경북지역 학교 급식소의 위생관리에 대한 자체평가와 외부평가의 분석 (Analysis for Internal Audit and External Audit of the Sanitation/Safety Management Performance for the School Foodservice in Gyeongbuk Area)

  • The purpose of the study was to investigate the effects of the characteristics of dietitians, the characteristics of school food services, equipment ratio of HACCP facility/equipment and perception of barriers to HACCP implementation on external and internal audit of food safety/sanitation management performance in school food service. An e-mail survey was conducted with 144 dietitians in Gyeongbuk Province. A response rate was 57.6% (N = 83) and data was analyzed using SPSS windows (ver. 12.0). Dietitian perceived facilities/equipment-related and stakeholder-related as the big barriers in implementing a HACCP system. Total scores of sanitation/safety management performance for external and internal audit were similar at 92 and 91 out of 100, respectively. 'Facilities/equipment' and 'HACCP system' categories in both external and internal audit were rated the lowest. As dietitian perceived facilities/equipment-related (p < 0.001) and stakeholder-related (p < 0.05) barriers to HACCP implementation were greater, the scores of the external and internal audits were significantly lower. As dietitian perceived barriers for all categories were greater, the scores of internal audits were significantly lower (p <0.05). As a result of multiple regression analyses, the scores of the external audit was positively associated with career as a school food service dietitian, but was negatively associated with barriers related to facility/equipment, while the scores of the internal audit was negatively associated with barriers related to facility/equipment and employees. This study suggests that supporting programs on securing the facilities/equipment and employee training are needed for successful HACCP implementation in school food service.

학교 급식 관리 영양사의 위생 인식 관리와 관련된 직무 수행도 - 경기 지역을 중심으로 - (Studies on the Sanitary Recognition and Perceived Performance of Sanitary Management for School Food Service Managers in the Kyunggi Area)

  • Seven constructs of sanitary management were evaluated in order to examine perceived performance of sanitary management and sanitary recognition for school food service managers in the Kyunggido area. In order to protect from foodborne illness, 331 (58.4%) responded that the most important aspects were sanitary conditions and stability upon food delivery, and the greatest obstacle was limited availability of facilities and equipment (182, 32.2%). The total mean score for the perceived performance of sanitary management was $4.16{\pm}0.445$ (5-point Likert scale). Among three sectors, personal hygiene management was generally well-conducted with a subtotal mean score of $4.52{\pm}0.458$; however temperature management scored lowest with a subtotal mean of $3.71{\pm}0.630$. Chi-square tests were performed according to general characteristics on the two lowest perceived sanitary management performance areas. In temperature management, there was a significant difference in 5 sectors according to age, and the ages $20{\sim}29$ showed the best perceived performance in all sectors. For serving management, a significant difference (p<0.01) was shown in all sectors. In conclusion, foodservice managers perceive that sanitary management is well-executed. However, the combination of proper equipments and facilities would lead to better perceived management.

중국유학생의 한식 메뉴 선호도 및 기숙사 급식만족도 - 목포대 일부 재학생을 대상으로 - (Preference for Korean Food and Satisfaction of Dormitory Foodservice by Chinese Students Studying at Mokpo National University)

  • 본 연구는 중국유학생 한식메뉴 선호도와 급식의 만족도를 알아보기 위하여 목포대학교에 재학중인 중국유학생 총 167명을 대상으로 설문지를 이용하여 조사대상자의 일반적 특성, 한식재료 총 40종의 기호도, 중국학생들의 식습관, 한국음식의 인지도와 선호도, 기숙사 급식실태, 급식서비스 속성에 대한 중요도와 만족도 등을 비교, 분석하였다. 조사대상자는 '남자'가 90명(53.9%), 한국체류 기간은 '1학기 거주'가 97명(58.1%), 건강상태는 '건강함'이 80명(47.9%)임을 알 수 있었다. 한국음식에 대한 인식도로는 '맛이 담백'이 $3.36{\pm}0.95$점, 한국음식 식품군별 기호도는 고기류에서 '쇠고기'가 78명(46.7%), 생선류는 '갈치'가 48명(28.7%), 야채류에서는 '배추'가 39명(24.4%), 과일류는 '귤'이 82명(49.1%), 우유 및 유제품은 '흰우유'가 65명(38.9%) 등이 가장 높았다. 식습관 중 편식여부는 큰 차이가 없었고, 식사하는 이유로는 '공복감 해소'가 72명(43.1%)으로 가장 높았다. 한끼 식사량으로는 '적당하게'가 98명(58.7%), 식사를 거르는 이유로는 '시간이 없어서'가 81명(48.5%), 식습관에 영향을 주는 요인으로는 '가족의 식습관'이 92명(55.1%), 식습관 중 가장 큰 문제라고 생각하고 있는 것으로는 '불규칙한 식사시간'이 67명(40.1%)으로 가장 높았다. 한식 메뉴별 인지도에서는 배추김치, 불고기, 깍두기, 삼겹살, 떡볶이, 갈비탕, 곰탕 순, 선호도에서는 불고기, 돼지갈비찜, 소갈비찜, 닭갈비찜, 삼겹살, 갈비탕, 닭도리탕 순이었다. 인지도와 선호도간의 차이검증 결과는 비빔밥, 떡국, 된장찌개, 김치찌개, 떡볶이, 잡채, 배추김치, 깍두기(p<0.001)에서 유의한 차이가 있었다. 또한 전복죽, 비빔국수, 소갈비찜, 돼지갈비찜, 닭갈비찜, 생선매운탕, 곰탕(p<0.01), 호박죽, 불고기, 닭도리탕(p<0.05)에서도 유의한 차이를 보였다. 기숙사 급식실태는 하루 중 식사 횟수로 '2회'가 79명(47.3%), 식사소요시간으로는 '10~20분 미만'이 109명(65.3%), 급식을 이용하는 이유로는 '의무식 규정이어서'가 62명(37.1%), 급식을 이용하지 않는 이유로는 '맛이 없어서' 76명(45.5%)이 가장 높았고, 식사 시 가장 많이 남기는 음식종류로는 '김치류' 46명(27.5%)이 가장 높았다. 급식서비스 중요도에서는 '식기의 위생'이 $4.22{\pm}0.77$점, 만족도에서는 '식사 후 냅킨 거울 급수시설의 설비'에서 $3.64{\pm}0.80$점으로 가장 높게 나타났다. 중요도와 만족도의 차이검증 결과는 식당의 위치를 제외한 모든 항목에서 유의한 차이(p<0.001)가 있었다. 이와 같이 중국유학생들의 급식 만족도를 높이기 위해서는 학생들의 요구에 맞는 맛과 다양성을 추구하고 이를 반영하여 음식 맛을 개선하고 음식 맛을 돋을 수 있는 형태나 외관에 대해서도 만족할 수 있는 조리법을 개발하는 단체급식이 되도록 노력해야 할 것으로 보인다.

