감마선 조사가 한우육의 지방산패에 미치는 영향 (Effect of Gamma Irradiation on Lipid Oxidation of Korean Beef)

  • 감마선 조사$(1{\sim}5\;kGy)$된 우육(사태부위; M.Semitendinosus)의 저장 안전성을 살펴보기 위하여 실온$(25^{\circ}C)$과 냉장$(4^{\circ}C)$온도에서 10일 동안 포장방법(함기, 진공)별로 저장하면서 과산화물가, TBA가, 휘발성 염기태 질소함량을 측정하여 다음의 결과를 얻었다. 총지방 함량은 $4.4{\sim}4.7%$로 감마선 조사에 따른 변화는 없었고, 과산화물가와 TBA가는 모든 시험군에서 저장기간이 경과됨에 따라 증가되었으며, 실온저장이 냉장보다 그리고 함기포장이 진공포장보다 높은 산패도를 보였고, 감마선 조사에 의한 영향은 선량이 높아짐에 따라 증가되었다. 휘발성 염기태질소 함량은 감마선 조사직후에는 비조사군과 조사군간에 차이가 없었으나, 저장기간이 경과함에 따라 진공포장하여 $3{\sim}5\;kGy$ 조사후 냉장한 시험군이 가장 낮은 함량을 나타내었다.

재가노인들을 위한 무료급식소의 식단 평가 (Evaluation of the Menus of Free Meal Service Centers for Home-bound Elderly)

  • The purpose of this study was to evaluate the diet quality of the menus delivered by 17 free meal service centers for the low-income home-bound elderly in Chung- cheong buk-Do. Statistical data analysis was compleleted using the SPSS package program for descriptive analysis, T-test, and ANOVA. The meals offered by free meal service centers were not met the 1/3 recommended dietary allowances in calcium and vitamin $B_2$. There were significant differences between dependent variables(nutrient content, nutrient density, nutrient deficiency, NAR, MAR, food group intake patterns) and independent variables (operation type, operation status, operation period, nutritionist, food cost).

HACCP 적용 학교 급식소 조리원의 위생지식과 위생관리 수행도 분석 (Assessment of Food Sanitation Knowledge and Performance of Food Service Workers in School Food Service Operations Implementing HACCP)

  • The purpose of this study was to analyze the levels of food sanitation knowledge and performance by school food service workers. The data were collected by 440 food service workers in Gyeongbuk province. The collected data were analyzed using the SAS package program (version 8.2 for Window). The results of this study are summarized as follows: 28.6% of the respondents worked in food service at the school where their children attended, 93.6% of the food service workers were part-time employees, and 40.4% had obtained cooking certificates. The food sanitation knowledge scores of food service workers differed significantly according to age (p<0.05), holding of cooking certificates (p<0.01), number of certificates (p<0.01), and whether food service workers is students' parents or not (p<0.01). In addition, the sanitation-performance-degree levels of a few sanitation management items were significantly different according to their food sanitation knowledge level, working time, and whether food service workers is students' parents or not. In conclusion, these factors that improve food service sanitation should be fully considered when food service workers are hired or when food service management policies are established. Additionally, sanitation education and training for school food service workers should be offered regularly with effective education media.

충북지역 일부 대학생의 영양표시 활용 실태 및 과자류 1회 제공량 기준 영양표시 인지도 (Use and Awareness of Nutrition Labeling of Snacks based on One Serving Size among University Students in Chungbuk)

  • The study was carried out to investigate the efficacy of current nutrition labeling of processed foods and examine awareness among university students of nutrition information given current nutrition labels, and also awareness of the one-serving size of snacks that come in differently sized packages. A total of 100 students in Chungbuk, Korea participated in this study. About 60% of the subjects knew about nutrition labeling; however, a very small percentage (11%) of the subjects reported an experience of being educated about nutrition labeling. Also, just 32% of the students checked nutrition labels when they purchased processed foods. When understanding of nutrition information on labels of snacks in differently sized packaging was tested, over 80% of the subjects understood nutrition information accurately. Five different package sizes were studied. Of these 5, packages containing about 200% of one standard serving showed the highest rate of misunderstanding of total energy contents per container. Interestingly, the students most strongly preferred containers that contained 300% of one standard serving. From these results, we conclude that students consider the current recommendation for a serving size to be small, which may be related to misreading of nutrition labels of snacks that come in packages containing less than 300% of one standard serving size. To improve accurate understanding of nutrition labels of snacks, total package labels or dual column labels on packages containing less than 300% of one standard serving size should be considered.

학교급식에서의 절임배추 이용 실태 및 구매 촉진에 관한 연구 (A Study on the Use of Salted Cabbage and the Purchasing Promotion in School Foodservice)

  • In recent years consumers have become used to products geared toward a more convenient lifestyle, thus, the demand for salted-cabbage, for use in preparing Kimchi is increasing. This study aims to investigate purchasing factors, the satisfaction and demands of salted-cabbage, and to ascertain a marketing strategy for expanding the use of salted cabbage in food-service departments of schools. Self-administered questionnaires were collected from 131 buying agents who manage food materials for schools, and statistical data analysis was completed using the SPSS V.14.0 program. 46.9% of the participating respondents were from elementary schools, 27.7% from middle schools, and 25.4% were from high schools.. Most of the subjects (67.9%) recognized the salted cabbage retailed for foodservice, but 62.3% of these had not purchased them, due to both their lack of trust in the sanitation and raw material handling of the food product, and the high price. Respondents considered different factors when deciding whether or not to purchase: the origin (local or imported) of the cabbage, hygiene, and taste, as well as characteristics such as the cabbage weight, package weight, and package materials. The score of post-behavior intentions as well as overall satisfaction was rather high. Also, they perceived the need of strategic promotion for enlarging the market portion of salted-cabbage. These results will done the guidelines for diversifying the salted-cabbage market and for creating an added value of agricultural products in rural areas.

