외식기업 문화와 리더십이 경쟁 우위에 미치는 영향 (The Effect of Organization Culture and Leadership on Competitive Advantage in Food Service Companies)

  • In order to cope with the severe business environment and possess the competitive advantage in the food service industry, the effect of organization culture and leadership on competitive advantage in food service companies was investigated. The friendly culture was regarded as important in relation between corporate culture and leadership. And the tendency to participate was shown to be highly correlated to leadership. Leadership and competitive advantage were influenced by the tendency to participate, differentiation and competence. The corporate culture and competitive advantage were affected by the friendly culture, differentiation and competence. Especially, the organization culture was more important than leadership. Therefore, it is necessary to execute the tendency to participate, differentiate products, service and management, and attract customers. And the maintenance of competitive power is required to develop a new product, evaluate customer satisfaction, and improve decision making, problem solving and crisis management.

이산화염소 가스 훈증 처리에 따른 곶감의 미생물학적 변화 및 품질특성 (Microbiological changes and quality characteristics of dried persimmon by chlorine dioxide gas fumigation treatment)

  • 본 연구는 저장 및 유통과정 중 곶감의 품질 변화를 방지하기 위한 방법으로 기존에 사용되어 왔던 유황 훈증 대체 물질로 이산화염소 훈증 방법의 효과를 확인하고자 하였다. 곶감을 이산화염소 가스 훈증 농도(0, 15, 30, 45 ppm) 및 시간(0, 15, 30, 45 min)에 따라 처리한 후 상온에서 보관하면서 미생물학적 변화, 물성 및 색도를 관찰하였다. 이산화염소 가스 훈증 처리 후 총 호기성 세균과 효모 및 곰팡이 수는 대조구와 비교하였을 때 미생물 수가 감소하였으며, 총 호기성 세균의 저해 효과는 저장기간 동안 지속되었고, 효모 및 곰팡이 수의 경우에도 총 호기성 세균과 유사한 경향을 나타내었다. 곶감의 물성 및 색도는 이산화염소 가스 훈증 농도 및 시간에 의해 영향을 받지 않는 것으로 나타났다. 이산화염소 가스 훈증 처리는 곶감의 저장 중 미생물학적 안전성 확보를 위한 처리 기술로 활용될 수 있을 것으로 기대된다.

  • here is a strand of thinking on service work which sees it as significantly different from other kinds of work due to the emotional as well as the physical and mental labor involved in family restaurant work This study was conducted to examine and investigate the level of emotional labor and burnout experience, and to provide basic information for improving work-related environments. The results of this study imply that job condition promoting programs for diminishing emotional labor and preventing burnout far service workers in foodservice industry should be carefully invented and developed, especially considering their work environments.

외식업 웹광고 구성요소가 소비자의 수용태도 및 구매효과에 미치는 영향 (The Effect of Web Ad Components on Consumer Attitude and Purchase in Food Service Industry)

  • This study examined the effects of Web ad components on customer attitude and purchasing decisions in 300 individuals who visited family restaurant Websites. The results are summarized as follows: First, Web ad components such as content, design, and interactivity had effects on the cognitive attitudes of the customers. And design, accessibility, and Web functionality had significant effects on the customers' emotional attitudes. In addition, content, navigation, and Web functionality had significant effects on the customers' behavioral attitudes. Lastly, the cognitive, emotional, and behavioral attitudes of the customers had significant effects on their purchases. From these results, design elements such as content, color, and menus, along with user interactivity for information are considered helpful components of a food service Web ad for customer cognition of the restaurant's information. In addition, aspects of Web functionality such as the food service's Web ad set-up, or the protection of personal information, the color design and menu, as well as accessibility for easy use, are all helpful in terms of gaining a customer attitude that is friendly and preferential towards a restaurant's menu items.

재가노인의 만성질환 식단관리를 위한 사회적 기업의 역할 (The Role of Social Enterprises in Chornic Disease Dietary Management for the Elderly at Home)

  • This study was to suggest the roles of social enterprises in maintaining healthy life of the socially vulnerable by creating a customized care environment through chronic disease diet management targeting the elderly at home in need of care in the community. As for the subjects of this study, 102 in-home elderly people aged 65 or older (14 males & 88 females) who needed care in the community were provided with a diet management lunch box delivery service customized for chronic diseases. Theoretical education and cooking class on chronic diseases were provided to 15 volunteers with 10 sessions, and customized lunch boxes were provided to the elderly with chronic diseases at home on that day. In conclusion, it is believed that only by increasing the level of knowledge about chronic diseases and nutritional knowledge of the elderly will it be possible to establish a proper meal plan. Since the role of volunteers is important, it is necessary to systematically seek nutritional education methods for volunteers.

