Physicochemical Composition and Antioxidative Effects of Yacon (Polymnia Sonchifolia) (야콘의 이화학적 성분과 항산화 효과)

  • This study was carried out to investigate the physicochemical and functional properties of Yacon (Polymnia Sonchifolia) powder. The proximate composition of Yacon powder as a dry matter basis was 3.53% moisture content, 1.13% crude protein, 0.40% crude fat, 0.79% crude ash, 1.63% dietary fiber and 92.52% carbohydrate. The major free sugars were identified as fructose and glucose. Analysing total amino acids, 18 kinds of components were isolated from Yacon powder. The essential amino acid contained in Yacon powder accounted for 28.40% of total amino acid, while the non-essential amino acid accounted for 73.61%. Analysing total fatty acids, only 2 kinds - palmitic acid and lauric acid - were detected. Oxalic acid was the major organic acid. The contents of vitamin A, vitamin C and vitamin E were 0.057 mg%, 0.670 mg% and 0.001 mg%, respectively. The mineral contents of Yacon powder were in the order of Zn

A Study on the Nutritive Effect of Ginseng Meal in Laying Hen (산란계(産卵鷄)에 대(對)한 인삼박(人蔘粕)의 영양학적(營養學的) 효과(?果))

  • This work was carried out to determine that ginseng cake (meal) could be substituted for 10% level of chicken feed. The feeding experiment was held with 180 laying hens for 8 weeks. And the results were as tin the followings, 1. Protein content of the ginseng cake was lower (4.25%) than that of the control feed (18.72%: commertial chicken feed), and crude fiber of the ginseng cake was higher (14.73%) than that of the control (9.39%). 2. Slight increasings of body weight were observed in the group of the control feed (10 g) and the group of the feed containing 10% of the ginseng meal (24 g), significant increasing (50 g) was seen in the group of the feed containing 5% of the ginseng meal (p<0.05). 3. The feed efficiency of the ginseng group was slightly higher than that of the control group, but significant defferences were not recognized. 4. Egg laying ratio of the 5% ginseng group was somewhat higher than that of the other groups, and egg weight of each group was almost same. With all the results of this experiments, it was identified that ginseng cake is able to be substituted for the feed of laying hen within 10% level.

Assessment of cutting time on nutrient values, in vitro fermentation and methane production among three ryegrass cultivars

  • Objective: The 3×3 factorial arrangement was used to investigate if either high water-soluble carbohydrates (WSC) cultivars or suitable time of day that the grass cut could improve nutrient values and in vitro fermentation characteristics. Methods: The 3 cultivars were mowed at 3 diurnal time points and included a benchmark WSC ryegrass cultivar 'Premium', and 2 high WSC cultivars AberAvon and AberMagic, which contained, on average, 157, 173, and 193 g/kg dry matter (DM) of WSC, and 36.0, 36.5, and 34.1 g/kg DM of N during 7th regrowth stage, respectively. The fermentation jars were run at 39℃ with gas production recorded and sampled at 2, 5, 8, 11, 14, 17, 22, 28, 36, and 48 h. The rumen liquid was collected from 3 rumen fistulated cows grazing on ryegrass pasture. Results: High WSC cultivars had significantly greater WSC content, in vitro DM digestibility (IVDMD) and total gas production (TGP), and lower lag time than Premium cultivar. Methane production for AberMagic cultivar containing lower N concentration was marginally lower than that for AberAvon and Premium cultivars. Grass cut at Noon or PM contained greater WSC concentration, IVDMD and TGP, and lower N and neutral detergent fiber (NDF) contents, but CH4 production was also increased, compared to grass cut in AM. Meanwhile, the effects of diurnal cutting time were influenced by cultivars, such as in vitro CH4 production for AberMagic was not affected by cutting time. The IVDMD and gas production per unit of DM incubated were positively related to WSC concentration, WSC/N and WSC/NDF, respectively, and negatively related to N and NDF concentrations. Conclusion: These results imply either grass cut in Noon or PM or high WSC cultivars could improve nutrient values, IVDMD and in vitro TGP, and that AberMagic cultivar has a slightly lower CH4 production compared to AberAvon and Premium. Further study is necessary to determine whether the increase of CH4 production response incurred by shifting from AM cutting to Noon and/or PM cutting could be compensated for by high daily gain from increased WSC concentration and DM digestibility.

