Systematic Review on International Practices in Controlling Waterpipe Tobacco Smoking

  • Background: Waterpipe tobacco smoking has becoming popular especially among young people worldwide. Smokers are attracted by its sweeter, smoother smoke, social ambience and the misconception of reduced harm. The objective of this study was to systematically review the effects of waterpipe tobacco policies and practices in reducing its prevalence. Materials and Methods: A systematic review was conducted electronically using the PubMed, OVID, Science Direct, Proquest and Embase databases. All possible studies from 1980 to 2013 were initially screened based on titles and abstracts. The selected articles were subjected to data extraction and quality rating. Results: Three studies met the inclusion criteria and were eligible for this review. Almost all of the waterpipe tobacco products and its accessories did not comply with the regulations on health warning labelling practices as stipulated under Article 11 of WHO FCTC. In addition, the grisly new warning labels for cigarettes introduced by Food and Drug Administration did not affect hookah tobacco smoking generally. Indoor air quality in smoking lounges was found to be poor and some hookah lounges were operated without smoke shop certification. Conclusions: Our findings revealed the availability of minimal information on the practices in controlling waterpipe smoking in reducing its prevalence. The lack of comprehensive legislations or practices in controlling waterpipe smoking warrants further research and policy initiatives to curb this burgeoning global epidemic, especially among the vulnerable younger population.

계란의 난각 처리와 보관 방법에 따른 품질 변화 (Changes of egg Quality according to eggshell treatment and storage condition)

  • Egg has been considered as one of the most important food sources in both nutritionally and economically. However, because the hazards of egg flow chains' complexity from producers to consumers and the insufficiency of cold chain systems in Korea are still remained, preventive measures for egg safety should be established. This experiment was carried out to investigate the changes of egg qualify during storage in order to find out the proper storage condition and eggshell treatment. Eggs were stored at cold condition $(5^{\circ}C,\;relative\;humidity;\;RH:\;65\pm3\%)$ and room Condition $(1st: Sep\; 6\~Nov\; 15,\;2001,\; 10\~30^{\circ}C,\;RH\;41\~86\%,\;2nd;\; Dec\;13,\;2001\~Feb\;21,\;2002,\;4\~23^{\circ}C,\;RH\;36\~89\%)$ after eggshell treatment (unwashed, washed and coated egg) during'10 weeks and examined weight loss and interior quality periodically. Weight loss was in decreasing order room washed > room unwashed > cold washed > cold unwashed > room coated > cold coated egg. And, Haugh unit was decreasing order room washed > room unwashed > room coated > cold washed > cold unwashed > cold coated egg. Our findings show that both coated eggs and refrigeration reduces the rate of decline in Haugh units and egg weight. And, washed eggs had lower average Haugh units and a higher weight loss than any of the eggshell treatment in both storage conditions. Conclusively, for washing eggshell, 150 ppm of sodium hypochlorite, regular exchange and temperature control of water should be consistent and also eggs should be dried immediately after washing. Also, national guidelines for temperature and moisture of storage places, transportation and expiration data should be established to keep quality and weight loss of eggs. Storage temperature that is a critical factor in the quality and safety of eggs should be kept under 12'c and labelling of expiration date should be obligatory.

혼밥이 건강한 메뉴 선택에 미치는 영향: 소비 목적 지향과 메뉴 영양 정보 표시의 역할 (Can Dining Alone Lead to Healthier Menu Item Decisions than Dining with Others? The Roles of Consumption Orientation and Menu Nutrition Information)

  • Objectives: Driven by a growth of single-person households and individualized lifestyles, solo dining in restaurants is an increasingly recognizable trend. However, a research gap exists in the comparison of solo and group diners' menu-decision making processes. Based on the self-control dilemma and the temporal construal theory as a theoretical framework, this study compared the ordering intentions of solo vs. group diners with healthy vs. indulgent (less healthy) entrées. The mediating role of consumption orientation and the moderating role of amount of menu nutrition information were further explored to understand the mechanism and a boundary condition. Methods: A scenario-based online survey was developed using a 2 (dining social context: solo vs. with others) × 3 (amount of menu nutrition information: no nutrition information vs. calories vs. calories/fat/sodium), between-subjects, experimental design. Consumers' level of nutrition involvement was controlled. A nationwide survey data (n = 224) were collected from a crowdsourcing platform in the U.S. Data were analyzed using multivariate analysis of covariance, independent t-test, univariate analysis of covariance, and moderated mediation analyses. Results: Findings reveal that solo (vs. group) diners have less (vs. more) intentions to order indulgent menu items due to a more utilitarian (vs. more hedonic) consumption orientation in restaurant dining. Findings also show that solo (vs. group) diners have more (vs. less) intentions to order healthy menu items when the restaurant menu presented nutrition information including calories, fat, and sodium. Conclusions: The findings contribute to the literature of foodservice management, healthy eating, and consumer behavior by revealing a mechanism and an external stimuli of solo vs. group diners' healthy menu-decision making process in restaurants. Furthermore, the findings provide restauranteurs and health professionals with insights into the positive and negative impacts of menu nutrition labelling on consumers' menu-decisions.

