A Study on the Health Status, and Nutrient Intakes according to Body Mass Index (BMI) of College Men in Seoul Area (서울지역 남자 대학생의 체질량지수에 따른 건강과 영양상태에 관한 연구)

  • The purpose of this study was to investigate the eating patterns, nutrient intakes, blood levels, and health status of male college students in Seoul according to body mass index (BMI). In this study, we classified subjects into normal weight (n=240), under weight (n=11), and obese (n=46) groups according to BMI. The weight and BMI were significantly higher in the obese group compared to other groups (p<0.0001). The obesity was associated with overeating and frequent eating. The under weight group showed significantly higher consumption of fast food, snacks, and fried foods compared to the other groups (p<0.05). The intakes of milk, meat, fish, eggs, and fried food and preference ratios were higher in the obese group (p<0.05). The male college students in this study showed insufficient intakes of calories, vitamin C, folic acid, and calcium. The plasma LDL-cholesterol levels in the obese group were higher compared to the other groups. In conclusion, intake of nutrients among male college students is found to be insufficient and requires nutritional education. The under weight group showed regular eating habits and increased nutrient intake. The obese group was shown to need more exercise with higher intakes of vegetables and fruits.

A Study of the Factors Affecting Blood Iron Status in Female College Students (여대생의 혈중 철 영양 상태에 영향을 미치는 요인에 관한 연구)

  • This study was performed to investigate the iron status and its related factors in female college students residing in Gyeongnam. The prevalence of iron deficiency among subjects ranged from 3.4% in mean corpuscular hemoglobin concentration (MCHC) to 43.7% in ferritin. Weight, lean body mass (LBM) and body mass index (BMI) were positively correlated with ferritin concentration, but negatively correlated with total iron binding capacity (TIBC). Among the nutrients, vitamin A and B2 were major predictors of elevated iron status. Meal regularity was positively correlated with Fe and ferritin concentration, and meal number with transferrin saturation (TS), meal quantity with red blood cell (RBC) and hematocrit (Hct). Consumption of fruit, meat, fish and poultry showed strong positive correlation with hematological indices. Therefore, increasing vitamin A, B2, C, and iron intakes as well as maintenance of a healthy weight may be helpful in preventing iron deficiency in female college students.

The Value of Milk and Korean Dietary Life (우유의 진가와 한국인의 식생활)

  • Milk and milk products, especially the cow's milk and cheese, have been used since the ancient time. Because they contains almost all kinds of nutrients that are necessary for human beings except for iron, n-3 fatty acid, and vitamin C. Milk is an excellent dietary source of protein, calcium and phosphorus. The biological value of milk protein is as high as those of red meat and eggs. So cheese, a food processed from concentrated milk protein, is highly recommended food for the patient of diabetes mellitus. Because the major form of milk lipids is n-6 fatty acid, milk and milk products may not be a good food for the patients of cardiovascular disease. But the nutritional quality of milk lipids cannot be inferior to those of margarine, fish oil, and vegetable oil. Milk has been produced commercially since 1936 in Korea. The most popular milk product is a drink milk now in Korea. But according to the change of dietary pattern the consumption of yoghurt and cheese has been enormously increased during the last 20 years. As the soy sauce, tofu, and soy been paste have been the fundamental seasoning and source of protein in Korea, milk and cheese have consisted the essential flavor of western cuisine. But the basic idea for the usage of protein, peptides, and amino acids are the same. We found that milk and milk products can be nicely added in many Korean dishes such as Juk, Mandoo, Jeon, and Bindeatuk for the diversity of traditional flavor.

Haematological and Physiological Characteristics of Diploid and Triploid in Cherry Salmon, Oncorhynchus masou (산천어 (Oncorhynchus masou) 2배체와 3배체간의 혈액학적 및 생리학적 특징)

  • Triploid cherry salmon (Oncorhynchus masou) were induced by the heat shocking treatment of fertilized eggs 10 minutes post fertilization at $28^{\circ}C$ for 15 minutes. Haematological and physiological characteristics of diploid and the induced triploid fish were examined just before the spawning period. Triploids had significantly lower concentrations of circulating red blood cells than that of diploids (P<0.01). However, oxygen consumption, hematocrit, hemoglobin, RBC, and mean concentration of hemoglobin within the RBC of triploids were higher than those of diploids. The concentrations of total protein, albumin and cholesterol from triploids were also higher than those from diploids.

  • Consumption of Paralichthys olivaceus in raw fish have been reported as the cause of outbreaks of food-born illness, and Kudoa septempunctata in muscle of Paralichtys olivaceus was suggested with the causative agent. For this reason, distinguish of vital and dead spore is important to study survivability of Kudoa septempunctata in human intestinal condition and in vitro inactivation of Kudoa septempunctata. In this reports, we suggest NR & MB (Neutral red and Methylene blue) staining method that is easier and simpler than the previously described HO & PI (Hoechst33342 and Propidium iodide) method according to a experimental condition.

Development of a Low Frequency Operating Electronic Ballast for Fish Attracting Lamps (저주파 구동형 집어등용 전자식 안정기 개발)

  • This paper presents an electronic ballast using a step down converter, a low frequency inverter for high pressure discharge lamp. The proposed ballast is composed of a full-wave rectifier, a step down converter operated as a current source with power regulation and a low frequency inverter with ignition circuit. The ignition circuit generates high voltage pulse of 1${\sim}$2[kV] peak, 130[Hz]. Moreover, it is able to reignite at regular intervals by protective circuit. As experimental results on the test, lamp voltage, current and consumption power are measured 132.5[V], 7.6[A] and 1,005[W], respectively. It was confirmed that the designed ballast operate the lamp with a constant power.

