군 급식 취사병의 수산물에 대한 기호도와 인식 조사 (Preference and Perception of Seafood among Soldiers on Cook's Duty in Military Meal Service)

  • This study was carried out to investigate preference and perception of seafood among soldiers on cook's duty in military meal service. 58.9% of the respondents answered that they liked seafood and the major eating place were in their home(48.0%) and in the restaurant(40.4%). The favorite seafood cooking methods turned out to eat as raw fish, to grill, to stew, to fry in order. In comparison with the meat dishes, seafoods were considered superior to meat in nutritional value but evaluated inferior to meat in the aspects of sanitation and tasteless problem. 32.9% of the respondents answered they liked seafood dishes in military meal service and they disliked them because of taste or cooking method of the seafood. They liked fried or grilled seafood in military meal service. The plate waste amounts of the seafood menu were more than half in almost every surveyed menu and reasons for plate waste were fish smell and taste problems. The difficulties of cooking seafood in military meal service were breaking down of seafood during cooking and complexity of cooking. They scored seafood higher than average in nutrition, taste, diversity of cooking method and aspect of health. On the basis of the results above, introducing diverse cooking methods and menu are suggested and education of cooking skills and development of cooking facilities are needed in military meal service.

  • Waste concentration and waste generation rate in seawater aquaria by common conger (Astrocongey myriaster) and olive flounder (Paralichyhus olivaceus) were investigated. The initial fish density of common conger and olive flounder were $3{\%}\;and \;2.8{\%}$ of total weight of aquarium water, respectively Wastes in the seawater aquaria, such as protein, total suspended solid (TSS), ammonia, turbidity and chemical oxygen demand (COD) increased with days after stocking. Protein generation rate of common conger increased until 1 day after stocking while that of olive flounder increased until 3 days. The average protein generation rates of common conger and olive flounder were $0.28g/kg{\cdot}day\;and\;0.21g/kg{\cdot}day$, respectively. The trends of other waste generation rate were similar to protein generation rate.

A Transdisciplinary Approach for Water Pollution Control: Case Studies on Application of Natural Systems

  • Despite the enormous technical and economic efforts to improve environmental conditions, currently about 40% of the global population (or 2 billion people) are still lack access to safe water supply and adequate sanitation facilities. Pollution problems and transmission of water- related diseases will continue to proliferate. The rapid population growth and industrialization will lead to a reduction of arable land, thus exacerbating the food shortage problems and threatening environmental sustainability. Natural systems in this context are a transdisciplinary approach which employs the activities of microbes, soil and/or plants in waste stabilisation and resource recovery without the aid of mechanical or energy-intensive equipments. Examples of these natural systems are: waste stabilisation ponds, aquatic weed ponds, constructed wetlands and land treatment processes. Although they require relatively large land areas, the natural systems could achieve a high degree of waste stabilisation and at the same time, yield potentials for waste recycling through the production of algal protein, fish, crops, and plant biomass. Because of the complex interactions occurring in the natural systems, the existing design procedures are based mainly on empirical or field experience approaches. An integrated kinetic model encompassing the activities of both suspended and biofilm bacteria and some important engineering parameters has been developed which could predict the organic matter degradation in the natural systems satisfactorily.

  • Biofloc technology (BFT) systems provides an additional protein source for fish by converting waste in microbial flocs. Therefore, we aimed to determine the difference in the protein levels of the diet of Far Eastern catfish Silurus asotus reared in BFT and FW systems. We applied a two-way (six protein levels × two aquaculture systems) ANOVA design. We formulated six experimental diets to contain different protein levels (CPs)- 20%, 25%, 30%, 35%, 40% and 45%-referred to as the CP20, CP25, CP30, CP35, CP40 and CP45 diets, respectively. We randomly distributed 900 fish into 36 (18 each for BFT and FW), 300 L tanks (25 fish/tank) with three replications of each diet for 4 weeks. The weight gain (WG) and specific growth rate (SGR) considerably improved as the dietary protein level increased in the formulated diets. The BFT fish showed higher growth performance with any experimental diet than the FW fish. The growth performance of the fish fed the BFT-CP35 diet was higher than that of the fish fed the FW-CP45 diet. In conclusion, the cultivation of Far Eastern catfish (S. asotus) in BFTs can be carried out under reduced dietary protein levels.

Protein and Phosphorus Availabilities of Five Different Dietary Protein Sources in Juvenile Olive flounder (Paralichthys olivaceus) as Determined by Growth Performance and Phosphorus Retention

