수유기에 식이와 함께 섭취한 DHA가 산모의 혈액과 모유의 지질조성에 미치는 영향 (The Influence of DHA Supplementation in Maternal Diets on Fatty Acid Compositions of Plasma Lipids and Human Milk)

  • The most abundant long-chain polyunsaturated fatty acid in brain lipids is docosahexaenoic acid(C22 : 6 N-3, DHA). It is incorporated into nerve tissues mostly in utero and during the first year of life. DHA in brain is derived from either pre-formed DHA in human milk or by infant hepatic synthesis from linolenic acid in milk. This study was designed to investigate the effects of DHA supplementation on fatty acid profiles in maternal plasma lipid and breast milk. Twenty lactating women participated in the study. Seven women took 3g of fish oil per day and vitamin E for 28 days starting from the day of giving birth. Five women consumed 1.5g of fish oil as well as tivamin E, and the rest took vitamin E supplements for the same period of time. Dietary questionnaires and 3 consecutive 24-h recalls were collected to evaluate theri nutritional status and food habits. Finding that DHA intake from fish was not significantly different among three experimental groups, the partcipants were instructed to continue eating their usual home diets. Milk samples were taken on the day of giving birth, as well as the 7th, 14th and 28th day being the supplement phase, and finally 2 weeks after the cessating of DHA supplements. The amounts of the fish oil supplements produced significant dose-dependent increased in the DHA content of milk and plasma, but to a lesser degree. Base-line for 28 days raised the level to 2.05$\pm$0.43% and 1.5g/day supplement produced DHA levels of 1.02$\pm$0.19%. The results of this study indicated that relatively small amount of dietary DHA supplementation significantly elevats DHA content in milk. This would clearly elevate the infant's DHA intake which in turn may have implications for the infant's brain development.

  • This study was conducted to investigate the nutritional characteristics of the following Korean-distributed fish species commonly consumed as sliced raw fish (CC-SRF): olive flounder Paralichthys olivaceus (OF), red sea bream Pagrus major (RS), Atlantic salmon (AS), coho salmon (CS) and sockeye salmon (SS). The crude protein and lipid contents of OF, RS, AS, CS and SS were 20.2% and 5.5%, 21.2% and 6.8%, 17.7% and 18.5%, 18.3% and 16.1%, and 20.4% and 5.7%, respectively. Regardless of the type and weight of fish species, the major amino acids were leucine, lysine, aspartic acid, and glutamic acid, whereas histidine was identified as a limiting amino acid. The major minerals in all CC-SRF were P, K and Se based on the recommended daily intake or sufficient intake for Korean males aged between 19-49 years. Among the different types of all CC-SRF, the intake of OF and SS lipids is predicted to be associated with a lower n-6/n-3 fatty acid ratio, whereas among the free amino acids, which are expected to have health functionality, we identified taurine in OF and RS, and anserine in salmons. The digestibility of OF, RS, AS, CS and SS were 60.7%, 54.9%, 48.5%, 49.6%, and 53.4%, respectively.

Total replacement of dietary fish oil with alternative lipid sources in a practical diet for mandarin fish, Siniperca scherzeri, juveniles

  • A 12-week feeding trial was designed to evaluate the effect of total replacement of fish oil (FO) with terrestrial alternative oils on growth, feed utilization, body composition, hematological parameters, and fillet fatty acid profile of mandarin fish juveniles. Four iso-nitrogenous (56% crude protein) and iso-lipidic (13% crude lipid) practical diets were formulated. A control diet contained 6% FO and three other experimental diets were prepared by replacing FO with linseed oil, soybean oil, and lard (designed as FO, LO, SO, and lard, respectively). Each diet was randomly allocated to triplicate groups of 25 fish ($1.8{\pm}0.03g/fish$) in a circular tank. Complete replacement of FO by three tested alternative oils had no remarkable impact on growth performance, feed utilization efficiency, and morphological and hematological parameters of juvenile mandarin fish. However, daily feed intake was found to be significantly higher for fish fed the SO diet compared with those fed the FO and LO diets. Fish fed LO and SO diets exhibited significantly higher levels of the whole body lipid compared to fish fed diet containing FO. Fillet fatty acid composition reflected dietary fatty acid profile. The highest level of ${\alpha}$-linolenic acid, linoleic acid, and oleic acid was observed in fish fillet fed LO, SO, and lard, respectively. Although the eicosapentaenoic acid level of fish fillet fed diet FO was higher than other treatments, no significant difference was found in docosahexaenoic acid content among all dietary groups. The results of the present study clearly demonstrate that the complete replacement of FO in mandarin fish diets is achievable. These findings are useful in dietary formulation to reduce feed costs without compromising mandarin fish growth.