Anatomical Study of Chordodes koreensis in the Parasitic Phase Using Electron Microscopy (개의 구토물에서 분리한 오디흑연가시(철선충)의 전자현미경을 이용한 해부학적 소견)

  • Horsehair worms (Chordodes koreensis) develop as parasites in the bodies of grasshoppers, crickets, cockroaches, and some beetles. Chordodes koreensis is an accidental parasite of humans, livestock, or pets and poses no public health threat. The male of Chordodes koreensis in the later larval stage from canine vomitus was investigated by the scanning and transmission electron microscopy. In cross sections, the body wall is composed of four components namely epicuticle, cuticle, epidermis, and muscle layers. The parenchymal tissue fills the rest of the body and surrounds the visceral organs such as intestine, and ventral nerve cord but testes were not found. The epicuticle is a thin superficial layer whose surface shows rows of polygonal elevations called areoles. The cuticle has 17 layers of collagenous fibers spirally wound about the long axis of the worm. The section through the cuticle reveals the layers of large fibers cut obliquely lengthwise, alternating with layers of fibers sectioned obliquely crosswise. The layers of large fiber formed a double helix about longitudinal axis of the worm. The epidermis is a single layer. The muscles were interrupted by the nervous lamella in the only midventral portion. The medulla of muscle plate is composed of lightly stained cytoplasm, mitochondria, weakly developed endoplasmic reticulum, and glycogen granules. Between the medulla of a cell and the plasmalemma lies a broad cortical zone of myofilaments. The circular muscles are absent. The characteristic feature of the cytoplasm is that there was no content in peripheral mesenchyme, but was an abundance of large clear vacuoles which give the cytosome a foamy appearance. The nucleus of mesenchyme is not easily identified in our specimens.

Chemical Component, Antioxidative and Antimicrobial Activities of Chestnut(Castanea crenata) Leaves (밤나무 잎의 화학성분, 항산화 및 항균활성)

  • To study the potential of the chestnut(Castanea crenata S.) leaves, as raw materials for functional food and medicine, chemical components, antioxidative and antimicrobial activities were carried out. The proximate composition was composed of total sugar 11.95%, crude fat 11.50%, crude fiber 10.11%, crude protein 7.50% and ash 1.79% and the components of major minerals were Ca 215.7 mg%, 196.6 mg%. The content of vitamin C wag 12.5 mg% and free sugar was composed of glucose 3.33%, fructose 0.25% and sucrose 0.022%. The major fatty acids in leaves of chestnut were composed of linoleic acid and the amounts of those showed 37.88% area percent. The major amino acids of chestnut leaves were glutamic acid(295.4 mg%), proline(285.7 mg%), aspartic acid(245.5 mg%), arginine(240.8 mg%), phenylalanine(237.4 mg%) and leucine(230.6 mg%). The ratio of essential/total amino acid was 48.3%. Methanol extract and ethyl acetate fraction showed stronger activity of the hydrogen donating activities, each of 72.52 % and 84.12 %, respectively. In solvent extracts using methanol, ethanol, ethyl acetate, chloroform and hexane, methanol extract showed the most effective antimicrobial activities. Antimicrobial activities of ethyl acetate fraction of methanol extract was higher than those of other fractions.