  • 본 연구는 대학생의 음주와 식생활 관련 지식 및 행동에 관한 실태를 조사 하고자 경산지역 남자 대학생 177명과 여자대학생 189명을 대상으로 설문지를 이용하여 실시하였다. 설문지 내용은 일반적인 사항과 건강, 음주량과 음주와 관련된 사항 그리고 식습관과 영양지식과 관련된 문항으로 나누어서 자가기입 방식으로 응하도록 하였다. 자료는 각 문항들에 대해서 빈도와 백분율로 표기 하였고 통계적 분석은 SAS Package Program을 이용하여 t-test와 x$^2$-test로 하였다. (중략)

대안유통의 특성에 대한 시론 (An Essay on Characteristics of Alternative Marketing)

  • The alternative marketing can be defined a face to face regional marketing that commodities are traded based on mutual trust and understanding which have been accumulated through relationships formation and interaction between producers and consumers. Essences of an alternative marketing are formation, expansion and solidarity of relationships between producers and consumers, mutual trust and communication, and cooperation. Based on these, it makes it's principle to trade regionally and shorten food mileage and psycho-social distance. For example, there are local food direct stores, local food markets, farmer's markets, food package sales, CSA, local food school or public meal and so on. In alternative marketing, the relationship among them is especially considered very important in marketing process, not just a flow of commodities.

  • 오늘날 우리들의 식생활에서 어육 등 해산물을 이용하는 식생활은 우리 생활에서 아주 중요한 부분을 차지하고 있다. 그러므로 이러한 수산물을 가공하고 장기보존 하는 방법이 아주 중요한 과제로 떠오르고 있으며 불과 수년 전만 하여도 그 소비가 다양화되지 못하였지만, 경제적, 사회적 변화와 식생활의 개선으로 필수 기호식품의 하나로 자리잡아 가고 있는 실정이다. 뿐만 아니라, 최근 인구의 도시집중과 생활수준의 향상 등으로 사람들의 소비관습의 변화, 즉 인스탄트 식품이나 즉석에서 먹을 수 있는 완전 가공식품 등의 극도로 편리한 식품을 선호하는 경향이 두드러지고 있다. 이와 같은 사회적, 환경 적, 변화에 따라 건어물 제품은 편리한 식품으로서 앞으로 수요가 계속 늘어날 것으로 전망되며, 따라서 포장재료나 포장방법에 있어서도 여러 가지 방법으로 연구, 발전시켜 나가야 할 것이다. 따라서 부산 지방의 특산물이라고 할 수 있는 건어물의 유통 실태 및 포장디자인의 현황을 알아보고 건어물 포장방법의 연구와 부산의 시각적 이미지를 제품포장에 도입함으로써 상품의 부가가치를 높이고 소비인구의 저변확대를 꾀함과 동시에 건어물을 부산지방 특산물화 시켜 관광 상품으로서의 발전 방향을 모색함과 동시에 지역경제 발전에 기여하고자 한다.

푸드스타일링에 따른 소비자 인식과 음식 구매의도에 관한 연구 (A Study on the Customers' Perception and Intention to Purchase Food according to Food Styling)

  • This study aimed to find out how food styling (plating and the size of the dishes) can increase customer purchasing intention, and propose a marketing measure to increase revenue growth and boost image growth after examining perceptions of customers and their intention to purchase food according to the food styling of cream pasta, which is a type of western food item. SPSS 20.0 statistical package program was utilized to run the Paired t-test. As a result, consumers' awareness of the amount of food according to food styling indicated that the amount of food accompanied by vegetables and meat was perceived more than vegetables alone. Second, according to food styling (size of dishes), customers perceived that there was more food with smaller sized dishes. Therefore, in order to increase the level of satisfaction with the amount of food of the customers, it is recommended that the foods which display high calorie content are more highly visible. Moreover, customers' intention to purchase food as well as their perception of the amount of food could also be increased by adjusting the size of containers for food.

과일 크기와 포장 표면적에 따른 낱개 단감 포장의 기체조성 (Internal Atmosphere of Individual Sweet Persimmon Package as Function of Fruit Size and Package Film Area)

  • 낱개 단위의 단감 포장에 대해서 선도유지에 적절한 내부 기체조성을 얻을 수 있는 포장조건을 얻기 위하여 $-1^{\circ}C$에 저장시에 포장 표면적과 과중이 포장 내부 기체조성에 미치는 영향을 살펴보았다. 약 230 g의 대과에서 과실과 바로 맞는 플라스틱 필름의 표면적($0.040\;m^2$)에서는 낮은 투과도 필름들은($35\;{\mu}m$ 혹은$40\;{\mu}m$ 두께의 LLDPE/PP 및 $30\;{\mu}m$ OPP) 산소가 고갈되는 혐기적인 기체조성을 유발시키고 장기저장 시에 갈변발생율을 높혔다. 약 210 g의 중과와 약 190 g의 중소과에서는 $35\;{\mu}m$ LLDPE/PP의 넓은 표면적이 높은 $O_2$와 낮은 $CO_2$를 형성시키고, 장기저장시에 높은 연화와 흑변의 발생을 가져왔다. 이와 달리, 작은 포장 표면적은 낮은 $O_2$와 높은 $CO_2$를 형성시키고 높은 갈변 가능성을 보였다. 생리장해를 줄이는 내부기체조성을 얻기 위해서는 과중, 포장필름 종류, 포장 표면적의 적절한 조합이 필요한 것으로 확인되었다.
