Monitoring of Crude Fat and Trans Fatty Acids Contents of Take-Out Foods in Daejeon, Chungcheong Province (대전, 충청 지역에서 판매되는 즉석식품의 트랜스지방 및 조지방 함량 모니터링)

  • This study was designed to determine the trans fatty acid (tF A) contents of 41 take-out food items in Daejeon and Chungcheong Province. Total fatty acid composition and tFA contents of samples were determined by gas chromatography (GC) after fat extraction (Folch method). Maximum fat content among the observed samples was obtained from theater popcorn (13.74${/cdot}$38.09%) while minimum content was observed from the glutinous rice doughnut. 31${/cdot}$5.44%). The contents of tFA (g/100 g food) in toasts, glutinous rice doughnut and ggwabaegi (twisted doughnut sold in streets) ranged from 0.02 to 0.56 g while those in fried sweet potatostick (from highway resting place), fried squid and theater popcorn ranged from 0.05 to 3.08 g/100 g. As a result, most samples showed the tFA content as less than 1 g (g/100 g food) except one sample from theater popcorn which contained 3.08 g (g/100 g food) as tFA content.

  • To date, detection of microbial populations in dairy products has been performed using culture media, which is a time-consuming and laborious method. The recently developed chromogenic media could be more rapid and specific than classical culture media. However, the newly developed molecular-based technology can detect microbial populations with greater rapidity and sensitivity than the classical method involving culture media and chromogenic media. This molecular-based technology could provide various options for monitoring the characterization of different states of bacteria and cells. Thus, it could help upgrade the processing system of the dairy industry so as to maintain the safety and quality of dairy foods. Among the various newly developed molecular-based technologies, flow cytometry can potentially be used for monitoring microbiological populations in the dairy industry if official international standards are available for this purpose. When omics technology would have biomarker identification, it could be regarded as the rapid and sensitive analytical methods. Methods based on PCR, which has become a basic technique in microbiological research, can be developed and validated as alternative methods for quantification of dairy microorganisms. This review discusses methods for monitoring microbiological populations in dairy foods and the limitations of these studies, as well as the need for further research on such methods in the dairy industry.

A Study on the Risk Assessment of Pesticide Residues of Agricultural to Ensure Military Food Safety (군 식품 안전성 확보를 위한 농산물 잔류농약 위해도 평가 연구)

  • To ensure safety of raw materials for military foods, hazard assessment and monitoring of residual pesticides was conducted on agricultural products consumed by 9 companies based in Gyeongin and Gangwon. Residual pesticides were analyzed for 142 different products, by applying the multi-species pesticide polycomponent analysis method. Of the 36 samples analyzed, residual pesticides were detected in 7 samples, representing a detection rate of 19.4%. One particular pesticide residue was detected in peanuts, green onions, and red pepper powder, and 20 types of pesticide residues were detected in red pepper powder used in combat foods. However, all residues were found to be below the permissible level. Moreover, the hazard assessment results for Cypermethrin, Tebuconazole and EPN showed the highest concentration among the residual pesticides detected. Since the estimated intake was less than 100% as compared to the ingestion limit, it was considered to be safe. I have suggested the edit as per my understanding. Please review for accuracy, and revise appropriately if required. This is the first pesticide Risk Assessment study encompassing military requirements. Considering the results, we expect further application research, including research on reducing hazardous materials.

Monitoring on the Foods not Approved for Irradiation in Korea by PSL and TL Detection Method (광자극발광법과 열발광법을 이용한 국내 방사선 조사 허용 외 식품에 대한 실태 조사)

  • This research was conducted to assess applicability of photostimulated luminescence (PSL) and Thermoluminescence (TL) methods for investigation of infant and young children products, nut, seasoned dried fish, spice, dried fruits, fruit & vegetable, grain and marine products, which are not approved for irradiation in Korea. PSL results show that the photon counts of non-irradiated samples were lower than 700, while those of irradiated samples were higher than 700. In TL measurement, TL ratio of irradiated samples were higher than 0.1 or ones can decrease below 0.1 whereas the temperature range of TL Glow curve was between $150{\sim}250^{\circ}C$. Monitoring result about 8 class of 325 not approved to irradiated foods, photon counts of samples were less than 700, and after re-irradiation TL Ratio ($TL_1/TL_2$) through re-irradiation step at 1 kGy were higher than 0.1 for the all samples. Therefore, these results suggested that PSL and TL measurements were useful detection methods for 8 class food products not approved to irradiation in Korea and all sample (325 cases) were not irradiated when we analysed by PSL and TL methods.

