Sensory Evaluation of Seasoned Soy Sauce with Hutgae (Hovenia dulcis Thunb) Fruit and Pear Extracts (헛개 열매와 배 추출물을 첨가한 향신간장 소스의 관능평가)

  • The objective of this study was to investigate the sensory quality attributes for the development of soy sauce containing an extract of the fruit of Hovenia dulcis Thunb (Hutgae), also known as liver function improvement and hangover removal. Aqueous extracts of Hutgae fruit and Hutgae fruit-soy sauce were used for determining the sensory evaluation. The intensity of the sweet smell and taste was predominated in the Hutgae fruit extract (p<0.05). Various seasoning items, such as apples, pears, dried figs, Korean bramble (Bokbunja), citron (Yuza) and sun-dried hot pepper (Taeyangcho), were used to determine the suitable type of seasoned soy sauce with the Hutgae fruit extract. In the sensory analysis, the highest overall preference (acceptance score 5) was obtained from the pear extract added to soy sauce with the Hutgae fruit. The overall preference of Yuza (score 4.9) and Taeyangcho (score 4.5) extracts also very well-matched the seasoning items for soy sauce with the Hutgae fruit extract. There was no difference among the extract mixtures of multi-seasoning items added to soy sauce with the Hutgae fruit extract. As more pear extract was added, a higher overall preference was obtained. On the other hand, as the more Yuza extract was added, the higher flavor intensity without the change of the overall preference was obtained. The overall preference of soy sauce with the pear- Yuza-Taeyangcho extract mixture was not different between with or without the Hutgae fruit extract. However, the overall preference (score 5.6) was significantly higher in the pear extract added to soy sauce with the Hutgae fruit extract compared with the pear extract added to soy sauce without the Hutgae fruit extract (score 4.8). These results suggest that soy sauce with the Hutgae fruit-pear extract mixture may be useful as a functional seasoning for various salad dressings.

Skin Volume Augmentation and Anti-wrinkle Effects of Tribulus terrestris Fruit Extract (질려자 추출물의 피부 볼륨 증진 및 주름개선 효과)

  • Aging of the face is mainly related to the features that are sagging or loss of elasticity of the skin by reducing the volume around the eyes or cheek. Intrinsic aging can be seen to cause thinner dermis, reduction of extracellular matrix and subcutaneous fat. This study was carried out to investigate the skin volume augmentation and anti-wrinkle effects of Tribulus terrestris fruit extract. Skin anti-aging effect of Tribulus terrestris fruit extract was evaluated by using lipid accumulation, expressin of type I procollagen and elastin in preadipocytes and human dermal fibroblasts. Tribulus terrestris fruit extract augmented preadipocytes differentiation about 56% at 100 µg/mL. The type I procollagen and elastin were increased about 35% and 25% by treatment 20% Tribulus terrestris fruit extract, respectively. The clinical study also showed that skin sagging, skin elasticity, and dermal density improved without adverse effect following 4 week application of cream containing 2% Tribulus terrestris fruit extract. We suggest that Tribulus terrestris fruit extract can have the good possibility as skin volume augmenting, skin elasticity and wrinkle improving agent.

BIOLOGICAL ACTIVITES OF PLANT LEAF EXTRACTS; AVAILABILITY OF STAR FRUIT LEAF EXTRACT AGAINST SKIN AGING

  • We evaluated activities of various plant leaf extracts and found the availability against skin aging in the leaf extract of star fruit (Averrhoa carambola L), and developed Star Fruit Leaf Extract BG30 as an ingredient of cosmetics. Star Fruit Leaf Extract BG30 was found to show scavenging activities of reactive oxygen species and an inhibitory effect on the activity of matrix metalloproteinase-1. It showed increasing activity of type I collagen and recovery effect from damage of UV-B irradiation in human fibroblast. We performed the separation of the active principal from Star Fruit Leaf Extract BG30 to give isofurcatin 2"-Ο-$\alpha$-L-rhamnopyranoside, which showed increasing activity of type I collagen. To examine the anti-wrinkle effect of Star Fruit Leaf Extract BG30, seven volunteers applied a Star Fruit Leaf Extract BG30 1 % cream in double blind manner to one-side of the corner of their eye and the placebo cream to the opposite side. Clinical evaluation of wrinkling was performed every week for 5 weeks using a silicone rubber replica. A statistically significant improvement of Star Fruit Leaf Extract BG30-treated site was seen in decreased wrinkles. Star Fruit Leaf Extract BG30 results in clinically visible improvement in wrinkling when used topically for 5 weeks.

