영양교육이 음식물쓰레기 감량화에 미치는 효과 (Effects of Nutrition Education on Food Waste Reduction)

  • This research was performed to evaluate the effects of nutrition education on food waste reduction at school food service. A dietitian conducted nutrition education on environmental protection and proper eating attitude and poor eating habits for 3rd and 5th graders at an elementary school in Seoul. The effectiveness of the education was evaluated by surveying the students before and after the education; 375 responses were analyzed. A questionnaire was designed to compare changes of the students' attitudes and plate waste before and after education. Plate wastes of boiled black rice(p<0.05), potato soup(p<0.05), amaranthus herb salad(p<0.01), and cabbage kimchi(p<0.05) decreased significantly after education. Students' eating attitudes improved significantly(t= -6.22, p<0.01) after nutrition education. Major reasons the students did not eat all foods they were served were large portion sizes (30.59%), low menu preference (29.79%), and tastes (17.82%). The menus with high plate waste rates were cooked vegetable items (35.64%) and soup items (26.6%). After education, students' attitudes on ‘food waste pollutes the Earth(p=0.013)’, ‘food preparation for birthday parties(p<0.01)’, and ‘restaurant selection for eating out (p<0.01)’ changed significantly. After education, plate waste and portion sizes that the students perceived were not negatively correlated. In conclusion, nutrition education on proper eating habits and source reduction is an effective method to reduce food waste generation and to improve students' eating attitudes and awareness on environment.

가정에서의 음식물류 폐기물 처리에 대한 사용자 경험 연구 (A Study on the User Experience of Food Waste at Home)

  • 음식물류 폐기물이 야기하는 환경오염 문제는 오랫동안 사회적인 문제였으나 2013년 런던협약 가입으로 인해 음·폐수 해양배출이 금지되면서 한층 심각해졌다. 최근 정부의 음식물류 폐기물 관련 종합 대책의 실시는 감량 성과와 자원화에 많은 기여를 하였으나 지속적으로 시행되지 못하였고 폐기물의 발생 분야별로 적절하게 대응하는 전략의 부족이 지적되었다. 많은 연구에서는 효과적인 감량 정책 시행을 위해서 무엇보다 시민의 참여가 중요하다고 강조하고 있다. 이 연구는 사용자 경험 분석을 기초로 음식물류 폐기물 처리기를 디자인하여 시민의 참여를 높이는 방안을 제안한다. 이를 위해 선행연구에 대한 다각적인 조사·분석, 표적 집단 인터뷰 및 사용자 여정지도를 포함한 사용자 경험연구를 통하여 디자인 개발 방향을 설정하였다. 연구 결과로 도출된 처리기는 폐기물의 수시 배출이 용이해지며 가정 내에서 음식물류 폐기물 배출 과정이 간단해진다. 또한 사용자와 폐기물이 직접적으로 접촉하는 순간은 처리기에 배출하는 시점으로 제한하여 사용자가 겪었던 부정적인 경험을 최소화함으로써 폐기물 감량을 위한 사용자의 적극적인 참여를 유도하였다.

  • The purpose of this study is to closely examine the changes of food and drink waste amounts, and student's environmental literacy. By using creative methods, discretional activity classes, and programs to dispose of food and drink waste from students schoolmeals, and at the same time conduct and teach environmental education classes. To achieve this, students were given ten class lessons in creative discretional activities. Students were given flowerpots containing earthworms and were instructed to raise them, using food and drink waste from school meals. Four classes who were participating in project were examined for changes from March to July 2005. As a result the environmental education classes through creative discretional activities didn't have any significant influence on the students environmental literacy. However it did make a difference to the student's in-terms of their ecological knowledge. The project using earthworms to dispose of food and waste drink showed a decrease of 15% of the amount of waste food and drink from school meals. Moreover student's environmental literacy had been significantly influenced about environmental sensibility, value and causes. Through this study I found that the project using earthworms to dispose of waste food and drink, and creative discretional activities as a lesson decreased the amount of food and drink waste at the school, and the changes to students concerns and understanding about environmental sensibility, value and the various causes of waste food and drink.

