Manufacturing of Meat Flavor Extract used for Browning Reaction (Browning Reaction을 이용한 Meat Flavor Extract의 개발)

  • Separation-concentration of sulfur containing heterocyclic compounds(SCHC) from many reaction meat flavors manufactured with Maillard reaction was carried out. Profile of SCHC was identified and analyzed by GC and GC-MSD. The results were as follows. 1. Profile of SCHC could be identified 7 kinds thiazole and 11 kinds thiophene, the major produced compounds were thiophene, thiazolidine, 4-methyl-5-thiazole ethanol. 2. In the case of SCHC, relationship between changes of reaction conditions and the kind of produced components were as same, but produced amounts appeared the difference. Producing amount of complexed SCHC and caramellike note as well as oxygen containing heterocyclic compounds were high level more than high reaction temperature and long time reaction period. 3. Producing ratio of comparative simple structural SCHC were the highest level at reaction conditions of moisture content 50%, reaction temperature 100$^{\circ}C$ and reaction time 2 hours. Reaction conditions for the revelation of reaction meat flavor were below 110$^{\circ}C$ and less than 2 hours. 4. Relationship between moisture content and reaction temperature as well as reaction time had very relative relation. From the change of moisture content and reaction conditions could be obtained the simultaneously profile. Signal presentation for production of reaction meat flavor could be from extraction-separation-concentration of SCHC through simplification of raw-materials in the flavor and seasoning food industry.

Investigating the Efficiency of Various Consumer-acceptance Testing Methods while Developing a Ready-to-eat Meal (덮밥류 편의식에 대한 효과적인 소비자 조사 기법 비교연구)

  • A taste-testing method that accurately measures consumer-acceptance is critical during the course of the product development stage. Although various types of consumer-acceptance tests are available, the testing protocol appropriate for measuring the acceptance of ready-to-eat-meals (REM) has not yet been verified. In this study, various hedonic taste-testing methods (9-point hedonic scaling, best-worst scaling, open ended response) were compared for their efficiency and power in identifying the preferred REM menu of consumers. Forty-four consumers evaluated the acceptance of five types of REM menu samples consisting of a wide variety of flavors. Consumers initially used the 9-point hedonic rating method to choose the best and the worst sample among the 5 meals tested. Finally, consumers were asked to fill out open-ended comments where they could freely describe their liking and disliking of each sample. The results showed that the REM menu acceptance measured by the 9-point hedonic method that rated best-worst scaling exhibited a similar preference pattern. The open-ended response method could not provide a quantifiable acceptance data but was able to provide supplementary information regarding the limitations of the samples and therefore, provide a general idea of the direction of improvement during the product development.

Quality Characteristics of Steamed Egg Salted with Various Ratios of Salt and Saeu Jeot (소금과 새우젓 첨가량을 달리한 달걀찜의 품질특성 연구)

  • This study prepared steamed egg salted with different ratios of salt and saeu jeot, and examined the effects of the saeu jeot content on the quality characteristics of steamed egg through the analysis of moisture content, color, pH, texture profiles, and sensory evaluation. Moisture contents of steamed egg samples decreased with increased percentage of saeu jeot. Hunter color values of L(lightness) and b(yellowness) decreased with increasing in the percentage of saeu jeot. Also the pH of samples increased with increased saeu jeot. Texture profile analysis resulted that the hardness, chewiness, and gumminess decreased significantly with the increase of saeu jeot content. As a result of attribute difference test, appearance(yellowness and sleekness) decreased with the increase of saeu jeot. Most characteristics of flavors(roasted nutty smell, fishy smell, roasted nutty taste, saltness, fishy taste, umami) increased with the increase of saeu jeot. The steamed eggs salted with the same proportion of salt and saeu jeot showed the highest overall acceptability. The results are expected to be used in developing steamed egg products and preparing processed egg dishes.

