환경유래 식품오염물질의 범부처 통합 저감화 플랫폼 설계 (Design of Integrated Reduction Platform for Food Contaminants Derived from the Environment through Interagency Collaboration in Korea)

  • Objectives: Chemicals derived from various environment media contaminates food across the food supply chain. In Korea, levels of contaminants in food have been sporadically measured by monitoring programs of different government agencies. There is difficulty with data compilation and integrated analysis across media. Therefore, the aim of this study was to propose an overall integrated database and analytical platform design for the 'ECO-FOOD NET (Environmental COntaminant reduction platform for FOOD through an interagency collaboration NETwork)', a tool to support the reduction of environmental contaminants in food. Methods: We developed a new data structure and standardized protocols for the compilation of integrated data. In addition, we conducted subject-oriented logical and physical relational database modeling and created the architecture design of the platform. Results: We established a standardized code system related to exposure media and route, analysis method and food matrix. In addition, we designed the seven software modules of 'About the System', 'Introduction to Interagency Work', 'Media-Chemicals Profiles', 'Method Bank', 'Monitoring Data Base', 'Integrated Media Analysis', and 'Risk-Benefit Analysis'. Conclusions: This study will contribute to decision-making as a tool for executing risk management, such as sustainable reduction policies of contaminants in food.

Impact of Supply Chain Innovation and Risk Management Capabilities on Competitive Advantage at Steel Trading Companies in Vietnam

  • Purpose: The current research investigates the beneficial impacts of supply chain innovation and risk management on the competitive advantage of organizations, based on the resource-based theory (RBT) framework. Research Design, Data, and Methodology: 14 survey items were included in the study's questionnaire, utilizing a random sampling technique to gather data from 239 leaders and managers employed by various steel trading firms in Vietnam. In order to validate the data and examine relationships, the collected data is analyzed using structural equation modeling, confirmatory factor analysis, and reliability analysis via SPSS 22.0 and AMOS 22.0 software. A fictitious system has been suggested. Results: According to the findings, the most positive influence on competitive advantage is supply chain innovation, followed by risk management capability, having the second greatest positive influence. Conclusions: Some conclusions are drawn based on the research's findings in order to assist managers in realizing the significance and necessity of giving attention to supply chain innovation and improving risk management capabilities, both of which are essential components for achieving the competitive advantage of an organization.

  • Recently, securing stable supply of fresh food is deemed as one of the important tasks. Accordingly, now the presence of cold chain along with the needs of a comfortable and healthy life is growing as the online market expands and the contactless industry grows, however, cold chain is being studied only in the aspect of ground and sea transportation. And, due to global warming and strengthening global environmental regulations, we believe that it is necessary to convert the existing road-centered logistics system into a railway-centered logistics system, a low-carbon transportation means. Therefore, in this paper we calculated the maximum energy required by the reefer container as a basic research necessary for constructing the low temperature distribution and cold chain based on the reefer container railway, and conducted a study on methods of supplying the reefer container power utilizing 1. tramline, 2. battery, 3. generator. The results of this paper can be utilized as a foundational study for building a cold chain based on a reefer container dedicated to freight trains in the future.

제조업체와 유통업체간의 장기적 협력관계 구축을 통한 공급사슬관리 방안 : 식품제조업을 대상으로 한 소매업체 관점 (Long-Term Relationship Strategies Between Retailer and Suppliers for the Effective Supply Chain Management: Retailer Perspectives toward Food Manufacturers)

  • The paradigm of the corporate innovations has been changed from the intra-company innovations to the inter-company innovations. A prevalent approach to the inter-company innovations is the supply chain management. Three key words of the core concept of supply chain management are the long-term relationship, resource integration, and value creation. Specifically, it means that the supply chain management aims to make value creation through the resource integration for the supply chain entities, based on the long-term relationship between buyers and sellers. To make more effective long-term relationship among the supply chain entities, it is very important for the supply chain entities to analyze followings: i) What variables can influence the long-term relationship, ii) How these variables can influence to the long-term relationship. However, previous researches mostly deals the long-term relationship in the marketing area in fragment, and thus few research efforts have been done for the development of conceptual model using supply chain management theories. In contrast to previous studies, our research tried to develop and examine the integrative research model by introducing both the marketing theories and the supply chain management theories, and thus related hypotheses are derived. A multiple regression analysis was performed to examine the influence of the antecedents of the long-term relationship, for the 87 retailers of grocery supply chains. The empirical results confirm that cultural similarity, reputation, interdependency, and trust positively influence long-term relationship (i.e., partnership orientation and partnership symmetry). And results also confirm that the supply implementation factors such as organization integration, information system integration, and process integration playa moderating role between antecedents and long-term relationship. These findings suggest that companies should perceive the importance of managing the process, organization, information system integration in the long-term relationship implementation process as well as the factors such as cultural similarity, reputation, interdependency, and trust in the long-term relationship establishment process.

