외식업체 종사자의 내부마케팅이 직무만족에 미치는 효과 (The Effects of Internal Marketing on Job Satisfaction in Food Service Industry)

  • 외식업체 종사 근로자들이 인지하는 내부마케팅이 직무만족에 미치는 효과를 실증 분석하였다. 자료수집은 외식업체 종사자 438명과 그들의 상사를 대상으로 이루어진 설문조사결과를 바탕으로 이루어졌다. 본 연구는 종업원의 직무만족을 내재적만족과 외재적만족으로 구분함으로서 기존 연구에서의 측면적 만족과는 차별화하였으며, 이를 통해 직무만족에 대한 개념의범위를 포괄적으로 정의함으로서 분석결과에 따른 시사점을 풍성하게 하고자 하였다. 분석결과 경영층지원과 고용안정성은 내재적만족과 외재적만족 모두 긍정적 영향을 미치고, 내부의사소통은 내재적만족, 교육훈련은 외재적만족에만 긍정적 영향을 미치는 것으로 나타났다. 그리고 보상시스템은 모두 영향을 미치지 않는 것으로 나타났다. 분석결과 시사점은 다음과 같다. 내재적만족이 동기부여에 긍정적 영향을 미친다는 점에서 경영층의 직원을 배려하고 관심을 가지며, 직원의 소리를 중시하고, 현 직장에서의 발전가능성이나 지속적 근무를 보장하며, 내부 구성원들 간의 원활한 의사소통이 이루어지도록 관리할 필요가 있다. 또한 외재적만족도가 낮으면 직원들의 불만이 증가한다는 점에서 종업원불만을 예방하기 위해서는 내재적만족과 같이 직원들에 대한 경영층의 관심과 지원, 고용안정성이 필요하며, 추가적으로 직원들에 대한 교육훈련을 통해 고객 욕구에 적합한 서비스제공이 이루어지도록 하는 노력이 요구된다.

  • 본 연구에서는 국내 외식업체의 와인구매담당자, 즉 소믈리에, 매니저 등을 대상으로 고객장기 지향성에 긍정적으로 영향을 미치는 관계마케팅 요인을 파악함과 동시에 장기지향성이 형성되는 과정에서 관계의 질인 신뢰와 몰입의 역할을 규명함으로써 내수 경기침체와 치열한 경쟁으로 인해 어려움을 겪고 있는 와인공급업체의 영업활성화를 위한 마케팅 전략 수립에 도움을 주고자 함이다. 설문조사는 2010년 1월 15일부터 2월 13일까지 30일간 실시하였으며, 서울 시내 파인다이닝 레스토랑, 캐주얼 다이닝 레스토랑, 와인바 등의 와인구매담당자를 대상으로 하였다. 자료의 처리는 SPSS 15.0과 AMOS 7.0 통계패키지를 사용하여 빈도분석, 신뢰도 분석, 확인요인분석, 경로분석을 사용하였다. 그 결과, 관계마케팅 요인 중에서 커뮤니케이션과 판매자 전문성 요인은 신뢰와 정서적 몰입을 통하여 장기지향성에 긍정적인 영향을 미치는 것으로 나타났다.

  • 본 연구는 외식업체의 효과적인 인터넷 마케팅을 위한 부산지역 외식업체를 이용하는 고객의 생활만족과 심리적 웰빙에 관한 연구이며, 연구의 결과를 요약하면 다음과 같다. 첫째, 부산지역 외식업체 이용고객의 생활만족이 심리적 웰빙에 유의한 정(+)의 영향을 미칠 것이라는 연구가설을 검증결과, 생활만족은 심리적 웰빙의 구성요소인 개인적 성장, 자율성, 자아수용에 유의한 영향을 미친다는 연구가설이 채택되고, 자주성과의 영향관계에 있어서 연구가설은 기각이 되었다. 둘째, 이러한 연구결과를 통해 부산지역 외식업체의 효율적인 인터넷 마케팅을 위해서는 이용고객의 생활만족을 통한 심리적 웰빙을 도모하여야 하며, 특히 심리적 웰빙의 하위요인인 개인적 성장, 자율성, 자아수용 요인들을 고려한 인터넷 마케팅전략과 표적고객에 대한 인터넷 마케팅의 다양한 콘텐츠를 활용하여야 할 것으로 판단이 된다.