A Survey of the Adaptation and Preference for South Korean Food in North Korean Refugees (새터민들의 남한음식에 대한 수용과 선호도 조사)

  • The purpose of this study was to investigate the adaptation and preference for South Korean food among North Korean refugees. A survey was conducted on 220 North Korean refugees regarding general questions, adaptations, and preference on consuming dishes in South Korea. The results of the survey showed that the average difficulty degree scored with the adaptation to South Korean food was 3.06 points out of 5.00 points. The adaptation to Korean food was investigated as 'average' and some North Korean refugees had some difficulties in South Korean food. Some respondents described South Korean food as having very strong flavor that tastes more sweetened, seasoned, and spicy than North Korean food. The extended residency in South Korea allowed North Korean refugees to become more familiar with sweetened flavors. Most of them enjoy an oily and spicy taste more than South Koreans. North Korean refugees like Ssal bap, Naengmyeon, Doenjang-guk, Galbi-jjim, Bulgogi(beef, pork), Chaesobokkeum, Oi-saengchae, Chaeso-jeon, Baechu-kimchi, Saengsun-twigim, Soondae, pears, fruit juice, and spring water. North Korean refugees over the age of 30 years enjoy classic foods such as Japgokbap, Gimbap, Jumeokbap, Hwedeopbap, and Chobap. On the other hand, North Korean refugees less than 30 years old enjoy new foods like ramen and spaghetti.

Model Test on the Loss of Experimental Fishy Odor in Tilapia, Oreochromis niloticus, by Sea Water Acclimation (해수순치에 의한 틸라피아의 담수어취 제거에 관한 모델 시험)

  • The efforts of removing the specific fresh water fishy odor were studied by inducing tilapia, Oreochromis niloticus, to sea water in the use of the flavoring chemicals such as pyrrolidine and piperidine as experimental flavors. The amines added to the grinded muscle of tilapia were recovered by $88\%$ for pyrrolidine and $90\%$ for piperidine. When live tilapia were retained in a tank containing 100 ppm solution of the flavor for 30 min and then begun to start the acclimation into sea water with daily increase of $5\%_{\circ}$ salinity within 7days, no amines in the skin and the muscle of tilapia were detected after 4 days of acclimation to sea water. For the purge effects of amino in the skin and the muscle of tilapia, the concentration of pyrrolidine and piperidine lost $73.4\%,\;83.7\%$ in the muscle and $93.6\%,\;90.6\%$ in the skin of tilapia after purging in fresh water for 72 hrs, while $66.2\%,\;73.6\%$ of amines were removed in the muscle and $90.1\%,\;87.7\%$ in the skin of tilapia acclimated to sea water after purging in on sea water for 72hr. Loss rates of pyrrolidine and piperidine were found to be $0.0231h-^{1}\;and\;0.0333\;h^{-1}$ from the muscle and $0.0652h-^{1}\;0.0413\;h^{-1}$from the skin of tilapia in the fresh water, while $0.0131h-^{1}\;and\;0.0354\;h^{-1}$ from the muscle, $0.0674h-^{1}\;and\;0.0549\;h^{-1}$ from the skin of tilapia in the sea water after 24hrs of exposure, respectively.

  • Level of nitrogenous compounds in dried shellfish related to the formation of flavors during processing and storage was investigated. Fresh samples of blue mussel, short-necked calm and pacific oyster showed relatively low levels of ATP, ADP and AMP, but high levels of iMP and inosine. Relatively high content of TMAO in fresh samples was markedly reduced in the samples broiled samples, but TMA content was rather elevated in the samples broiled, which was a lowered result of TMAO content. The degree of reduction of TMAO and enhancement of TMA contents was relatively small in the hot-air dried samples during storage periods. Glycinebetaine content in fresh samples was slightly decreased by boiling and broiling. Contrast to glycinebetaine content, hormaline and trigonelline contents were severely reduced by boiling and broiling. Twenty-nine kinds of amino acids and their derivatives were identified in the sample of blue mussel, short-necked calm. Among them, glycine, alanine, arginine, glutamic acid and lysine were major amino acids, but contents of these amino acids was greatly decreased in the samples after drying and boiling processes.