서울지역 학교급식 위생관리 실태평가 (Assessment of Sanitary Management Practices of School Foodservice Operations in Seoul)

  • 본 연구에서는 서울 소재 초등학교와 고등학교 급식의 위생관리 실태를 분석하므로 학교급식의 안전성을 확보하여 식중독 사고예방 및 급식품질 개선을 이루고자 하였다. 이를 위해 HACCP에 기준한 위생관리 평가도구를 설문지로 개발하여 관리자들이 자가 평가하게 하고,그 결과를 분석하여 위생관리 실태를 파악하고 취약한 부분을 규명하였다. 위생관리 평가도구는 온도 소요시간, 개인위생 및 기기 설비위생의 3영역으로 구분 하여 33문항, 5문항, 15문항씩 총 53문항으로 구성하였다. 평가문항에 대해서는 5점척도를 이용하여 표시하도록 하였다. 조사된 학교는 초등학교 98.4%(253개교), 고등학교 1.6%(19개교)였다. 세 영역중 개인위생에 관한 수행수준은 평균 4.06$\pm$0.57로 나타나 가장 잘 수행되는 것으로 조사되었다. 기기.설비위생의 수행수준은 평균 3.84$\pm$0.53로 나타났고, 온도.소요시간은 평균 3.45$\pm$0.46으로 나타나 보통정도의 수행수준으로 조사되었다. 특히 전체 문항중 수행수준이 가장 낮은 것으로 조사된 ‘조리 후 보관(2.03$\pm$0.94)’의 경우는 현행 학교급식업체들이 조리가 끝난 식품을 취급할 열장 또는 보온 기기, 냉장고를 거의 구비하지 못하고 있으며, 조리된 음식이나 차게 배식하는 음식의 적정 온도유지를 위한 온도계 사용이 전혀 이루어지지 않고 있기 때문인 것으로 사료 된다. 기기 설비위생영역에서 가장 낮은 수행정도를 보인 ‘싱크대의 용도별로 분리사용 여부(3.03$\pm$1.10)’와 ‘손 씻는 시설의 적절한 장소 위치 여부(3.07$\pm$1.13)’의 수행수준을 향상시키려면 적절한 개수의 싱크대를 구비해야 하며, 조리실내에 손 씻는 시설을 갖추어야 할 것이다. 결론적으로 학교급식 안전성 확보를 위한 위생관리 업무 향상을 위해서는 본 연구에서 가장 취약한 부분으로 드러난 시설 및 기기들을 우선 보완해야 할 것으로 사료된다.

사업체 근로자의 영양서비스 요구도 분석 (Nutrition Service Need Assessment for Industrial Employees)

  • The purposes of this study were to assess the importance and performance level of nutrition service in views of industrial employees and to explore the ways to improve the nutrition service quality. A survey of industrial foodservice operations located in Korea was undertaken and detailed information was collected from each, including surveys of 994 industrial employees. Statistical data was analysed by SAS PC 6.04 for descriptive analysis, t-test, and analysis of variance. The whole industrial employees assessed the importance and performance of the dieticians' role on nutrition service as '4.03' and '3.32' out of 5 respectively, which suggests that the industrial nutrition service needs to be improved. The variables which received higher scores than the average mean were safe meal provision, sanitation management and equipment & facilities management, whereas the score of individual nutrition counselling was low compared to other variables of nutrition service. The groups who scored low performance were characterized by labor work, experience with less than 10 years, single, aged below 29 years old, and female.

