The objectives of this study were to investigate the effects of dietary fish oil inclusion on the eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) contents and organoleptic characteristics of breast meat in mule ducks. Three hundred mule ducks at four weeks of age were randomly assigned to three dietary treatments with five replicate pens in each. One replicate pen had ten males and females each with a total of 100 ducks in each treatment. The diet in the three treatments contained 0, 1.5, and 3.0% fish oil, respectively. Body weights at 4, 6, 8, and 10 weeks of age, and feed efficiency at 4 to 6, 6 to 8, and 8 to 10 weeks of age were recorded. At 10 weeks of age, one male and one female from each replicate were sacrificed for oxidative stability of breast meat and the sacrificed males were employed for the analysis of fatty acids in breast meat and skin. Sensory evaluation of breast meat was also performed. A level of 3.0% fish oil in the diet significantly deteriorated feed efficiency and body weight gain. Dietary fish oil inclusion had a trend of increasing abdominal fat deposition and decreasing the flavor of breast meat. The EPA and DHA contents in the breast meat were higher than those in the breast skin irrespective of oil sources. The EPA and DHA contents in breast meat and breast skin was significantly increased in the 3.0% fish oil group. Although EPA and DHA were not efficiently deposited in the duck meat through dietary fish oil inclusion, this method can still provide a partial supplementation of EPA and DHA.
The experiment was carried out to investigate the effects of Alisma canaliculatum with probiotics (ACP) on the growth performance, meat composition, oxidative stability, and fatty acid composition of broiler meat. Sixteen probiotic strains were tested for their levels of acid, bile, and heat tolerance. Among them, Lactobacillus acidophilus KCTC 3111, Enterococcus faecium KCTC 2022, Bacillus subtilis KCTC 3239, and Saccharomyces cerevisiae KCTC 7928 were selected for use in ACP. Exactly 140 Ross broiler chicks were assigned to four dietary treatments in five replications for 5 wks in a completely randomized design. The dietary treatments were NC (Negative control; basal diet), PC (Positive control; basal diet with 0.005% Chlortetracycline), ACP-0.5% (basal diet with 0.5% ACP powder), and ACP-1% (basal diet with 1% ACP powder). According to the results, body weight of the broilers increased, and feed conversion ratio improved in the ACP-0.5% group compared to the NC group (p<0.05). Crude protein content of breast meat was higher (p<0.05) in the ACP-0.5% group, whereas crude fat content of thigh meat was lower (p<0.05) in the supplemented groups. Breast meat absolute and relative weights were both higher (p<0.05) in the ACP groups compared to the control group. Further, ACP diets increased gizzard and decreased large intestine relative weights, whereas kidney relative weight decreased upon the addition of a higher level (1%) of ACP (p<0.05). Thiobarbituric acid reactive substances values of breast and thigh meats were reduced (p<0.05) by ACP supplementation compared to control. Regarding the fatty acid composition of breast meat, arachidonic acid, docosahexaenoic acid, PUFA, and n6 fatty acid levels decreased (p<0.05) in the ACP groups, whereas the levels of linoleic acid, PUFA, PUFA/SFA, and n6 fatty acid in thigh meat decreased (p<0.05) by ACP and PC diets. It can be suggested based on the study results that ACP-0.5% diet could be an effective feed additive for broilers.
This study was conducted to determine the effect of dietary soy isoflavone (ISF, 0 and 20 mg/kg) on performance, meat quality and antioxidative property in male broilers. Six replicates of 45 birds (42 d old) were used for each treatment. The birds were fed soybean meal-free diets containing 3% oxidized fish oil (acid value, 6.76 mg potassium hydroxide/g; and peroxide value, 6.18 meq/kg) for 3 wk. The results showed that average daily gain, feed intake, feed conversion and carcass traits were not affected by soy ISF. Compared with the control group, breast muscle color redness value and water holding capacity were increased (p<0.05) by ISF supplementation. The activity of plasma catalase was increased by supplementing with 20 mg ISF/kg diet. In breast muscle, Broilers fed 20 mg ISF/kg had decreased production of malondialdehyde and lactic acid. The ISF supplementation elevated total antioxidative capacity and activities of total superoxide dismutase and glutathione peroxidase. The results indicated that dietary ISF could increase redness and water holding capacity of meat, and antioxidative property of meat in male broilers fed oxidized fish oil diet.

This study was conducted to investigate the effects of strain on broiler performance, and age at slaughter and postchilling (PC) aging time on meat quality traits. A total of 500 one-day-old chicks (250 Hubbard classic and 250 Lohman) were reared under commercial conditions. Half of the broiler birds from each strain were slaughtered at 32 days and the other half at 42 days old. At each processing day, 168 carcasses were randomly selected (84 Hubbard and 84 Lohman) and divided into groups of 28 carcasses within each strain, and aged for 0, 4 and 24 h after chilling. Average weekly body weight was comparable between strains. Feed conversion ratio was higher (p<0.05) for the Hubbard strain during the second and third week of age. Initial carcass pH was significantly (p<0.05) affected by age where younger birds (32-d-old) had lower pH values than older (41-d-old) birds. Breast temperature was higher (p<0.001) for Lohman than Hubbard at 0, 2 and 4 h of PC. Younger birds had a lower breast temperature (p<0.001) at all measured times of PC. Thaw loss, cook loss and water holding capacity were not significantly affected by strain, age or aging time. Lohman strain had more tender meat (p<0.05) than Hubbard strain, and tenderness was improved with the increase of broiler age and aging time. Meats from Hubbard were lighter and less red than those from Lohman strain where younger birds had darker color. In conclusion, strain, age at slaughter and PC aging duration are critical to breast meat quality characteristics, and 4 h of aging are required before deboning in order to obtain more tender fillets.
