The storage stability of fresh ginseng packaged individually in a soft film bag was more enhanced as the soft film with lower oxygen permeability was used, while the optimum water vapor permeability for enhancing the storage stability of fresh ginseng was estimated 3.5 g/m$^2$$.$day$.$90% RH when using the soft film with low oxygen permeability of 3.6∼5.4 cc/m$^2$$.$day$.$atm. The storage stability of the individually packaged fresh ginseng was also enhanced when the soft film bag was filled with carbon dioxide-oxygen-nitrogen (25:5:70) miked gas but the vacuum packaging exhibited little effect for the enhancement of storage stability of the fresh ginseng.
The aqueous extract of fresh ginseng (Panax ginseng C.A. Meyer) contains a macromolecular fraction that showed mitogenic and comitogenic activities in human peripheral blood Iymphocytes. Purification of the crude extract by size (ultrafiltration, Sephadex G-200) and charge (DEAE-cellulose. DEAE-Sepharose) yielded a semi-purified fraction (DS-3). This fraction contains at least three subgroups of anionic macromolecules with apparent molecular weight greater than 600 kilodaltons. It is a glycoprotein with a large amount of glucuronic acid. It acts as a mitogen in both T and B cells of human peripheral blood lymphocytes. It could also potentiate the mitogenic action of Concanavalin A in Iymphocyte T cells. Such potentiation is not due to increased binding of Concanavalin A to the cell surface. Its mitogenic and co-mitogenic effects do depend on the presence of extracellular Ca2+.
Panax ginseng root has been widely used as an important drug for thousands years in China, Korea and Japan. The main effective components of ginseng have been believed to be saponins. However, ginseng cultivation is very difficult and needs many years for growth. It has already been shown that Panax ginseng callus produces a considerable amount of the same kinds of saponins as in intact plants. Various culture conditions were examined for increased production of ginseng saponins by cell culture. The saponin contents and the growth rates in two cell lines of ginseng callus were compared in static and suspension cultures, rotary and reciprocal shaking cultures. It was shown that the growth rate in rotary shaking cultures of D5-B2K-B2K callus was the highest and ginseng saponin production was most effective in reciprocal cultures of D5-B2K-B2K callus. The saponin content per fresh weight of the culture was 1.03 times higher than that of the fresh ginseng root.
This study was basic research to improve the existing method far distributing just harvested and sail-clad fresh ginseng. The quality of surface-washed fresh ginseng was compared to that of muddy fresh ginseng during storage at 0, 5, 10, and $20^{\circ}C$. After 45 days of storage, there was no difference in weight loss between the washed ginseng and the control at $0^{\circ}C$, but the loss was 46% and 37% lower in the washed than the control at $5^{\circ}C$ and $10^{\circ}C$, respectively. The ginseng stored at $20^{\circ}C$ after washing had less deterioration than the control stored at $10^{\circ}C$ for the same period. The sensory characteristics of the washed ginseng showed better quality scores ranging from 6.8 to 8.2, while the control ranged from 5.7 to 6.9 after 45 days of storage at $10^{\circ}C$. The washed ginseng had less viable cells, mold and yeast, and coliforms at 0.87, 1.55, and 0.95 log units, respectively, compared to the control, and this trend was maintained in the washed ginseng throughout storage.
Changes on physicochemical properties of fresh Korean ginseng during repeated 9 times steaming processes, steaming $90{\sim}95^{\circ}C$ for $1{\sim}3\;hr$ followed by hot air-drying at $50^{\circ}C$ for $36{\sim}48\;hr$, were investigated. The water contents decreased from 73.4% of fresh ginseng to 13.7% finally. The final yields in bases of total weights and dry matter were 21.0% and 79.0%, respectively. As the times of steaming processes increased, lightness (L value) decreased and redness (a value) increased in color of ginseng powder. Browning index also rapidly increased after 3 times of steaming process in particular. Total water soluble sugar contents decreased from 55.4% in fresh to 38.6% in final processed ginseng, but acidic polysaccharide contents increased by about 50% with increasing times of steaming process. Total phenolic compound contents significantly increased with repeated steaming processes especially after 5 times of steaming processes and crude saponin contents also increased in some degree. In the case of major ginsenosides, the contents of $Rb_1$, $Rb_2$, $Rg_1$, Re (representative ginsenosides in fresh ginseng) decreased, but those of $Rg_2$, $Rh_1$, $Rg_3$ (unique ginsenosides in red ginseng) increased after especially 5 times of steaming processes.