An Estimated Value and Change in TDF Binding Major Minerals of Soybean Sprouts Depending on Cultivation Days and Parts (콩나물의 재배기간과 부위별 TDF에 결합된 주요 무기질의 변화와 추정 이용율)

  • This study was conducted to determine an estimated value and change in TDF (total dietary fiber) binding major minerals (Ca, P, K Mg) of soybean sprouts depending on cultivation periods of 1, 3 or 5 days, and parts of cotyledon and hypocotyl. The compositions of TDF binding major minerals in soybean sprouts were evaluated by the enzymatic-gravimetric method developed by Prosky and adopted by AOAC. The content of TDF binding P ranged between 915.28 mg and 1037.82 mg per 100 g cotyledon. Average contents of Ca, K, and Mg in cotyledon ranged between 541.67 mg and 634.34 mg, 180.91 mg and 253.98 mg, 231.90 mg and 301.01 mg, respectively, on dry matter basis. The average contents of TDF binding Ca in hypocotyl per 100 g were between 454.36 mg and 540.33 mg, and other major minerals contents were between 149.24 mg and 186.21 mg for P, 164.17 mg and 182.78 mg for K, and 152.53 mg and 161.22 mg for Mg, respectively. The proportional changes of Ca, an estimated value in cotyledon, ranged between 5.58% and 30.98%, 47.18% and 59.10% for P, 95.24% and 95.50% for K, and 58.45% and 68.64% for Mg, respectively, based on dry matter. An estimated value of Ca, P, K, and Mg in hypocotyl ranged between 6.71% and 13.52%, 91.03% and 91.76%, 96.91% and 98.92%, and 61.03% and 66.37%, respectively, on dry matter basis.

Sensory Characteristics and Rheological Change of Kongdduk (soybean rice cake) depending on Cooking, and Packaging Method (콩떡의 제조 및 저장과 포장에 따른 물성 변화와 관능적 특성)

  • This study, observing each respectively packaged Kongdduk during 12-day storing period and comparing it with unpackaged Kongdduk, through a cross-sectional view of its fiber and temperament, through a sensory evaluation rheometer measurement of rheological change depending on storing period and packaging type and through the organic acid content, micro-organic change, and retrogressive process. The results are as follows: 1. Kongdduk made of bean oil shows better chewiness, cohesiveness, and moistness than Kongdduk made of bean flour while Kongdduk made of bean flour shows better rheological properties as to roasted nutty taste or roasted nutty order. 2. The test of the cutted loaves of Kongdduk shows that adding oil of proper proportion to the dough of steamed rice cake in accordance with the amount of rice flour has a good influence on rheological properties of softness. 3. Rice cakes were prepared by addition of yellow soybean flour or peanut flour and packaged with CMP or VP, and their physical characteristics were monitored by sensory evaluation and mechanical measurement while storing for 6 days. For VP samples, yellow soybean rice cake showed little changes in cohesiveness, moistness and chewiness for 6 days of storage, while pure rice cake and peanut rice cake showed an increase in strength and hardness from the 4th day of storage. In case of CMP, yellow soybean rice cake hardly showed a difference in cohesiveness, moistness and chewiness for 6 days, while pure rice cake and peanut rice cake showed a significant difference from the 4th day in sensory evaluation. 4. For rheometer measurement, yellow soybean rice cake with CMP or VP showed little changes in strength or hardness for 6 days, while peanut rice cake and pure rice cake showed a drastic decrease in cohesiveness, from the End day and adhesiveness from the 4th day of storage. As there was no remarkable difference or deterioration for 6 days of storage in yellow soybean rice cake between CMP and VP, the ingredients of rice cakeappeared to be more important than the type of packaging in terms of quality deterioration of rice cake. 5. As the storing period passed by, organic acid is detected less at CMP-packaged Knngdduk than at wrapped. and its increasing speed proves to be slower as well. 6. The one wrapped with plyethylene film began to get moldy from pure rice cake or Kongdduk (rice cake mixed with yellow soybean or peanut) after 6 days, and more and more modly after 9 daysor after 12 days, but the CMP-packaged ones didn't get modly until 12 days or more. 7. CMP-packaged Kongdduk showed higher enthalpy of retrogradation than PE-wrapped one. As storing Period Passed by, Kongdduk,s enthalpy grew high. That is to say, it shows that Kongdduk got retrograded.

