This study was conducted to investigate the effect of 1-methylcyclopropene (1-MCP), a known ethylene action inhibitor, on fruit quality and incidence of physiological disorders during a simulated marketing period in new mid-season Asian pear (Pyrus pyrifolia Nakai) 'Changjo'. Flesh firmness of untreated control fruits was maintained with a hardness of 20.2 N until day 14 of simulated marketing but decreased rapidly to 6.2 N at day 21 of simulated marketing; losing its commercial quality. However, the firmness of 1-MCP treated fruits remained high (> 20.7 N) during the same period. Quality indices such as soluble solids content and titratable acidity in 'Changjo' pear did not show any significant differences during simulated marketing period regardless of 1-MCP treatment. For the difference in skin color, redness ($a^*$) tended to increase as simulated marketing period became longer, and 1-MCP treatment delayed this change by 7 days compared to the untreated fruits. No decrease occurred in ethylene production level with 1-MCP treatment in 'Changjo' pear. Meanwhile, 1-MCP treated pears showed a significantly lower respiration rate compared to the untreated fruits. Also, 1-MCP treatment effectively reduced the incidence of physiological disorders including internal flesh browning and mealiness symptoms during simulated marketing periods of 21 and 14 days, respectively. Therefore, we conclude that the use of 1-MCP is recommended for quality maintenance and for prevention of physiological disorders during simulated marketing periods of ${\geq}7days$ for mid-season Asian pear 'Changjo'.
Effect of nitric oxide (NO) treatment on physiology and quality characteristics of peaches (Prunus persica L. Batsch) was determined. Peaches were treated for 4 hr with NO (0, 10, 100 ppm) gas under oxygen-free atmosphere at $10^{\circ}C$, packaged with 0.05-mm LDPE film, and stored at $10^{\circ}C$ for 15 days. Treatment with 100 ppm NO reduced the ethylene production and the loss of flesh firmness in peaches, but did not affect soluble solids, titratable acidity, and surface color. Oxygen-free atmosphere induced the reduction of respiration rate and ethylene production. Modified atmosphere packaging retarded the loss of flesh firmness and surface greenness, but decreased soluble solids and titratable acidity regardless of NO treatment.
Physiological characteristics of two Korean golden kiwifruit cultivars, 'Halla Gold' and 'Haehyang', were compared to determine the storage potential of fruit. The soluble solid levels of the fruit were 8.9 and 6.9 oBrix in 'Halla Gold' and 'Haehyang' at harvest, respectively but increased up to 15.4 in 'Halla Gold' and 17.5 oBrix in 'Haehyang' after 2 months of storage. Major sugars were fructose and glucose, and sucrose content was relatively low regardless of cultivar. The edible quality of 'Haehyang' was better than 'Halla Gold' because of higher amount of sugars. Firmness of the fruits gradually decreased as the increase of storage period in 'Halla Gold' in both flesh and core tissue. Th firmness loss of 'Haehyang' fruit was faster in the first 2 months and then became slow. After 75 days of storage, the firmness of 'Haehyang' fruit was only 5.2% at harvest. Core tissue was soften enough to eat at ripe stage. Wall modifying enzyme activities including xylanase, ${\alpha}$-L-arabinofuranosi-dase and ${\beta}$-galactosidase were consistently higher in 'Haehyang' and the activity of pectate lyase was more increased than 'Halla Gold' after 2 months of storage. Respiration rate of 'Haehyang' was higher than 'Halla Gold' and further increased after 2 months of storage. Weight loss was much higher in 'Haehyang' which showed higher rate of the firmness loss. The storage potential of golden kiwifruit was estimated to be about 2 months for 'Haehyang' and 3 months for 'Halla Gold' when determined on the basis of the fruit firmness.
This study was conducted to determine the effects of storage conditions on apples treated with postharvest fungicides, benomyl and bitertanol. The fungicideds were applied to control Postharverst disease in apples during CA and cold storage. The stored Apple were tested monthly for weight loss, flesh firmness, titratable acidity, prix and free sugar. Relative to the control group, the pstharvest fungicide stoup had less disease. The fungicide treated apples stored in CA had a higher measured weight, better firmness and maintained acidity, prix and free sugar when compared to the control stoup monthly and after 200days. The fungicide treated apples in cold storage maintained their quality for 120days.
Effect of storage on the tree and quality of early cultivar of Citrus unshiu Marc. produced in Cheju according to harvest time were investigated. Soluble solids, acid content, flesh ratio, firmness and specific cavity of the fruits harvested at 27th of November were 12.0, 1.03%, 79.98%, 0.774kg-force, 0.912, respectively. Soluble solids, total sugar and reducing sugar were increased gradually, but acid content was decreased slightly as delayed in harvest time. Otherwise specific gravity and firmness were not shown in great during harvest time, color index(a/b) was increased sharply till late November and then remained in stationary phase. On these result, we recommend that the harvest time of early cultivar of Citrus unshiu Marc. would be during December because of wilting partly. Fully ripened-fruits harvested late, compared to ordinary harvest time, with cold storage would be kept more quality and freshness of fruits for fresh consumption than the fruits harvested early and stored at room temperature.
