식품산업에 있어서 포장두부의 전과정평가 사례연구 (Case Study on the Life Cycle Assessment of the Packaged Bean-curd in Food Industry)

  • This study has been analyzed an execution example of the life cycle assessment on the packaged bean-curd of P company, the first case of the regular life cycle assessment on the processed foods in Korea and considered on the significance and directions of the life cycle assessment on the foods. It is possible to divide the potential environmental impact through the life cycle of the bean-curd into six categories and analyze the environmental impact on the production, use and disposal phases of the product. The values of each environmental impact have been quantified from the strength of the potential impact fur the corresponding category of impact. In the future, it is expected that the result of the lift cycle assessment will be increasingly used fur many areas such as Climate Change Convention and ISO22000, etc. and it is required to promote a project to make database through the assessment on the individual corps or types of businesses for it from now on.

  • 전 세계적으로 반복적인 경기침체가 지속됨에 따라 소비자들의 소비 형태도 양극화되고, 식품 소비 패턴도 빠르게 변화하고 있어 영세 중소기업의 시장 진출이 점점 어려워지고 있다. 또한 지방자치단체마다 경쟁적으로 지역의 농산물가공 산업을 지원하면서 지역별로 생산되는 제품의 차별성을 확보하기 어려워지고 있다. 이런 문제를 해결하기 위해 횡성군은 농산물종합가공센터의 원활한 운영과 농산물가공 산업의 발전을 촉진하고자 사업을 추진하였다. 이는 원료조달 제조 가공 유통채널과의 연계를 촉진시켜 지역농업인, 공업인, 상업인의 협력체계를 구축하고자 지역 특성에 맞도록 농업인, 공업인, 상업인의 유기적 연대를 구성하고 서로의 장점을 살려 잘 팔리는 상품 및 서비스를 개발, 서로 상생할 수 있도록 지원하는 프로그램을 실제로 운영한 사례로 타 지역 식품산업 발전에 도움이 되었으면 한다.

  • The Development of science and technology began with the use of fire. In addition to the invention of an artificial light, more time and activity areas were provided so that continuous technological development has continued. Also, artificial lights brought an improvement in productivity through the applications in various fields such as agriculture, livestock farming, fisheries, and so on. Especially, in the field of agriculture, LED has come to the front as an alternative for food security against extreme climatic change. Meanwhile, with great interest, many researches about the convergence of agricultural biotechnology and LED industry are ongoing over the world. This paper shows the correlation of the plants growth using the LED artificial lighting similar to sunlight, which is needed for photosynthesis, in subway station which has actually no natural lights. Also, it is expected that this paper will lay out the groundwork for improving an environmentally friendly image which gives a relief and an emotional effect to passengers by using nature friendly lighting.

일본의 유기농산물 유통실태 (The Actual State of Organic Products Marketing in Japan)

  • Recently. together with consumers' increasing concerns on food safety and environmental issues. there is increasing demand on the environmentally friendly agricultural products such as organic products. At present, Japan. as a biggest net importing country of the agricultural products. is a market of the international-scale in the organic product marketing. Also. it is expected that the possibility of market expansion in the future is very high. According to the 2000 agricultural census in Japan. the number of the environment-friendly agricultural farmers were 501.556 householders. This number is about 145 percent higher than that of the 1996 results of 204,600 householders. Organic products in Japan were mainly marketed through the producer and consumer cooperation, producers' cooperation, specialized marketing company etc. However, along with the department store, big supermarket and others' participation in the market recently, the marketing channels are diversified. As of October 1999, market sales of the organic products were estimated about 350 billion yen. It is expected that organic certification system, organic products import, resturant industry scale and others will be more influential factors on the market expansion of the organic products in the future.

감마선 조사된 분말수프의 이화학적 품질과 조사여부 판별특성 (Physicochemical Quality and Detection Properties of Irradiated Powdered-Soups)

