흑미강으로부터 유용 폴리페놀 및 플라보노이드의 추출효율 증진을 위한 아임계수의 효과 (Effect of Subcritical Water for the Enhanced Extraction Efficiency of Polyphenols and Flavonoids from Black Rice Bran)

  • 본 연구에서는 흑미의 가공부산물인 흑미강으로부터 기능성 polyphenol 및 flavonoid가 새로운 추출방법인 아임계 추출법을 통해 추출되었고, 열수($80^{\circ}C$), 에탄올, 설탕용액을 이용한 기존 추출법과의 추출효율이 비교 분석되었다. 건조된 흑미강 시료로부터 polyphenols(35.06${\pm}$1.28 mg QE/g dried material) 및 flavonoids(7.08${\pm}$0.31 mg QE/g dried material)에 대한 최대 수율이 아임계 추출법($190^{\circ}C$, 1300 psi, 10 min)을 통해 획득되었으며, 이것은 기존 추출법 가운데 가장 높은 수율을 보인 에탄올 추출법을 통한 polyphenols(2.98${\pm}$0.74mg QE/g dried material) 및 flavonoids (0.58${\pm}$0.21mg QE/g dried material) 수율 대비 11.77배와 12.21배 이상 더 높은 것이었다. 추출방법에 따른 흑미강 추출물의 항산화 활성은 에탄올 추출물에서 가장 높게 관찰되었다. 그러나 흑미강 시료 1g 당 획득된 추출물의 건조중량 차이 비교를 통해서 얻어진 건조 흑미강 1g 당 함유된 항산화 성분의 상대수율(relative yield, %)은 최적조건($190^{\circ}C$, 1,300 psi, 10 min)의 아임계 추출법을 통해 획득된 추출물에서 가장 높았으며, 이것은 에탄올 추출물의 항산화 성분 상대수율에 비해 대략 11.53배 이상 더 높은 것이다. 이상의 결과들은 아임계 추출법이 흑미강으로부터 기능성 polyphenols 및 flavonoids를 추출하는데 매우 적합한 방법임을 설명하고 있으며, 유기용매 추출법을 포함한 기존의 전통적 추출법에 대한 매우 효과적인 대안임을 제시하고 있다.

Effect of Substitution of Chicken Breast for Alaska Pollack on Physico-chemical Characteristics and Quality in Surimi-like Materials Contained Different Cryoprotectants

  • Surimi-like samples were divided into four groups (C, surimi-like material made from Alaska Pollack with all cryoprotectant ingredients; T1, surimi-like material made from chicken breast with sugar and a sorbitol-free cryoprotectant; T2, surimi-like material made from chicken breast with a sugar-free cryoprotectant; T3, surimi-like material made from chicken breast with all cryoprotectant ingredients). Water and protein content were lower in Alaska Pollack surimi-like material (C) than those in chicken breast surimi-like material. Centrifuge loss and cooking loss were higher in C than those in chicken breast surimi-like material. Lipid oxidation (thiobarbituric acid reactive substances) was lower in T3 than others during storage. In a sensory evaluation, overall acceptability was significantly higher in C than those in other samples during storage. As a result, we found that the raw material composition (Alaska Pollack or chicken breast) had a large influence on the physico-chemical characteristics and quality of surimi-like materials, whereas cryoprotectant composition may have less influence on the physico-chemical characteristics and quality of surimi-like materials.

Identification of Phenolic Compounds and Quantification of Their Antioxidant Activities in Roasted Wild Ginseng (Panax ginseng C.A. Meyer) Leaves

  • The objectives of this study were to systemically identify phenolic compounds in roasted wild ginseng (Panax ginseng C.A. Meyer) leaves and investigate their radical scavenging activities. Seven phenolic compounds were identified by NMR (H, C, COSY, HMQC, HMBC) and mass (EI-MS, FAB-MS) analyses: 5-caffeoylquinic acid, kaempferol, quercetin, 3,4-dihydroxy-benzoic acid, 4-hydroxy-benzoic acid, 3-(3,4-dihydroxyphenyl)-2-propenoic acid, and 3-(4-hydroxy-3-methoxyphenyl)-2-propenoic acid. Their concentrations ranged from 0.4 (3,4-dihydroxy-benzoic acid) to 7.5 mg (kaempferol) per 100 g of roasted leaves. Among these compounds, 5-caffeoylquinic acid, kaempferol, and quercetin were found exclusively in the leaf portions of the ginseng plants. When their antioxidant activities were measured by DPPH and superoxide anion radical scavenging activity, quercetin, and kaempferol were most effective.

