Effects of nutrition education on nutrition-related knowledge, dietary habits, and nutrient intakes of alcoholic patients (영양교육이 알코올중독자의 영양지식, 식습관 및 영양섭취상태에 미치는 효과)

  • Purpose: The aim of this study was to examine the characteristics of nutrition-related knowledge, dietary habits, and nutrient intakes of alcoholic patients and how nutrition education affects these nutritional behaviors. Methods: Subjects included 37 adult male alcoholic patients who were hospitalized. The nutrition education program consisted of five lessons over a five-week period. An each 80-minute nutrition education program per week was implemented for the alcoholic patients over a five-week period. Both before and after the implementation of nutrition education, their nutrition-related knowledge and dietary habits were assessed and nutrient intakes were investigated. Results: The subjects showed drinking habits of considerably high frequency, a large quantity of alcohol consumption, and preference for soju (a liquor) over beer. They had proper weight, height, and BMI, and came from relatively poor socioeconomic backgrounds with a low-level of self-rated health status and a comparatively high rate of suffering from disease. Mean score of their nutrition-related knowledge and dietary habits was quite low. They consumed less energy, dietary fiber, vitamin C, thiamin, riboflavin, folic acid, Ca, and K, but more Na compared to each Dietary Reference Intake (DRI). After implementing the nutrition education, mean score of nutrition-related knowledge and dietary habits showed significant improvement. In addition, the meeting rate of each DRI of several nutrients was increased significantly, including energy, carbohydrate, dietary fiber, vitamins A, C, and $B_6$, thiamin, riboflavin, niacin, pyridoxine, folic acid, Ca, P, K, Fe, and Zn, while that of Na decreased. Conclusion: The findings of this study indicate that alcoholic patients had various nutritional problems, such as lack of nutrition-related knowledge, bad dietary habits, and insufficient nutrient intakes, however, these problems can be positively modified by implementation of a relatively short-term nutrition education program.

Change of Quality Characteristics of Commercial and Prepared Kimchi Depending on Fermentation (상업용 김치와 담금 배추김치의 발효에 따른 품질특성 변화)

  • Purpose: The purpose of this study was to evaluate the folate contents and quality characteristics of commercial and fermented Kimchi and compare the correlation between folic acid and quality characteristics. Methods: The contents of total folate and quality characteristics were evaluated in 10 kinds of industrial and local Kimchi and nine kinds of other commonly consumed Kimchi. Changes in folate content and quality characteristics of Kimchi during 14 days of fermentation at $15^{\circ}C$ were compared. Results: Chungnam (L4) Kimchi had the lowest pH of 4.62, and acidity (0.57%) and salinity (3.26%) were highest compared to other areas. The content of total folate of D company (A) was the highest at $73.66{\mu}g/100g$. The content of total folate was significantly higher than those of Sesame leaf Kimchi (O9) and Young leafy radish Kimchi (O5) containing 65.77 and $62.82{\mu}g/100g$, respectively. The pH of fermented Kimchi decreased from 6.09 to 4.11 (p<0.05), and the acidity significantly increased (p<0.001) to 0.32-0.66%. Reducing sugar content decreased rapidly by 4 days and then slowly decreased (p<0.001). Total bacteria and lactic acid bacteria counts significantly increased (p<0.05) with fermentation period. Content of total folate was highest at $69.82{\mu}g/100g$ and $68.16{\mu}g/100g$ on days 0 and 2 of fermentation, after which it decreased to 77.6% at $15.61{\mu}g/100g$ on day 10 of fermentation. Conclusion: As a result, there was no definite trend regarding folate content in commercial Kimchi and other Kimchi. Young leafy radish, Chives, and Welsh onion Kimchi, which are rich in green leaves, are excellent folate source foods. The highest folate content of fermented Kimchi was identified on day 2 of fermentation. Therefore, it is recommended to use raw or immature Kimchi when using Kimchi as a folate source food.