  • Externally, there is urgent need Strengthening the competitiveness of agriculture in terms of production, processing and consumption. And development of high-quality services is particularly essential for provide safe food to consumers, internally. We studied the concept of service science, service models and service development methodology, then researched strengthening agricultural competitiveness through analysis of service viewpoint. After then, in the service level and service science, we elicit the service components for the defined new business, which is composed of private service and supporting service for Mungyeong omija industry. In this research, we evaluate the possibilities that agriculture is not primary industries but service industries for competitiveness. We suggest four key service composition for win-win strategy in Mungyeong omija industry. That is authenticity service, decision price service, decision rating service, establish infrastructure for year-round sale.

영양사 직무기술서 (2000 년) 의 영양사 직무영역별 특성 분석 I : 사업체 (Analysis of the Dietitian's Job description in the business and industry foodservice)

  • The purpose of this study was to verify the dietitian’s job description(2000) for dietitians working at business and industry foodservice. The survey was carried out for the frequency, criticality and difficulty of each job description with 4 point. The number of subject was 39 dietitians, who have been working over 3 years at their position. The results are following ; 1. Duties with high frequency and criticality were menu managements, purchasing, storage and inventory controls, food productions, meal services, waste managements and sanitation managements. 2. Duties with middle frequency and high criticality were managing equipments and facility, human resources managements, financial managements, self promotions. 3. Duties with low frequency and high criticality were nutrition assessment (life cycles, certain diseases, specific conditions), medical nutritional theraphy, nutrition education and public health nutrition. 4. For difficulty, duties related food service had lower points than that of nutrition service.

Isolation of Hafnia Species from Kimchi

  • Eight commercially packaged kimchi products were examined over 15 days of storage at $4^{\circ}C$ to evaluate the occurrence of Hafnia alvei (H. alvei). Additionally, 7 saeujeot products, as a possible ingredient source, were analyzed to examine the bacteria's origin. Over the storage period, kimchi samples had decreasing pH levels, which stabilized at pH 4.2; acidity increased to $0.9{\pm}0.1%$. Lactose-nonfermenting bacteria, which H. alvei belongs to, gradually reduced in numbers over the kimchi storage. However, the relative frequency of H. alvei to lactose-nonfermenting bacteria tended to increase. From the kimchi samples, 58 H. alvei-presumptive colonies were selected. Forty three colonies turned out to be H. alvei and 15 colonies were identified as other strains or uncertain identifications when the API 20E system was used. From further test, 3 of the 43 colonies were H. alvei (-) against the phage test. Finally, H. alvei was isolated from saeujeot, indicating that this ingredient can be an originating source of H. alvei in kimchi.

  • Using the high-pressure heating extraction process suitable for mass-production, crab stock(CS), red crab stock(RCS) and fish stock(FS) were manufactured and their quality and organic features were compared. The results are as follows. In mineral content, the content of essential amino acids, the content of delicious amino acids and preference, CS and RCS were rated higher than FS, and especially RCS had the most abundant essential amino acid content and had the highest rating in organic evaluation. Also, in terms of cost, RCS was more economical than regular CS, which is relatively expensive. Therefore, it is believed that replacing fish bones with RCS in making stock will be more cost-saving and have higher preference.

Proposed a consulting chatbot service for restaurant start-ups using social media big data

  • Since the first outbreak of COVID-19 in 2019, it has caused a huge blow to the restaurant industry. However, as social distancing was lifted as of April 2022, the restaurant industry gradually recovered, and as a result, interest in restaurant start-ups increased. Therefore, in this paper, big data analysis was conducted by selecting "restaurant start-up" as a key keyword through social media big data analysis using Textom and then conducting word frequency and CONCOR analysis. The collection period of keywords was selected from May 1, 2022 to May 23, 2023, after the lifting of social distancing due to COVID-19, and based on the analysis, the development of a restaurant start-up consulting chatbot service is proposed.
