CJ-50002(비브리오백신)의 랫드에 대한 4주간 경구 반복투여 독성연구 (Four-Week Oral Toxicity Study of CJ-50002 (Vibrio Vaccine) in Rats)

  • This study was performed to evaluate the subacute toxicity of CJ-50002 (Vibrio Vaccine) in SPF Spraqur-Dawley (SD) rats. Vibrio vaccine was administered orally at a dose level of high (167mg/kg/day), medium (16.7mg/kg/day), and low (16.7mg/kg/day) once a day and repeated fro 4 weeks. Ten males and female rats were assigned to each group. After 4 week administration, no significant dose-dependent changes in body weight, water and food consumption rate or organ weight were noted dependent changes in body weight, water and food consumption rate or organ weight were noted among 4 groups. Urinanalysis, hematology, and serum chemistry, also fail to detect any dose-related change among 4 groups tested. During necropsy and histopathological examination, no specific toxicity related to treated material was found. The result of this study demonstrated that vibrio vaccine when administered orally for 4 weeks at a high dose of 167mg/kg/day, no dose-related toxicity was found in treated make and female rats.

수도권 대학생들의 떡의 이용실태 및 기호도조사 (Study on University Students′ Consumption Pattern and Preference of Korean Rice Cake)

  • The aim of this study was to assess University students' consumption pattern of Korean rice cakes and to analyze the preference of Korean rice cakes by their demographic backgrounds. The results of this study will be useful information for systematic development and wide distribution of Korean rice cake as a traditional Korean food. A self completed survey of 392 University students in Seoul was undertaken and detailed information was collected. The survey questionnaire consisted of three parts including demographic backgrounds, student's consumption pattern and preference of Korean rice cakes by type. Approximately half of the students were male (52.6%) with the average age of 21.1 years old. Most of the respondents (92.3%) were from nuclear families. The consumption frequency rate showed that 38.8% students had Korean rice cake once or twice a month followed by once a week (29.8%), once per six months (21.7%), and once per two months (8.2%). Ingeolmi received the highest preference score (4.15), whereas Duteopteok had the lowest score (0.18). The correlation coefficient for paired samples between students' preference of Korean rice cake and their knowledge of them was 0.827, showing statistically strong positive correlation between them.

서울과 대전 지역 주부의 지역김치에 대한 인식과 소비 실태 조사 (A Survey on the Consumption Pattern and Awareness of Regional Kimchi among Married Women in Seoul and the Daejeon Area)

  • The objective of this study were to examine the consumption pattern and awareness of Kimchi, which is our traditional food, preference for Kimchi, and the way of quality improvement in order to understand the recognition about the position and importance of Kimchi. The results are as follows. As for the recognition about regional way of making Kimchi, it turned out that married women in Seoul and Daejeon don't know their own ways of making Kimchi, and those in Daejeon don't know it more than those in Seoul. The rate of using Kimchi made at home was higher in Daejeon than in Seoul, and the rate of using Kimchi in both ways turned out higher in Seoul than in Daejeon. The reason why they use home-made Kimchi was that they generally prefer their own specific tastes both in Seoul and in Daejeon. Daily Kimchi ingestion was higher in Daejeon than in Seoul. Besides, the recognition about the superiority of our traditional Kimchi turned out high both in Seoul and in Daejeon. The survey of preferring Kimchi taste has been found that well pickled and proper seasoned Kimchi were most preferred both in Seoul and in Daejeon. Preference rate of various kinds of Kimchi came in the following order: Baechu Kimchi, Mu Kimchi, Oisobaki, Pa-buchu Kimchi in the Seoul area while Baechu Kimchi, Mu Kimchi, Pa-buchu kimchi, Oisobaki in the Daejeon area. In general, a sort of Kimchi stew was most popular as a dish using Kimchi with 63.8% both in Seoul and in Daejeon. It has been found in Seoul as well as in Daejeon that Kimchi served at a restaurant was usually untasty in comparison with Kimchi at home. The rate of preferring Kimchi on the markets in Seoul and in Daejeon as a whole came in the following order: Baechu Kimchi, Chongkak Kimchi, Baek kimchi People thought both in Seoul and in Daejeon that materials and cleanness were top priority when choosing Kimchi on the market. According to the result as above, recognition rate of Kimchi in the Seoul and Daejeon areas was shown rather low. Consequently, a further detailed research on Kimchi is thought to be needed. As the recognition of Kimchi increases, Kimchi consumption will increase accordingly. In order to prevent adult diseases, I think we should increase the consumption of Korean traditional fermentation food including Kimchi by increasing recognition of importance of nutrition, function, superiority, and the role of fermentation of Kimchi.