Effects of Fruit Extract Drink on Alcohol Metabolic Enzymes in Ethanol-treated Rats

  • Alcoholism is a significant global health problem. Alcohol dehydrogenase and aldehyde dehydrogenase play important roles in the metabolism of alcohol and aldehyde. In this study, we aimed to investigate the eliminatory effects of a fruit extract drink on alcohol metabolism in drunken Sprague-Dawley (SD) rats. Male SD rats were given a fruit extract drink or a commercial product (10 mL/kg) 30 min prior to 40% (5 g/kg) ethanol ingestion. To assay the effect of the fruit extract drink on blood ethanol concentration, blood samples were taken from the saphenous vein at 3 and 5 h after ethanol ingestion. The blood concentrations of alcohol, alcohol dehydrogenase, and aldehyde dehydrogenase were significantly lower in the fruit extract drink group than in the control group, in a time-dependent manner. However, the alanine aminotransferase and aspartate aminotransferase activities of all experimental groups were unaltered compared to those of the control group. These results suggested that fruit extract drink intake can have a positive effect on the reduction of alcohol, alcohol dehydrogenase, and aldehyde dehydrogenase concentrations in the blood and may alleviate acute ethanol-induced hepatotoxicity by altering alcohol metabolic enzyme activities.

A Study on the Physicochemical Properties and the Nitrite Scavenging Ability of Japanese Sumac Extracts (붉나무 추출물의 이화학적 특성과 아질산염 소거능에 관한 연구)

  • Japanese sumac (Rhus javanica) is one of the common herbaceous plants growing over the country. This study was conducted to investigate the extraction characteristics and physiological activities inluding nitrite scavenging ability of the water extracts from leaf, fruit and bark of Japanease sumac. Extraction yield was 6.62~13.84%, free amino acids were detected as 24 kinds with 37.9 mg/100g in leaf extract, 23 kinds with 27.0 mg/100g in fruit extract and 27 kinds with 39.0 mg/100g in bark extract, respectively, and seven kinds essential amino acids were detected. Total contents of flavonoids equivalent to naringin were 587.2 mg/100g in bark extract, 557.3 mg/100g in fruit extract and 379.9 mg/100g in leaf extract, respectively. Total contents of phenolics equivalent to gallic acid were 111.2 mg/100g in leaf extract, 108.4 mg/100g in fruit extract and 80.4 mg/100g in bark extract, respectively. The nitrite scavenging ability of extracts was order of 61.93% in bark extract>57.38% in fruit extract>55.49% in leaf extract, and was 78.1~100% of those of BHT (butylated hydroxytoluene) equivalents at pH 1.2. The electron donating ability was order of 47.38% in fruit extract>43.06% in leaf extract>38.55% in bark extract, and was compared to 65.6%, 58.8% and 53.6% of those of BHT equivalents, respectively. The reduction power was evaluated to 37% higher in leaf extract, 43% higher in fruit extract and 46% higher in bark extract than those of BHT equivalents. The metal chelating ability of extracts was considerably low and was order of 27.3% in bark extract>20.6% in leaf extract>11.2% in fruit extract.

The Effects of Hovenia dulcis Fruit Hot Water Extracts on Anti-fatigue and Improvement of the Exercise Performance in SD Rats (랫드를 이용한 헛개나무과병 열수추출물 투여가 운동에 의한 피로회복과 운동수행능력에 미치는 기전 규명)

  • The present study investigated the effects of Hovenia Dulcis (HD) fruit extract powder on the improvement of physical activity, especially exercise capacity. Forty mice were divided into 4 groups including normal controls, negative controls, 100 (HD-100) and 200 (HD-200) mg/kg HD fruit extract powder groups for 5-times exercises using treadmill. Normal control did not performed treadmill running but others did 5-times for 10 days. HD fruit extract powders were administrated orally one-times per day for 10 days before treadmill exercise and normal and negative controls were fed with excipient water. After 5-times exercise, blood biochemical analysis showed that aspartate aminotransferase (AST), lactate dehydrogenase (LDH) and creatine phosphokinase (CK) activities and blood lactate concentration were statistically increased in negative controls than in normal controls. They were decreased in HD fruit extract powder groups, compared with negative controls. These results were considered as the effects of HD fruit extract powders on reduced tissue damages during exercise. Other measured indices did not reveal remarkable differences. All together, these results suggest that HD fruit extract powders may enhance the exercise performance by recovering the exercise-fatigue via blood lactate concentration by reducing blood LDH activity and via reduction of blood CK and AST activity.