Antioxidant and Antibacterial Activity of Caprylic Acid Vanillyl Ester Produced by Lipase-Mediated Transesterification

  • Vanillyl alcohol (VA), which is abundant in Vanilla bean, has strong antioxidant activity. However, the use of VA in the food and cosmetics industries is limited, due to its low solubility in emulsion or organic solvents. Meanwhile, medium chain fatty acids and medium chain monoglycerides have antibacterial activity. We synthesized butyric acid vanillyl ester (BAVE) or caprylic acid vanillyl ester (CAVE) from VA with tributyrin or tricaprylin through transesterification reaction using immobilized lipases. BAVE and CAVE scavenged 2,2-diphenyl-1-picrylhydrazyl radicals in organic solvents. In addition, BAVE and CAVE decreased the production rate of conjugated diene and triene in the menhaden oil-in-water emulsion system. While BAVE showed no antibacterial activity, CAVE showed antibacterial activity against food spoilage bacteria, including Bacillus coagulans. In this study, the antibacterial activity of vanillyl ester with medium chain fatty acid was first revealed. Zeta potential measurements confirmed that BAVE and CAVE were inserted into B. coagulans membrane. In addition, the propidium iodide uptake assay and fluorescent microscopy showed that CAVE increased B. coagulans membrane permeability. Therefore, CAVE is expected to play an important role in the food and cosmetics industries as a bi-functional material with both antioxidant and antibacterial activities.

OGS RAAM2000을 이용한 유지방구막 PAS-7 당단백질의 당쇄구조 해석 (Analysis of Sugar Chain Structure of PAS-7 Glycoprotein from Bovine Milk Fat Globule Membrane by US RAAM 2000)

  • MFGM 당단백질의 하나인 PAS-7을 GPC 및 affinity chromatography에 의해 정제하여 2-AB로 형광 표식한 후, anion-exchange column 및 reversed-phase column을 이용해 5개의 성분을 분리하였다. 그 중 가장 상대량이 많은 성분 e에 대하여 RAAM2000을 이용한 당쇄구조 해석을 실시하여, 성분 e는 RAAM2000 GPC에 의하여 4개의 성분으로 분리되어 각각 calibration standard 12.10, 8.88, 5.84 및 4.86GU의 용출위치에 검출되었다. 이 용출위치와 당쇄구조는 livrary의 component-7457과 일치하며, 12.2GU의 크기로 분자량은 1788로 판단되며 library의 당쇄와 약 85%의 확률로 일치했다. 그 결과 성분 e의 당쇄구조는 환원말단에 $\alpha$1-6결합된 fucose를 1개 함유하며, core부분의 비환원말단에 N-acetyllactosamine branch를 2개 함유한 전형적인 biantennary 당쇄구조인 것으로 추축되어, 이전 HPLC, acetolysis, sequential exoglycosidase 소화, NMR분석에 의해 보고된 성분 7N1A의 구조와 일치함으로써, OGS RAAM2000을 이용한 PAS-7의 당쇄구조 해석의 유용성이 증명되었다.

Development of a Multiplex Polymerase Chain Reaction Method for Simultaneous Detection of Genetically Modified Soy and Maize

  • This study was aimed to develop a novel qualitative multiplex polymerase chain reaction (PCR) for simultaneous detection of genetically modified (GM) soy and maize within a single reaction. The specific primers designed to detect four respective GM events (A2704-12, MON88017, Bt11, and MON863) were included in the tetraplex PCR system. Each of PCR products for four GM events could be distinguished by agarose gel based on their different lengths. The specificity and reproducibility of this multiplex PCR were evaluated. This multiplex PCR consistently amplified only a fragment corresponding to a specific inserted gene in each of the four GM events and also amplified all four of the PCR products in the simulated GM mixture. These results indicate that this multiplex PCR method could be an effective qualitative detection method for screening GM soy and maize in a single reaction.