Comparison of Indices for Diet Quality Evaluation of Korean Adolescents by Residence Area and Body Size (한국 청소년의 거주지역별 및 체격별 식사의 질 평가지수의 비교)

  • The purpose of this study was to assess several indices of diet quality based on nutrient, food and food group intake of Korean adolescents based on several indices on diet quality according to residence area and body size. Using the data from the 1998 National Health and Nutrition Survey, twenty-four-hour-dietary recalls of a total of 1,110 Korean adolescents aged 13 - 19 years (male 543, female 567) were analyzed for nutrient adequacy ratio (NAR) , index of nutritional quality (INQ) , the number of foods (Dietary Variety Score, DVS) and food group consumed (Dietary Diversity Score, DDS) . In doing that, it was attempted to apply only the minimum amount of solid foods of Kant's without inclusion of liquid foods because of the very limited variety in Korean foods. Based on weight length index, 13.1% of the subjects were categorized as obese, 14.2%, overweight, 44.4%, normal and 28.3%, underweight. Only vitamin B2 intake was higher in the obese group than in the underweight group. There was no meaningful difference in energy, protein and fat intakes according to the grade of the body size. In terms of residence area, intake of fat, niacin, vitamin $B_6$ and folic acid were lower in the rural areas than in the metropolitan city. Only vitamin E intake was higher in the rural areas. Mean value of NARs (MAR) and INQs (mINQ) was also higher in the metropolitan city than in the rural areas, but there was no significant difference of these two values according to body size of the subjects. Mean DVS was 21.02 for total subjects, and has no difference between male and female and between metropolitan city and other medium-small city. But, the rural areas showed the lowest DVS of 19.05. Mean DDS in which five is a maximum score was 3.3 with no significant difference by sex and by residence area in male subjects. However, in female subjects, DDS in the rural areas was the lowest. According to body size of the subjects, there was no meaningful difference in both scores of DVS and DDS. In conclusion, most indices of nutrient intake and food and food group intake were not significantly different by body size of the subjects, while most indices were significantly different by residence areas: higher in the metropolitan city than in the rural area.

The Effect of Breast Feeding on Growth Development, Bone Mineral Density of Carpus, and Nutrient Intakes in Preschool Children (모유 경험이 미취학 아동의 신체발달, 손목 골밀도 및 영양섭취에 미치는 영향)

  • The purpose of this study was to examine the long term effects of breast feeding on growth, bone development and nutrient intakes in preschool children. Subjects were 62 preschool children. Anthropometric characteristics and bone mineral density of carpus were measured using DEXA. The questionnaire was composed of health status, life style, dietary behaviors, and dietary intakes and was completed by the children's mothers. The average age of the boys was 62.4 months and that of the girls was 62.1 months. Average birth height and weight of the subjects was 50.9 cm and 3.4 kg for boys and 50.3 cm and 3.3 kg for girls, respectively. The average height, weight, $\%$ body fat, and obesity index were 111.7 cm, 19.6 kg, $15.0\%$, $-2.1\%$ in boys and 109.4 em, 18.7 kg, $17.5\%$, $0.2\%$ in girls, respectively. Forty children were fed colostrum, 21 were fed breast milk, 29 were fed formula, and 12 were fed mixed milk. There was no significant difference in growth status between children who were fed colostrum and those who were not. Children who had mixed feedings were significantly taller than those who did not (p <0.001), and children who had colostrum had significantly higher bone mineral density than those who did not ($0.25 \pm 0.04 g/ cm^2$ vs. $0.23 \pm 0.04 g/cm^2$, p < 0.05). However, the different feeding methods did not show any difference in bone mineral density. Except vitamin $B_6$, folic acid and vitamin E, vitamin, mineral and calorie intakes did not meet the Korean RDAs. Calcium intake was especially lower than recommendations by as much as $62\%$ and $70\%$ in boys and girls, respectively. There was no significant difference in nutrient intakes between children who had colostrum and those who did not. However, children who were formula consumed significantly more animal fat than those who did not (p < 0.05). Neonatal feeding and breast or formula feeding seems to associate with height, bone mineral density and animal fat intakes in preschool children, based on the results of this study. A longitudinal study is needed to clarify this relationship.

