식용감자 품종의 저장기간별 영양성분 변화 (The Changes of Nutrient Composition in the Edible Potato Varieties during Storage)

  • 국내에서 식용으로 이용되며 수확직후 또는 저온 저장후 출하되는 '수미', '대서', '남작' 그리고 '대지' 품종을 $4{\sim}5^{\circ}C$의 저온 저장고에 1월부터 5월까지 저장하면서 수분, 유리당, 전분 그리고 비타민 C의 저장시기별 영양 성분 변화를 측정하였다. 저장기간이 경과함에 따라서 감소하는 성분으로는 전분, 비타민 C이었는데 특히 비타민 C는 1월에 품종 평균 16mg/100g 이었고 저장 후기인 5월에 7mg/100g을 나타내 저장에 따른 손실이 컸다. 유리당 함량은 2월과 3월에 2.0~2.1%로 증가하였다가 이후 감소하여 5월에는 1%를 나타내었고, 수분은 저장기간 동안 증감을 계속하며 80.4~81.3%를 유지하였다. 저장기간 전반에 걸친 품종별 영양성분 함량을 보면, '수미'는 비타민 C, 유리당, 수분 함량이 가장 높았고, '대서'는 전분함량이 가장 높았다.

고로쇠 및 대나무 수액간장의 성분조성 (The Components of the Fermented Soy Sauce from Gorosoe and Bamboos SaP)

  • 기존의 간장 담금 용수 대신에 고로쇠와 대나무 수액을 이용하여 간장을 제조하였고 90일간 숙성시키면서 유기산, 무기물, 유리당, 유리아미노산 및 질소화합물 등을 분석하였다. 90일간 숙성시킨 후 무기질의 총량을 보면 일반간장에 비해 고로쇠수액 간장에서 약 2.0배, 대나무수액 간장에서는 약 4.4배 높게 정량되었다. 무기질 중 특히 칼슘, 칼륨 및 마그네슘 함량이 높았다. 유리당은 대조구에서는 glucose와 galactose, 수액 간장에서는 상기 유리당 외 fructose와 sucrose가 검출되었고, 유기산은 butyric acid가 월등히 높았다. 유리아미노산은 재래식 간장에서는 leucine, phen-ylalanine, isoleucine, lysine 그리고 glutamic acid의 함량이 높았고, phosphoserine을 포함한 11종류의 아미노산은 숙성중 계속 증가하였다. 수액간장의 숙성 중 유리아미노산의 증감 양상은 대조시료와 유사하였다. 총질소, 아미노 질소 및 암모니아성 질소의 함량은 대조시료, 수액간장 모두 일정기간동안 증가하는 경향을 나타내었다.

세포벽분해효소의 처리에 따른 감과실의 세포벽 유리 다당류의 변화 (Changes on the Components of Free Polysaccharide from Cell Wall of Persimmon Fruit by Treatments of Cell Wall Degrading Enzymes)

  • This paper was carried out to investigate changes in chromatograms of polysacctatides and soluble pectins on Sephadex G-50 and non-cellulosic neutral sugars of polysaccharides isolated from cell wall of persimmon fruits treated with polygalacturonase and $\beta$-galactosidase in vitro. The chromatogram pattern of soluble pectins extracted from cell wall treated with $\beta$-galactosidase on Sephacryl S-500 column were similar to those of untreatment, but contents of soluble pectins treated with $\beta$-galactosidase were different from those of untreatment. The patterns of chromatograms In soluble pectins extracted from cell wall treated with polygalacturonase were more complex and lower molecular polymer than those of other cell wall-degrading enzyme treatments. Non-cellulosic neutral sugar of polysaccharides in fraction I of soluble material treated with polygalacturonase was rhamnose, those in fraction II were similar to those in fraction III and contents of arabinose, xylose and glucose were higher than contents of other non-cellulosic neutral sugars. Non-cellulosic neutral sugars of polysaccharides in fraction I in soluble material by $\beta$-galactosidase treatment were rhamnose, arabinose, galactose and mannose. Content of glucose of polysaccharides in fraction II was higher than that in fraction I . Non-cellulosic neutral sugars treated with mixed enzyme were rhamnose, fucose, arabinose, xylose, mannose, galactose and glucose. Compositions of non-cellulosic neutral sugars of polysaccharides in fraction I were similar to those in fraction II and III.