Physiochemical Properties of Functional Oils Produced Using Red Yeast-Rice Ethanol Extracts and Diacylglycerol Oil (홍국쌀 에탄올 추출물과 Diacylglycerol Oil을 이용하여 제조한 기능성 유지의 이화학적 특성 연구)

  • Functional oils (FOs) were produced from commercial diacylglycerol oil and red yeast rice extracts from 80% ethanol for 1 hr in a shaking water bath at $35^{\circ}C$ and 175 rpm. FOs contained (A) 600, (B) 1200, (C) 1800, and (D) 2280 ppm of red yeast-rice extracts, respectively. The Hunter a value and b value were risen whereas L value was reduced along with the increase of extract concentration. Content of monacolin K and total phenolic compounds in FOs significantly increased according to the increase of extract concentration. The oxidation stability of FOs was observed by Rancimat at $98^{\circ}C$. Induction time decreased according to the increase of extract concentration. The major volatile compounds of FOs were compared using the electronic nose (EN) system and solid phase microextraction (SPME) method combined with gas chromatograph/mass spectrometry (GC/MS). EN was composed of 12 different metal oxide sensors. Sensitivities (Rgas/Rair) of sensors from EN were analyzed by principal component analysis (PCA), whose proportion was 99.66%. For qualitative or quantitative analysis of volatile compounds by SPME-GC/MS, the divinylbenzene/carboxene/polydimethyl-siloxane fiber and sampling temperature of $50^{\circ}C$ were applied.

Effect of Foaming Agent Content on the Apparent Density and Compressive Strength of Lightweight Geopolymers (발포제 함량에 따른 경량 다공성 지오폴리머의 밀도와 강도 특성)

  • Lightweight geopolymers are more readily produced and give higher fire resistant performance than foam cement concrete. Lowering the density of solid geopolymers can be achieved by inducing chemical reactions that entrain gases to foam the geopolymer structure. This paper reports on the effects of adding different concentrations of aluminum powder on the properties of cellular structured geopolymers. The apparent density of lightweight geopolymers has a range from 0.7 to $1.2g/m^3$ with 0.025, 0.05 and 0.10 wt% of a foaming agent concentration, which corresponds to about 37~60 % of the apparent density, $1.96g/cm^3$, of solid geopolymers. The compressive strength of cellular structured geopolymers decreased to 6~18 % of the compressive strength, 45 MPa of solid geopolymers. The microstructure of geopolymers gel was equivalent for both solid and cellular structured geopolymers. The workability of geopolymers with polyprophylene fibers needs to be improved as in fiber-reinforced cement concrete. The lightweight geopolymers could be used as indoor wall tile or board due to fire resistance and incombustibility of geopolymers.

Exploration of Optimum Retention of Antibacterial Agents in Functional Packaging Paper (항균 포장원지내 항균소재의 최적 정착법 탐색)

  • Antimicrobial packaging paper was prepared with a powder-type botanical antimicrobial agent from grapefruit seed extract (BAAG) and zeolite according to TAPPI standard method. The functional fillers containing BAAG fixed to CaCO$_3$ and zeolite were well retained in the fiber network by a retention aid such as cationic polyacrylamide, which was ascertained by the ash contents of paper and the SEM microphotographs. With addition of the functional fillers to paper, tensile strength and burst strength of the paper decreased by interference of the functional fillers with interfiber bonding but bending stiffness and tear strength increased by improved elastic modulus of paper and delayed transfer of tearing energy. Finally, it was confirmed that the antimicrobial packaging paper might be able to be used to make packaging bags and corrugated containers due to the minor deterioration of strength properties.