A Study on Relation between Premenstrual Syndrome (PMS) and Nutritional Intake, Blood Composition of Female College Students (여대생의 월경전증후군과 영양소 섭취량 및 혈액성상과의 관련성에 관한 연구)

  • This study was performed to investigate the correlation between Premenstrual syndrome (PMS) and nutritional intake, blood composition of female students. One hundred and one female students were selected as the experimental subjects at Gyeongsang National University. To assess the PMS symptoms of the subjects, a questionnaire (PAP) score based on the methods of Halbreich, Endicor and Nee was prepared with 34 different items. Dietary survey was conducted by 24­hour recall method for 3 days and nutrient intakes were analyzed by the CAN-Pro. Blood composition of WBC, RBC, Hb, Hct, Ca and Mg was measured. The average height, weight and BMI of subjects were $160.7\pm4.6cm,\;54.1\pm5.7kg\;and\;21.2\pm1.9$, respectively. Average intakes of energy, calcium, iron, zinc, vit $B_2$, and folic acid per day were $1810.2\pm344.9kcal(90.5\%\;of\;RDA),\;621.1\;197.3mg(88.7\%\;of\;RDA),\;15.9\;pm4.9mg\;(99.3\%\;of\;RDA),\;8.1\pm3.4mg(80.5\%\;of\;RDA),\;1.1\pm0.6mg(88.3\%\;of\;RDA)\;and\;234.3\pm78.6{\mu}g(93.7\%\;of\;RDA)$, respectively. Score of the behavioral symptoms, psychologic symptoms, physical symptoms and other symptoms were recorded $1.79\pm0.86,\;2.11\pm1.08,\;2.31\pm1.11\;and\;1.58\pm0.86$, respectively. The relation between PMS and menstrual cramps was significant. A significant difference was observed for menstruation amount in physical symptoms (p<0.05) and other scores (p<0.05). The group who drinks alcohol over 30g per day showed higher scores at total PAP (p<0.05), psychologic symptoms (p<0.05), physical symptoms (p<0.05), and other scores (p<0.05) than those who don't drink alcohol. Calcium in the blood showed a negative correlation with total PAF score (p<0.05), behavioral symptoms (p<0.05), physical symptoms (p<0.05) and other scores (p<0.01). Magnesium in the blood showed a negative correlation with physical symptoms (p<0.05), other score (p<0.05). WBC was negatively associated with psychologic scores (p<0.05). Hb and Hct were negatively associated with other scores (p<0.05). In conclusion, calcium intake showed a level of $88.7\%$ of RDA and this study revealed that there is a correlation between PMS and blood composition in female college students. Therefore, calcium and magnesium supplements can be beneficial to relieve PMS symptoms.

An Investigation of the Nutrient Intakes according to the Alcohol Consumption Level in Male Workers (남성 근로자들의 알코올 섭취에 따른 영양소 섭취상태 연구)

  • The purpose of this study was to compare the anthropometry, nutrient intakes, dietary - related behaviors and health - related behaviors of male workers that were divided according to their alcohol consumption. The mean height, weight and BMI of all subjects were 172.0$\pm$5.8 cm, 67.8$\pm$9.3 kg and 22.9$\pm$2.6 kg/$m^2$, respectively. The WHR was higher in the heavy drinking group than in the other groups(p<0.01), while the other anthropometric indices were not significantly different among the three groups. The calorie intake was highest(p<0.001) in the heavy drinking group(3,270.4$\pm$686.5 kcal), followed by moderate(2,602.8$\pm$415.8 kcal) drinking group and light drinking group(2,341.5$\pm$449.4 kcal). As alcohol consumption increased, there was a decrease in the percent of energy derived from carbohydrates and lipids, while there was an increase in the percent of energy derived from proteins and alcohol(p<0.001). The heavy and moderate drinking groups had a highers intake of protein compared to the light drinking group, and the heavy drinking group had a higher intake of lipid compared to the light and moderate drinking groups(p<0.01). The intakes of vitamin $B_2$, niacin and phosphorus were lower in the moderate group than the other groups(p<0.01). The average MAR(Mean adequacy ratio) was 1.44$\pm$0.35 and the intake of all nutrients, except for folic acid, was much higher than the Korean RI(Recommended intake). The fruit intake frequency and sleeping hours were the lowest in the heavy drinking group(p<0.05) and the subjects preferred the following order of food products when they drink: meat(42.5%), fish & shellfish(30.0%), fruit & vegetable(22.5%) and others(5.0%) as a side dish. The average rates of smoking and exercise for all the subjects were 77.5% and 67.5%, respectively. The results of this study showed that heavy alcohol drinkers were more prone to abdominal obesity and related chronic degenerative diseases, indicating the need for extensive nutritional education for heavy alcohol drinkers.