대학생 외식소비자의 불만족, 불평행동, 보상방법 등이 재방문 의도에 미치는 영향에 관한 연구 (College Students' Dissatisfaction, Complaints, Compensation and Repurchase Intentions of Food services)

  • The aim of this study was to analyse the consumer dissatisfaction, complaint and repurchase intentions in foodservices with a particular focus on college students. For this investigation we analysed the responses of 520 college students interviewed from Daegu Gyeongbuk Province. The SPSS/WIN version 12.0 and AMOS version 6.0 were used to analyse collected data. The results were as follows : 1) Factor analysis identified 5 different consumer dissatisfaction factors: facilities, waiter/waitresses behavior, food quality, service, store operating. The level of food quality dissatisfaction was most high. Consumer complaints came in three forms: public, personally and no action. The level of personal complaint was most high. 2) AMOS analysis found that public complaints had the most influence on repurchase intentions. 3) Dissatisfaction was highest with fast food restaurants, which also received the most public complaints. 4) Dissatisfaction, complaints, and compensation strongly influenced eating-out and spending motivation of college students.

음식서비스공간 개발방안에 관한 연구 (A Study on the Space Planning in the Foodservice Facility)

  • Determination of the space requirements for a restaurant is a difficult task. Because the space required is dependent upon many factors which are not constant for all types of restaurants. Today, the guides and procedures that be given are to be regarded as tentative and subject to easy change. This study tired to present the efficient methods and procedures of the space planning of restaurant. Thus, this study is on the purpose of nexts. First, finding the variables involved in the development of the model. Second, describing the approach method of modeling the facility. Third, depicting the methods and procedures of estimating the sizing of serving facilities. Fourth, developing the alternatives of sizing the space required for the facility. As illustrated, this study used the results of the model estimates and emphasized the importance of accurately evaluating the following factors. First, total number of persons to be fe. Second, meal period. Third, number of persons I the dining room. Fourth, number of persons in the serving area. Fifth, vacancy ratio.

워크샘플링에 의한 사업체 급식소 영양사 업무 분석 및 소요시간 산출 (Work Analysis and Time Measurement of Dietians in Employee Feeding Facilities by Work Sampling Methodology)

  • The purposes of this study were to: a) investigate the percentage distribution and the time spent of dietetic activities and b) estimate dietitian's staffing needs in employee foodservices. In 6 employee foodservices, the dietetic activities were analyzed by work sampling methodology. The results of this study were as follows: 1. The percentage distributions of dietetic activities, delay and non-dietetic activities were 79.06, 20.39, and 1.55%, respectively; 2. The major activities of dietitians in employee foodservice were production management 21.00%, purchasing management 16.73%, record keepig 14.40%, and menu management 6.30%, 3. The total labor time per week was 3,310 min (55.16 hr) and specially the time spent on 13 dietetic activities was 2,626 min (43.77 hr). 4. The time spent per week on major activities of dietitians such as production management, purchasing management record keeping, and menu management were 693.93, 554.83, 483.99, and 205.22 min, respectively.

경남지역 일부 보육시설 원아의 영양섭취에 관한 연구 (Foodservice and Nutrition Survey of Children of Day Care Centers in Gyeongnam Area)

  • Investigation of foodservices was carried out in 7 different day care centers in Gyeongnam area and no trition survey of their 481 children were undertaken between October 5 and November 3, 1994. The results were summarized as follows: Conditions of most equipments and facilities used in the kitchen were very defective especially in dishwashing and sterilizing step. Number of cooks and assistant cooks in foodservices was 1 or 2. Purchasing of foods and planning of menu were mainly done by the manager or the secretary. Menu was cycled weekly. None of the day care centers has empolyed a dietitian. Mean values of height and weight of children showed slightly over the standard of Korean children. Mean intakes of energy and all the nutrients from the lunch, which was served by day care centers, were below 30% of the Korean RDAs. Mean value of protein, thiamine and niacin were above 25% of the RDAs. Intakes of Ca, Fe and Riboflavin were lower than the ones of other nutrients. It is suggested that dietitians should be empolyed to take care of meal services and nutrition education for the children.

패밀리 레스토랑의 물리적 환경변수에 따른 외식 소비자의 품질평가와 만족 (Family Restaurant Customers' Quality Evaluation and Satisfaction Depending on the Physical Environmental Variables)

  • This research suggests critical and specific decisive variables that affect general service quality of the products in family restaurants, considering features of services in which consumption and production happens simultaneous by collecting the raw data through point of sales. It also analyses the factors and helps to offer them practical strategies by providing managers of the restaurants and marketers with empirical viewpoints based on the research. Generally, family restaurants need their own physical environment and are required to encourage customers to revisit themselves by maintaining pleasant environment as well as, considering space for customers and for employees' working routes and effective maintenance of the facilities. The result of the study also tells that even if the unimportant factors did not affect much on the restaurants, management over these factors can be a differentiated strategy for competitive advantage over the other businesses.