전과정평가를 활용한 복합비료 생산 시스템의 온실가스 배출량 평가 (Estimation of Greenhouse Gas Emissions of Complex Fertilizers Production System by Using Life Cycle Assessment)

  • 현재까지 농작물의 온실가스 배출량 산정은 주 투입 물질인 비료의 국내 LCI DB가 없어 외국 LCI DB를 사용하였다. 이로 인해 우리나라 실정에 맞는 정확한 온실가스 배출량을 산정할 수 없었다. 따라서 본 연구를 통해 농작물의 생장을 위해 필수 요소로 투입되는 복합비료의 온실가스 배출량을 계산함으로써 농작물의 탄소성적 산정을 위한 기초자료를 제공하고자 하였다. 또한 각 농산물 연간 온실가스 배출량과의 비교를 통해 복합비료가 차지하는 정도를 살펴봄으로써 복합비료 사용량 감축 정책 등을 위한 정보를 제공하고자 하였다. 분석결과 복합비료 1 kg 생산에 따른 온실가스 배출량은 21-17-17, 17-21-17, 15-15-15, 기타 각각 2.42E + 00, 2.10E + 00, 2.23E + 00, $3.56E+00kg\;CO_2\;eq.\;kg^{-1}$를 나타냈다. 다음으로 작물에 투입되는 복합비료로 인해 발생하게 되는 온실가스는 쌀, 겉보리, 쌀보리, 노지고추, 양파 작물 대비 각각 48.3%, 47.6%, 40.4%, 32.3%, 29.0%로 큰 부분을 차지하였다. 따라서 맞춤형 비료 정책, 효율적인 시비 등의 노력을 기울여 복합비료 사용량을 감소시킨다면 농업부문의 온실가스 배출량 또한 저감시킬 수 있을 것이다.

Di-(2-ethylhexyl)phthalate에 의한 흰쥐 간세포 미세구조와 metallothionein 발현에 미치는 영향 (Ultrastructure and Metallothionein Expression in Rat Liver Treated with Di-(2-ethylhexyl)phthalate)

  • 본 연구에서는 내분비계 장애물질으로 알려져 있고, 플라스틱 제품의 가소제로 사용되고 있는 di-(2-ethylhexyl) phthalate (DEHP)가 흰쥐의 간세포 미세구조와 간조직내 metallothionein (MT)의 발현 양상에 미치는 영향을 조사하였다. DEHP는 흰쥐 간세포의 미세구조와 MT 발현에 영향을 주었다. 실험군의 경우 조면소포체가 발달하고, 미토콘드리아가 증가하며 리소솜 혹은 퍼옥시좀들이 증가하는 경향을 나타냈다. 한편, MT 발현의 변화를 면역세포 화학적 방법과 western Blot을 수행한 결과 저농도 투여군에서는 약 1.5배, 고농도 투여군에서는 약 2배 가량 증가하는 결과를 나타냈다. 결론적으로 DEHP는 흰쥐 간세포의 구조와 기능에 영향을 주는 것으로 판단되며, 이러한 세포내 스트레스가 MT 발현 증가 현상과 연관이 있을 것으로 판단된다.