Data-Based Monitoring System for Smart Kitchen Farm

  • Pandemic situations such as COVID-19 can occur supply chain crisis. Under the supply chain crisis, delivering farm products from the farm to the city is also very challenging. Therefore it is essential to prepare food sufficiency people who live in a city. We firmly insist on food self-production/consumption systems in each home. However, since it is impossible to grow high-quality crops without expertise knowledge. Therefore expert system is essential to grow high-quality crops in home. To address this problem, we propose a smart kitchen farm as a data-based monitoring system and platform with ICT convergence technology. Our proposed approach 1) collects data and makes judgments based on expert knowledge for home users, 2) increases product quality of the smart kitchen farms by predicting abnormal/normal crops, and 3) controls each personal home cultivation environment through data-based monitoring within the smart central server. We expect people can cultivate high-quality crops in thir kitchens through this system without expert knowledge about cultivation.

  • Concerns about food safety continue to rise and under this situation, governments of some countries have reinforced their regulations more strictly for food safety. In order to prevent food safety incidents or, at least to minimize the impact, the preparedness is very important. As a consequence of this, traceability system has become an essential tool for food safety. Recently, it requires more prevention-based food safety control system. One of the most generally used systems for food safety control is Hazard Analysis and Critical Control Point (HACCP). Both traceability and HACCP systems can be integrated through Electronic Product Code (EPC) Sensor Network technologies which have four value propositions. In this paper, we will introduce the concept of product and process traceability system (P2TS) through the integration of three systems to improve food safety management. The final aim is to find out the added values of the P2TS.

A study on the Regulatory Environment of the French Distribution Industry and the Intermarche's Management strategies

  • Despite the enforcement of SSM control laws such as 'the Law of Developing the Distribution Industry (LDDI)' and 'the Law of Promoting Mutual Cooperation between Large and Small/medium Enterprises (LPMC)' stipulating the business adjustment system, the number of super-supermarkets (SSMs) has ever been expanding in Korea. In France, however, Super Centers are being regulated most strongly and directly in the whole Europe viewing that there is not a single SSM in Paris, which is emphasized to be the outcome from French government's regulation exerted on the opening of large scale retail stores. In France, the authority to approve store opening is deeply centralized and the store opening regulation is a socio-economic regulation driven by economic laws whereas EU strongly regulates the distribution industry. To control the French distribution industry, such seven laws and regulations as Commission départementale d'urbanisme commercial guidelines (CDLIC) (1969), the Royer Law (1973), the Doubin Law (1990), the Sapin Law (1993), the Raffarin Law (1996), solidarite et renouvellement urbains (SRU) (2000), and Loi de modernisation de l'économie (LME) (2009) have been promulgated one by one since the amendment of the Fontanet guidelines, through which commercial adjustment laws and regulations have been complemented and reinforced while regulatory measures have been taken. Even in the course of forming such strong regulatory laws, InterMarche, the largest supermarket chain in France, has been in existence as a global enterprise specialized in retail distribution with over 4,000 stores in Europe. InterMarche's business can be divided largely into two segments of food and non-food. As a supermarket chain, InterMarche's food segment has 2,300 stores in Europe and as a hard-discounter store chain in France, Netto has 420 stores. Restaumarch is a chain of traditional family restaurants and the steak house restaurant chain of Poivre Rouge has 4 restaurants currently. In addition, there are others like Ecomarche which is a supermarket chain for small and medium cities. In the non-food segment, the DIY and gardening chain of Bricomarche has a total of 620 stores in Europe. And the car-related chain of Roady has a total of 158 stores in Europe. There is the clothing chain of Veti as well. In view of InterMarche's management strategies, since its distribution strategy is to sell goods at cheap prices, buying goods cheap only is not enough. In other words, in order to sell goods cheap, it is all important to buy goods cheap, manage them cheap, systemize them cheap, and transport them cheap. In quality assurance, InterMarche has guaranteed the purchase safety for consumers by providing its own private brand products. InterMarche has 90 private brands of its own, thus being the retailer with the largest number of distributor brands in France. In view of its IT service strategy, InterMarche is utilizing a high performance IT system so as to obtainas much of the market information as possible and also to find out the best locations for opening stores. In its global expansion strategy of international alliance, InterMarche has established the ALDIS group together with the distribution enterprises of both Spain and Germany in order to expand its food purchase, whereas in the non-food segment, it has established the ARENA group in alliance with 11 international distribution enterprises. Such strategies of InterMarche have been intended to find out the consumer needs for both price and quality of goods and to secure the purchase and supply networks which are closely localized. It is necessary to cope promptly with the constantly changing circumstances through being unified with relevant regions and by providing diversified customer services as well. In view of the InterMarche's positive policy for promoting local partnerships as well as the assistance for enhancing the local economic structure, implications are existing for those retail distributors of our country.
