Effects of Procedures for Preparing Fatty Acid Methyl Esters on Fatty Acid Composition of Korean Vegetable Oils (Sesame Seed Oils) (지방산 메틸에스테르 조제방법이 한국산 식물성 기름(참깨 기름)의 지방산 조성에 미치는 영향)

  • The effects of procedures for preparation of fatty acid methyl esters for gas chromatography were investigated. A quantitative comparison of four procedures for the preparation of the fatty acid methyl esters from Korean sesame seed lipids which can be representative of fatty acid ranges of Korean vegetable oils has been made. The procedures employed were $BF_3$-methanol, HCI-methanol, sodium methoxide-methanol, and tetramethylammonium hydroxide-methanol. Twelve fatty acids ranged from 14:0 to 24:0 were identified in the lipids from Korean white and black sesame seeds. All four procedures gave similar results for the fatty acids, 16:0, 18:0, 18:1, 18:2, and 18:3 present in the range of $1{\sim}44%$ but only in the HCI-methanol procedure, the fatty acids, 16:1, 20:0, 22:0, 24:0 present in the range of $0.02{\sim}1%$ showed the lowest values. When using tetramethylammonium hydroxide-methanol procedure for determination of total fatty acid composition from white and black sesame seed lipids, unsaponifiable matters including sesamol, sesamolin and sesamin present in the seed lipids are not removed from the resulting reaction mixture. Thus the transesterification mixture is used without further treatment for injection into the gas chromatography. However, the gas chromatographic analysis of the transesterification mixture showed that the unsaponifiable matters had no effect on the fatty acid composition of the seed lipids. From the results, it appears that the $BF_3$-methanol, sodium methoxide-methanol and tetramethylammonium hydroxide-methanol procedures can be used to prepare fatty acid methyl esters from Korean vegetable oils. Among the methods, the tetramethylammonium hydroxide-methanol procedure, which give total fatty acid composition, glyceride fatty acid composition and composition of free fatty acids present, appears to be a simple, convenient and quantitative procedure and applicable to samples containing broad ranges of fatty acids.

Effect of Sucrose Fatty Acid Ester on Yackwa Quality (Sucrose fatty acid ester가 약과 품질에 미치는 효과)

  • This study was performed to know effect of Yackwa quality when sucrose fatty acid esters(S-570, S-970, S-1570) were added as an emulsifier. In mechanical characteristics, the Yackwa of sucrose fatty acid esters did greatly decrease the hardness, cohesiveness, springiness and gumminess, respectively, and increase the brittleness compared to the Yackwa of non-emulsifier and egg yolk. This tendency showed at the above level of 1.0% S-570, and 0.5% S-970 and S-1570, respectively. In sensory evaluation, the Yackwa of sucrose fatty acid esters increased the softness compared to the Yackwa of non-emulsifiers and egg yolk. There were significantly differences in the preference at 0.5% level of S-970 and 1.5% level of S-1570, respectively compared to other treatments. In conclusion, the 0.5% level of S-970 would be mostly useful level of emulsifier for making Yackwa.

Improvement of Low Temperature Property of Biodiesel from Palm Oil and Beef Tallow Via Urea Complexation (요소 착물형성에 의한 포화지방산 고함유 팜유 및 우지 유래 바이오디젤의 저온유동성 개선효과 연구)

  • Biodiesel is non-petroleum based fuel produced from vegetable oils or animal fats through transesterification. The compositions of saturated and unsaturated fatty acids in the feedstocks are important factors for biodiesel quality in terms of low-temperature fluidity and oxidative stability. The goal of this study is to improve the cold flow property of biodiesel from vegetable and animal origin containing highly saturated methyl esters (approx. 50%). In this purpose poly-saturated methyl esters in palm and tallow biodiesel were removed via urea-based fractionation and then the recovered fractions (enriched unsaturated fatty acid methyl esters) were supplemented with cold flow improvers. The highest concentration of unsaturated fatty acid methyl esters (93.8%) was obtained using a urea/fatty acid ratio of 3:1 at the crystallization temperature of $0^{\circ}C$ for 17 hours in incubation, with recovery of 71% and the addition of cold flow improver (Flozol$^{(R)}$ 515, 3,000 ppm) to the enriched poly-unsaturated fatty acid methyl esters reduced the CFPP(cold filter plugging point) of palm biodiesel from $12^{\circ}C$ to $-42^{\circ}C$. In tallow biodiesel both the enrichment of unsaturated fatty acid methyl esters (93.71%) and the addition of cold flow improver (Infineum R408, 3,000ppm) reduced the CFPP from $10^{\circ}C$ to $-32^{\circ}C$.