Preliminary Acrylamide Monitoring of Domestic Heat-Treated Food Products (국내 가열식품군의 아크릴아마이드 예비 모니터링)

  • Acrylamide is considered as potential carcinogen and genotoxicant. Swedish National Food Administration reported that acrylamide was detected in heat treated starch rich food products. Acrylamide formation during food processing was confirmed by researchers of other countries including UK, Norway, Japan, Switzerland, and United States. It is noticed that the formation of acrylamide in potato products was greater than other food products. It may be due to high concentration of asparagine and glucose in potato products comparing to those of other food products. Interaction between asparagine and glucose during heat treatment resulted in acrylamide formation via Maillard reaction. Analytical method (LC-MS/MS) adopted by FDA was performed to monitor acrylamide concentrations in domestic food products. Acrylamide quantitation in several food categories, such as raw materials, boiled foods, fried foods, hardtacks, breads, breakfast cereals, potato chips, french fries, biscuits, and others, were carried out.

Computation of Maximum Edible Time using Monitoring Data of Staphylococcus aureus in Kimbap and Food MicroModel (Food $MicroModel^\circledR$과 황색포도상구균의 모니터링 자료를 활용한 시중 유통 김밥의 최대섭취유효시간 산정)

  • The prevention of infectious disease from contaminated foods is very important in public health. Quantitative microbial risk assessment has been used in advance countries to achieve the safety of public health against hazardous microbial causing contaminated foods. This study was conducted to estimate maximum edible time without producing enterotoxin from Staphylococcus aureus in Kimbap selling at different domestic store using Food MicroModel and monitoring data and to compute maximum edible time by temperature with 99th percentile safety probability based on only restaurant data. For estimating maximum edible time, model operation conditions like reaching time at 2 ${\times}$ 10$^{7}$ , which enterotoxin was known as producing point from S. aureus, temperature of 28∼3$0^{\circ}C$, pH 5.2, NaCl 0.22%, aw(water activity) 0.99, and intaking one serving size of 171g in Kimbap were considered. Estimated maximum edible times by regarding outdoor temperature in summer were 3.9∼4.6 hrs in restaurant, 6.7∼7.9 hrs in department store and 7.4∼8.7 hrs in convenient store. Based on restaurant data, estimated maximum edible times with 99th percentile safety probability by temperature were 1.9 hrs in 3$0^{\circ}C$ and 17.7 hrs in 15$^{\circ}C$.

[ 137Cs] and 40K Activities of Foodstuffs Consumed in Jeju (제주지역에서 소비되는 식품 중 137Cs과 40K 방사능 농도)

  • This work was conducted to provide the reference data of radioactivity in the foodstuffs at a radiological emergency situation in Jeju Island The sampled foodstuffs were agricultural (31), livestock (6), marine (12) and forest products (4), and processed foods (3) consumed by Jeju Islanders. $^{137}Cs$ and $^{40}K$ activities were determined by HPGe r-ray spectromety. The activity ranges of $^{137}Cs$ was ${\sim}650\;mBq/kg$ fresh in the agricultural products, ${\sim}131\;mBq/kg$. fresh in the livestock, ${\sim}834\;mBq/kg$ fresh in the forest, ${\sim}253\;mBq/kg$ fresh in the marine and $32.0{\sim}483\;mBq/kg$. fresh in the processed foods (tea). In case of $^{40}K$ the activity was $16.6{\sim}542\;Bq/kg$. fresh in the agricultural products, $39.1{\sim}294\;Bq/kg$ fresh in the livestock, $85.5{\sim}116\;Bq/kg$ fresh in the forest, $50.1{\sim}657\;Bq/kg$ fresh in the marine, and $33.6{\sim}1,065\;Bq/kg$ fresh in the processed foods (tea). The highest activity of $^{137}Cs$, 834mBq/kg fresh was observed in oak mushroom and $^{40}K$ 1,065 Bq/kg fresh in coffee. Annual effective doses of $^{137}Cs$ and $^{40}K$ by intake of foodstuffs per capita were the following order; agricultural products (66,543 nSv) > livestock products (19,311 nSv) > processed foods (6,648 nSv) > marine products (6,579 nSv) > forest products (860 nSv). Therefore, total annual effective dose was summed 99,941 nSv which is quite low level comparing to the annual effective dose by external exposure, 2,400,000 nSv. The data obtained in this study can be useful for monitoring whether the foodstuffs are contaminated or not at an emergency radiation accident, and showed that the foodstuffs consumed in Jeju are safe in terms of annual effective dose of $^{137}Cs$ and $^{40}K$

Analysis of Recipes for Korean Foods in Web Sites (레시피 관련 웹 사이트 중 한국음식 레시피의 자료 분석 및 검토)