일부 여대생의 식이섬유 섭취와 철분대사에 관한 연구 (A Study on the Dietary Fiber Intake and Iron Metabolism in Korean Female College Students)

  • This study was conducted to evaluate dietary fiber intake, iron status, and their correlations in 50 female college students living in Seoul. The nutritional status was analyzed using 3-day dietary record, duplicated diet collection, and venous blood sampling. The mean values for age, height, weight, BMI, and blood pressure of the subjects were 23.2 years, 160.2cm, 53.9kg, 21.0kg/$m^2$, and 110.1/68.4mmHg, respectively. Daily intakes of enery, protein, fiber, crude fiber, iron, and heme iron were 1635.5㎉, 54.3g, 22.5g, 6.8g, 16.2mg, and 0.2mg, respectively. Fiver intake was positively correlate with energy, protein, carbohydrate, vitamin C, iron, and crude fiber intakes. Also, iron intake was positively correlated with energy, protein, lipid, carbohydrate, and vitamin C intakes. There was a significant correlation between heme iron and MFP(meat, fish, poultry) intakes. To exame the iron balance, iron intake and excretion were measured. Iron intake and excretions through urine and feces were 19.5mg, 8.5mg, and 1.6mg, respectively. Based on these iron retention and iron apparent absorbability were calculated as 9.4mg and 52.4%, respectively. There was no significant relationship between dietary fiber intake and iron status. However, there were significant positive correlation between fiber intake and urinary iron excretion.

관상동맥질환자의 식품섭취와 가족지지 (A Study on Food Intake and Family Support in Patients with Coronary Artery Disease)

  • Purpose: This study was to examine the food intake and family support of patients with Coronary Artery Disease(CAD). Methods: 90 hospitalized patients who received CAD medical treatment were randomly selected. The food intake frequency and family support instrument were utilized. Collected data was analyzed by SPSS/WIN 14.0: t-test, $x^2$-test and Pearson's correlation coefficient. Results: The mean score of food intake frequency was 5.65(total mean score 97.50) which was relatively healthy food intake based on the CAD treatment guidelines. Undesirable food intake items were fruit, fish, milk etc. The mean score of family support was 2.44(range: 1 - 4). Food intake showed a significant(p < .001) positive correlation with family support. There was significant difference(p < .05) on family support according to exercise. There was significant difference(p < .05) on LDL level, one of the CAD risk factors, between first admission patients and readmission patients. Conclusion: These findings suggest that nursing intervention education programs should be developed to appropriately care for CHD patients for needed changes.

Effect of Fermented Food Garbage in Diet on Growth and Body Composition of Juvenile Flounder (Paralichthys olivaceus)

  • Food garbage fermented with microbial starter was formulated to diet for the growth of juvenile flounder (Paralichthys olivaceus). Two replicate groups of fish, an average weight of 4.0g, were fed the four isocaloric (19.5 MJ/kg diet) diets with different fermented food garbage levels $(0,\;5,\;10\;and\;15\%)$ for 45 days. Survival, feed efficiency, hepatosomatic index and protein efficiency ratio of fish were not affected by dietary fermented food garbage level (P>0.05). Weight gain of fish fed the diets with 5, 10 and $15\%$ fermented food garbage was significantly higher than that of fish fed the control diet (P<0.05). Condition factor of fish fed the diet with $10\%$ fermented food garbage was significantly higher than that of fish fed the control diet (P<0.05). Daily feed intake of fish fed the diets with 5 and $15\%$ fermented food garbage was significantly higher than the control diet (P<0.05). Proximate composition of whole body and plasma glucose concentration were not affected by dietary fermented food garbage level (P>0.05). These findings indicate that fermented food garbage could be utilized as a feed ingredient for juvenile flounder.

Effect of Dietary Lipid Sources on Body Fatty Acid Composition of Chinese Longsnout Catfish Leiocassis longirostris

  • We investigated the effects of dietary lipid sources on growth and fatty acid composition of juvenile Chinese longsnout catfish. Triplicate groups of fish (initial average weight, 3.8 g) were fed four diets containing either fish oil (FO), soybean oil (SO), linseed oil (LO) and lauric acid (LA) for 10 weeks. There were no differences among the groups in body weight, feed intake, feed efficiency, protein efficiency ratio, and body proximate composition of fish fed the diets containing different lipid sources (P > 0.05) during the study. However, fatty acids compositions of the whole body were influenced by dietary lipid source. Fish fed the SO diet had high concentration of linoleic acid, whereas those of fish fed the LO diet were rich in linolenic acid and arachidonic acid. Fish fed the FO diet had significantly (P < 0.05) higher levels of monounsaturated fatty acids such as 18:1n-9 and 20:1n-9 than those of fish fed the SO and LO diets. Eicosapentaenoic acid (EPA; 20:5n-3) and docosahexaenoic acid (DHA; 22:6n-3) composition of body were not influenced by dietary lipid source. The results suggest that each of FO, SO, LO or LA can be used as a lipid source in the diets of Chinese longsnout catfish without any negative effects on growth and feed utilization and these data demonstrate the potential impact which dietary fat composition can change the body fatty acid profile.