Dietary Exposure Assessment of Arsenic in Korean Adults (한국 성인에 있어서 식이를 통한 비소 노출 평가)

  • Objectives : Arsenic (As) is ubiquitously distributed in the environment and has been known as a human carcinogen. The main source of arsenic exposure in general population is an oral route through As-contaminated water and foods. This study was performed to estimate the daily intake of As from diet and associated factors in Korean adults. Methods : We investigated 590 adults, 249 males and 341 females, with age of 20 years and older, who had not been exposed to the As occupationally. Study subjects were interviewed for demographic characteristics, lifestyles and diets during the last 24 hours. The estimation of As intake daily was based on amount of food consumption and As concentration in each food by using database of As concentrations in 117 food species. Results : Daily As intake was estimated as $56.46\;{\mu}g$/day, $56.60\;{\mu}g$/day in male and $56.36\;{\mu}g$/day in female. As intake was not significant from sex, age group, smoking and alcoholic habits, while was by occupation with the most intake of As in fishery. The daily As intakes was positively correlated with the total food consumption, specifically related with fishes and shellfishes, seaweeds, oils, grains and flavors. About 75% of As intake from diet was contributed by seafoods, such as $32.07\;{\mu}g$/day from fishes & shellfishes and $10.05\;{\mu}g$/day from seaweeds. However, it is necessary to evaluate if the dietary As intake affects on the levels of As in the body. Conclusions : The amount of As intake daily in Korean adults was estimated as $56.46\;{\mu}g$/day, and is determined mainly by diet behavior. The seafoods, such as fishes & shellfishes and seaweeds, is major source of As exposure from diet in Korean.

  • A number of recently developed cheese analogues that are available in dairy food markets are currently being produced for improving health or diet, and they include Mozzarella, Cheddar, American, Muenster, and other custom flavors. Cheese analogues have many benefits such as extended-and-improved shelf life, price stability, and functional qualities that include better texture, higher melting point, and better stretching properties. Various cheese analogues can now be made by using soybeans or soy protein products, gelatin, gum arabic, and other ingredients. Hence, in this study, on the basis of previously published studies, we recommend soy protein for cheese analogues, for improving the texture and flavor of cheese analogues. Moreover, the best conditions for making cheese analogues and the factors that affect the characterization of cheese analogues have been described in this paper.

  • Despite both the Korean version of and seemed to be the most popular in China, the and the , which localized the same format, differed at least in terms of viewership. Focusing on these two opposing cases, this study examines the characteristics and considerations of the localization transformation through in-depth interviews with experts in China.. As a result, was positive in terms of character diversification and online media interworking effects. However, the experts recognized that factors such as the confusion of character combinations due to frequent change of performers, frequent absences, conservative characteristics of Chinese state broadcasting that emphasized educational contents, and burden of localization due to changes in mission and challenge form each time were negatively affected. On the other hand, lacked the effect of online media interaction and lack of diversity of performers. However, the use of star actors' celebrities, the merits of actors with the characteristics of Chinese historical and cultural spaces, the use of Chinese flavors and fragrances, and similar types of missions and maintaining a stable composition each time favored localized production formats.

Development of Natural Meat-like Flavor Based on Maillard Reaction Products (Maillard 반응 생성물을 이용한 천연 육류향의 제조)

  • Hydrolyzed wheat gluten (HWG) and low glutamic acid (Glu) hydrolyzed wheat gluten with different quantities of NaCl were reacted with several precursors to develop natural meat flavor based on Maillard reaction products (MRP). The MRP based flavors were analyzed for their pH, browning index, DPPH radical scavenging effect, and sensory properties. Synthetic meat flavor from low Glu hydrolyzed wheat gluten with 7% NaCl and ribose, cysteine, methionine, thiamin, lecithin, and garlic powder reacted at $140^{\circ}C$ for 30 min and were most favorable for a roasted meat flavor. Based on an omission test, cysteine was selected as the most important precursor for producing meat flavor compared to methionine, thiamine, and lecithin. Natural precursors including mushroom powder and fat medium were applied to compensate for the synthetic precursors. The optimum formula for meat flavor was 5% ribose, 7.7% cysteine, 6.9% garlic juice powder, 2.1% Lentinusedodes powder digested with protease, and 1% lard. The sulfuric pungent, oily, and salty attributes of the formula decreased and a mild roasted meat flavor was expressed.
