초등학교 급식 식단별 식재료 크기 설정에 관한 연구 (Study on Establishment of Food Material Size Specification Based on Elementary School Menus)

  • 초등학교 학교급식 조리사를 대상으로 초등학생들에게 적합한 품목별 식재료의 크기에 대한 설문조사를 실시한 결과, 응답자의 대부분이 일반 성인식으로 제공되는 크기보다 3/4(0.75배) 또는 2/4 정도 작게 제공하는 것이 적당하다고 응답하였다. 식재료 규격을 설정하고 실제로 현장에 적용하는 실험은 사진자료를 이용한 조사, 실제섭취량 조사 등 2가지 방법으로 초등학교에 6개교에서 학령별로 실시하였으며 전체적으로 크기에 따라 학생들의 실제 섭취량과 선호도가 달라지는 것으로 나타났다. 이들 결과에 따라 식단별 식재료 규격을 3종류로 구분하고 크기가 표시된 흰색 아크릴판(가로${\times}$세로, $290{\times}210\;mm$)을 이용하여 식단별 연령별로 적합한 식재료크기를 설정하였으며 실제크기와 대조하여 사진자료로 작성하였다. 이들 자료를 다시 식단별로 분류하여 식재료 품목별 커팅 크기와 코드를 설정하였으며 설정된 식재료는 품목별로 나물 12종, 야채 15종, 김치 9종, 젓갈 2종, 튀김 8종, 육류 5종, 어류 19종, 건어물 5종로 최종결과는 책자로 제작이 가능하도록 편집전문가를 통한 수정작업으로 완성시켰다.

유산균 강화 자리젓 제조 (Enrichment of Lactic Acid Bacteria in Salted Fish, Chromis notatus)

  • Jariieot is a local food prepared by fermentation of salted fish, Chromis notatus. Since its NaC' content is around 20% like other fermented seafoods, reduction NaCl concentration is desirable to minimize the risk of health hazard. Addition of KCl and enrichment of lactic acid fermentation were attempted to solve the problems resulting from low salt concentration. NaCl and KCl were added to a fish, Chromis notatus simultaneously at concentrations of 10 to 4% and 5 to 2%, respectively. Lactic acid bacteria and glucose at final concentration of 2% were also mixed with the above-salt treated fish to prepare jarijeot. The jarijeot was examined periodically for chemical changes during aging and compared with reference jarijeot containing only 20% of NaCl to find out an appropriate method for quality improvement. The content of ATP and its related compounds was not affected by the concentration of NaCl or the presence of lactic acid bacteria. Nearly no difference in contents of free amino nitrogen, trimethylamine oxide, trimethylamine and volatile basic nitrogen was observed between the jarijeot containing 20% of NaCl only and that containing 10% of NaCl, 5% of KCl, 2% of glucose and cells of Pediococcus halophilus. Moreover, sensory evaluation of both kinds of jarijeots revealed almost the same scores. The number of cells of P. halophilus was maintained at concentration of $10^5$cell/ml for 60days' fermentation in the above mentioned jarijeot containing 10% of NaCl. Its pH was dropped down to 4.2. Accordingly it is possible to prepare jarijeot enriched with lactic acid bacteria if KCl and glucose are added at concentration of 5% and 2%, respectively, in addition to NaCl at a final concentration of 10%.

시판젓갈류와 채소류중의 질산염 및 아질산염함량 (Nitrate and Nitrite Content of Some Fermented Sea Foods and Vegetables)