Effects of Egg White Consumption on Allergy, Immune Modulation, and Blood Cholesterol Levels in BALB/c Mice

  • We previously demonstrated that water-soluble egg yolk extract is not related to elevation of serum immunoglobulin E, which can initiate allergic reactions; however, it increases the level of high density lipoprotein (HDL)-cholesterol and the activity of B lymphocytes. In this study, egg white (EW) was fed to BALB/c mice to determine its influence on growth efficiency, immune modulation, and changes in serum lipid levels. A total of 50 five-wk-old BALB/c male mice were divided into 5 groups, 4 of which were fed 0, 10, 50, or 100 mg/d EW for 4 wk. Mice with an uptake of 10, 50 and 100 mg/d EW showed no significant changes in daily weight gain, feed efficiency rate, or populations of white blood cells. However, the activities of both B and T lymphocytes were significantly increased in all three EW groups at the final week of treatment. Interestingly, serum levels immunoglobulin E were not altered by EW consumption, but the IgG level was significantly increased in the 100 mg/d EW group. Serum lipid profile analyses showed no significant changes in total cholesterol, HDL, low density lipoprotein, or triglyceride levels by EW consumption. Taken together, these data demonstrate that consumption of EW promotes immune cell activities and the upregulation of serum IgG levels. However, we found no changes in serum lipid profiles and IgE levels. Therefore, our study suggests that consumption of EW might not be related to the risk of food allergy, but could be an excellent candidate for the maintenance of physiological homeostasis.

  • Some method was introduced to explain oxygen transfer from broth to cell during aerobic microbe cultivation. It is explained by 5 steps that how desolved oxygen can reach to cell. Among these steps film resistance was the most important factor to describe oxygen transfer. Lumped model and distributed model was introduced to explain oxygen diffusion rate and oxygen consumption rate which occurs in the microbe pellet.

여성의 결혼여부에 따른 식품소비양상 연구 : 2015년 식품소비행태조사의 식품주 구입자 자료를 이용하여 (Food consumption behaviors of women by marital status: focus on the 2015 consumers survey data on food consumption behaviors)

  • 본 연구는 농촌경제연구원에서 실시한 2015년 식품소비행태조사 자료를 이용하여 여성의 결혼여부에 따른 조사대상자의 일반적 사항, 식료품 구입행태, 외식행태, 배달 및 테이크아웃 이용 행태, 그리고 가공식품 및 조리식품 구입행태를 조사하였다. 식료품 구입 빈도에서는 미혼인 경우는 주 1회 (40.5%), 기혼인 경우는 주 2~3회 (43.1%)로 가장 높게 나타났다. 친환경 식품의 구매여부는 결혼여부와 관계없이 구매하지 않는 비율이 60%이상 (미혼 68.2%, 기혼 61.6%)으로 높게 나타났고, 기능성 식품의 복용률은 기혼여성 (54.2%)이 미혼여성 (44.9%)보다 높은 것으로 조사되었다. 결혼여부에 따른 외식행태는 미혼인 경우가 기혼인 여성보다는 외식을 더 많이 하는 것으로 조사되었고, 미혼인 경우는 한식당, 기혼은 고깃집을 외식장소로 주로 이용하는 것으로 나타났다. 그리고 배달 및 테이크아웃의 소비행태에서는 기혼인 경우가 월 2회 (34.6%), 미혼은 월 1회 (31.2%)가 각각 가장 높은 것으로 나타났다. 그리고 배달 및 테이크아웃의 빈도는 외식횟수와는 달리 기혼인 경우가 더 높은 것으로 조사 되었다. 또한, 결혼여부에 따른 가공식품의 구입행태에서도 미혼여성이 기혼여성에 비교하여 대표적인 가공식품인 빵류, 과자류, 떡류 및 라면, 국수류의 구매 빈도가 더 낮은 것으로 나타났다. 본 연구는 여성의 결혼 여부에 따른 식품소비 행태인 식품 구매, 외식, 배달/테이크아웃 패턴을 비교 분석하였으며, 이러한 결과는 관련 연구와 산업에 기초자료로 활용되길 기대한다.

