아시아속의 한국어장문화(韓國魚醬文化)에 관한 연구(硏究) (Study of Eh-jang (Korean Fermented Aquatic Products) Culture in Asia)

  • Eh-jang (fermented aquatic products) of Asia can be classified 4 groups, those are Chot-kal (salted fish guts), Chot-kal Paste, Eh-ganjang (fish sauce) and Shic-hae (lactic acid fermented fish products). The native place of Eh-jang and rice culture is almost same and Eh-jang had been spread out all the area of Asia along with rice culture. Korea has variety of Chot-gal and consumes much Chot-gal that Korea is the culture area of both soybean sauce and Chot-gal. Eh-ganjang had been edible all area of Korea during Chosun Dynasty, but it remains only Southern part of Korea. Korean Chot-gal paste is produced as a form of Kon-chang-yi-chot. Korean Shic-hae had been edible all area of Korea during Chosun Dynasty, but remains at the east coast and some area of Hwang-hae Do and Kyung-sang-nam-do.

  • Salted anchovy, generally favored in Europe, is one of the traditional fermented fish products in southern European countries and raw anchovy are aged in 20∼30% NaCl solution for 6 months (Ishida et al., 1994). They are then steeped in oil in glass jar or can, and marketed. The salt-fermented fish sauce, such as anchovy sauce and shrimp sauce are tropical fermented seafood from fish in Korea. (omitted)

대구횟대(Gymnocanthus herzensteini)를 이용한 식해 개발 (Development of Black Edged Sculpin Gymnocanthus herzensteini Sik-hae)

  • Sik-hae is traditional Korean fermented seafood manufactured by mixing ingredients such as fish, radish, garlic, pepper, etc. To facilitate utilization of the black-edged sculpin Gymnocanthus herzensteini, which is an abundant unusable fish caught in the East Sea, sculpin sik-hae was developed for commercialization as a low-salt fermented food. There was no significant change in the proximate composition of the sculpin sik-hae during storage. The pH of the sculpin sik-hae decreased, whereas the acidity, amino-N, and volatile basic nitrogen contents increased as fermentation progressed. The number of microflora increased gradually up to 14 days of fermentation and then decreased. Based on a sensory evaluation, sculpin sik-hae stored at $-1^{\circ}C$ was superior to that stored at $5^{\circ}C$. Therefore, sculpin sik-hae can be commercialized as a new fermented seafood.

자리젓 중 N-Nitrosamine 생성에 관한 연구 (Studies on the Formatiion of N-Nitrosamine in the Salt-Fermented Damsel fish Chromis notatus)

  • N-Nitrosamines have been known to be strong carcinogens and are formed by the reaction of nitrous acid with amines. In this experiment the changes in the contents of nitrate nitrite trimethylaminoxide(TMAO) trimethylamine(TMA) and dimethylamine(DMA) during femen-tation of damsel fish were analyzed periodically and N-nitrosamines in a commercial products. N-Nitrosamines were determined by mineral oil distillation methods using gas chromatography-thermal energy anlyzer(GC-TEA) in a commerical product. Nitrate nitrite and amines were quantitate by colorimetric methods. Level of nitrate-N were gradually decreased but nitrite-n was not detected or trace. Contents of dimethlamine(DMA) and trimethlamine were mar-kedly increased while trimethylaminoxide nitrogen was decreased during the fermentation of damsel fish. The change of pH was in the ranges of 5,5-7.0 during fermentation of salted damsel fish. It was out of the optimum pH(3.0-3.4) for the formation of nitrosamine. N-Nitrosamines were not detected in salt-fermented damsel fist but much N-nitrosodimethyla-mine(NDMA) could be detected in salt-fermented damsel fish after adding 0.05M NaNo2 in the acidic condition. The identifaction of NDMA in it was confirmed by mass spectrophotometry. Nitrate decrea-sed during the fermentation of damsel fish. however nitrite was trace level and nitrosamines were not formed in its. This could be supposed that it was due to the rapid consumption of nitrite by amino acid and bacteria.

시판액젓의 품질평가 (Quality Evaluation of Commercial Salted and Fermented Fish Sauces)

  • 시판 액젓류에 대해 객관적이고 과학적인 품질평가방법 및 품질 표준화를 위한 기초자료를 제시하고자 현재 시중에 시판되고 있는 멸치액젓 19종과 까나리액젓 23종에 대하여 이화학적 및 관능적 특성을 분석하여 품질을 파악하고, 액젓류의 관능적 특성과 품질지표와의 상관성을 비교 검토하였다. 수분의 경우 멸치액젓은 규격에 적합한 것으로 나타났으나 까나리액젓은 1종이 수산전통식품 품목별 품질기준을 초과하였다. 식염 농도의 경우 일부 제품에서 높은 식염함량을 나타내 국내 품질규격에 적합하지 않는 고식염 제품들이 제조되고 있음을 알수 있었다. pH, 회분, 비중, 순추출물, 휘발성염기질소, 총질소 및 아미노산질소함량은 제조회사별로 다양하게 나타나 품질에 상당한 차이를 보였으며 이들 중 총질소 및 아미노산질소함량이 식품공전규격이나 수산전통식품 품목별 품질기준에 미달인 제품이 멸치액젓 2종, 까나리액젓 3종이었으며, 멸치액젓에 국한한 한국산업규격인 총질소 1.2% 이상에 미달인 제품은 모두 4종으로 나타나 품질에 상당한 차이가 있는 것으로 나타났다. 관능검사와의 상관관계에서 현재 규격기준인 총질소와 아미노산질소 및 비중, 순추출물, 고형분, 휘발성염기질소가 상관성이 큰 것으로 나타나 품질평가 기준의 지표로 활용 가능할 것으로 판단된다.