  • 우리나라에서 시판되고 있는 젓갈류 및 채소류의 질산염 및 아질산염함량을 조사한 결과는 다음과 같다. 젓갈류에 있어서 절신염의 함량은 $0.74\sim13.81\;ppm$으로서 종류에 따라 차이가 많았다. 아질산염 함량은 자리돔젓, 새우젓, 꼴뚜기젓, 멸치젓 및 명란젓에서는 소량 검출되었고 갈치젓과 창란젓에서는 검출되지 않았다. 한편, 채소류에 있어서 엽채류의 질신염 함량은 근채류, 과채류에 비해 그 함량이 많았고 특히 상치는$1,320\sim1,412\;ppm$, 배추는 1,572.5 ppm으로서 가장 높았고 부추, 파 및 들깨잎등은 $5\sim219\;ppm$으로서 함량이 낮았다. 과채류의 질산염함량은 가지가 $109.1\sim373.1\;ppm$으로서 다소 높았으나 마늘, 고추 및 토마토에서는 각각 35.1 ppm, 4.09 ppm 및 $4.2\sim7.1\;ppm$으로서 채소류중 그 함량이 낮았다. 아질산염함량은 양배추3.8ppm, 상치 $2.5\sim2.9\;ppm$으로서 비교적 높았으나 배추, 고추, 들깨잎, 마늘 및 우엉에서는 검출되지 않았다. 채소류의 부위별 질산염함량은 배추가 속부분이 210ppm, 겉부분이 682ppm으로서 녹색이 진한 겉부분에 그 함량이 많았으며 미나리는 줄기부분이, 파는 잎부분이 질산염함량이 많았는데 채소류의 증류에 따라 다소 차이가 있었다. 질산염함량은 4일간 저장중 큰 변화는 없었으며, 저온저장과 정온저장한 것을 비교해 보면 상치, 호박 및 시금치등은 저온에서 저장한 것이 높았으며가지, 파등은 상온저장한 것이 함량이 높았다. 본 연구는 부산수산대학 부설 수산식품연구소 1981등도 사업의 일부임.

안동지역의 제례에 따른 음식문화(I) -불천위제례(不遷位祭禮)와 제수(祭羞)- (Dietary Culture for Sacrificial Rituals and Foods in Andong Area (I) -Bul-Chun-Wi Sacrificial Rituals and Foods-)

  • The present study investigated Bul-Chun-Wi Sacrificial Ritual (sacrificial service which has been handed down from generation to generation to worship the family ancestors in the period of $1400{\sim}1800$) and foods for the sacrificial service among fourteen head families in Andong area. The findings are as follows; 1. In Bul-Chun-Wi Sacrificial Rituals, family shrine has been maintained in good shape, and the table, dishes, and foods used in the rituals have not been changed so much until these days. 2. While vegetable soup is widely used as soup, one family uses the seaweed soup, the other soup mixed with meat, fish, and vegetable. Specially soybean-powdered soup, which is the distinguishable food in Andong area, has been used. 3. As a basic Ddock, mainly Si-Ru-Ddock(a steamed rice cake), piled up to 13-15 stacks, is used. Additional 7-9 kinds of Ddock are placed on top of the basic Ddock. 4. For grilled-meat food(Geuck), eight families use the raw meat, and one family uses the half-cooked meat. Recently, five families have used the cooked meat. Mostly used ones are meat-Geuck, fish-Geuck, chicken-Geuck, and the Geuck are not served one by one. Instead the Geuck are stacked in one dish designed for Geuck in order of meats from poultry, animal, fish, and shell. As the sub-dishes for rice, raw and cooked Geuck are used. 5. The number of stew (Tang) are 3 to 6 and 5 stews is the most popular. Commonly used stews are meat stew, fish stew, chicken stew, vegetable stew, blood stew, and organs stew. For the vegetable stew, buckwheat gel can be used. 6. As the fruit, chinese date, pear, nut and dried persimmons are the basic ones. The even number of 6 or 8 colorful fruits are used, while the odd number of 7 or 9 colorful fruits are used in three head families. 7. As Sik-Hae which is a drink and made from fermented rice, rice Sik-Hae or fish Sik-Hae has been necessarily used. 8. As raw meat dish, the liver of cow or meat is used. As a wrapping materials, the reticulum of a ruminant, green seaweed or thinly fried egg can be used.

