study of optimization of process of transesterification of vegetable oil to biodiesel using NaOH as catalyst. A $2^4$ factorial design method was employed to investigate the influence of ratio of oil to methanol, temperature, NaOH concentration, and transesterification time on the yield of biodiesel from vegetable oil. Low and high levels of the key factors considered were 4:1 and 6:1 mole ratio, 30 and $60^{\circ}C$ temperatures, 0.5 and 1.0 wt% catalyst concentration, and 30 and 60 min reaction time. Results obtained revealed that oil to methanol molar ratio of 6:1, tranesetrification temperature of $60^{\circ}C$, catalyst concentration of 1.0wt % and reaction time of 30 min are the best operating conditions for the optimum yield of biofuel from vegetable oil, with optimum yield of 95.8%. Results obtained on the characterizzation of the produced biodiesel indicate that the specific gravity, cloud point, flash point, sulphur content, viscosity, diesel index, centane number, acid value, free glycerine, total glycerine and total recovery are 0.8899, 4, 13, 0.0087%, 4.83, 25, 54.6. 0.228mgKOH/g, 0.018, 0.23% and 96% respectively. Results also indicate that the qualities of the biodiesel tested for are in conformity with the set standard. A model equation was developed based on the results obtained using a statistical tool. Analysis of variance (ANOVA) of data shows that mole ratio of ground nut oil to methanol and transesterification time have the most pronounced effect on the biodiesel yield with contributions of 55.06% and 9.22% respectively. It can be inferred from the results various conducted that vegetable oil locally produced from groundnut oil can be utilized as a feedstock for biodiesel production.
Objectives: The purpose of this study is to describe beverage patterns among healthy Korean adults and investigate their association with prevalence and components of metabolic syndrome. Methods: Subjects consisted of 6,927 Korean adults, aged 19-64 years in the $6^{th}$ Korea National Health and Nutrition Examination Survey (KNHANES, 2013-2015). Beverages were regrouped into twelve groups based on food codes and beverage intake (g/day) was assessed by 24-hour recall. Factor analysis was used to obtain beverage patterns. Waist circumference and body mass index (BMI) were used as anthropometric data; fasting blood glucose, triglyceride, high density lipoprotein (HDL), and blood pressure were used as biochemical indicators. The odds ratio (OR) for prevalence of metabolic syndrome and components of metabolic syndrome was assessed using logistic regression analysis. Results: Three beverage patterns were identified using factor analysis: 1) carbonated soft drinks 2) coffee (without added sugar or powdered creamer), and 3) alcoholic beverages. Subjects with high scores for the carbonated soft drink and coffee without added sugar or powdered creamer patterns were younger and subjects with high scores for the alcoholic beverage pattern were older. There were significant differences in gender distribution in all three beverage patterns, with men more likely to have high scores for carbonated soft drink and alcoholic beverage patterns. On the other hand, women were more likely to have higher scores for coffee without added sugar or powdered creamer pattern. Within each pattern, there were significant differences in sociodemographic and lifestyle characteristics such as education, household income, frequency of eating out, and smoking status according to the quartile of pattern scores. Alcoholic beverages and carbonated soft drinks patterns were associated with an increased levels of metabolic syndrome components, but coffee without added sugar or powdered creamer was not associated with any of metabolic syndrome components in healthy Korean adults after adjusting for age, sex, education, BMI, weight management, household income, smoking status, frequency of eating out, and energy intake. Conclusions: Alcoholic beverages and carbonated soft drinks patterns are associated with increased levels of metabolic syndrome components while coffee without added sugar or powdered creamer pattern is not associated with any of metabolic syndrome components in healthy Korean adults.