Predicting Methane Production Potential of Anaerobic Co-digestion of Swine Manure and Food Waste

  • Anaerobic co-digestion of swine manure and food waste for biogas production was performed in serum bottles at 2% volatile solids(VS) concentration and various mixing ratios of two substrates(swine manure: food waste = 100 : 0 $\sim$ 0 : 100). Through kinetic mode of surface methodology, the methane production was fitted to a Gompertz equation. The specific methane production potential of swine manure alone was lower than that of food waste. However, maximum methane production potential increased up to 1.09-1.22% as food waste composition increased up to the 80%. The maximum methane production value of food waste was 544.52 mL/g VS. It was observed that the maximum methane production potential of 601.86 mL/g VS was found at the mixing ratio of 40:60.

전북지역 주부들의 외식행동과 음식물 쓰레기에 대한 의식 조사 (A Survey on Consciousness of Eating out Behavior and Food Waste by Housewives in Jeonbuk Area)

  • The purpose of this study was to investigate several aspects of eating out behavior especially in relation to food waste. The data were collected from 620 housewives in Jeonbuk area but, except for 134 case not eating out . The 66.9% of subjects ate eating out 1 to 2 times monthly. The younger in age, higher in education level and employed housewives, higher in monthly income have a more increase in eating out frequency. In the 50.8% of subjects food rest was rare when eating out. The higher in educational level and higher in monthly income have an inclination to more food waste. The 51.4% of subjects don't know [Good Menu System]. We housewives should order a planned and moderate food amount when eating out, and make an effort normally anywhere for the reduction of food waste, and then the wasted food and food rubbish will be reduced. Besides this, the restaurants should practice [Food Bank] & [Good Menu System] and the academic world should make further researches on this field. Moreover the government administration should enlighten the people and have a public information for the more reasonable food culture.

로터리식 저염화 공정설비에 의한 음식물 쓰레기의 염분농도 저감 (Reduction of Salt Concentration in Food Waste by Salt Reduction Process with a Rotary Reactor)

  • 우리나라 음식물 쓰레기를 자원화하여 사료나 퇴비로 활용되는 과정에서 일어나는 고농도의 염분 문제를 해결하고 자원화 공정에서 배출되는 침출수의 수질 개선을 위하여 음식물 쓰레기에 소량의 물을 첨가하여 희석/탈수방법에 의한 로터리식 저염화 공정설비를 설계 제작하여 음식물 쓰레기에 함유된 염분 저감 실험을 수행하였다. 개발된 로터리식 저염화 공정설비는 시간당 0.5톤의 음식물 쓰레기를 연속적으로 투입할 수 있는 파이롯트 설비이며, 설비 가동시 첨가되는 물의 양은 음식물 쓰레기의 함수율에 따라 산출되는데 음식물 쓰레기 1kg당 약 0.8리터의 수돗물이 일정한 유속으로 로터리형 저염화 반응조에 분사 투입되면서 희석/교반/탈수공정에 의하여 저염화가 진행되는 구조이다. 설비의 성능 평가를 위하여 대학의 구내식당에서 배출되는 음식물 잔반을 수거한 그대로 설비에 투입하여 시험가동을 거친 후 실증 실험을 수행하였는데 염소이온의 침전 적정법, 전극에 의한 salinity측정법으로 염분의 저감도를 평가한 결과 음식물 쓰레기를 1차 탈수한 후 희석/교반/탈수에 의한 운영방법으로 항상 50%이상의 염분 저감효율을 얻을 수 있었다. 설비가동시 배출되는 침출수는 첨가된 물의 양을 포함하여 음식물 쓰레기 1kg당 약 1.1리터가 배출되는데 유기고형물질의 양이 매우 많아서 망에 의한 중력여과와 원심분리에 의한 고액분리에 의하여 유기성 고형 물질을 대부분 회수하여 자원화용으로 반출될 제품에 재투입하여 자원화용으로 반출될 제품의 품질 저하를 감소시킬 수 있었으며, 최종 침전조 상등수의 TS가 최저 $200mg/{\ell}$까지 수질 개선 효과를 얻을 수 있었다.