  • The present study aims to evaluate protein and phosphorus availabilities of five different dietary protein sources during the 6-week feeding trial in juvenile olive flounder, Paralichthys olivaceus as determined by growth performance and phosphorus retention. Five diets containing blood meal (BM), poultry by-product (PBP), squid liver powder (SLP), feather meal (FM) and soybean meal (SM) were prepared by mixing a basal diet (BD) with one of five test ingredients at the ratio of 7 to 3. As a reference diet, BD contains three different protein sources such as white fish meal, casein and gelatin. After 2 weeks of the conditioning period, fish initially averaging 2.7$\pm$0.02g (mean$\pm$SD) were randomly distributed into each aquarium as a group of 30 fish reared in the recirculating system. Fish of triplicate groups were fed one of six experimental diets (BD+five test diet). After 6-week feeding trial, pro- tein efficency ratio (PER) of fish fed BM diet was the lowest in experiment groups. While fish fed PBP diet showed a significant higher PER as compared to the FM diet, and fish fed SLP diet and BD were a higher PER than did fish fed PBP diet. However, there was no significant difference in PER among fish fed SLP diet, BD and SM diet, and between SM diet and PBP diet. Phosphorus retention efficiency of bone (PR $E_{b}$) of fish fed BM diet was the lowest in all the diets, and fish fed FM diet showed a higher PE $R_{b}$ than fish fed BD and SM diet. However, there was no significant difference in PER among fish fed FM diet, SLP diet and PBP diet, and among SLP diet, PBP diet, SM diet and BD. These results indicate that SLP could be a suitable protein source for low pollution diets of olive flounder in the future fish feeds market. Furthermore, PBP and SM are available protein source to reduce P waste in the oliver flounder aquaculture with the use of proper mixture of other protein sources and more processing to improve protein availibility of these.ese.

Developments and Trends in Fisheries Processing: Value-Added Product Development and Total Resource Utilization

  • Changing concepts in fishery science increasingly are recognizing depletion of traditional stocks, utilization of alternate(non-traditional) species, demand for high quality products, and a total resource utilization approach. Innovative practices are occurring in fisheries processing wherein solid and liquid discharges are no longer treated as 'waste,' but rather as valuable feedstocks for recovery of a variety of value-added ('value enhanced') by-products. Among these are protein hydrolysates, soluble proteins and amino acids, proteolytic enzymes, flavor and flavor extracts, pigments, and biopolymers such as chitosan. Properties and applications of this deacetylated derivative of chitin are noted. Crustacean processing by-products are discussed in terms of their serving as materials for generation of natural flavors and flavor extracts, and products such as fish sauces using contemporary enzymatic techniques. Various food and feed applications of fisheries processing by-products are illustrated with increased usage seen in formulated diets for an expanding aquaculture market. Examples are given of aquaculture becoming increasingly significant in global fisheries resource projections. Critical issues in the international seafood industry Include those of seafood quality, processing quality assurance (HACCP), and recognition of the nutritional and health-related properties of fisheries products. A variety of current seafood processing research is discussed, including that of alternate fish species for surimi manufacture and formulation of value-added seafood products from crawfish and blue crab processing operations. Increasing emphasis is being placed on international aspects of global fisheries and the role of aquaculture in such considerations. Coupled with the need for the aquatic food industry to develop innovative seafood products for the 21st century is that of total resource utilization. Contemporary approaches in seafood processing recognize the need to discard the traditional concept of processing 'waste' and adapt a more realistic, and economically sound, approach of usable by-products for food and feed application. For example, in a period of declining natural fishery resources it is no longer feasible to discard fish frames following fillet removal when a significant amount of residual valuable flesh is present that can be readily recovered and properly utilized in a variety of mince-based formulated seafood products.

어류가공 부산물로부터 단백질분해 효소제의 조제 및 보관안정성 (Preparation and Keeping Quality of Proteolytic Enzymes from Seafood rocessing Wastes)

  • Keeping qualities of crude proteases (CP) and fractionated proteases (FP) sedimenting with $30\~80{\%}$ ammonium sulfate from four kinds of fish viscera as a seafood processing waste were examined. Azocaseinolytic activlties (pH 6 and 8) of CP from anchovy (Engraulis japonica), mackerel (Scomber japonicus), bastard flatfish (Pararlichthys olivaceus) and red sea bream (Chysorphys major) were stable without activity loss at $4^{\circ}C$ for 7 months. Activities of NaCP (CP containing $30{\%}$ sodium chloride) on azocasein were approximately $30{\%}$ lower than those of CP. FP activities Increased 3.4-16.1 folds compared to those of CP and NaCP Powdered crude protease (PCP) and fractionated and powdered protease (FPP) containing various sugars (lactose, sucrose, glucose and dextrin) were prepared by freeze drying. Activities of PCP and FPP containing sucrose were higher and more stable than those of PCP and FPP containing other sugars at $30^{\circ}C$ for whole keeping periods. PCP and FPP from mackerel viscera showed the highest proteolytic activity among four kind of fish vlsceras. The Optimum conditions and stabilities of FPP from mackerel viscera were pH 9 and $50^{\circ}C$, and pH 5-10 and $20-45^{\circ}C$, respectively. The results of this study suggest that FPP from seafood processing waste may be used as processing aids.