This experiment was conducted to compare the effects of vitamin C supplemented in either feed or water on the performance and carcass characteristics of broilers during the hot season. For a 6 week feeding trial, a total of 330 broiler chicks (Ross, 4 d old, average 57 g BW) were alloted to five treatments. The treatments of vitamin C (VC) supplementation were 1) 0 ppm VC, 2) 10 ppm VC in feed, 3) 20 ppm VC in feed, 4) 5 ppm VC in water and 5) 10 ppm VC in water. During the starter phase (0-3 week), chicks on non-supplemented group grew slower (p<0.01) than the supplemented ones, and a similar trend was also noted during finisher stage and the overall stage. Feed intake was significantly (p<0.05) higher in supplemented groups and higher when fed in feed as compared with water during all stages. But feed conversion efficiency was significantly improved in non-supplemented groups compared to supplemented ones in finisher and overall stage. The digestibility of gross energy and ether extract was significantly (p<0.05) higher during starter phase in supplemented, given in feed, and at higher levels as compared with non-supplemented, given in water, and at lower levels, respectively. The bone resistance was significantly (p<0.05) higher in supplemented, supplied in feed groups as compared with their counterparts. Except breast meat, the dressing percentage and abdominal fat were also higher in supplemented group and the dressing percentage was significantly (p<0.05) higher in VC supplemented in feed as to water, but no effect of supplementation was noticed on meat color when compared between the methods of feeding (feed vs. water). The levels of VC in plasma and liver increased linearly, as the level of supplementation both in feed and water increased and it was significantly (p<0.05) higher in feed group as compared with water group. It can be concluded that, retention and availability of vitamin C in feed was higher than those in water, and supplementation of VC during summer was beneficial for poultry.
High fibre (CF, 242 g/kg) sunflower seed meal (SSM) was incorporated in standard grower and layer quail diets at 0, 50, 75 or 100 g/kg replacing part of the soybean meal (SBM) and deoiled rice bran (DORB). Each grower diet was offered to 30 quails housed in battery cages from day one to 5 weeks of age. At the end of the growing period, Twelve female quails from each of the four respective dietary groups were transferred to the individual laying cages and their laying performance from 7 to 20 weeks of age were evaluated on diets containing SSM at similar levels as that during the growing period. The results of growth bioassay revealed that the live weight gain, feed intake, nutrient retention and carcass characteristics of quails in different dietary groups did not vary significantly (p>0.05), although the quails fed SSM based diets utilized the feed less (p<0.05) efficiently than those fed the control diet. During the laying period, the egg production and egg quality traits remained unaffected due to dietary treatments but feed required per unit egg production increased (p<0.05) as the level of SSM in diet was increased to 100 g/kg. Although, the cost of feed per kg decreased due to the incorporation of SSM in diet but the same was not reflected in feed cost per unit gain, meat or egg production as such parameters were comparable on all the diets. It could thus be concluded that the SSM can be incorporated in quail diets upto 100 g/kg for part of SBM, an item usually expensive and also in short supply in developing countries including India.

A total of 400, one day-old commercial broiler chicks were divided into five diet groups (negative control, positive control group with 55 ppm Zn-bacitracin, 15 ppm ${\beta}$-glucan, 30 ppm ${\beta}$-glucan, and 60 ppm ${\beta}$-glucan) and fed for six weeks. Ten broilers were allotted to each of 40 floor pens. Eight floor pens were randomly assigned to one of the 5 diets. Each diet was fed to the broilers for 6 weeks with free access to water and diet. The survival rate, growth rate, feed efficiency, and feed conversion rate of the broilers were calculated. At the end of the feeding trial, the birds were slaughtered, breast muscles deboned, and quality parameters of the breast meat during storage were determined. The high level of dietary ${\beta}$-glucan (60 ppm) showed better feed conversion ratio and survival rate than the negative control. The survival rate of 60 ppm ${\beta}$-glucan-treated group was the same as that of the antibiotic-treated group, which showed the highest survival rate among the treatments. There was no significant difference in carcass yield, water holding capacity, pH, color, and 2-thiobarbituric acid reactive substances values of chicken breast meat among the 5 treatment groups. Supplementation of 60 ppm ${\beta}$-glucan to broiler diet improved the survival rate and feed conversion rate of broilers to the same level as 55 ppm Zn-bacitracin group. The result indicated that use of ${\beta}$-glucan (60 ppm) can be a potential alternative to antibiotics to improve the survival and performance of broilers. However, dietary ${\beta}$-glucan showed no effects on the quality parameters of chicken breast meat.