  • 우리나라의 수산 양식과 어로기술은 세계적 수준임에도 불구하고, 가공기술은 상대적으로 낙후되어 있다. 수산가공품은 냉동품, 통조림, 염장식품(젓갈), 연제품(어묵) 등이 대부분으로, 특히 부가가치가 가장 높은 고품질의 수산 건제품은 매우 적다. 이러한 문제는 단적으로 건조기술의 부족에 기인한다고 사료된다. 본 논문은 부패하기가 쉽지만 향후 대량 생산이 계획되어 있는 고가 수산물의 고품질 건조 가공이 기능하게 하기 위한 에너지 절약형 진공건조장치의 건조열전달특성에 관하여 수행한 실험적 결과를 보고한 것이다.

대학생의 여드름과 관련된 식생활 태도 및 인식도 조사 (A Survey of College Students' Eating Behavior and Perception related with Acne)

  • The purpose of this study was to know the perception on acne for the college students to provide basic data for the suitable care of acne. Self-administrated questionnaires were completed by 641 college students. Dietary attitude, food habit, general perceptions on acne, knowledge level on acne, and relationship perception between special food and acne were analyzed. The results were as follows. 1. Self reported health status, smoking, obesity index were significantly different by experience of acne. 2. Dietary attitude and food habits were not significantly different by experience of acne. 3. Acne experienced subjects had acne on their face mostly and responded positively to specialized treatment. Proportions of getting the knowledge on acne were 40.6% from friends, 35.4% from magazine and 21.7% from TV or radio. 4. Proportions of correctly answered for the questions about pregnancy, hair cosmetics, oily food, male hormone, family history, constipation related with acne were less than 50% for acne experienced subjects. 92.5% of acne experienced subjects were answered eating chocolate, nut, and fat were related with breaking out and aggravating of acne. Perceptions on breaking out factors and aggravating factors of acne were not significantly different by gender. 5. More than 70% acne experienced subjects stated that instant foods, oily foods, meats, cookies, nuts were related with developing and aggravating acne. Soybean, Seaweed, fermented fish were recognized as less related with developing and aggravating acne.

Design, Optimization and Verification of 16S rRNA Oligonucleotide Probes of Fluorescence in-situ Hybridization for Targeting Clostridium spp. and Clostridium kluyveri

  • Fluorescence in-situ hybridization (FISH) is a common and popular method used to investigate microbial communities in natural and engineered environments. In this study, two specific 16S rRNA-targeted oligonucleotide probes, CLZ and KCLZ, were designed and verified to quantify the genus Clostridium and the species Clostridium kluyveri. The optimal concentration of hybridization buffer solution for both probes was 30% (w/v). The specificity of the designed probes was high due to the use of pellets from pure reference strains. Feasibility was tested using samples of Chinese liquor from the famed Luzhou manufacturing cellar. The effectiveness of detecting target cells appears to vary widely in different environments. In pit mud, the detection effectiveness of the target cell by probes CLZ and KCLZ was 49.11% and 32.14%, respectively. Quantitative analysis by FISH technique of microbes in pit mud and fermented grains showed consistency with the results detected by qPCR and PCR-DGGE techniques, which showed that the probes CLZ and KCLZ were suitable to analyze the biomass of Clostridium spp. and C. kluyveri during liquor fermentation. Therefore, this study provides a method for quantitative analysis of Clostridium spp. and C. kluyveri and monitoring their community dynamics in microecosystems.