Clinical Effectiveness of Regular Use of Unripe Apple Mask Pack on Skin Status of Middle-aged Women (미숙사과를 이용한 사과마스크팩의 정기적인 사용이 중년여성의 피부상태 개선에 대한 임상효과 평가)

  • The effects of unripe apple mask pack made from unripe apple extracts on the skin status of middle-aged women for 4 weeks were investigated. The subjects were divided into three groups: placebo mask pack as the control (PM, n = 8), apple mask pack (AM, n = 16), and apple mask pack + apple intake (AAM, n = 12). The study included a survey questionnaire, and evaluations of nutrients intakes and of skin status. Skin status was measured by Aramo-TS. After 4 weeks, facial moisture, elasticity, evenness, and wrinkle level were improved in AM and AAM. The facial moisture level (AM: $+3.13\;{\pm}\;2.73$, AAM: $+2.25\;{\pm}\;2.93$) and elasticity level (AM: $+5.81\;{\pm}\;8.27$, AAM: $+5.50\;{\pm}\;6.13$) of AM (p < 0.001) and AAM (p < 0.05) were increased. The facial evenness level (AM: $-5.25\;{\pm}\;8.13$, AAM: $-9.17\;{\pm}\;4.26$) and wrinkle level (AM: $-10.88\;{\pm}\;11.74$, AAM: $-17.83\;{\pm}\;12.22$) were significantly decreased. AAM was more effective in improving skin elasticity, evenness, and wrinkle. The skin status of PM was not changed. While the macronutrient intakes of all the subjects were not different before and after the study, the daily intakes of some vitamins (vitamins $B_6$, C, and E and folic acid) during the study were significantly increased in AAM. These findings suggested that regular use of apple mask pack was effective in improving overall skin status. Furthermore, the consumption of apples with mask pack application was much better in improving skin status.

Glycididazole Sodium Combined with Radiochemotherapy for Locally Advanced Nasopharyngeal Carcinoma

  • Background: To evaluate efficacy and side effects of glycididazole sodium (CMNa) combined with chemotherapy (cisplatin plus 5-FU/folic acid, PLF) and radiotherapy in treating patients with locally advanced nasopharyngeal carcinoma. Materials and Methods: Patients with III~IV stage nasopharyngeal carcinoma (NPC),were randomly divided into treatment group (46 patients) and control group (45 patients). Both groups received radiotherapy concomitant with PLF chemotherapy. The treatment group at the same time cwas given CMNa ($800mg/m^2$ before radiotherapy), by l h intravenous drip, three times a week. Results: When the dose of radiation was over 60 Gy, complete response rates of nasopharyngeal tumor and lymph node metastases in treatment group were significantly higher than in the control group (93.5% vs 77.8%; 89.1% vs 93.5%, p<0.05). Three months after radiotherapy, complete response rate of nasopharynx cancer and lymph node metastases in treatment group was both 97.8%, again higher than in the control group (84.4% and 82.2%) (p<0.05). In the treatment group, 1, 3, 5 year disease-free survival rates were 95.7%, 86.7% and 54.5%; and in control group, the corresponding disease-free survival rates were 93.3%, 66.2% and 38.6%, respectively, the difference being statistically significant (log-rank =5.887, p=0.015). One, 3, 5 year overall survival rates in two groups of patients were 97.8%, 93.5%, 70.4% and 95.5%, 88.07%, 48.4%, respectively, again with a statistically significant difference (log-rank=6.470, p=0.011). Acute toxicity and long-term radiotherapy related toxicity in the two groups did not differ (p>0.05). Conclusions: Glycididazole sodium could improve curative effects without increasing adverse reactions when treating paitents with locally advanced nasopharyngeal carcinoma.

