The effect of lipoxygenase (LOX) on the oxidation and co-oxidation of lipid fraction was studied in the model system of rainbow trout. For the reaction in model system 1 g of lipid fraction and 50mL of enzyme extract(LOX, 140 unit in 50mL phosphate buffer solution at pH 7, 4)), which were obtained from rainbow trout, were homoginized in the presence of Tween 20 and kept at 23$\circ$C for 3 days. The activity of LOX was decreased to 43% of initial level during the reaction in the model system. The initial composition of rainbow trout lipid was showed to be consisted of trigliceride(TG;82%) and free fatty acid(FFA;0.1%), while this converted to 59% of TG and 20% of FIFA, respectively after reaction in model system. Change of fatty acid composition was also observed and the content of linoleic acid, one of the major fatte acids, was decreased to 13% from 54% in the content of total fatty acids after reaction. The carotenoids in rainbow trout were composed of 0.4% $\alpha$-carotene, 1.6% $\beta$ -carotene, 80% canthaxanthin, 7% lutein and 11% zeaxanthin, thus the canthaxanthin was the major component. This canthaxanthin was the most degraded carotenoid by lipoxygenase catalyzed co-oxidation during the reaction. On the other hand the tocopherol isomers found in the rainbow trout were $\alpha$ and $\beta$ -tocopherol, and $\alpha$-tocopherol had a higher degradation rate by the lipoxygenase catalyzed co-oxidation than of $\beta$-tocopherol in the reaction of model system.
In this study, the effects of feeding citrus by-products on the quality and fatty acid compositions of chicken eggs were investigated. Two samples of chicken eggs were used for this study: T0 (eggs of chickens that were not fed citrus byproducts) and T1 (eggs of chickens that were fed 4% citrus byproducts). There was no statistically meaningful difference between T0 and T1 in terms of various properties, such as chemical composition, cholesterol content, minerals, vitamins, pigments, and total structural amino acid. The caloric content of the egg yolk was higher in T1 than in T0, and total free amino acid of egg albumin and egg yolk was higher in T1 than in T0 (p<0.05). There was a not significant difference in SFA:UFA ratio between T0 and T1, but the linolenic acid content was higher in T1 than in T0 (p<0.05). The results of this study show that citrus by-products can be used for feed for laying hens by adding them to general feed.
The CLA used to add in diet was chemically synthesized by alkaline isomerization method with corn oil. To investigated the effects of conjugated linoleic acid(CLA) added diet feeding on CLA accumulation and blood characteristics of pork, a total of 64 Landrace was fed both CLA-free and CLA-added(0.3, 0.6 and 0.9%) diet for 1∼4 weeks. Cholesterol compositions in blood and CLA contents and fatty acid compositions of loin, belly, bone and skin were determined at 1, 2, 3 and 4 weeks after CLA added at fed. The HDL content in blood of all treatments was higher(P<0.05) than that of control and that of treatment 3 was higher(P<0.05) than that of other treatments among the CLA feeding periods. Palmitic, stearic and linolenic acids composition of loin and belly was increased but oleic, linoleic and arachidonic acids composition of them was decreased according to increasing the CLA feeding periods. CLA contents of loin and belly were higher than that of control and increased according to increasing the quantity of CLA and CLA feeding periods. CLA contents of bone and skin were higher than that of control, too. CLA content of skin was higher than that of bone. It was suggested that CLA could be accumulated in loin, belly, bone and skin by dietary CLA supplementation, and the CLA concentration and fatty acid composition in muscle could be affected by CLA level in diet and feeding period.

Nutritional compositions in edible portion of Castanopsis cuspidata seeds were investigated. Moisture content of Castanopsis cuspidata was 24.72 (Wt. %), crude protein was 2.19% (Wt. %), crude lipid was 0.83% (Wt. %), ash was 1.04% (Wt. %), and carbohydrate was 52.63% (Wt. %) in Castanopsis cuspidata seeds. Major amino acids were glutamic acid, aspartic acid, arginine and histidine, and minor ones were alanine, serine, proline, and valine. Sucrose was the highest content of free sugar in the seed. Major fatty acids were linolenic acid (18:3), palmitic acid (16:0) and oleic acid (18:1). Major minerals were P, K, Mg, Zn and Ca at the level of 88.31, 26.00, 13.20, 10.90, and 3.93 mg/100 g, respectively.
Objectives : This study was performed to investigate the effects of Pinelliae rhizoma on blood serum lipids and skeletal muscle fatty acid metabolism of obese Zucker rats. Methods : Experimental groups were divided into normal Zucker rats (lean control; non-treated), obese Zucker rats (fat control; non-treated) and Pinelliae rhizoma oral feeding obese Zucker rats (fat control; treated) for 6 separate experiments. Pinelliae rhizoma was investigated for effects on total body weight, serum glucose content, total cholesterol and triglyceride content, free fatty acid content, PPARalpha, CS and beta-HAD. Results : 1. Triglycerides in blood serum showed a greater decrease in the Pinellia rhizoma oral feeding group than the overweight control group. 2. PPARa showed a significant increase in the Pinelliae rhizoma oral feeding group over the overweight control group in skeletal muscles of SOL and EDL: as for protein FABPc, the Pinelliae rhizomaoral feeding group saw a greater significant increase than the overweight control group in the skeletal muscles of SOL. 3. CS activity showed a greater increase for the Pinelliae rhizoma oral feeding group than the overweight control group in EDL Conclusions : As the experiment's results show, Pinelliae rhizoma effectively decreased the weight and triglycerides of the obese mouse, and somewhat affects the fat oxidation in the skeletal muscles.

