An analysis of the effects of Japan's nuclear power plant accident on Korean consumers' response to imported food consumption

  • This study was intended to identify the main factors responsible for the decline in purchase of imported agricultural and fish products after Japan's nuclear power plant accident in 2011 and to compare the effects on imported agricultural produce and imported fish products. Logit model and multiple regression model analyses were performed using consumers' survey data. Psychological and qualitative factors reflecting consumers' food safety awareness and purchasing preferences, which were extracted by Factor analysis, were included as the models' explanatory variables, along with socio-demographic and economic factors. The Logit estimation showed aged, married, and low-income households had significantly higher probability of reducing their purchases of imported agricultural and fish products. However, the multiple regression results pointed out that the actual rate of decrease of imported agricultural and fish products purchases were more significantly affected by non-socio demographic factors such as past experience of purchasing imported agricultural and fish products, future intention to purchasing Japanese agricultural and fish products, and the ratio of imported to domestic agricultural and fish products before the nuclear accident, as well as consumers' feeling of food insecurity and their purchasing preferences. Moreover, the results showed that Korean consumers have reacted more sensitively to the decline in imported fish products than imported agricultural produce after the nuclear accident based on the marginal effects of various socio-demographic and economic factors.

The Effects of Attitude towards Fish Eating, Health Involvement, Perceived Convenience, and Age on Fish Consumption Behavior (생선 소비 행동에 미치는 섭취 태도, 건강 몰입, 지각된 편의성과 연령의 영향)

  • The purpose of this study was to measure the causal relationships among fish consumption behavior, attitude towards fish eating, health involvement, perceived convenience, and age. A total of 235 questionnaires were completed. A structural equation model was used to measure the causal effects of the constructs. The results of the study demonstrated that the structural analysis results were an excellent model fit for the data. The influence of age on attitude towards fish eating, health involvement, and perceived convenience was statistically significant. As expected, attitude towards fish eating, health involvement, and perceived convenience had significant effects on fish consumption behavior. Moreover, age had a significant indirect effect on fish consumption behavior through health involvement. Age also had a significant indirect effect on fish consumption behavior through perceived convenience. By developing and testing conceptual models that integrate the relationships among age, psychological variables, and fish consumption behavior, this study may offer a deeper understanding of the complex relationships among the variables. A greater understanding of these complex relationships can improve the managerial diagnoses of problems and the opportunities for different marketing strategies, including product development and marketing communications.

Characterization of Fish Oil Extracted from Fish Processing By-products

  • To improve the utilization of fish processing by-products, fish oils were extracted from hoki, yellowfin sole, mackerel, and horse mackerel, and their compositions were examined. The proximate compositions obtained for these 4 species of by-product revealed they were composed of 68.1$\sim$78.1% moisture, 1.2$\sim$1.6% ash, and 13.8$\sim$18.8% protein. Fish oils extracted from the hoki, yellowfin sole, mackerel, and horse mackerel were 5.5, 9.4, 13.4, and 10.3%, respectively. The total lipids extracted from the by-products of the 4 species were 6.21, 10.43, 12.81 and 10.06%, of which neutral lipids accounted for 77.38, 77.46, 87.21 and 86.79%, respectively. Neutral lipid analysis by TLC showed that triacylglycerol was the major component, while 1,3- and 1,2-diacylglycerols, free fatty acids, free sterols, and sterol esters were present as minor components. The major fatty acids were palmitic acid, stearic acid, and oleic acid. DHA and EPA were contained at levels of 0.2$\sim$4.7% and 3.7$\sim$9.5%, respectively, in the 4 types of fish oil. The fish oils extracted from the dark muscle fish, mackerel and horse mackerel, had greater polyunsaturated fatty acid (PUFA) contents than those of the white muscle fish species, hoki and yellowfin sole.

Studies on the Formatiion of N-Nitrosamine in the Salt-Fermented Damsel fish Chromis notatus (자리젓 중 N-Nitrosamine 생성에 관한 연구)

  • N-Nitrosamines have been known to be strong carcinogens and are formed by the reaction of nitrous acid with amines. In this experiment the changes in the contents of nitrate nitrite trimethylaminoxide(TMAO) trimethylamine(TMA) and dimethylamine(DMA) during femen-tation of damsel fish were analyzed periodically and N-nitrosamines in a commercial products. N-Nitrosamines were determined by mineral oil distillation methods using gas chromatography-thermal energy anlyzer(GC-TEA) in a commerical product. Nitrate nitrite and amines were quantitate by colorimetric methods. Level of nitrate-N were gradually decreased but nitrite-n was not detected or trace. Contents of dimethlamine(DMA) and trimethlamine were mar-kedly increased while trimethylaminoxide nitrogen was decreased during the fermentation of damsel fish. The change of pH was in the ranges of 5,5-7.0 during fermentation of salted damsel fish. It was out of the optimum pH(3.0-3.4) for the formation of nitrosamine. N-Nitrosamines were not detected in salt-fermented damsel fist but much N-nitrosodimethyla-mine(NDMA) could be detected in salt-fermented damsel fish after adding 0.05M NaNo2 in the acidic condition. The identifaction of NDMA in it was confirmed by mass spectrophotometry. Nitrate decrea-sed during the fermentation of damsel fish. however nitrite was trace level and nitrosamines were not formed in its. This could be supposed that it was due to the rapid consumption of nitrite by amino acid and bacteria.