One-hundred and twenty Ischia grey rabbits, traditionally raised in pits, were equally divided after weaning (32 days) into three groups: group C, housed in cages (4 rabbits/cage) and fed a commercial concentrate; group GF, housed as C group and fed grasses collected on the island and crushed faba beans supplemented with an appropriate mineral vitamin mix; group P, housed in pits (8 rabbits/pit) and fed as GF group. Feed intake was recorded daily and live weight monthly up to slaughter (92 days). At slaughter, 10 rabbits per group were used to measure carcass and meat traits. The carcasses were weighed and measured according to the standard procedures and meat samples from the Longissimus dorsi and left hind leg were analysed for water holding capacity and chemical composition, respectively. During the entire trial, group C consumed significantly (p<0.01) a higher quantity of feed than the other groups (126.1 vs. 63.4 and 66.5 g/d, resp. for groups C, GF and P) and at slaughter showed a significantly (p<0.01) higher body weight (2,529.7 vs. 1,324.4 and 1,375.4 g, resp. for groups C, GF and P). Significant differences (p<0.01) were found also for dressing out percentage (68.6 vs. 66.6 and 66.9%, resp. for groups C, GF and P) and for meat chemical composition, in particular lipid percentage (4.13 vs. 1.84 and 1.93%, resp., for groups C, GF and P, p<0.01) and moisture (73.7 vs. 76.4 and 76.3%, resp. for groups C, GF and P, p<0.01). The results suggest the opportunity to obtain heavier animals raised in the pits if their diets were integrated with commercial feed.
Objective: This study was conducted to evaluate the effects of concentrate level and chromium-methionine (Cr-Met) supplementation on the growth performance, carcass characteristics, meat quality, and fatty acid composition of Tan lambs. Methods: Sixty male Tan lambs (21±1.23 kg body weight) fed a finishing diet (concentrate-to-forage ratio: 35:65 [LC group] or 55:45 [HC group]) with daily Cr-Met supplementation (0, 0.75, or 1.50 g) were used in a completely randomized design with a 2×3 factorial arrangement of treatments. Results: Lambs from the HC group had higher average daily gain, dry matter (DM) digestibility, dressing percentages, leg proportions, intramuscular fat (IMF) contents, and saturated fatty acid levels, but lower feed conversion ratios, globulin (GLB) and total protein (TP) concentrations, shear force, and monounsaturated fatty acid (MUFA) levels (all p<0.05). Cr-Met supplementation increased the DM digestibility, GLB and TP concentrations, rack and loin percentages, and cooking loss, but decreased the IMF contents and leg proportions (all p<0.05). Cr-Met supplementation at 0.75 g/d increased the conjugated linoleic acid (CLA) content in both the HC and LC groups (p<0.01). Significant interactions between the concentrate level and Cr-Met dosage were observed for MUFA (p<0.01) and polyunsaturated fatty acid (PUFA) (p<0.01) levels. Meat from the lambs fed an unsupplemented LC diet presented the highest PUFA and MUFA levels (p<0.01). However, the MUFA and PUFA levels decreased significantly with increasing Cr-Met supplementation levels in the LC group (p<0.01), whereas the opposite trend was seen in the HC group. Conclusion: The HC diet improved the growth performance of Tan lambs, increased their profitability by increasing leg and rack joint proportions, and improved meat quality by promoting an IMF content that was more visibly acceptable to consumers. Cr-Met supplementation at 0.75 g/d in a HC diet was the best choice and may be economically beneficial.
A total of 96 pigs ($49.23{\pm}3.20$ kg) were used in an 11 wk growth trial to evaluate the effect of fermentable carbohydrate (FC) content on growth performance, apparent total tract digestibility (ATTD) of nutrient, blood profile, and meat quality. The dietary treatments were: i) negative control (NC), basal diet, ii) positive control (PC), NC+antibiotics (positive control diet with 5 ppm flavomycin), iii) PCL, PC-13% lower FC, and iv) NCL, NC-13% lower FC. The growth performance (average daily gain, average daily feed intake, and gain/feed) didn't differ among treatments through the whole experiment. These pigs fed the PCL diet had the greater (p<0.05) apparent total tract digestibility (ATTD) of dry matter than those from PC and NC treatment at the end of the experiment. No differences were observed in white blood cell (WBC), red blood cell (RBC), and lymphocyte concentration among different treatments. After the feeding period, meat samples were collected from the pigs at slaughter. The pigs in NCL and PCL treatments had greater (p<0.05) backfat thickness and lower lean percentage. The color value of loin was higher (p<0.05) in NCL treatment compared to PCL treatment. Also, the NCL treatment had higher (p<0.05) marbling value than PC treatment. The drip loss was depressed by PCL and NCL treatment comapared to NC treatments. The water holding capacity (WHC) was higher (p<0.05) in NC and PCL treatment. In conclusion, the low FC can improve digestibility and meat quality of finishing pigs.