  • I have studied historical transition process of fisheries industries, fisheries Institute in abreast of developing fisheries industries of west coast of Korea since 1910 year with regard to the Gogunsan Is. The results were summarized as follows. In 1910 year, fishery industry has been carried out shifting fishing gear e.g set-net in shallow waters, small stow net, small seine net adapting to the tophorgrapical feature, shape of coast, oceanic condition, however, the fishing gear and fishing method were undeveloped, so that, Japanese fishermen had been exploited fisheries resources penetrating the fishing ground. Most important species were lot of captured croaker, cod, spanish mackeral, sea abream, herring in coastal sea. nowaday, squid, anchovy, shrimp, crab, pompret were much captured. The species were captured in 18 century were not captured. It is rarely than that period. Fishereis aquatic culture had been not farmed till 1960 year, but sea laver, shrimp, crab, had been breeded 1970 year also, the fresh water fish e.g. eel, cat-fish had been breeded activately. The fisheries processing industry were composed of salt. icing, dry, method. the salted fish industry had been prevailed at Gangyng, Kwangchon, Kunsan, Julpo comparatively. The fisheries institute had been established at Kunsan at first, but institute established in other region had been abolished in a short time. This phenomenon was related with development of fisheries resources. The western coast fisheries industries had been wasted of decreasing of fisheries resources, variation of environment. Accordingly, the study of preserving the marine resources. educated man power who engaged in fisheries field have to accomplish. Sea was dying with reason of loss of mud in west coast factory waste, waste of life the increase of accident of sea polluted, each illegal fishing industry physical and chemical reason etc. in this respect, Kusan maritime college, fisheries developing agency, institute have to take important role for developing fishing industry.

Evaluation of Acid-treated Fish Sarcoplasmic Proteins on Physicochemical and Rheological Characteristics of Pork Myofibrillar Protein Gel Mediated by Microbial Transglutaminase

  • Fish sarcoplasmic protein (SP) is currently dumped as waste from surimi industry and its recovery by practical method for being the non-meat ingredient in meat industry would be a strategy to utilize effectively the fish resource. This study was aimed to apply pH treatment for fish SP recovery and evaluated its effect on pork myofibrillar protein (MP) gel. The pH values of fish SP were changed to 3 and 12, and neutralized to pH 7 before lyophilizing the precipitated protein after centrifugation. Acid-treated fish SP (AFSP) showed about 4-fold higher recovery yield than that of alkaline-treated SP and water absorption capacity was also about 1.2-fold greater. Because of the high recovery yield and water absorption capacity, AFSP was selected to incorporate into MP with/without microbial transglutaminase (MTG). The effects of AFSP and MTG on the physicochemical and rheological characteristics of MP and MP gel were evaluated. MTG induced an increase shear stress of the MP mixture and increase the breaking force of MP gels. MP gel lightness was decreased by adding AFSP. MP gel with MTG showed higher cooking loss than that without MTG. A reduction of cooking loss was observed when the AFSP was added along with MTG, where the insoluble particles were found. Therefore, AFSP could be contributed as a water holding agent in meat protein gel.

Effect of Replacing Soybean Meal with Soya Waste and Fish Meal with Ensiled Shrimp Waste on the Performance of Growing Crossbred Ducks

  • Two experiments were conducted with growing crossbred Super-Meat ducks at the experimental duck farm of Cantho University to evaluate the effects of reducing the proportion of soybean meal (SBM) in a broken rice (BR)-SBM mixture and providing soya waste (SW) ad libitum (Expt. 1), and reducing the proportion of fish meal (FM) in a BR-FM mixture and supplying ensiled shrimp waste (ESW) ad libitum (Expt.2). Both experiments included five treatments, with three replicates and ten growing ducks per replicate. In Expt.1, the five diets were based on BR and five levels of SBM, with SW offered ad libitum. The control diet (SBM25) consisted of 75% BR and 25% SBM, and the other four treatments included SBM levels of 20% (SBM20), 14% (SBM14), 8% (SBM8) and 0% (SBM0) mixed with BR to 100%, and with SW ad libitum. In Expt. 2, the control diet consisted of 86% BR and 14% FM, and the other dietary treatments had FM levels of 11% (FM11), 8% (FM8), 4% (FM4) and 0% (FM0) mixed with BR, and with ESW ad libitum. In Expt. 1, total intakes of dry matter (DM), neutral detergent fiber (NDF), acid detergent fiber (ADF) and metabolizable energy (ME) were higher for birds given SW (p<0.001). Total CP intake was highest on the SBM20 diet, and lowest on the SBM0 diet (p<0.001). Lower daily gain (DG) was found for the SBM0 diet (p<0.01). Carcass weights were higher on the control treatment, with the lowest values on the SBM0 diet (p<0.001). Gizzard weights were higher on diets with high intakes of SW (p<0.05). In Expt. 2, birds with high intakes of ESW (FM4 and FM0) had lower (p<0.01) daily intakes of DM. The total CP intakes declined (p<0.001) with higher intakes of ESW. The highest DG were for the control and FM11 diets, while the lowest value was for diet FM0 (p<0.001). The poorest feed conversion ratio (FCR) was for the FM0 treatment (p<0.01). Lower weights of carcass and breast muscle were found on the FM0 diet (p<0.001). Feed costs per kg gain were only slightly different between diets. However, the lowest feed cost was for ducks on the SBM0 and FM11 diets in Expt.1 and Expt. 2, respectively.