Whose Science is More Scientific? The Role of Science in WTO Trade Disputes

  • This study examines the role of science in resolving trade disputes. After the Great East Japan Earthquake of 11 March 2011 that not only jeopardized the people of Japan, but also put the safety of an entire region at risk, the Republic of Korea (Korea) has imposed import bans as well as increased testing and certification requirements for radioactive material on Japanese food products. Japan has challenged these restrictions at the World Trade Organizations Dispute Settlement Body (DSB). This study aims to explain how international trade agreements and previous DSB rulings have dealt with different scientific viewpoints provided by confronting parties. In doing so, it will contrast the viewpoints espoused by Korean and Japanese representatives, and then analyzes the most similar case studies previously ruled on by the DSB, including the case of beef hormones and the case of genetically modified crops including biotech corn, both between the United States and the European Communities (EC). This study finds that science is largely subordinate to national interests in the case of state decision-making within the dispute settlement processes, and science has largely been relegated to a supportive role. Due to the ambiguity and lack of truly decisive decisions in the Appellate Body in science-based trade disputes, this study concludes that the Appellate Body avoids taking a firm scientific position in cases where science is still inconclusive in any capacity. Due to the panel's unwillingness to establish expert review boards as it has the power to do, instead favoring an individual-based system so that all viewpoints can be heard, it has also developed a system with its own unique weaknesses. Similar to any court of law in which each opposing party defends its own interests, each side brings whatever scientific evidence it can to defend its position, incentivizing them to disregard scientific conclusions unfavorable to their position. With so many questions that can arise, combined with the problems of evolving science, questions of risk, and social concerns in democratic society, it is no wonder that the panel views scientific information provided by the experts as secondary to the legal and procedural issues. Despite being ruled against the EC on legal issues in two previous cases, the EC essentially won both times because the panel did not address whether its science was correct or not. This failure to conclusively resolve a debate over whose science is more scientific enabled the EC to simply fix the procedural issues, while continuing to enforce trade restrictions based on their scientific evidence. Based on the analysis of the two cases of disputes, Korea may also find itself guilty of imposing an unwarranted moratorium on Japan's fish exports, only to subsequently pass new restrictions on labelling and certification requirements because Japan may have much scientific evidence at its disposal. However, Korea might be able to create enough uncertainty in the panel to force them to rule exclusively on the legal issues of the case. This will then equip Korea, like the EC in the past, with a way of working around the ruling, by changing whatever legal procedure they need to while maintaining some, if not most, of its restrictions when the panel fails to address its case on scientific grounds.

HPLC를 이용한 국내 유통 막걸리 내 인공감미료 함량 조사 (Investigation of Artificial Sweeteners in Makgeolli Distributed in South Korea Using HPLC)

  • Background: Artificial sweeteners are chemically synthesized substances used to add sweetness to foods. Representative substances include aspartame and acesulfame-K, which are 200 times sweeter than sugar. Recently, the IARC classified aspartame as class 2B, but Ministry of Food and Drug Safety of South Korea announced that it would maintain the current usage standards. Acesulfame-K, which has the potential to cause cancer, was excluded from the list of possible carcinogens, raising questions about its safety. According to a survey by the Consumers Union of Korea, 85% of makgeolli includes artificial sweeteners, but the content labelling is not indicated. It is necessary to accurately determine the intake of artificial sweeteners through makgeolli. Objectives: This study aims to evaluate the safety of makgeolli consumption by identifying the content of artificial sweeteners (aspartame, acesulfam-K) and preservatives (sorbic acid). Methods: Twenty makgeolli samples were purchased from large supermarkets and convenience stores by referring to the sales ranking of makgeolli products distributed in South Korea and the purchase ranking from online sites. The sample was sonicated to remove alcohol and carbon dioxide. Nine mL of acetonitrile was mixed with 1 mL of the prepared sample, centrifuged, and the supernatant was filtered and analyzed using HPLC. Results: As a result of the analysis, aspartame was detected in 17 products and acesulfame-K was detected in ten. The ADI of aspartame (40 mg/kg·bw/day) is higher than the EDI based on the maximum concentration 126.5 ㎍/mL. The ADI of acesulfame-K (15 mg/kg·bw/day) is higher than the EDI based on the highest concentration of 82.96 ㎍/mL. Although the health risk is low, IARC has raised the possibility of aspartame causing carcinogenesis, so there is a need to reevaluate the standards and regulations for artificial sweeteners. Conclusions: Through this study, we aimed to determine the content of aspartame and acesulfame-K contained in makgeolli currently distributed in South Korea and the safety of exposure to the human body when consumed.

유통음료 및 액상차 중의 비타민과 미네랄 함량 (The Content of Minerals and Vitamins in Commercial Beverages and Liquid Teas)