Plums (Prunus salicina L.) were coated with calcium-treated methylcellulose (CaMC) and hydroxypropylmethylcellulose-15 (CaHPMC-15). Respiration rate, weight loss, pH and titratable acidity, texture, and sensory characteristics were compared during 8-day storage period at $30^{\circ}C$. Weight loss and respiration rate of plums coated with CaMC and CaHPMC-15 were lower than those of control plums during storage while pH increased and titratable acidity slowly deceased during storage. Mechanical firmness was significantly deceased during storage, in which CaMC and CaHPMC-15-coated plums were harder than the control. Amount of soluble pectin, and pectin esterase and polygalacturonase activities as the markers of softening commonly increased with storage, but both CaMC and CaHPMC-15-coated plums were not found those increases. Sensory evaluation showed that the flesh softening of plums decreased during storage, and that in the coated plums exhibited the harder flesh. In conclusion, introduction of CaMC and CaHPMC-15 coatings on plums decreased respiration rate and contributed to delay of flesh softening, and the significant difference in postharvest storage quality of the both plums were not found between CaMC and CaHPMC-15 coatings.

BACKGROUND: Pithy pear fruit are not distinguished externally from sound fruit and thus often cause unexpected economic losses. To find out the cause of pithiness, the pithiness incidence and characteristics of Japanese pear (Pyrus pyrifolia cv. Niitaka) fruit picked from a spot frequently produced pithy fruit in an orchard were compared with those of fruit picked from another spot produced sound fruit every year. And the soil chemical properties of the two spots and mineral contents in fruit, shoots, and leaves of Japanese pear trees cultivated in the two spots were also examined. METHODS AND RESULTS: The pithiness incidence was 0, 8.8, and 11.3% at 7 days before and 0 and 7 days after optimal harvest date, respectively, in the spot frequently produced pithy fruit. Flesh firmness was significantly lower in pithy fruit than in sound fruit, while soluble solids content was slightly higher in pithy fruit than in sound fruit. Unlike other mineral contents, Ca content was significantly lower in pithy fruit than in sound fruit. These results indicate that Ca deficiency in fruit is closely associated with decrease in flesh firmness and thus pithiness development. Ca content in soil of the spot frequently produced pithy fruit was also significantly lower than that in soil of the spot produced sound fruit. However, shoots or leaves did not exhibit significant difference in Ca and/or other mineral contents between the two spots, indicating that Ca deficiency in fruit is dependent on the translocation of Ca within a plant rather than soil Ca status. Although total-N, available $P_2O_5$, K, and Ca contents were significantly lower in soil of the spot frequently produced pithy fruit than in soil of the spot produced sound fruit, Mg and Na contents and pH were not different between the soil conditions. CONCLUSION(S): Fruit maturity and Ca level in fruit are closely related to the incidence of pithiness in 'Niitaka' Japanese pear.
Cherries (Prunus avium L) were selected at the light red (LR) and dark red (DR) stages of maturation. Soluble solid content and the physicochemical properties of fresh 'Bing' cherries were analyzed to identify an instrumental nondestructive attribute reflecting changes in sweetness. Soluble solid content was significantly correlated with various physicochemical properties (firmness, color, and acid level) in LR-stage cherries. In DR-stage cherries, only firmness was positively correlated with soluble solid content. A positive correlation was found between soluble solid content and firmness of 200 randomly selected cherries. Thus, flesh firmness may be a useful quality factor indicating potential consumer acceptance of 'Bing' cherries.
This study was carried out to know whether $\beta$-galactosidase is directly important or not on fruit softening during the development of peach fruits compared to those in the stage stage. It was investigated that the flesh firmness, cell wall components, and the glycosidase activities of the peach fruits with a fast softening cultivar, 'Mibeakdo', a slow softening cultivar,'Yumyung'and a middle softening cultivar, 'Okubo$\beta$, at different developmental stages, on 13 May, 16 June, 16 July, and 5 August and on 28 August which harvested only 'Yumyung' fruits. In order to investigate the amounts of total sugar and non-cellulosic neutral sugar, the cell wall materials of each fruit were solubilized in distilled water, 0.05M CDTA, 0.05M Na$_2$CO$_3$, 4% KOH, and 24% KOH sequentially. During the fruit development, the fruit firmness of three cultivars decreased and the fruit firmness of 'Yumyung' was higher than that fo 'Mibeakdo' and 'Okubo' in the overall period. During the fruit development, the changes of total sugar amounts of each measured fractions were similar among peach cultivars. Arabinose and galactose were the predominant non-cellulosic neutral sugars in all the fractions including cell wall material of the three cultivars. There was an active relationship between the changes of flesh firmness in three cultivars and the mol % changes of rhamnose on 5 August which was the harvest date of 'Mibeakdo' and 'Okubo' fruits. The activity of soluble $\beta$-galactosidase was high at the early developmental stage and then dropped to a very low activity level in all cultivars. The activity of cell wall-bound $\beta$-galactosidase was high at the early developmental stage and then decreased continuously through the harvest date. In addition the changes of other glycosidase activities were similar among cultivars.
This study was carried out to investigate the effects of tree-spray of calcium formate compound extracted from oyster shell with several active agents on the calcium concentration, fruit skin shape and quality of 'Fuji' apple. The tree-spray of calcium formate compound extracted from oyster shell (Os-CaF, $52.4\;mg{\cdot}kg^{-1}$) appeared to have more effectiveness on the calcium translocation into leaves, fruit skin and flesh than control. Addition of adjuvants to Os-CaF increased calcium concentration of 'Fuji' apple when sprayed three times before harvest. Among the active agents examined, the treatment ascorbic acid and poly-vinyl alcohol (PVA) in leaves, Ag-colloidal and PVA in fruit skin, ascorbic acid, Ag-colloidal, and PVA in fruit flesh exhibited highest effectiveness. Fruit qualities (fruit weight, firmness, soluble solids, acidity and Hunter value) were not affect by Os-CaF on different concentrations and solutions of active agents.