Immunogenicity and Protective Efficacy of an Oral Vaccine against Vibrio vulnificus Infection (경구투여한 V. vulnificus 백신의 면역원성 및 감염방어효능)

  • Vsrio vulnificus is an estuarine gram-negative human pathogen that affects people with chronic hepatitis, alcoholic cirrhosis, diabetes mellitus or other underlying diseases. V. vulnificus infection is mediated primarily by consumption of raw fish or by exposure of pre-existing wounds to seawater, causing permanent tissue damages or fatal septic shock. We have been developing a vaccine against V. vulnificus composed of whole cell Iysate of a V. vulnificus O-antigen serotype 4 strain. Oral administration of the V. vulnificus;oral vaccine;immunogenicity;protective efficacy vaccine elicited a high serum antibody response in rabbits. The induced antibodies were reactive not only to the homologous strain but also to heterologous O-antigen serotype strains, indicating cross-reactivities among serotypes. Western blot analysis revealed that the antibodies are mainly specific for outer membrane proteins (OMPs) and reacted equally well with OMPs purified from 9 O-antigen serotypes. The rabbit antisera showed opsonophagocytic killing activity against heterologous strains as well as the homologous strain. Passively transferred rabbit antisera into mice were protective against a lethal V. vulnificus infection. These data demonstrate that oral administration of the V. vulnificus vaccine induced a systemic antibody response which had a protective efficacy against V. vulnificus infections, suggesting that this vaccine preparation could be used to develop an oral vaccine against V. vulnificus.

Diet composition of juvenile Korean piscivorous chub, Opsariichthys uncirostris amurensis in the surf zone of Nakdong river estuary, Korea (낙동강 하구역 해빈 쇄파대에서 출현하는 끄리(Opsariichthys uncirostris amurensis) 유어의 위내용물 조성)

  • The diet composition of juvenile Korean piscivorous chub, Opsariichthys uncirostris amurensis were studied using 277 specimens collected from January to December 2004 in the surf zone of Nakdong river estuary. The size of Opsariichthys uncirostris amurensis ranged from 2.6 to 9.1 cm in standard length (SL). Opsariichthys uncirostris amurensis was carnivore that consumes mainly amphipods and insects. Its diet also included small quantities of polychaetes, fishes, and algae and plants. Opsariichthys uncirostris amurensis showed ontogenetic diet change. Smaller individuals (< 4 cm SL) mainly consumed amphipods. The portion of these prey items decreased with increasing fish size, and this decrease was paralleled with increased consumption of larger preys such as polychaetes and fishes. Insects were preyed moderated values in all size classes. Opsariichthys uncirostris amurensis diet also showed diel change with consuming more on amphipods and polychaetes during day.

A Factor Analysis on the Value System of Convenience Foods by Korean College Students (한국 대학생의 편의식품에 대한 가치 구조 평가에 대한 요인 분석)

  • This study was conducted on a sampling of 700 mixed college students from seven different schools nationwide by written questionnaire to evaluate the value system of convenience foods among Korean college students. Korean students put value on the following categories of convenience foods in order; convenience, taste, price, appearance, appliance to daily life, variety, locality, nutritional value, originality, improvement required, cleanliness and tradition. Significant differences between the sexes occurred in categories as cleanliness and convenience, since females considered convenience foods as convenient but not so clean (safe to eat). This study also conducted factor analysis on 24 individual convenient foods. Noodles laid emphasis on nutritional value; where refrigerated foods, ready to eat (RE) side dishes, on-the-spot kimbab, and sandwiches focused on cleanliness. Noodles. cereal, and instant soup focused on price. Frozen pizza, noodles, retort, RE meat, ham, fish cakes were dependent on locality and traditionality. Noodles, instant food, and packed kimchi scored highly on convenience. Frozen fried rice, retort, instant porridge, instant rice, RE meat, cereal, instant soup, and RE side dishes on consumption on a regular basis. Cereal, refrigerated foods, and RE side dishes laid emphasis on taste. Noodles, instant rice, cereal, ham, and RE side dishes focused on variety. Retort, RE meat, ramen, cereal, ham, and on the spot sandwiches looked to originality, while canned foods was recognized as ‘needing improvement’.

Importance of food science and technology in sustainable and resilient food systems - a Northeast Asian perspective (지속가능한 식량체계를 위한 식품과학기술의 중요성 - 동북아시아의 관점)

  • The origines of the Western roasting culture and East Asian boiling culture were studied and the importance of primitive pottery culture (8000-5000 BCE) in the Korea Strait coastal region was discussed. The primitive pottery culture probably initiated the Jjigae (stew) culture and the production of salt. It can be also postulated that fish fermentation, kimchi fermentation, and cereal alcohol fermentation originated during this period. Soybean culture emerged ca. 2,000 BCE in South Manchuria and the Korean Peninsula. This paper focuses on the role of Korean foodways in the food science and technology development for the sustainable and resilient food systems. We are facing a global food crisis caused by population growth, climate change, and high animal food consumption. Studies on the meat analog and cultured meat are the new trend in Food Science and Technology. The importance of the wisdom learned through the Northeast Asian traditional foods, for example, soybean curd (tofu) and meaty flavor production by fermentation for the research on the novel sustainable and resilient food systems are discussed.