가열시간에 따른 Beef Consomme의 기호도 및 이화학적 특성에 관한 연구 (The Study of Acceptance and Physicochemical Characteristics of Beef Consomme by Boiling Time)

  • This study was conducted to investigate the sensory and physicochemical properties of beef consomme made with different boiling times (1, 2, 3 and 4hrs). The sensory properties were evaluated with respect to both the acceptability (color, smell, mouth feel, taste, overall acceptability) and intensity characteristics (color, smell, clarify, taste). From the results, the 3hr treatment was most favored for color, smell, mouth feel, taste and overall acceptability, from the sensory evaluation tests. According to a quantitative descriptive analysis of the sensory evaluation for the product, the color, smell and taste gave higher scores with increases in the boiling time. As for the physicochemical characteristics, the pH was increased with increasing boiling time. The reducing sugars, turbidity and viscosity increased with increasing boiling time. The colorimetric lightness values (L) decreased, and redness (a), yellowness(b) and color difference values (ΔE) increased with increasing boiling time. There were 18 free amino acids identified; the alanine, glutamic acid, arginine and leucine contents were high in the free amino acids of the consomme made with different boiling times. There were 3 free sugars identified, glucose, fructose and sucrose. The free sugar contents increased with increasing boiling time. There were changes in the mineral contents of the consomme made with different boiling time; with high K, Na and P contents. The mineral contents increased with increasing, boiling time. The results showed the consomme made by boiling for 3hrs was superior in both its sensory and physicochemical qualities.

유자즙 첨가 된장의 품질 특성 (Quality Characteristics of Doenjang prepared with Yuza Juice)

  • The influence of the yuza juice addition on quality of the doenjang was investigated by analyzing their chemical properties. The 80 days pre-fermented(PFD) and non-fermented(NFD) doenjangs used in the present study were mixed with yuza juice designed at different ratio (0, 1, 3, 5% (w/w)), These doenjangs were fermented for 60 days and then analyzed chemical properties, respectively. The moisture content was higher in yuza juice added groups than control group. But Ash, crude lipid and crude protein contents were higher in control than yuza juice added groups. The pH and formol-N were higher in yuza juice added NFD groups however, acidity was reversed. Among the free sugars, glucose contents was the highest. And, free sugars contents were higher in yuza juice added PFD groups than control group. Five kinds organic acids were detected, and succinic acid content was the highest. The organic acid contents were higher in proportion to adding volume of yuza juice, in all groups. The contents of Free amino acids were higher in yuza juice added PFD groups and among these, 1% yuza juice added PFD group(3970.0 mg%) was the highest. Hunter L value was lower by yuza juice added volume and higher in PFD groups. Hunter a and b values were non-significantly difference in PFD and NFD, respectively.

식품 소재로서 장미꽃잎 색소의 안정성 (Stability for Rose Petals Pigment as a Food Material)

  • This study was conducted to develop pigment of flowers as a food material and the red rose(Rosa hybrida L.) was used for this study. To check the possibility of using the rose pigment as a food additive we have extracted the pigment from rose and examined all the factors (pH, temperature, free sugars, organic acids, metal ions) for stability. The results obtained are as follows: In examining the stability of the pigment, the residue of the pigment noticeably decreased with the increase of the pH and the temperature, and among free sugars (fructose, glucose, sucrose) the addition of fructose made the residue the lowest. With the addition of organic acids the samples exhibited the hyperchromic effect throughout the period of the storage. The pigment residue decreased when the amount of the metal ions increased and especially the Cu$^{2+}$ ion was most destructive.

추출 조건을 달리한 감초부산물 추출물의 성분 특성 (Component Characteristics of Each Extract Prepared by Different Extract Methods from By-products of Glycyrrhizia uralensis)

  • Solid contents, free sugars, phenlic compounds and glycyrrhizin of extracts obtained from by-products of Glycyrrhizia uralensis by three different methods, i.e., shaking, heating, and static methods, were determined. Solid contents of extracts obtained by shaking, heating and static method were 15.6%, 15.0% and 5.3%, respectively. Phenolic compound contents of them were 11.33 mg/100 mL, 11.21 mg/100mL and 10.15 mg/100 mL. Main free sugars in the extracts from the by-products of G. uralensis were fructose, glucose, sucrose, and maltose. Glycyrrhizin content of the extracts from the by-products of G. uralensis were 2.79%, 3.54% and 0.63%, respectively. Extract obtained by the shaking methods had an ability of donating electron to DPPH. The relative antioxidant effects of th extract obtained from the shaking method showed 70% inhibitory effect of peroxidation on egg yolk lecithin.

