  • This study was conducted to compare an experimental extruded pellet (EP) and raw fish-based moist pellet (MP) on growth performance, whole-body and dorsal muscle composition, and textural properties of dorsal muscle for olive flounder Paralichthys olivaceus. Four groups of 8,000 fish (initial mean weight $27.1{\pm}0.05g$) per concrete tank ($10{\times}10m$) were fed the experimental diets for 16 months. After the feeding trial, no significant differences were observed in final mean body weight, weight gain, specific growth rate, feed intake, survival, and condition factor between EP and MP groups. However, feed efficiency of fish fed the EP was significantly higher than that of fish fed the MP. Moisture content in the whole-body of fish fed the MP was significantly higher than that of fish fed the EP. Significantly higher contents of polyunsaturated fatty acid (PUFA) in whole-body and dorsal muscle were observed in fish fed the EP compared with fish fed the MP. Any notable differences in amino acid contents or textural properties of the dorsal muscle were not observed in fish fed either the EP or the MP. The results of this study indicated that the EP could be developed to replace MP for the market size of production in olive flounder without the adverse effects on growth performance. Formulation of the EP could be used as a practical feed for olive flounder.

  • This study was conducted to investigate the utilization of defatted soybean meal as a substitute for fish meal in the diet for juvenile flounder (Paralichthys olivaceus). Duplicate groups of average weighing 35 g were fed one of four isonitrogenous ($54{\%}$) and isocaloric (575 kcal/100 g diet) diets containing $0{\%}, 10{\%}, 20{\%} and 30{\%}$ soybean meal for 45 days. Survival rates of all groups were $100{\%}$, Weight gain of fish decreased with increasing dietary soybean meal levels, However, this value was not significantly different between fish fed the control and $10{\%}$ soybean meal diet (P > 0.05). Feed efficiency and protein efficiency ratio decreased with increasing dietary soybean meal levels, but no significant differences were found among fish fed the control, $10{\%}\;and\;20{\%}$ soybean meal diets (P > 0.05). Daily feed and protein intake increased with increasing dietary soybean meal level. Crude protein and moisture content of liver tended to decrease and crude lipid content tended to increase with decreasing of dietary soybean meal levels. Plasma total cholesterol levels of fish fed the diets containing $20{\%}\;and\;30{\%}$ soybean meal were significantly lower than that of fish fed control diet (P < 0.05), Plasma GOT level significantly increased with increasing dietary soybean meal level (P < 0.05). It is concluded that soybean meal can be used as a partial substitute for fish meal up to $10{\%}$ in this dietary formulation for growth of juvenile flounder.

  • This study collected specimens dark sleeper (Odontobutis platycephala) in the Jaho stream from March to November 2022 to investigated their feeding habits. The sizes were classified by age (1 year and 2 years old, and 3 years old or older). The food organisms of O. platycephala included Haplotaxida belonging to the Clitellata of Annelida, Isopoda, Amphipoda, and Decapoda of the Malacostraca, Ephemeroptera, Plecoptera, Coleoptera, Diptera, and Trichoptera belonging to the aquatic insect of Arthropoda, fish. Korean dark sleepers fed mostly on aquatic insects, crustaceans, and fish. Aquatic insects were the most important food source, with 82.32% of the population, 46.33% in biomass, and 80.84% in the index of relative importance. Among the fish fed, Coreoperca herzi and Zacco koreanus young fish were abundant, and Odontobutis platycephala young fish were also eaten due to cannibalism. Korean dark sleepers were carnivorous in diet and belonged to the stalker in food intake characteristics and forms. A food migration was observed since less Diptera was found, and more fish were found in the biomass of the feed consumed by larger pecies. Fish (40.79%), Ephemeroptera (29.17%), and Isopoda (13.63%) were mainly fed in the spring, fish (52.65%), Ephemeroptera (23.17%), and Amphipoda (6.12%) were abundant in the summer, and Ephemeroptera (36.83%), fish (23.99%), and Trichoptera (23.49%) were mainly fed in the autumn.

  • BACKGROUND/OBJECTIVES: Despite the importance of a low-iodine diet (LID) for thyroid cancer patients preparing for radioactive iodine (RAI) therapy, few studies have evaluated dietary intake during LID. This study evaluated the amount of dietary iodine intake and its major food sources during a typical diet and during LID periods for thyroid cancer patients preparing for RAI therapy, and examined how the type of nutrition education of LID affects iodine intake. SUBJECTS/METHODS: A total of 92 differentiated thyroid cancer patients with total thyroidectomy were enrolled from Seoul National University Hospital. All subjects completed three days of dietary records during usual and low-iodine diets before $^{131}I$ administration. RESULTS: The median iodine intake was $290{\mu}g/day$ on the usual diet and $63.2{\mu}g/day$ on the LID. The major food groups during the usual diet were seaweed, salted vegetables, fish, milk, and dairy products and the consumption of these foods decreased significantly during LID. The mean energy intake on the LID was 1,325 kcal, which was 446 kcal lower than on the usual diet (1,771 kcal). By avoiding iodine, the intake of most other nutrients, including sodium, was significantly reduced during LID (P < 0.005). Regarding nutritional education, intensive education was more effective than a simple education at reducing iodine intake. CONCLUSION: Iodine intake for thyroid cancer patients was significantly reduced during LID and was within the recommended amount. However, the intake of most other nutrients and calories was also reduced. Future studies are needed to develop a practical dietary protocol for a LID in Korean patients.