CONDITIONS FOR PROCESSING OF MEATY TEXTURED FISH PROTEIN CONCENTRATE FROM ALASKA POLLACK AND MACKEREL (명태 및 고등어의 축육과 유사한 어육조직단백질 농축물의 가공조건)

  • For the effective utilization of the coastal fish resources in Korea, an investigation on the optimum processing conditions and the quality of a textured fish protein concentrate similar to the texture of animal meat has been carried out with the fish meat of Alaska pollack and mackerel. A noodle shaped product was prepared with the fish meat paste after the adjustment of pH and salt content. The product was soaked in $96\%$ ethyl alcohol to produce textured fish protein concentrate and then dried. The processing conditions were estimated with the rehydration capacity of the textured fish protein concentrate(FFC). The quality of the final product was evaluated with chemical composition, sensory test and texture measurement. The optimum pH and salt content of the fish meat for the processing of meaty textured FPC were 7.5 and $1.0\%$ respectively. The most effective soaking conditions were as follows:soaking time, 40 min. ; temperature of alcohol, 5 to $20^{\circ}C$;amount of alcohol, 4 times the weight of tile fish meat paste, number of soaking in alcohol, 4 times. The alcohol remaining in meaty textured FPC could be removed effectively by forced air drying. The yield and the contents of protein and lipid in the meaty textured FPC from Alaska pollack were $19.9\%\;84.3\%\;and\;0.5\%$ and those from mackerel were $29.8\%,\;78.1\%\;and\;3.6\%$ respectively. The content of essential amino acid in the meaty textured FPC from Alaska pollack and mackerel was not inferior to that of beef, textured soybean protein and FAO pattern. Beef meat can be substituted with the meaty textured FPC up to $50\%$ in processing meat balls withoutanysignificantlossinthetaste, ordor and texture.

  • The sea is origin of all lift, and 90% of the all living organisms are in the sea. The biosynthesis is very different. Many organisms are kept on a lower or developed to another evolutionary level than on shore. Our society is increasing demand and need for marine food and this food has to product at onshore or offshore fish farming sites. Ocean fish farms have a special operation properties such as a good quality water, net cage, sheltered locations and feeding system. The farming site is controlled and monitored for fish welfare as ammonia($NH_3$), temperature, the speed of a running fluid. Specially, the fish farm is seriously influenced by ammonia. In this paper, $NH_3$ monitoring system for ocean fish farm is researched for the suitable fish farming sites, and test equipment is designed for achieving practical data. The equipment wit monitoring algorithm is expected to the useful system for ocean fish farm.

Evaluation of the Efficacy of Fermented By-product of Mushroom, Pleurotus ostreatus, as a Fish Meal Replacer in Juvenile Amur Catfish, Silurus asotus: Effects on Growth, Serological Characteristics and Immune Responses

  • The present experiment was conducted to evaluate the efficacy of dietary fermented by-product of mushroom, Pleurotus ostreatus, (FBPM) as a fish meal (FM) replacer in juvenile Amur catfish, Silurus asotus. A total number of 225 fish averaging $5.7{\pm}0.1g$ ($mean{\pm}standard$ deviation) were fed one of the five experimental diets formulated to replace FM with FBPM at 0%, 5%, 10%, 20%, and 30% ($FBPM_0$, $FBPM_5$, $FBPM_{10}$, $FBPM_{20}$, and $FBPM_{30}$, respectively). At the end of eight weeks of the experiment, average weight gain (WG) of fish fed $FBPM_0$ or $FBPM_5$ were significantly higher than those of fish fed $FBPM_{20}$ or $FBPM_{30}$ diets (p<0.05). However, there was no significant differences in WG among the fish fed $FBPM_0$, $FBPM_5$ or $FBPM_{10}$, and between fish fed $FBPM_{10}$ or $FBPM_{20}$, and also between those fed $FBPM_{20}$ or $FBPM_{30}$ diets. Lysozyme activity of fish fed $FBPM_0$ or $FBPM_5$ were significantly higher than those of fish fed $FBPM_{10}$, $FBPM_{20}$ or $FBPM_{30}$ diets (p<0.05). The chemiluminescent response of fish fed $FBPM_5$ was significantly higher than those of fish fed $FBPM_0$, $FBPM_{20}$ or $FBPM_{30}$ diets (p<0.05). Broken line regression analysis of WG suggested that the maximal dietary inclusion level for FBPM as a FM replacer could be 6.3% without any adverse effects on whole body composition and on serological characteristics. Therefore, these results may indicate that the maximal dietary inclusion level of FBPM as a FM replacer could be 6.3% in juvenile Amur catfish.