물방개류 실내 사육법 (Indoor Rearing Method of Diving Beetles: Cybister japonicus, Cybister tripunctatus orientalis, Cybister brevis)

  • 점차 희소화되는 물방개류의 서식지내 복원 및 애완곤충 등 곤충산업 소재화를 목표로 실내 사육연구를 수행하였다. 물방개류는 자연상태에서 수초 줄기에 산란하는 습성을 지니고 있어 실내에서 안정적으로 대량생산을 하기 위해서는 인공산란매트 선발이 필요하며 인공산란매트는 사육상자 밑면에 깔아준 모래가 가장 좋은 것으로 나타났다. 또한 유충기(2 3령) 사육에 적합한 먹이원은 연중 안정공급시 가능한 먹이로서 날오징어를 선발하였다. 실내 사육시 개체간 공식행동이 강한 유충 사육을 위해 개체 집단사육시스템을 개발하였다. 또한 용화매트 선발 시험을 한 결과, 흙(자연매트)을 사용할 경우 표면이 쉽게 굳어 물방개유충이 파고들어가기 힘이 들어 용화율이 12~18% 저조하였고 또한 흙 관리 강도가 높았다. 그러나 발효톱밥을 용화매트로 사용할 경우 용화율 80%로 우수하여 물방개류의 용화매트로 가능함을 확인하였다.

젓갈의 숙성 및 저온 저장이 미생물 균수 및 균총에 미치는 영향 (The effects of low temperature storage and aging of Jeot-kal on the microbial counts and microflora)

  • 젓갈 미생물 계수용 배지의 소금농도를 결정하기 위한 실험에서는 NaCl을 5% 첨가한 배지에서 가장 많은 수의 미생물이 계수되었고, 시료를 보존하기 위한 동결보호제는 glycerol 15%를 사용하였을 때 $-170^{\circ}C$에서 30일 보존 후 총균수는 75.5%, 젖산균수는 61.3%로 가장 높은 생존율을 나타내었다. 조개젓의 숙성과정 중 pH는 초기 6.8에서 5.0으로 낮아졌고, 숙성 후 단백질 함량은 조개젓은 10%, 멸치액젓은 $6{\sim}7%$이었다. 조개젓의 미생물수는 멸치액젓의 미생물수보다 많았고, 조개젓의 경우는 숙성기간에 따라 미생물수가 증가했다가 감소하는 경향을 보여주었으나 멸치액젓은 서서히 감소하는 경향을 보여주었다. 조개젓의 경우 숙성 4주까지 그램 양성, 카탈라아제 음성 세균들의 비율이 크게 증가하는 전형적인 젖산 발효 형태를 보여주었다. 젓갈을 $-170^{\circ}C$의 액체질소 탱크에서 2년간 보존 후 미생물수는 전체적으로 90% 이상 사멸하였고, 균총 변화를 보면 조개젓의 경우에는 그램 음성 세균과 간균의 생존율이 더 높았으나 거제 멸치액젓의 경우는 간균의 비율이 구균에 비해 감소하였다. 두 가지 젓갈에서 모두 효모의 비율은 크게 떨어졌다.

Isolation and Characterization of Lactic Acid Bacteria from Fermented Goat Milk in Tajikistan

  • The lactobacilli associated with a fermented goat milk product from Tajikistan were isolated to characterize their technological properties and antibiotic resistances in order to assess their suitability for development as starter cultures. In this study, twenty three strains were identified by 16S rRNA sequencing as typical dairy-associated lactic acid bacterial strains, i.e. L. plantarum, L. pentosus, L. delbrueckii, L. helveticus and L. paracasei. These strains were generally susceptible to most antibiotics tested in this study and this allowed a selection of strains as safe starters. The draft genomes of four representative strains were sequenced and the number of contigs of the four assembled genomes ranged from 51 to 245 and the genome sizes ranged from 1.75 to 3.24 Mbp. These representative strains showed differences in their growth behavior and pH-reducing abilities in in vitro studies. The co-inoculation of these Lactobacillus spp. strains together with a yeast Kluyveromyces marxianus MBT-5698, or together with the yeast and an additional Streptococcus thermophilus MBT-2, led to a pH reduction to 3.4 after 48 h. Only in the case of fermentation inoculated with the co-culture, the viscosity of the milk increased noticeably. In contrast, fermentations with single strains did not lead to gelation of the milk or to a decrease in the pH after 24h. The results of this study provide a comprehensive understanding of the predominant lactobacilli related to Tajikistani fermented milk products.