식품회사 자재수급관리 프로그램를 위한 전산화 연구 (A Study for Computerization of Incoming and Outgoing Processes of Many Parts and Much Material in Food Industry)

  • This paper is a study for the computerization program of incoming and outgoing processes of a number of parts and a great amount of material for producing products in flood industry, which was required by a medium-sized company located at Cheon-An. The program consists of four databases, one main form, seventeen subforms, and eight report forms. Concretely speaking, the four databases are prepared for products, semi-products, material, and reports, and the seventeen subforms are those for current inventory, used quantity, safty stock, product specification, etc. With the program, users can be helped and save manpower, time and cost in incoming and outgoing processes of parts and material for producing products and in their real time operation and decision-making.

알긴산소다를 이용한 멸치어유의 미세캡슐화 (Microencapsulation of Anchovy Oil by Sodium Alginate)

  • Microencapsulation of anchovy oil as a core material in sodium alginate as a wall material was inves tigated. Microencapsulation was accomplished by injecting an oil/water emulsion, consisting of a mixture of liquefied sodium alginate and emulsifier, under high pressure through an orifice submerged in a calcium lactate solution. Microcapsules suspended in a dispersion fluid were observed under a fluorescence mi croscope to verify the presence of the capsules and to note coalescence or degradation of the capsules. Optimum conditions for microencapsulation of anchovy oil were obtained when 1.0% aqueous solution of sodium alginate contained 3% of a 1:1 ratio of ESPR 25(polyglycerine+polylinoleate) and TW 20(sorbitan laurate+ethylene oxide) as an emulsifier in terms of capsule size and size distribution, and emulsion stability. The airless sprayer produced microcapsules with a diameter between 15.9 and 73.9 m with different concentration of a wall material. The optimum mixing ratio of wall material to core material was 90:10(wt/wt). 0.2% calcium lactate was appropriate as a dispersion fluid.

식품 소재로서 장미꽃잎 색소의 안정성 (Stability for Rose Petals Pigment as a Food Material)

  • This study was conducted to develop pigment of flowers as a food material and the red rose(Rosa hybrida L.) was used for this study. To check the possibility of using the rose pigment as a food additive we have extracted the pigment from rose and examined all the factors (pH, temperature, free sugars, organic acids, metal ions) for stability. The results obtained are as follows: In examining the stability of the pigment, the residue of the pigment noticeably decreased with the increase of the pH and the temperature, and among free sugars (fructose, glucose, sucrose) the addition of fructose made the residue the lowest. With the addition of organic acids the samples exhibited the hyperchromic effect throughout the period of the storage. The pigment residue decreased when the amount of the metal ions increased and especially the Cu$^{2+}$ ion was most destructive.

Microencapsulated Ascorbic Acid for Milk Fortification

  • The present study was designed to develop a microencapsulated L-ascorbic acid and iron that could be used to fortify milk and to determine the sensory properties of milk fortified with microencapuslation. Coating material was medium-chain triacylglycerol (MCT), and selected core material was ferric ammonium sulfate and L-ascorbic acid. The highest efficiency of microencapsulation was 95.0% in the ratio of 15:1 as coating to core material. Ascorbic acid release was increased sharply up to 5 d storage as 6.5%. TBA value was the lowest when both capsulated iron and ascorbic acid were added during 12 d storage, compared with other treatments. In sensory analysis, most aspects were not significantly different between control and capsulated ascorbic acid fortified milk at 5 d storage. The present study indicated that the use of microencapsulated ascorbic acid with MCT is effective for fortifying milk. In addition, these results suggest that acceptable milk products can be prepared with microencapsulated ascorbic acid and iron.

  • Ethanol fermentation from the chemically gelatinized starchy material was examined. The critical concentration of sodium hydroxide solution for gelatinization was dependent on the species of starch; 0.4M for potato and 0.6M for tapioca at room temperature. For alcohol fermention the starchy material was gelatinized by addition of sodium hydroxide solution, neutralized by sulfuric acid, and then yeast was added. The amount of $CO_2$ evolved during ethanol fermentation indicates that non-fermentable material was not produced from the starch by chemical gelatinization. In ethanol fermentation of potato and tapioca starch no significant difference was observed between the thermal and the chemical gelatinization.