  • Food and nutrition sites are the major portion of the health information sites. For the point of public health it is very important to secure validity and reliability of information on those web sites. Therefore, in this study we would like to identify problems when acquiring recipes in web sites by analyzing and reviewing recipes in web sites. To investigate Korean food recipes provided in web sites, domestic search engines such as Simmani, Naver, Hanmir, and Empas and foreign search engines such as Yahoo Korea, Lycos and Altabista Korea were used. Searchs were done using 'recipe' and 'Joribeob (cooking method)' from March 20, 2002 to June 20, 2002. Informations in each sites were reviewed and analyzed Results are as follow; When classifying 46sites searched with 'Joribeob' by the information provider, 24sites were individual, 16sites were corporate and 6sites were others. When searching 'recipe', total 12,654recipes were returned. Out of them, individual provided 2,581sites(20.4%), corporate provided 7,249sites(57.3%), and others provided 2,824sites(22.3%). 9,979(78.9%) recipes out of 12,654recipes were proved to be appropriate as Korean food. Classifying recipes by dish group, vegetables 11.7%, soups and hot soups 9.7%, stew and casseroles 8.2%, pan cakes 8.0%, stir fried foods and skewers 7.8%, rice 7.2%, hard boiled food 7.1%, steam 6.4%, noodles and mandu 5.3%, Kimchi 4.5%, fried 4.1%, and porridge 3.7% in order. 21.1% of recipes were not appropriate as Korean food but provided as Korean Food. The proportion of individual as the information provider were higher than that of enterprises. Recipes from enterprises were based on food and nutrient information and more reliable. However, there were some cases that they provided the same amount of ingredients with different calories or provided the same calories with different ingredients. Additionally, depending on sites, they provided different calories even for the same recipe. There were some cases that the calories provided on the site were too high or too low, for the suggested amount of ingredients and serving size. Recipes those provide amount of calories were evaluated using the nutrient analysis program. Calculated calories and provided calories on the Web were compared together. There are difference between two valus. With these results, it may lead misuse of recipe by those who need accuracy in diet such as patients or who are interested in recipe information for academic purposes. These results could be used as basic materials to improve quantity and quality of recipes in the future. Also, to improve the accuracy of recipies for Korean foods in the web sites, there should be some systems to monitor and let internet users know monitoring results.

Tar Colors in Foods Distributed throughout the Gyeong-In Region;Monitoring Favorite Food Items of Children Near Elementary Schools (경인지역 유통식품 중 타르색소 실태 조사;학교주변 어린이 기호 식품을 중심으로)

  • In Korean, nine tar colors are permitted in foods. This study assessed these compounds in the favorite food items of children found near elementary schools. A total of 439 items categorized under six food types were included in the analysis. The most frequently detected tar colors were tartrazine (Y4), Brilliant Blue FCF (Y5), Allura Red, and Sunset Yellow FCF, respectively. One or a mixture of two tar colors were commonly found in products such as gums, ice bars, soft drinks, and cereals. However, most often, combinations of two or three tar colors were detected. The levels of tar colors in candies, chocolates, gums, ice bars, cereals, and soft drinks were 0.11-1169.58 mg/kg, 0.73-468.02 mg/kg, 0.10-602.46 mg/kg, 0.25-162.32 mg/kg, 0.11-753.68 mg/kg, and 0.21-69.45 mg/kg, respectively. Tar color levels were higher in chocolates and gums than in soft drinks and ice bars. And Y4 and Y5 were detected at the highest levels. For ages 7-12, the total estimated daily intake (${\sum}EDI$) of each tar color ranged from 0.004 to 1.017 mg/day/person. These values were 0.02-5.98% of the FAO/WHO's acceptable daily intake (ADI).

Screening of anti-obesity drugs, their analogues and prohibited ingredients in slimming foods (식품 중 부정 혼입된 비만치료제 및 사용금지 성분 실태조사)

  • Globally, obesity has been recognized as a serious health problem. Recently, slimming foods for weight loss and maintenance were found to contain anti-obesity drugs, their analogues, and prohibited ingredients. To avoid inspections by the Government, structurally modified analogs have been continuously synthesized. For rapid determination of adulterated slimming products, we simultaneously analyzed 21 illegal compounds using liquid chromatography (LC) equipped with photo diode array, and LC coupled with tandem mass spectrometry. The validation of the method was performed with regard to selectivity, linearity, limit of detection, limit of quantification, precision, and accuracy. We purchased 128 samples from the Korean market and online sources in the year 2015. In 31 samples, 3 illegal compounds were detected as follows: 9.9-135.3 mg/g of sibutramine, 0.2-17.5 mg/g of yohimbine, and 1.8 mg/g of icariin. This simultaneous detection method might prove to be a simple and rapid analysis for monitoring illegal compounds in slimming foods.