  • 본 연구에서는 소비자들이 건강기능식품보다 쉽게 접하고 구할 수 있는 음용을 목적으로 하는 식품인 음료를 유형별로 나누어 비타민과 미네랄이 강화되거나 첨가된 음료들을 상한섭취량과 비교 조사하였다. 음료 중의 칼슘과 나트륨 함량은 마이크로웨이브를 이용한 밀폐형 습식분해법으로 전처리 후 유도결합플라즈마분광기로 분석하였고, 비타민 함량은 HPLC로 측정하여 다음과 같은 결론을 얻었다. 1. 제품 중 칼슘을 강화하고 함량을 표시한 제품은 과채주스 4건, 과채음료 9건, 혼합음료 8건으로 표시량 비율 80~90%는 4건, 90~100%는 5건, 100~110%는 4건, 110~120%는 6건 120~130%는 1건, 14~150%는 1건이었다. 나트륨 함유 음료 총 17건을 분석한 결과 표시량은 225.0~500.0 mg/L, 검출량은 96.5~237.4 mg/L로 표시량 비율은 34.0~48.5% 이었다. 음료에 들어있는 칼슘과 나트륨 함량은 식품 규격 기준뿐만 아니라 건강기능식품의 기준에도 적합한 것으로 분석되었으나 일부 제품의 빈번한 섭취나 다른 강화식품의 동반 섭취로 인한 과잉공급이 발생할 수있어 하루 필요 섭취량을 초과할 우려가 많은 실정이다. 2. 현재 다양한 음료군 별 전반에 골고루 강화된 비타민C의 경우 시료 중 액상차 3건, 과채주스 3건, 과채음료 14건, 탄산음료 9건, 혼합음료 28건으로 총 57건 이었다. 표시량과 검출량, 표시량 비율로 검출량을 살펴보면 과채주스의 표시량은 28.6~131.6 mg/L, 검출량은 569.7~583.8 mg/L로 표시량 비율은 443.7~2003.6% 이였으며 과채음료의 표시량은 11.4~277.8 mg/L, 검출량은 86.5~478.2 mg/L 로 표시량 비율은 161.2~1291.2%로 과채주스와 마찬가지로 실제 많은 양이 첨가된 것으로 분석되었다. 음료군 중 가장 비타민 C 강화 빈도가 높았던 혼합음료의 표시량은 25.0~10000.0 mg/L, 검출량은 330.0~17758.0 mg/L로 표시량 비율은 129.10~991.0% 이었다. 표시량 비율을 보면 총28건 중 120~130%는 1건, 130~140%는 2건, 140~150%는 6건, 150~160%는 3건, 17~180%는 4건, 180~200%는 3건, 200~300%는 2건, 300~400%는 3건, 900~1000%는 3건이었다. 이는 제품별로 들어있는 함량의 차이도 큰 것으로 나타났으며 제품에 표기되어 있는 양에 비해 실제 많은 양이 첨가된 것으로 분석되었다. 우리나라 성인 기준 비타민 C 상한 섭취량은 최저독성량을 고려하여 2,000 mg/day로 설정되어 있어 실제 음료 1회 분량이 비타민 C 상한 섭취량을 초과하는 제품은 없었으나 습관적으로 강화된 음료를 빈번히 섭취할 경우 상한 섭취량을 초과할 경우가 있을 것으로 보인다. 또한 비타민 C가 첨가되었다고 표시는 되어있지만 표시량을 표기하지 않았던 제품은 보통의 비타민 C가 첨가된 음료보다도 많은 양을 첨가 했으며 소비자가 스스로 섭취 음료의 영양성분을 인지하고 선택할 수 있기 위해서는 시판제품에 영양 표시가 필요한 것으로 보인다. 3. 제품 중 비타민 $B_2$를 강화하고 함량을 표시한 제품은 탄산음료 3건, 혼합음료 9건으로 표시량 비율을 보면 탄산음료는 최대 129.5%, 혼합음료의 표시량 비율은 최대 336.7% 이었다. 일반적으로 식품이나 보충제를 통해 과다하게 리보플라빈을 섭취해도 부작용이 나타나지 않은 것으로 보고되었으나, 이것이 다량 섭취시 부작용이 없다는 것을 의미하지는 않으므로 주의가 요망된다. 제품 중 나이아신을 강화하고 함량을 표시한 제품은 탄산음료 1건, 혼합음료 10건이었으며, 탄산음료의 표시량 비율은 90.7% 이었으며 이외에 표시량은 없었으나 실제 분석한 결과 58.0 mg/L의 나이아신이 검출된 제품이 있었다. 혼합음료의 표시량 비율은 109.70~393.23% 이었다. 성안의 니코틴아미드 상한섭취량이 1,000 mg/day 인 것을 볼 때 분석된 음료들 모두 적은 양이었으나 최근 소비량이 급증하고 있는 복합비타민제 등을 병용하여 섭취할 경우 일부에서는 악영향이 발생할 가능성이 있다고 볼 수 있으며 음료에 실제 들어있는 양과 표시량이 차이가 있으므로 소비자들이 인지하여 마실 수 있도록 정확한 표시량을 나타내어 정보를 주어야 할 것이다. 이처럼 음료와 같은 가공식품에서의 영양강화가 역할을 다하기 위해서는 식품업계에서의 품질관리를 보다 철저히 하고 정부에서도 표시량에 맞추어 식품을 섭취하는 소비자가 과잉섭취하지 않도록 표시기준의 하한선 뿐 아니라 상한선 설정을 추진해야 할 것으로 보이며 소비자를 대상으로 영양교육을 실시하여 소비자 스스로 자신에게 맞는 식품을 선택할 수 있는 능력을 가지도록 관심을 가져야 할 것이다.