  • The purpose of this study was to evaluate trends in the sources of dietary sodium intake in a representative Korean population in the Korea National Health and Nutrition Examination Survey (KNHANES) conducted in 1998, 2001, 2005, 2007, 2008, 2009, and 2010. The study consisted of 53,570 men and women aged 7 years or older participating in the KNHANES during the corresponding years. Overall sodium intake and the mean percent contribution of each dish and food group to dietary sodium intake across 1998-2010 were calculated. The means of sodium intake ranged between 4,572.6-5,498.9 mg/d across 1998-2010. The major dish groups contributing to dietary sodium intake were kimchi (1,154.8-1,521.2 mg/d), noodles and dumplings (505.3-760.5 mg/d), soups (465.3-714.8 mg/d), and stews and casseroles (387.0-579.8 mg/d). The combined mean percent contribution from the top four dish groups contributing to dietary sodium intake showed a slight decrease over the period; 64.4% in 1998, 64.5% in 2001, 59.3% in 2005, 58.2% in 2007, 56.3% in 2008, 56.7% in 2009, and 54.4% in 2010. The major food groups contributing to dietary sodium intake were seasonings (1,852.9-2,435.9 mg/d), vegetables (1,425.6-1,792.1 mg/d), grains (482.2-778.1 mg/d), and fish and shellfish (257.2-351.4 mg/d). In addition, the combined mean percent contribution from the top four food groups showed a slight decrease over the period; 92.8% in 1998, 93.2% in 2001, 93.8% in 2005, 92.1% in 2007, 91.7% in 2008, 90.9% in 2009, and 90.7% in 2010. In summary, we did not observe a reduction in dietary sodium intake over time, however, the percent contributions from the top major dish groups or food groups to dietary sodium intake showed a decrease over the last decade.

  • Purpose: The atherogenic index of plasma (AIP) is gaining recognition as a superior predictor of coronary artery disease. This study examined the relationship between the AIP and the intake of various food groups in Korean adults, using the baseline data from the Korean Genome and Epidemiology Study-The Health Examinees (KoGES-HEXA) study. Methods: This study included 133,381 adults (46,288 men, 87,093 women) who completed the nutrition survey and biochemical tests of the KoGES-HEXA study. The AIP was calculated as the log (triglycerides/high-density lipoprotein-cholesterol) and was divided into quintiles according to sex for further analysis. Data on food group intake were obtained using the semi-quantitative food frequency questionnaire, and daily food group intake (g/d) was evaluated for each individual. The association between the food group intake and the AIP was examined using the linear regression analysis after adjusting for the confounding variables. Results: In this study population, there was a positive correlation between energy intake and the AIP in men whereas an inverse assocation was shown in women (p < 0.001). In women, a rise in the AIP significantly correlated with an increased percentage of energy intake derived from carbohydrates but decreased percentages of energy from protein and fat (p < 0.001). In men and women, the consumption of grains and kimchi/pickles increased as the AIP rose, while the intake of legumes, nuts, meat and its products, eggs, fish, and milk and dairy products decreased. Among men, individuals in the highest AIP group showed higher intake of wheat products than those in the lowest group of the AIP. In women, the AIP was inversely correlated with potatoes and beverages consumption. Conclusion: This study highlights the importance of a balanced diet, including various protein sources, milk and dairy products, legumes, and nuts, for preventing cardiovascular diseases. Further research into sex-specific dietary patterns is essential for tailoring appropriate dietary recommendations.

  • Purpose: The purpose of the study was to investigate the association between food intakes and cardiovascular disease (CVD) risk factors in Korean women with type 2 diabetes mellitus (T2DM). Methods: The data were collected from the 2007~2012 Korea National Health and Nutrition Examination Survey (KNHANES). In this study, subjects were divided into two groups, the normal fasting glucose (NFG) group (n = 7,738) and the T2DM group (n = 225). Dietary intake was derived from the nutrition survey, which was collected by trained dietitians using 24-hour dietary recall through the face-to-face interview method in the sample person's home. Results: After adjustment for confounding factors, mean fruit (p = 0.0265), fruit and vegetable without kimchi (p = 0.0295), and fish (p = 0.0112) intakes were significantly lower in the T2DM group than in the NFG group. In the multiple logistic regression analysis, odds ratio (OR) for risk of high systolic blood pressure (${\geq}140mmHg$) was lower in the over the median compared to under the median for fruit intakes (OR; 0.657, 95% CI; 0.523~0.824). The OR for the risk of hypertriglyceridemia was lower in the over the median compared to under the median for fruit and vegetable without kimchi (OR; 0.828, 95% CI; 0.7111~0.963) and fish (OR; 0.783, 95% CI; 0.673~0.910) intakes. Conclusion: These results show that intakes of fruits, fish, and fruits and vegetables without kimchi have beneficial effects on CVD in Korean women with T2DM.