Comparison with various mulberry leaves' and fruit's extract in lipid accumulation inhibitory effect at adipocyte model

  • In relation to the global increase trend of obesity population, there is a demand for the development of foods having high functional activity by mass-extracting anti-obesity active substances using mulberry product such as leaf and fruit. Therefore, we evaluated the antiobesity efficacy according to varieties by using the mulberry leaves and fruit extracts. At the same time, high active varieties were selected. For this purpose, the effects of the extracts of the mulberry leaf and fruit on 3T3-L1 adipocyte differentiation were examined. As a result, in the case of mulberry leaves, the lipid accumulation inhibitory rate of 'Cheongolppong' was higher than that of the control at $500{\mu}g/ml$ treatment. And in the case of the extract of mulberry fruit, 'Daesim' showed the highest lipid accumulation inhibitory rate compared with the control at 50 times of diluted extract.

The Antioxidant and Antimicrobial Activity of Solanum nigrum L. Fruit Powder by Extraction Solvent (왕까마중(Solanum nigrum L.) 열매 분말의 추출 용매에 따른 항산화 및 항균 활성)

  • This study was conducted in order to investigate the antioxidant and antimicrobial activity of Solanum nigrum L. fruit powder after undergoing different extraction solvent processes. The total phenolic content of Solanum nigrum L. fruit powder measured a 14.66 GAE mg/g after undergoing ethanol extraction, and the total flavonoid content measured at 201.23 mg CE/g when undergoing ethanol extraction. The ABTS radical scavenging activity was 160.38~209.53 TEAC umol/g, and the DPPH radical scavenging activity was 53.99~90.76 TEAC umol/g, which indicated a higher level of antioxidant power in the ethanol extract as opposed to in the water extract. The FRAP (ferric reducing antioxidant power) of Solanum nigrum L. fruit powder was 115.58~194.58 TEAC umol/g, and B. subtilis KCTC 2189 showed greater antimicrobial activity in the ethanol extract (concentration 200 ug/uL) as opposed to the water extract. Solanum nigrum L. fruit powder revealed differences in antioxidant and antimicrobial activity between the different extraction solvents. In particular, ethanol extract had higher antioxidant and antibacterial activity, meaning it is more favorable for usage as a functional food material.

Antioxidative Activity of the Extracts of Japanese Apricot (Prunus mume Siebe. et Zucc.)

  • In order to discern the possibility of functional food product or ingredient of a new medicine, the leaf parts and fruit parts of Prunus mume was partitioned with various solvents and their antioxidative activity was measured. When the antioxidative activity of MeOH extracts of leaf parts and fruit parts of Korea and China was compared, all of them showed the highest antioxidative activity in EtOAc fraction. In case of Korean Prunus mume leaf parts showed that quantity required for $RC_{50}$ to be $27.04{\mu}g$ in EtOAc fraction and in case of China Prunus mume leaf parts, it was $23.31\;{\mu}g$ which is similar to that of ${\alpha}$-tocopherol ($22.14\;{\mu}g$) and showed the highest activation. In case of Prunus mume fruit parts MeOH extract, Korean fruit showed $29.16\;{\mu}g$, and Chinese fruit showed $31.21\;{\mu}g$ in EtOAc fraction and thus Korean fruit extract showed a higher activity of antioxidant than the Chines fruit extract. When the antioxidative activity between the fruit parts and leaf parts of Prunus mume was compared, the leaf parts showed a higher antioxidative activity.

A Study on the Distribution and the Effect of Torreya Fruit Extract on Cellular Slime Molds in Torreya Forest of Cheju Island (제주도 비자림에서의 세포성 점균의 분포 및 비자열매 추출액의 성장 효과에 관한 연구)

  • Dictyostelid cellular slime molds were isolated from soils and harks of the subtropical forest of Torreya nucifera in Cheju island. The results were as follows: Polysphondylium pallidum,Dictyostelium purpureum, D. mucoroides, D. aureo-stipes var. aureo-stipes, D. flavidum, D. miniutum, P.violaceu m, D. monocrhasioides. D. brefeldianum, D. polvcephalum. D. areum var. areum, P. tenuissimum, D. fasciculatum. In this forest, P. pallidum and D. purpureum were occurred dominantly, and D. mucoroides and D. aureo-stipes var, aureo-stipes were the second dominant. It was distinguished that D. purpureum was much more cornmonly found than the other forests. Cellular slime molds from the barks of the tree heights of 1,3 and 5m were occured 7, 3 and 2 species respectively. Torreya fruit extract affected on the growth of D. aureo-stipes var. aureo-stipes and D. flavidum but not on D. purpureum and D. mucoroides.