Study on making feed for sea fish using earthworm powder and foodwaste product (지렁이 분말과 음식물쓰레기 부산물을 이용한 해수 사료화 연구)

  • This study was conducted for the purpose of examining stable disposal of foodwaste and possibility of multilateral use of its by-product by mixing earthworm powder and by-product generated from food waste disposal for making feed for sea fish. As a result of the study, content of crude protein (25.93%, 69.72%), crude lipid (16.91%,6.39%) crude ash (15.38%, 5.30%) in by-product of food waste and earthworm powder was higher than that in fish meals manufactured in the country, and it was judged that it is available to make good feed as a source of fatty acid as it contained C18:1n9c, 1n9t and c16:0. As for stability as a raw material for feed, it was shown that the stability was high when using the product as a raw material for feed not exceeding the standard of test items, and though change of content and ingredients to mixing ratio, it was shown that mixed specimen of fertilizer (S6) was higher, showing that it has great utilization in the future. Also, as it has more content of registered ingredients than any other raw materials for feed manufactured in the country, it is possible to be used as a substitute when manufacturing feed for sea fish. Therefore, it is judged that various studies such as economic analysis and technology of possible manufacturing will be needed in the future.

Examination of the effect on the surrounding marine environment by disposing of a squid by-product (오징어 가공 부산물의 해양투기에 따르는 주변해양환경의 영향에 대한 검토)

  • Squid by-product like viscera has just been recognized as one of the serious pollutants on the surrounding marine environment in Ulleung island of Korea. The effect as a marine pollutant, however, has not been examined and evaluated properly. It was carried out the comprehensive examination of the marine pollution by disposing squid by-products. The sediments and water qualities were investigated in several positions, including the dumping position around Ulleung island. It is also estimated a spreading of by-product in terms of estimating the sinking speed and evaluating the attracting characteristics as a feed. As a result, There were no significant pollutions of the sediment and water quality. The spreading of by-product by the local current was 2-2.5 times of the depth, and it will become longer in spring tide. It was confirmed that the squid by-product has attracting ability for local fish by acoustical survey. Furthermore, it can be useful for the local fish species as feeds.

Revision of the Target Pattern based on Single Serving Size of Dishes for Korean Adolescent Meal Plan (음식의 1인1회 분량을 적용한 청소년의 권장식사패턴 고안)

  • Objectives: Maintaining a balanced diet is very crucial for adolescents. However, adolescents, who may have a short notion about the amount of food, find it difficult to plan daily meals by applying the target pattern proposed by the Korean Nutrition Society. This study was carried out to revise the target pattern based on cooked dishes instead of raw material food groups as an easier way for Korean adolescents to plan their meals. Methods: Target pattern for Korean adolescents were revised based on the following: $1^{st}$, categorize dish groups, $2^{nd}$, calculate representative values of each dish based on the adolescent' intake amount. $3^{rd}$, assign the recommended number of intake for each dish. Validity of the target pattern for Korean adolescent meal plan was examined by the energy content, energy contribution ratio, and NAR & INQ of nutrients. Results: The 11 dish groups categorized were bab; gook tang gigae; side dishes of meat, fish, egg, legume, kimchi, vegetable, seaweed; and between meal of fruit, and milk dairy product. Based on the representative energy values, recommended number of intake were assigned to each dish. For boys, bab and gook tang gigae: 3 each; meat, fish, egg, and legume: 1 each; kimchi and vegetable: 3 each; seaweed: 1; fruit and milk dairy product: 2 each were assigned. For girls, bab and gook tang gigae: 2 each; meat, fish, egg, and legume: choice of 3 dishes, 1 each; kimchi and vegetable: 3 each; seaweed: 1; fruit and milk dairy product: 2 each were assigned. Energy contents, energy contribution ratio of carbohydrate, protein, and fat for boys and girls were in adequate range. The NARs were 1.0 and INQs were ${\geq}1.0$ for all nutrients examined. Conclusions: Revised dish-based, instead of food-based adolescent target patterns for boys and girls were easier and a valid way of Korean adolescent meal planning.