  • 시판 다소비 분말수프 3종(감자 수프/PS, 옥수수 수프/CS, 향신료 수프/CHS)에 대한 살균 목적의 감마선 조사(0, 1, 5, 10 kGy)가 이화학적 품질에 미치는 영향을 평가하였다. 아울러 감마선 조사 여부의 판별을 위하여 광자극발광분석(PSL), 전자스핀공명분석(ESR) 및 열발광분석(TL)의 적용가능성을 확인하였다. 시료의 수분함량 및 pH는 조사 여부에 상관없이 비교적 안정적이었으나, 기계적 색도는 조사선량이 증가할수록 PS 시료의 명도(L)는 감소하였고 황색도(b)는 증가하였다. 수프현탁액의 점도는 감마선 조사에 따라 크게 감소하였으며, PS>CS>CHS의 순으로 점도의 감소가 크게 나타났다. 분말수프의 감마선 조사 여부 판별시험에서 1 kGy 이상의 조사시료는 PSL 측정에서 5000 PCs 이상의 값을, ESR 측정에서 crystalline sugar 유래의 multicomponents signal을, 그리고 TL 측정에서 typical TL glow curve를 각각 나타내어 PSL, ESR 및 TL 분석의 적용가능성이 확인되었다.

중국 수출확대를 위한 한국 농식품 브랜드 아이덴티티 정립 (A Study of Korean Agri-Food Brand Identities for Expanding Exports to China)

  • Purpose - The purpose of this study is to target Chinese consumers of Korean agri-food through the analysis of agri-food brand identity images to set future directions for proposed agri-food exports to China. Since negotiations began for a free trade agreement (FTA) between Korea and China, some Koreans have worried about the Korean agriculture sector. The world trading system has undergone many changes in recent years. Since the start of FTA negotiations on agriculture, China and Korea have faced a heightened sense of crisis. China is trying to export agricultural products so actively that its agricultural exports could increase by more than 7% annually. China exported about one-tenth of its agricultural products to Korea in the period 2002-2010. Recently, the importance of brand identity has tended to increase, as the world becomes one unified market. In this situation, we should try to promote agri-food exports to China. It is very important to understand consumers' recognition of Korean food and the image of the Korean agri-food industry, to establish an export strategy. Research design, data, and methodology - This study targeted 2,800 adult men and women aged 25-59 years living in four major cities in China (Beijing, Shanghai, Guangzhou, and Qingdao) with a household income within the top 10% level in the China, using the one-to-one interview survey method. In addition, four groups by region (eight people per group) for a total of 32 groups were surveyed by using the focus group interview (FGI) research method, and impressions of imported agri-food were surveyed using 17 questions about fresh agri-food and 22 questions on processed agri-food. Factor analysis, brand positioning, biplot analysis, and so on, were carried out based on the results of these surveys. This research presents the brand identity of Korean food; according to the analyses, the brand identity is based on trust, safety, and attractiveness. Result - Factor analysis results showed that Chinese consumers expect four major qualities in imported fresh agri-food: freshness/safety, attractive appearance, premium branding, and excellent taste/quality. In the case of processed agri-food, it turned out that Chinese consumers are focused on safety/hygiene/freshness, health, and taste. In addition, in the fresh agri-food analysis by country, American foods had the upper hand; the image of American foods was also recognized as the most positive for processed agri-food. Meanwhile, according to the biplot analysis, Korean agri-food is strongly preferred for its appearance, but no country is strongly preferred as regards the level of freshness/safety that is expected by Chinese consumers. Conclusions - In this study, we analyzed the image of imported agri-food expected by Chinese consumers by reconstructing agri-food characteristics from the brand perspective. The research result shows that a Korean brand identity must be the ultimate goal for activities undertaken to enhance the image of Korean agri-food in the future. Additional research is needed because brand image can be formed through various channels.

국내외 농산물 인증마크에 대한 소비자 인식의 비교 (A Comparison Between Consumers' Perceptions of Korean and US Quality Certification Marks for Agricultural Products)

  • The purpose of the study is to determine how consumers perceive certification marks for agricultural products. The study examined three agricultural product certifications, such as the certification of environment-friendly agricultural products, Good Agricultural Procuts (GAP) certification mark, and United States Department of Agriculture (USDA) certification mark. A survey was utilized for data collection from adults over the age of 19 in November, 2013. A total of 390 questionnaires were distributed, and 300 of those were obtained for an analysis of the study. The results were as follows. First, consumers' awareness of, image of, and credibility on the agricultural products with the certification marks were not significantly different among the three certification marks except consumers' awareness. Second, consumers' purchase intentions for and willingness to pay for the agricultural products with the certification marks were not significantly different among the three certification marks. Third, these variables were not significantly different between buying group and non-buying group except consumers' awareness. Lastly, buying group and non-buying group were significantly different only in gender and marital status. The findings offer implications to the food and food service industry regarding consumers' purchase of certified agricultural products. Further, the study enforces the roles of food industry for environment.