  • The purpose of this study was to investigate the pattern of individual fatty acid intake and to compare total serum lipid levels and total serum fatty acid composition of elementary school children in Seoul by fish and meat intakes. The subjects were divided into High-Fish / Low-Meat(HFLM, n=49) and Low-Fish/High-Meat(LFHM, n=47) group. The total energy from fat of HFLM and LFHM group was 22.0 and 30.0% respectively. The average intake of cholesterol was 237-287mg in HFLM group and 358-387mg in LFHM group. The average P/M/S ratio for all subjects was 1.1-1.4/1.1 - 1.2/1.0, which was very similar to desired ratio. The $\omega$6/$\omega$3 ratio of dietary fatty acids of HFLM and LFHM group were 8.0-10.9 and 18.9-29.3 respectively, which in case of LFHM group, was fat beyond the suggested range, 4/1 - 10.1. Serum lipid levels of all subjects fell within the normal range and there was no significant difference in serum lipid levels between HFLM and LFHM groups, except for HDL-cholesterol in upper grades(4th-6th grades). In lower grades(1st-3rd grades), serum PUFA composition of HFLM (40.8%) group was significantly higher than that of LFHM (38.3%) group (p<0.05) and SFA composition of HFLM(33.8%) was significantly lower than that of LFHM group, (p<0.001) between them. The $\omega$6/$\omega$3 ratio of serum fatty acid tended to be higher in LFHM than in HFLM group but there was no significant difference between two groups. This study suggests that the dietary fat pattern of growing children could affect the change in total serum fatty acid composition though it did not influence serum lipid levels significantly. Energy and EPA intakes were negatively correlated with HDL-cholesterol levels(p<0.05). Serum fatty acid compositions were more closely correlated with serum triglyceride(TG) levels than serum cholesterol levels. Especially, total SFA (p<0.001) and individual SFA, such as C14:0(p<0.001) and C16:0(p<0.001)compositions were positively correlated with serum TG levels, but stearic acid(p<0.01) was negatively correlated with it.

  • Microcystins (MCs) are cyano-toxins mainly produced by cyanobacteria in the genera of Microcystis, Anabaena, and Oscillatoria. The concentrations of MCs in the water bodies and fish tissues taken from the four weirs (Ipo, Gangjeong-goryeong, Baekje, and Juksan) in the four main rivers in Korea, and the health risk of human due to consumption of toxin-detected fish was examined. The maximum values of MCs concentration in the water samples were as follows: Juksan (3.261 ㎍ L-1), Gangjeong-goryeong (1.014 ㎍ L-1), Baekje (0.759 ㎍ L-1), and Ipo (0.266 ㎍ L-1) weirs. The MC-RR concentration was the highest among the MCs, and MC-YR was not detected. MCs of 0.222~9.808 ㎍ g-1 dry weight were detected in the liver of 3 out of 215 fishes of 16 species, and below the detection limit in muscle. As a result of comparing the feeding characteristics of the collected fishes and toxin concentrations in water and fish tissue, it was concluded that the biomagnification of MCs through the food chain did not occur. It was judged that there was no health risk due to the consumption of the fish detected the toxin, based on the amount of the fish intake of the Korean people and the allowable daily intake of MCs. However, in order to reduce the health risk due to MCs, further studies should be conducted to analyze the concentration of MCs contained in fish tissues collected at various times in the area dominated by harmful cyanobacteria to obtain data on the exposure of MCs due to fish consumption. In addition, it is necessary to establish the management guidelines for MCs in fish tissues.

  • This study examined the effects of collagen peptide intake extracted from the tilapia fish (TFCP) on UVB-induced skin in hairless mice. To cause photoaging, the hairless mice were exposed to UVB irradiation three times a week and TFCP was administered with 545 and 1090 mg/kg once a day for 12 weeks. The level of wrinkle formation, thickness of the skin, acute erythema, skin hydration, amount of hydroxyproline, expression of MMPs and filaggrin were measured. Wrinkle formation, thickness of the skin, and acute erythema were significantly lower and skin hydration was higher in the TFCP intake group compared to the UVB-control mice group. In addition, the amount of the collagen and hydroxyproline of the collagen peptide intake group were much higher than the UVB-control group. Oral administration of TFCP inhibited the expression of the MMP-3 and MMP-13 mRNA level as well as activated MMP-2 and MMP-9 induced by UV irradiation, and increased the protein expression of filaggrin in hairless mice skin. In summary, the oral administration of TFCP can inhibit wrinkle formation and protect the skin from UV-damage. Therefore, this study suggests that TFCP is a potential candidate material for skin functional foods.