시판 막장의 맛 성분에 관한 연구 -유리당, 유기산, 유리아미노산을 중심으로- (Analysis of Free Sugar, Organic Acid and Free Amino Acid in Commercial Makjang)

  • Makjang is a kind of Korean traditional short-term fermented soybean paste. The purpose of this study was to evaluate the compositions of free sugars, organic acids and free amino acids as well as microbial counts of six kinds of Makjang. Commercial Makjang from different regions (Kangwon-do, Choongchung-do and Kyungsang-do) were used. The major free sugars of samples were glucose (0.15~3.97%) and maltose (0.01~0.54%), whereas sucrose (0.02%) was detected only in M4 and fructose only in M1 and M2. The major organic acids were citric acid (0.16~3.09%), malic acid (0.06~0.23%) and succinic acid (0.01~0.11%). The total content of free amino acids ranged from 0.02 to 8.74 mg/g, and major amino acids were detected in the order of glutamic acid, leucine, alanine and aspartic acid. Numbers of viable cells of bacteria as well as yeast and molds were $7.8{\times}10^4{\sim}4.8{\times}10^5$ and $8.1{\times}10^3{\sim}3.6{\times}10^4$, respectively. The results of the sensory evaluation showed that over-all preference of Kyungsang-do Makjang was higher than others. Consequently these results provide better information for standardizing and improving quality and functional activity of commercial Makjang.

굴젓갈 숙성중 글리코겐과 단백질의 분해 (Decomposition of Glycogen and Protein in Pickled Oyster during Fermentation with Salt)

  • 굴의 주요구성분인 글리코겐과 단백질의 굴젓갈 숙성중의 분해과정과 분해생성물 상호간의 관계를 알아보기 위하여, 글리코겐의 분해생성물인 유리환원당과 젓산의 생성 유리아미노산과 단백질 구성아미노산의 젓갈 숙성 전후의 구성변화 및 유리환원당과 유리아미노산간의 첫갈숙성조건에서의 반응성의 지표로서 유효성라이신의 양의변화 등을 분석 검토하였다. 글젓갈 숙성중 글리코겐과 단백질은 분해생성물인 유리환원당과 젓산, 그리고 유리아미노산에로 분해하여 갔으며, 유효성라이신의 양은 미미하게 감소하였다. 단백질을 구성하는 아미노산의 구성을 분석한 결과, 생굴 단백질 구성아미노산중에는 glutamic acid, aspartic acid, lysine, proline이 많았으며, tryptophan과 methionine, histidine 및 tyrosine은 적게 함유되어 있었다. 굴젓갈 단백질 구성아미노산중에는 생굴단백질 구성아미노산중 valine과 histdine isoleucine 및 lysine이 감소된 것이 주목을 끌었다. 유리아미노산의 구성을 보면 생굴중에는 proline, taurine, glycine, glutamic acid, alanine이 특히 함유되어 있었으며, 이들 아미노산의 전체 생굴 유리아미노산에 대한 비율은 약 $69\%$에 달하였다. 그리고 젓갈중에는 proline, glutamic acid, glycine, alanine, aspartic acid 및 lysine이 많이 함유되어 있었으며, 이들 유리아미노산은 전체 굴 젓갈 유리아미노산의 약 $65\%$에 달하였다. 굴젓갈 숙성중에 증가한 유리아미노산은lysine, arginine, aspartic acid, glutamic acid, cysteine, isoleucine, tyrosine등을, 그리고 감소한 아미노산은 taurine, proline, leucine등을 들 수 있었다.

액체국에 의한 숙성고추장의 유리아미노산과 유리당의 함량 (Free Amino Acid and Free Sugar Contents of Liquid Koji Kochujang)

  • 액체국(70%, 50%, 30%의 대체구)과 고체국(대조구)을 사용하여 제조한 3개월 숙성고추장의 유리아미노산과 유리당을 분석하였다. 모든 시험고추장에서 글루탐산, 리진, 아스파르트산의 함량이 가장 놓았고 메티오닌, 히스티닌, 트립토판이 가장 낮았다 . 총 유리아미노산 함량은 대조구, 70%대체구, 50%대체구, 30%대체구의 순으로 높았다. 프럭토오스와 람노오스는 모든 시험구에서 검출되었으나 글루코오스는 대조구와 70%대체구에 서만 검출되었다. 유리당 중 프럭토오스는 가장 많은 함량을 나타내었으며 총 유리당 함량은 대조구와 70%대체구가 높았다.