Review of Rice: Production, Trade, Consumption, and Future Demand in Korea and Worldwide

  • Being a staple food for more than half of the population of the world and South Korea, rice is an important crop. For the past 20 years, global paddy rice cultivation area and production have shown an annual growth of 0.46% and 1.61%, respectively. Global rice consumption for food and processing has increased by 1.37% and 3.68%, respectively. Due to the main reason for such increasing human population, it is expected that from 439 million tons in 2010, additional 116 million tons will be needed in 2035. Global rice imports and exports have doubled in the last 20 years. However, in spite of such increment, global rice exports in 2013 were 8.4% of the total production. It is thought that rice protection policies in the producing countries are the main reason for such small scale of rice trading. In the past 5 years, India recorded the largest growth rate in rice exports (51.4%), whereas China showed the largest growth rate in imports (61.0%). For global utilization of milled rice during the same period, approximately 79.4% was used as food, 7.2% as animal feeds, and 1.4% for processing. Regionally, Asia has shown a similar pattern to the global rice usage, whereas utilization for processing in America, for food in Africa, and for animal feed in Europe was relatively higher than the global rice usage. Korea's cultivation area and production since the last 5 years, are 0.5% and 0.8% of those of the world, respectively. Its annual rice export is approximately 3,000 tons, which is 0.01% of the global rice export. Korea's rice utilization is high for food and low for feed and for processing relative to global rice utilization. Therefore, a review must be conducted to increase Korea's utilization of rice for processing and for feed production.

  • 원전 주변의 주민에 대한 방사선량의 대부분을 음식물 섭취에 의한 내부피폭이 차지하고 있다 그러나 우리나라 원전에 적용하고 있는 음식물 섭취량은 1989년 한국원자력연구소가 고리원전 주변지역을 대상으로 현장조사한 결과로 최근의 식습관 변화를 적절히 반영하지 못하고 있다. 보건복지부에서는 국민건강증진법에 의거 매 3년마다 전국 규모의 국민의 식품 및 영양 섭취실태 조사를 실시하고 있다 따라서 이러한 정부 조사자료를 활용하여 주기적으로 음식물 섭취량 자료를 갱신할 수 있는 방안을 모색할 필요가 있다. 국내원전에 적용하고 있는 음식물 섭취량 자료를 개선하기 보건복지부 국민영양조사 결과를 분석하고, 원자력발전소 주변 주민을 대상으로 현장 조사를 실시하였다.

  • VFAs like acetate are the major soluble metabolites of food waste leachates after digested. Therefore this study investigates the effect of acetate on growth rate and nutrient removal efficiency of Chlorella vulgaris to treat digested food waste leachates. The initial acetate concentration varied from 0 to 20 mM. As a result, Chlorella vulgaris growth rate was increased as high as the concentrations ranged from 0 to 20 mM. The same trend was observed with $NH_4$-N and $PO_4$-P consumption. The highest growth rate and the highest $NH_4$-N, $PO_4$-P removal rate were observed at acetate concentration of 20 mM. The microalgae growth rate and $NH_4$-N, $PO_4$-P removal rates were 1.5, 1.8, 2.3 times higher than the condition without acetate.

인삼의 엽, 경을 첨가한 식이중 영양소의 흡수율에 관한 연구 (Absorption Rate of Nutrients in the Diets supplemented with the Leaf or Trunk of Panax Ginseng in Rat)

  • This study was devised to observe the nutritional effects of the diets supplemented with the leaf or trunk in rats. The male albino rats (110 heads), Sprague-Dowley strain weighing 75g to 79g, were used as the experimental aninl mils. The animals were divided into twelve diet groups and maintained with corresponding diet for 40 days, and then sacrificed. The growth rate, the consumption and efficiency ratios of the food and protein, the absorption rates of carbohydrate, lipid and protein, and the utilization rates of energy were determined during the feeding term. The results obtained are summarized as follows: 1) The growth rate, the consumption and efficiency ratios of the food and protein in each experimental diet group added ginseng steamed leaf or trunk were higher than those in experimental group A which has the diet supplemented with ginseng raw leaf of trunk. 2) The absorption rates of the carbohydrate were above 96%, higher than those or the control group, But those of fat, protein and the utilization rate of energy in each experimental diet group were generally lower than those in the control group.