The purpose of this study was to investigate the differences in proximate composition, free sugars, amino acids, fatty acids and Hunter color vaules between fresh and odorless garlic. The contents of crude fiber, crude fat and ash in odorless garlic were silmilar to those in fresh garlic. Sugars and crude protein decreased during manufacture of odorless garlic. Among the free sugars, sucrose, maltose and fructose decreased in odorless garlic, while the content of glucose increased. Total amino acid content decreased by about 30% in odorless garlic. Among the amino acids decreased arginine, isoleucine etc. The contents of linoleic acid, palmitic acid and oleic acid were higher than those of other fatty acids in fresh garlic and odorless garlic, but laruric acid was in little quantity. There were no singnificant differences in the Hunter L and b value between the fresh and odorless garlic, but value for greeness(-a) was lower in odorless garlic.
The isolation of volatile compounds by vacuum-distillation with freeze-drying was tested 1 with fresh ginseng roots. The roots were frozen at-8$0^{\circ}C$; they were dried at-4$0^{\circ}C$ tinder vacuum(40 tory), for 24 hours; and the ice condensed at the silrface of condenser in the freeze-dryer was thauved at room temperature. The ether extract of the resulting aqueous solution was analyzed by gas chromatography (GC) equipped with a flame ionization detector (FID) or a nitrogen-phosphorils detecto(NPD) and by gas : chromatography/mass spectrometry(GC/MS). More than forty peaks were observed in the CG(FID) profile. and more than ten peaks were observed in the GC(NPD) profile. Among them, thirteen components 1including one aldehyde, four hydrocarbons, two esters, folly alcohols, and two vyrazines were identified: six components the molesuiar ions of which were m/z, 204 were estimated to be a series of azulene compounds; and the other components unidentified were estimated to have molecular weights of lower than 254. Therefore, the freeze-drying technicue is thought to be usefu1 for the isolation of volatile compounds of such low molecufilar weights from vegetables, fruits and biological fluids as well as fresh ginseng roots under the tested conditions.
Stability of nitrogen compounds in the water-extract of ginseng has been investigated in terms of concentration and SDS-PAGE protein pattern as functions of times and temperature. The concentration of free amino-nitrogen in the extract of fresh ginseng varied with time at various temperatures. Especially at temperature over 90$^{\circ}C$, it showed a tendency of steady declease at a considerably fast rate. In the case of red ginseng which had been commercially processed and stocked for 1-7 years, it was found that the free amino-N concentration diminished gradually depending on the length of stock period of samples. This result may be comparative to another observation that the amount and density distribution of precipitate from extract varied with the lapse of stock time, based on accelerated sedimentation test. The number of SDS-PAGE protein bands was observed to be at least seven when determined with the extract of fresh ginseng. However, it tended to reduce finally to be one band when the extract was kept at a rather high temperature for a long time.

The respiratory characteristics of Korean fresh ginseng were investigated from the aspect of picking season, size, and storage temperature and period to get basic data for extension of shelf-life. The respiration rate of fresh ginseng picked in March was 4.09 mL $CO_2/kg{\cdot}hr$ at $0^{\circ}C$. It was gradually increased to August, 7.88 mL $CO_2/kg{\cdot}hr$ at $0^{\circ}C$, and then decreased continuously until November. Although the rate of fresh ginseng was different by picking season, the respiration quotient showed the same level, $1.03\~1.07$. Respiration rate by size was ranged from 3.47 to 5.69 mL $CO_2/kg{\cdot}hr$ at $0^{\circ}C$, and smaller in the size was higher in the rate. $Q_{10}$ value of fresh ginseng was $2.68\~2.88$ when the temperature increased from $0^{\circ}C\;to\;10^{\circ}C$ and $1.77\~2.16$ from $10^{\circ}C\;to\;20^{\circ}C$, and it was slightly different by picking season. At the beginning of storage the respiration rate was 7.0 mL $CO_2/kg{\cdot}hr$ and it was .decreased to 3.38 mL $CO_2/kg{\cdot}hr$ after storage for 90 days at $0^{\circ}C$.