Comparison of Nutritional and Physical Status according to the Residental Type among College Women in Seoul Women's University and Sahmyook University (삼육대 및 서울여대 재학 중인 일부 여대생의 거주형태에 따른 영양섭취상태 및 신체계측 비교 연구)

  • This study was conducted to investigate the effects of residence types ((1) parent house, (2) dormitory or boarding home, (3) boarding home w/o food) on the dietary habits and health status of college women (20-23 y). Overall, 46.1% of college women reported that they were economically middle class and spent 200,000-390,000 won. Additionally, 17.4% of college women considered themselves healthy, while 33.8% reported that they were not healthy. Furthermore, 32.0% of college women had experience to control their weight and 39.8% reported that they exercised to control their weight. There were no significant differences in the height and weight of the subjects according to residential type, but the amount of skeletal muscles mass ($21.0\;{\pm}\;2.6\;kg$) of the subjects that lived in dormitory or boarding home was significantly higher (p < 0.05) than that of women who lived at home. Additionally, 30.8% of students that lived in private residences, 25.0% of students that dwelled in dormitory or boarding homes and 27.7% of students that boarding home w/o food had three regular meals every day (p < 0.05). It has been reported that 18.3% of college students eat processed and instant foods due to their convenience. In the present study, intakes of energy, protein, fat, vitamin A, vitamin $B_1$, vitamin $B_2$, vitamin $B_6$, niacin, vitamin C, vitamin E and folic acid for the subjects who lived in dormitory or boarding homes was significantly higher than those of students who lived in private residences (p < 0.05). Additionally, intakes of iron, calcium, and zinc were lower in the subjects that boarding home w/o food (p < 0.05). Finally, the blood glucose level was $84.7\;{\pm}\;13.0\;mg/dL$, and differed significantly by residential types (p < 0.05); however, the average glucose levels of all subjects were within the normal range (90-110 mg/dL).

Clinical Features and Genetic Analysis of Homocystinuria Patients in Korea (전형적 호모시스틴뇨증 환자들의 임상적 특성과 유전자분석)

  • Purpose: Homocystinuria (OMIM#236200) is a metabolic disease caused by mutation in the CBS gene. This study was conducted to identify the clinical features and prognosis of homocystinuria as well as to find out the CBS gene mutations of the six homocystinuria patients who were receiving treatment in the Pediatric Department at Soonchunhyang University Hospital. Methods: From January 1992 to March 2015, clinical, biochemical, and genetic analyses were performed retrospectively on the six patients diagnosed with classic homocystinuria at Soonchunhyang University Hospital. Results: A total of six patients were included in this study, including three who were diagnosed with homocystinuria at the mean age of $50{\pm}22.5$ days based on their abnormal newborn screening test results. The other three were diagnosed at the mean age of 7, when they visited the hospital for evaluation of developmental delay and lens dislocation. The group diagnosed at early infancy had normal cognitive function, but the other group had varying degrees of mental retardation. Major complications were found only in the group diagnosed after infancy. CBS gene mutation was found in all the patients, and they were all non-responsive to vitamin B6 treatment. At present, all patients' diets are controlled following a methionine-free formula and they are on medication with folic acid, betaine, pyridoxine, and methylcobalamin. Conclusion: Six homocystinuria patients were monitored for up to 23 years. The group diagnosed at early infancy exhibited no major complications. Therefore, early diagnosis is crucial in the prognosis, and homocystinuria must be included in the newborn screening program.