  • At beginning the fermentation is naturally occurred by natural microbes. Fermentation techniques apply as two ways, one is fermentation to produce fermented foods and the other is preservation of the foods for longer time for future. They contain various biological active ingredient, like as vitamins. Microorganisms concerning fermentation are well known the functionalities. Each nations in the world have unique and distinct foods and dietary habits on their own specific cultures and accessible edible raw resources of plant or animal origins. Many countries have their unique traditional fermented foods based on their natural conditions. Korea has very famous traditional fermented foods, as Kimchi, fermented soybean products(Jang), fermented fish products(Jeotgal) and vinegar. In this review will discuss the overall fermented foods and typical Korean traditional fermented foods with functionalities, and future effort to enlarge into wide range of new industry.

중한식문화(中韓食文化)의 교류(交流) (Interchange of Dietary Culture between Korea and China)

  • Before Jin (秦) period, Oriental (Eastern) culture was established in Korea different from China. Bulgogi (babecued beef, 貊炙) and legume fermented soy were transmitted into China. Afterward, alcohol drink, rice cake and cookie, shic-hae (lactic acid fermented fish products), Kimchi (fermented vegetable) were introduced and modified for Korea. Buddhism was transmitted to Korea through China, but selective animal was used as food. Later period of Koryo Dynasty, meat-eating become common due to mongorian influence and distilled spirits was introduced by mongorian. During Chosun Dynasty, table setting of spoon and chopstick was established, due to Confucian influence, dog eating, raw fish and raw meat eating became popular and nutrition for elderly was developed, whereas tea culture declined. In recent period (under the Japanese rule) Chinese introduced chinese noodle, chinese cuisine, chinese pancake and sun-dried salt. many chinese cultivated chinese vegetables.

시판 어류 단순가공품의 세균학적 및 화학적 위해요소 분석 (Bacteriological and Chemical Hazard Analysis in Commercial Fish Products Minimally Processed)

  • The objective of this study was to analyze bacteriological and chemical hazards in minimally processed commercial fish products, including Hwangtae (freeze-dried pollock), dried anchovy, fermented anchovy sauce, and salted and dried yellow croaker. Escherichia coli counts from all samples were below the regulation limits of the Korean Ministry of Food and Drug Safety Standards on Quality of Seafood and Seafood Products (Food Code). However, the food poisoning bacterium Staphylococcus aureus was detected at levels above $1.0{\times}10^2$ colony forming units (CFU)/g in Hwangtae, dried anchovy, and salted and dried yellow croaker, which are commonly ingested without heating and pose bacteriological hazards. The detection of S. aureus, an organism indicative of poor personal hygiene, which can be introduced by employees and multiply during distribution, indicates the necessity of improving the sanitary control of minimally processed commercial fish products. Histamine was not detected from dried anchovy or salted and dried yellow croaker, but was detected at some of the highest levels in fermented anchovy sauces. This result suggests that efforts to reduce the amount of histamine in fermented anchovy sauces are required.

동북아 발효문화의 기원에 관한 고찰 (A study on the origin of fermentation culture in Northeast Asia)

  • Northeast Asia comprises many characteristic cultural areas including China, Mongolia, Korea and Japan. These areas have their own traditional food cultures, and Korea is known as the home of fermented foods in this region. The origin of Northeast Asian fermented foods, cereal alcoholic beverages, fermented vegetables(kimchi), fermented fish and fermented soybean products were investigated in relation to the primitive earthen vessels developed in this region. The geographical and environmental background of the appearance of primitive pottery culture in the Korea Strait region, and its influence on the development of fermentation technology in Northeast Asia were reviewed focusing on Korean dietary culture.

젓갈 및 젓갈 대용 부재료가 김치의 숙성 중 Angiotensin 전환효소 저해작용에 미치는 영향 (Effects of Salted-Fermented Fish Products and Their Alternatives on Angiotensin Converting Enzyme Inhibitory Activity of Kimchi During Fermentation)

  • 김치제조에 널리 쓰이는 젓갈류 즉, 멸치젓갈(액젓, 저염 액젓, 육젓), 새우젓갈 및 저염 까나리액젓과 젓갈 대용물로서 굴 가수분해물, 명태육 가수분해물 및 청각추출물을 첨가하여 제조한 김치를 $20^{\circ}C,\;10^{\circ}C$$4^{\circ}C$에서 각각 숙성시키면서 숙성에 따른 아미노질소의 함량과 ACE 저해효과를 살펴보았다. 그 결과, 젓갈류 첨가구의 경우, 아미노질소의 함량과 ACE 저해효과는 모든 숙성온도에서 숙성됨에 따라 어느 정도 증가한 후 대체로 일정한 수준을 유지하는, 유사한 경향을 보였다. 젓갈 대용물 첨가구의 경우, 아미노질소는 모든 숙성온도에서 각 시험구별 숙성에 따른 큰 변화 없이 $400{\sim}600\;mg/100\;g$의 함량을 보였으며 ACE 저해효과는 숙성 초기인 $1{\sim}2$일 사이에 급격한 상승 후 완만히 증가하는 경향을 보였다. 첨가된 젓갈 및 젓갈 대용물 중에서는 저염 멸치액젓 첨가구가 모든 숙성온도에서 아미노 질소의 함량(>600 mg/100 g)과 ACE 저해효과 (>80%)가 비교적 높았다. 그러나, 젓갈 대용물도 ACE 저해효과 면에서 젓갈류에 못지 않은 좋은 효과를 보임으로써 ACE 저해 기능성 김치용 조미소재로 젓갈류와 함께 이용 가능할 것으로 사료된다.