This study was carried out to elucidate the effect of different rearing system on cortisol level, stress hormone, and fatty acid composition in the edible muscle tissues. These steers were reared in two different systems including antibiotic-free (ARS) and conservative system (CRS). In the M-Longissimus tissue, cortisol level was significantly lower in ARS than CRS, (p=0.0176). But, the levels of total saturated and unsaturated-fatty acids does not differ in ARS as CRS (p >0.05). However, the total saturated fatty acid levels tended to be greater in CRS and the total unsaturated fatty acid levels tended to be greater in ARS. However, the level of n-6 unsaturated fatty acid was higher in ARS than CRS (p=0.004). Especially, levels of linoleic acid (LA) and ${\gamma}$-linolenic acid (GLA) were significantly higher in ARS (p <0.01). Cortisol level and the n-6 fatty acid content in muscle tissue were negatively correlated (at p=0.00140.) In conclusion, ARS may produce beef with higher quality which contains lower cortisol and greater n-6 fatty acids, such as ALA and GLA.
This study was conducted to compare the major chemical components of Korea Crataegi fructrus (KCF) and Chinese Crataegi fructrus (CCF). Among the proximate compositions, the curde fat content of KCF was lower than that of CCF, whereas their crude protein, crude ash and carbohydrate contents were similar. CCF had a higher total free sugar content than KCF. The major free sugars of KCF and CCF were identified as fructose and glucose. The value of glutamic acid was greater in the amino acids of KCF and CCF, and KCF had higher total amino acids and essential amino acids contents than CCF. KCF also had a higher level unsaturated fatty acids than CCF. CCF had a higher organic acid content, but both KCF and CCF had high citric acid levels. and Chinese The vitamin C contents of KCF and CCF were 272.69 mg per 100 g and 262.38 mg per100 g, respectively. The mineral content of KCF was higher than that of CCF, in the following order : K > Ca > Mg > Fe. The results showed that KCF had higher total amino acid, essential amino acid, unsaturated fatty acid and mineral contents and CCF had higher free sugar and organic acid contents.
Spent coffee grounds (SCG), the residue after brewing coffee beverage, is a promising biodiesel feedstock due to its high oil contents (15-20%). However, SCG should be pretreated to reduce the high free fatty acid content, which hampers transesterification reaction. To overcome this, we explored a direct transesterification reaction of SCG using ultrasound irradiation and identified the optimal sonication parameters. A high fatty acid methyl ester (FAME) content, up to 97.2%, could be achieved with ultrasound amplitude of 99.2 ㎛, irradiation time of 10 min, and methanol to oil ratio of 7:1 in the presence of potassium hydroxide concentration of 1.25 wt.%. In addition, we demonstrated that ultrasound irradiation is an efficient method to produce biodiesel from untreated SCG in a short time with less energy than the conventional mechanical stirring method. The physical and chemical properties of the SCG biodiesel met the requirements for an alternative fuel to the current commercial biodiesel.

The nutritional quality and physiological activity of cultivated hoelen from 13 months to 24 months were examined to compare with natural hoelen. General compositions of hoelen were as follows re spectively; crude protein 1.80~2.50%, crude fat 0.68~1.23%, crude ash 0.12~0.43%, crude fiber 6.30~7.14%, nitrogen free extract 89.25~90.44%. The major free sugar was glucose, and the content of 13 months cultivated hoelen was higher than any other cultivated hoelen. The major fatty acids of hoelen were linoleic acid, palmitic acid, stearic acid and oleic acid. The ratio of unsaturated fatty acids was 62.62~77.96% and the content was higher in cultivated hoelen than in natural hoelen. The contents of amino acid were high in the order of tyrosine, aspartic acid, glutamic acid and serine, and increased as the day of cultivation became longer. The contents of mineral components were higher in the order of Ca, K, Mg and the contents of Na and Ca were higher in natural hoelen than in cultivated hoelen. The contents of pachymic acid and dehydropachymic acid was similar in the natural and cultivated hoelen. On the results of antimicrobial test the ethanol extract showed a stronger effect than water extract, and had an excellent antimicrobial activity on Micrococcus luteus and Escherichia coli. The ethanol extract of hoelen showed comparatively strong electron donating ability. The ethanol extract of hoelen showed a high inhibition activity on the growth of lung cancer, ovary cancer, skin cancer, central nerve cancer and rectum cancer, especially the activity of 19 months cultivated hoelen was the highest. On the above results of nutritional quality and physiological activity of hoelen, it is supposed that the picking date of cultivated hoelen was suitable over than 19 months.
This study evaluated the qualitative properties of lotus root (Nelumbo nucifera) peels as food materials. Proximate composition, sweetness, pH, total acidity, color, mineral, fatty acid, free sugar and organic acid contents of preprocessed lotus root were measured. Crude moisture, protein, and total fiber contents of non-peeled treated Lotus roots were higher than those of peeled treated lotus roots (p<0.05). Lightness and yellowness of color were reduced by peeling process, whereas redness increased (p<0.05). The mineral contents of Mg, Ca, Fe and Na were higher in non-peeled lotus roots, whereas peeled treated lotus root showed higher K contents (p<0.05). The major fatty acids were palmitic, oleic, linoleic and linolenic acids. The total free sugar content of non-peeled lotus roots was higher than that of peeled treated lotus roots (p<0.05). Glucose content was not significantly different, whereas fructose, sucrose, and maltose contents were significantly different. The organic acid and free amino acid contents were higher in peeled lotus roots (p<0.01).