  • The taste preference for cheese is primarily dependent on an individual's habitual experience, such as personal memories since childhood. Cheese is not a traditional food in Korea, and therefore, the liking of cheese is acquired mainly through the exposure to European natural cheese by frequent travels rather than habitual experience. Although Korean dairy farms started the production of European style natural cheese because of surplus milk undulation, yet its demand has been consistently increasing in the last decade. Most of the mountain cheese variety in Europe are produced during the summer season on mountain pastures, especially in countries surrounded by the Alps. Nevertheless, not only consumers but also mountain cheese producers cannot comprehensively explain the differences in the nutritional properties of the milk from cows that grazed on mountain pasture and cows that were raised indoors. As the demand for cheese consumption is steadily increasing in Korea, it is necessary to study the effects of providing marketing information regarding the health conditions and rearing system of dairy cows in relation to the nutritional composition of cheese. In addition to the marketing focus on health-promoting unsaturated fatty acid composition of milk and cheese, the relationship between providing the marketing information on the raising environments of cows and the overall liking of mountain cheese were also investigated.

  • Recently, food delivery apps are seeing rapid growth into a market worth 1 trillion won under a simple but unique business model of connecting nearby restaurants with consumers via smartphone. Though basic similarities with social commerce exists in aspects such as mail-order sales intermediaries, startups, types of services and market competition structure, food delivery apps resemble social commerce in many ways in that they use excessive marketing to secure market dominance, causing a spike in consumer complaints. If the excessive marketing and increase in customer complaints are not rectified, the food delivery app could also see rapid decline as it gradually grows distant from consumers, just like social commerce. Accordingly, this study will identify the factors consumers recognize as important for continuous use vis-a-vis social commerce and food delivery apps to perform an empirical analysis on what areas need improvement. After deriving the four upper factors of product, information system and service along with eight sub-factors by referring to existing literature, the areas with opportunity for improvement were derived through satisfaction level and relative importance evaluation. The results of this study present a strategic direction for maintaining customers of social commerce and food delivery apps.

  • The purpose of this paper is investigation on the consumption and the nutrition of marketing fermented milk in Korea. The objectives were selected randomly from 3 cities in Jeonbug province, Jeonju, Iri, and Gunsan, and they were grouped into students, housewives, patients, and officers from July to September 1980. (male: 591, Female; 673, total: 1,264). Findings in detail are summarized in Table 1.15. Among the many kinds of marketing fermented milk in Korea, products from the five manufacturers, whose numbers of Lactic acid acid bacteria were standarized, were sampled and divided into groups, A,B,C,D,E. The constituents of nutrition of them were analyzed by HPLC and AAS.

  • The purpose of this study is to research consumer's action style. and then to make a marketing strategies. The strategic plan to consumer's action style on the fast-food industry were as follows; First, the group that coefficient of utilization is so frequent and an age is young are requested concentrative or discriminative marketing as the price discrimination and market segementation, the price value of the products value has to manage effectively, Second, establishment of corporate image and improvement of products image are requested. The result of this study, fast-food industry will be needed marketing activities that are discriminative strategies, positioning strategies, education training, and customer management. And system construction that is equivalent to customer needs, and the continuous coustomer studies are requested.

사과 소비의 증가에 영향을 미치는 심리적 요인 분석 (Psychological Factors of Increase in Apple Consumption)

  • This study analyzed consumer attitude, habit strength, subjective norm, a pros evaluation, and intention to consume to estimate perceptible variables that affect apple consumption. Data were collected from 207 men and women through a selfadministrated questionnaire. A partial least squares regression was conducted as one of structural equation models to estimate and test hypotheses. The results showed that attitude, habit strength, and the pros evaluation affected the intention to consume apples, and that the intention increased apple consumption. The results also showed that some marketing strategies are needed to promote apple consumption and to make consumers change their intention, to develop habits for eating apples by changing their diets, and to impress upon them that apples are good for health. This can be interpreted as meaning that it is most important to understand consumer behavior, particularly consumer psychology, which is reflected in the recent trend of marketing that concentrates on meeting the consumer's needs rather than the producer's.

포장방법 및 온도가 유통중 마의 품질에 미치는 영향 (Effect of Packaging Methods and Temperatures on the Shelf-life of Korean Yam(Dioscorea opposita Thumb.) during Marketing)

  • The influence of packaging methods(0.03mmPE, 0.05mmPE, 0.1mmPVC, VACUUM) and marketing temperatures(2$0^{\circ}C$, 1$0^{\circ}C$) on the shelf-life and quality were investigated in yam(Dioscorea). Respiration, weight-loss and rotting-rate was reduced in polyethylene film packaging in the order of VACUUM, 0.1mmPVC, 0.05mmPE, 0.03mmPE and the effect was more outstanding at 1$0^{\circ}C$ than 2$0^{\circ}C$. The ethylene concentration of PVC packaging group was higher than that of other packaging methods, which was related with sprouting. firmness was higher in low-temperature than in room-temperature. PPO activity was lower in vacuum than in other packaging methods, which was associated with browning. The shelf-life of yam was the longest in vacuum Packaging, 3 weeks at 2$0^{\circ}C$ and more than 4 weeks at 1$0^{\circ}C$.