Rumen Metabolic Development in Crossbred Calves Reared on Animal Protein Free Pre-Starter and Oat Hay

  • Twenty-four new born crossbred (Bos indicus$\times$Bos taurus) calves were distributed in two equal groups and assigned to two different pre-starter diets with (Group 1) and without (Group 2) fish meal to study the effect of replacement of animal protein by vegetable protein in the diet and the age of animals on ruminal metabolic development. All calves were fed colostrum for 24 h and whole milk until weaning at 8 weeks of age. Rumen fluid samples were collected on 4 d, 1 wk, and then weekly interval up to 8 wk of age. Rumen fluid samples were analysed for pH, TVFA, lactic acid and N fractions (total N, total soluble N, trichloro acetic acid (TCA) soluble N, TCA precipitable N and ammonia N). Weekly feed intake and live weight gain pattern showed an increasing trend with the advancement of age, but were similar in both groups. The pH fell steadily during 0-4 wk of age and then stabilized in later period. A close relationship (r=0.80) between starter intake and TVFA concentration was observed in both the groups. Lactic acid (meq/l) and ammonia N (mg/dl) concentration showed initial rise (0.55 and 14.97 on day 4 to 3.38 (7 wk) and 32.85 (4 wk), respectively) to fall (2.74 and 17.60) again during 8 wk of age in response to increase in dry feed consumption (10% initially to 83% of diet dry matter at 8 wk of age). The TCA precipitable fraction of N did not show any change during 0-8 wk of age. Data indicate that the metabolic changes responded rapidly to dry feed intake which did not differ in fish meal and non-fish meal groups, and a poor voluntary consumption of oat hay retards the progressive changes in live weight and rumen microbial development.

음식의 1인1회 분량을 적용한 청소년의 권장식사패턴 고안 (Revision of the Target Pattern based on Single Serving Size of Dishes for Korean Adolescent Meal Plan)

  • Objectives: Maintaining a balanced diet is very crucial for adolescents. However, adolescents, who may have a short notion about the amount of food, find it difficult to plan daily meals by applying the target pattern proposed by the Korean Nutrition Society. This study was carried out to revise the target pattern based on cooked dishes instead of raw material food groups as an easier way for Korean adolescents to plan their meals. Methods: Target pattern for Korean adolescents were revised based on the following: $1^{st}$, categorize dish groups, $2^{nd}$, calculate representative values of each dish based on the adolescent' intake amount. $3^{rd}$, assign the recommended number of intake for each dish. Validity of the target pattern for Korean adolescent meal plan was examined by the energy content, energy contribution ratio, and NAR & INQ of nutrients. Results: The 11 dish groups categorized were bab; gook tang gigae; side dishes of meat, fish, egg, legume, kimchi, vegetable, seaweed; and between meal of fruit, and milk dairy product. Based on the representative energy values, recommended number of intake were assigned to each dish. For boys, bab and gook tang gigae: 3 each; meat, fish, egg, and legume: 1 each; kimchi and vegetable: 3 each; seaweed: 1; fruit and milk dairy product: 2 each were assigned. For girls, bab and gook tang gigae: 2 each; meat, fish, egg, and legume: choice of 3 dishes, 1 each; kimchi and vegetable: 3 each; seaweed: 1; fruit and milk dairy product: 2 each were assigned. Energy contents, energy contribution ratio of carbohydrate, protein, and fat for boys and girls were in adequate range. The NARs were 1.0 and INQs were ${\geq}1.0$ for all nutrients examined. Conclusions: Revised dish-based, instead of food-based adolescent target patterns for boys and girls were easier and a valid way of Korean adolescent meal planning.

Compensatory Growth in Juvenile Olive Flounder (Paralichthys olivaceus) in the Spring

  • A feeding trial was conducted to determine compensatory growth of juvenile olive flounder in the spring. Five treatments of fish with 3 replicates were prepared: the control group fish (C) fed twice daily for 8 weeks, the Sl, S2, S3 and S4 fish fed for 7, 6, 5 and 4 weeks after 1, 2, 3 and 4 weeks of starvation, respectively. Survival of olive flounder was not significantly different among treatments. Weight gain of flounder in S2 was significantly (P<0.05) higher than that of fish in S3 or S4, but not significantly different from that of fish in C or Sl. The poorest weight gain was observed in fish of S4 treatment. Specific growth rate (SGR) for flounder in S2 was significantly (P<0.05) higher than that for fish in C or S4, but not significantly different from that of fish in Sl or S3. Feed intake (g/fish) was proportional to duration of days of feeding except for flounder in S2, but not significantly different among C, Sl or S2. Feed efficiency ratio (FER) and protein efficiency ratio (PER) for flounder in S2 were significantly (P<0.05) higher than for fish in C, but not significantly different from those for fish in Sl, S3 or S4. Hepatosomatic index (HSI) and condition factor (CF) for flounder in Sl, S3 and S4 were not significantly different from those for fish in C, but significantly (P<0.05) lower than S2 except for CF in Sl at the end of the experiment. Proximate composition of the whole body of flounder was not significantly different among treatments. In considering results of the experiment, juvenile olive flounder achieved compensatory growth when properly fed after starved up to 2 weeks in the spring. Compensatory growth of fish was supported by improvement in SGR, FER and PER in fish starved.