Exploring sustainable resources utilization: Interlink between food waste generation and water resources conservation

  • The persistence of drought periods and water scarcity is a growing public concern, as climate change projections indicate a more critical scenario in the future. The sustainability of water resources for the increasing population, and to ensuring crop production will unarguably be a daunting task for the water resources managers, with a projected 9.8 billion people by 2050 as well as the need to increase food production by 70 to 100%. Consequently, there is a need for significant irrigation water use for more crop production in the face of stiff competition among water users. However, the available natural resources are already over-constrained, and the allocation of more resources for food production is not feasible. Currently, about two-thirds of global water withdrawer is used by the agricultural sector while 48% of water resources in Korea is used for agricultural production. Despite the apparent ecological deficit and unfavorable conditions of resources utilization, a staggering amount of food waste occurs in the country. Moreover, wastage of food translates to waste of all the resources involved in the food production including water resources. Food waste can also be considered a serious potential for economic and environmental problems. Hence, exploring an alternative approach to efficient resources utilization in a more sustainable way can ensure considerable resources conservation. We hypothesized that reducing food waste will decline the demand for food production and consequently reduce the pressure on water resources. We investigated the food wastage across the food supply chain using the top-down datasets based on the FAO mass balance model. Furthermore, the water footprint of the estimated food wastage was assessed using the representative of selected food crops. The study revealed that the average annual food wastage across the food supply chain is 9.05 million tonnes, signifying 0.51 kg/capita/day and 48% of domestic food production. Similarly, an average of 6.29 Gm3 per annum of water resources was lost to food wastage, which translates to 40% of the total allotted water resources for agriculture in the country. These considerable resources could have been conserved or efficiently used for other purposes. This study demonstrated that zero food waste generation would significantly reduce the impact on freshwater resources and ensure its conservation. There is a need for further investigation on the food waste study using the bottom-up approach, specifically at the consumer food waste, since the top-down approach is based on estimations and many assumptions were made.

Plate waste study among hospitalised patients receiving texture-modified diet

  • BACKGROUND/OBJECTIVES: While plate waste has been widely investigated in hospitals, there have been minimal studies specific to the texture-modified diet (TMD). This study aims to determine the percentage of plate waste among patients prescribed with TMD and its contributory factors. SUBJECTS/METHODS: This was a single-centre study conducted in the university hospital on three types of TMD (blended diet, mixed porridge, minced diet) during lunch and dinner meals. Weighing method and visual estimation method assisted by digital photograph were adopted in this study. Face to face interview was carried out to investigate on 1) the food/food service quality factors in terms of patients' satisfaction level towards sensorial quality of food and food services provided and 2) the clinical/external factors including appetite, the provision of oral nutrition support, time taking the diet, the need for feeding assistance and the length of hospital stay. RESULTS: The mean percentage of overall plate waste of 95 patients receiving TMD was high (47.5%). Blended diet was identified as the most wasted diet (65%) followed by minced diet (56%) and mixed porridge (35%). Satisfaction level among patients was moderate. Patients on TMD in general had higher satisfaction level on the aspect of food service as compared to food quality. Substantial association between sensorial qualities of food and plate waste were varied according to individual TMD type. A multiple linear regression showed that only the satisfaction level toward the aspects of appearance and variety of foods were the predictors of TMD plate waste (R2 = 0.254, P < 0.05). CONCLUSIONS: A significant relationship between the percentage of plate waste and the overall satisfaction level of patients receiving TMD suggests that vigorous strategies are needed to reduce the food waste of TMD which will lead to a better nutritional status and clinical outcomes among the patients.

Screening of Agricultural and Food Processing Waste Materials as New Sources for Biodegradable Food Packaging Application

  • Agar-based composite films were prepared with variety of food processing and agricultural processing waste materials in order to screen natural lingo-cellulosic resources for the value-added utilization of the under-utilized materials. The effect of these waste materials (10 wt% based on agar) on mechanical properties, moisture content (MC), water vapor permeability (WVP), water absorption behavior of biocomposite films were investigated. Biocomposite films prepared with various fibers resulted in significant increase or decrease in color and percent transmittance. The MC, WVP, and surface hydrophobicity of biocomposite films increased significantly by incorporation of fibers, while the water uptake ratio and solubility of the film decreased. SEM images of biocomposite film showed better adhesion between the fiber and agar polymer. Among the tested cellulosic waste materials, rice wine waste, onion and garlic fibers were promising for the value-added utilization as a reinforcing material for the preparation of biocomposite food packaging films.