광합성세균배양액의 상토내 혼합처리가 토마토 플러그묘의 유묘생장에 미치는 영향 (Effects of Compost Supplemented with Cultured Solution of Photosynthetic Bacteria (Rhodops eudomonas capsulatus) on the Early Growth of Plug Seedlings of Tomato)

  • This experiment was conducted to clarify the plant growth promoting effect of compost supplemented with cultured solution of photosynthetic bacteria(Rhodopseudomonas capsulatus) before sowing on the early growth of plug seedling of tomato and to evaluate the optimum concentration of bacterialization. Bacterializing concentrations(v/w) to the compost were 2%, 3.3%, 10%, 20% and 50%, respectively. Plant growth in terms of plant height, stem diameter, leaf area, total fresh and dry weight were promoted by the bacterialization of photosynthetic bacteria. Especially, in the plots supplemented with 10 to 20% the early growth was promoted markedly over 2 times. Compositions of photosynthetic bacteria consisted of crude protein 60.7%, soluble carbohydrates 20.1%, crude fat 7.6%, crude fiber 3.2% and crude ash 4.8, respectively.

매실추출물이 발효유제품의 Shelf-life에 미치는 영향 (Effect of Prunus mume Extract on Shelf-life of Fermented Dairy Product)

  • 식물성 천연항균제를 유가공설비 및 발효유제품의 항균처리제로서의 기능을 확인하기 위하여 천연항균제를 조제하여 항균특성을 검토하고 그 처리효과를 확인하였다. 조제한 매실추출물은 유제품의 발효 및 저장유통중 부패에 관여하는 Leu. mesenteroides, B. cereus, 및 K. pneumonia, 유제품 부패에 관여하는 것으로 알려진 Achromobacter sp. 등의 미생물에 대하여 PME $250{\mu}g/mL$ 이상의 농도에서 미생물의 생육이 완전히 억제되는 것을 볼 수 있었으며, 광범위한 범위의 열($40^{\circ}C{\sim}150^{\circ}C$)처리온도와 pH($4{\sim}10$)에서 안정한 것으로 나타났다. 한편, 발효유제품 제조공정 설비에 대한 미생물 검사 결과, 부패 미생물인 대장균, 곰팡이, 효모 등이 전혀 검출되지 않았으며, 변패미생물의 생육을 억제하는 매실추출물의 처리농도 범위에서 젖산균의 성장을 크게 저해하지 않아, 젖산 발효공정을 원만하게 수행할 수 있었으며, 표준방법에 의하여 발효제품을 제조하여 10시간내에 산도가 1.05%에 이르렀다. 아울러, 발효유제품에 $250{\mu}g/mL$ 이하의 PME를 첨가하고 유가공품을 발효시켜 적절한 숙성기간을 거쳐 제조할 경우, 젖산균을 제외한 변패미생물의 증식을 억제함을 알 수 있었고, 무처리구인 대조구와 향미 및 색도면에서 관능검사적으로 손색이 없으며, 선도유지기간이 확대되어 유통구조상 상품가치가 있는 발효유제품의 생산이 가능할 수 있음을 확인 할 수 있었다.

Enhanced Production of Galactooligosaccharides Enriched Skim Milk and Applied to Potentially Synbiotic Fermented Milk with Lactobacillus rhamnosus 4B15

  • In the current study, we first investigated a method for directly transforming lactose into galacto-oligosaccharides (GOS) for manufacturing low-lactose and GOS-enriched skim milk (GSM) and then evaluated its prebiotic potential by inoculating five strains of Bifidobacterium spp. In addition, fermented GSM (FGSM) was prepared using a potentially probiotic Lactobacillus strain and its fermentation characteristics and antioxidant capacities were determined. We found that GOS in GSM were metabolized by all five Bifidobacterium strains after incubation and promoted their growth. The levels of antioxidant activities including radical scavenging activities and 3-hydroxy-3-methylglutaryl-CoA reductase inhibition rate in GSM were significantly increased by fermentation with the probiotic Lactobacillus strain. Moreover, thirty-nine featured peptides in FGSM was detected. In particular, six peptides derived from ${\beta}$-casein, two peptides originated from ${\alpha}s_1$-casein and ${\kappa}$-casein were newly identified, respectively. Our findings indicate that GSM can potentially be used as a prebiotic substrate and FGSM can potentially prevent oxidative stress during the production of synbiotic fermented milk in the food industry.