  • The compositions of residual extractives in woodmeal, unbleached and oxygen-delignified aspen kraft pulps were investigated with gas chromatography(GC) and gas chromatography-mass spectrometry (GC-MS) with focus on fate of extractives in kraft pulping and oxygen delignification. Steryl esters and shorter retention time (shorter than palmitic acid) extractives were main extractives in aspen woodmeal. Shorter retention time extractives were well removed in kraft pulping. Sterol esters were hydrolyzed to sterols and fatty acids. Sterols and fatty acids were two major extractives classes in unbleached kraft pulps. Linoleic acid was main fatty acids in unbleached pulps compared with palmitic acid which is generally found in aspen woodmeal. Sterolsand fatty acids were also two major extractives classes in oxygen-delignified kraft pulps. However, linoleic acid was well removed in oxygen delignification.

  • Supercritical fluid of carbon dioxide was used to investigate the effects of its temperature and density on the distribuion coefficients of fatty-acid esters composing fish oil. The distribution coefficient of fatty acid ester was greatly different from each other according to the temperature and density of the supercritical fluid. The possibility of separation of a certain fatty acid from the mixture of fatty acids was tested. The density of the supercritical fluid showing the great differences ofthe distribution coefficients among the fatty acid esters ranged from 0.3 g/mL to 0.4 g/mL. The retrograde condensation took place at high densities of the supercritical fluid.

  • Four fatty acid vinyl esters were synthesized by transesterification between vinyl acetate and lauric acid, myristic acid, palmitic acid, stearic acid, respectively. Fatty acid vinyl ester oligomers were prepared from polymerization of four fatty acid vinyl esters in the presence of potassium persulfate in methanol. The ${\alpha}-sulfonation$ of these four fatty acid vinyl ester oligomer were carried by direct addition of sulfur trioxide. Especially, molecular weights of sodium ${\alpha}-sulfo$ fatty acid vinyl ester oligomers were measured by boiling point method.

Comparisons of Flavor Ingredients Changes according to Whisky Types and Maturation Period (위스키 종류 및 숙성기간에 따른 향미 성분 변화의 비교)

  • This study analyzes flavor ingredients according to types of whisky and maturation periods based on total 40 different types of whisky that are mainly distributed to Korea via imports. Whisky was classified into four categories based on origin, and also into different categories based on maturity period, ingredients such as fusel alcohol, fatty acid, and fatty acid esters and proportion of patterns were analyzed. As a result of an analysis for fusel alcohol, high qualified types of alcohol including 3-methylbutanol, 2-methylbutanol, iso-butanol, and 1-propanol were detected from all Scotch whiskys, America whiskys, and Canadian whiskys. In particular, the proportional sum of 3-methylbutanol and 2-methylbutanol, and the sum of 3-methylbutanol and 2-methylbutanol/iso-butanol were regarded as core factors to determine each type of whisky. Acetaldehyde, ethyl acetate, and acetic acid increased as maturation and storage period became longer. As a result of the fatty acid and fatty acid ethyl ester analysis, the major fatty acids were dodecanoic acid and decanoic acid, both with detection of octanoic acid and hexanoic acid. However, dodecanoic acid, decanoic acid, and octanoic acid were lower than the detectable limit in American and Canadian whiskys, showing a unique phenomenon that hexanoic acid was detected only in very small amounts. Malt Scotch whisky showed higher significance than blended Scotch whisky, making it possible to classify types of whisky. Fatty acid ethyl ester contents showed significance with fatty acid either. In addition, changes in the whiskys based on maturation period were confirmed via proportions of fatty acids and fatty acid ethyl esters. In general, the proportion of fatty acids and fatty acid ethyl esters decreased as the storage period increased. This study provided basic data to classify types of whisky based on maturation periods by analyzing the proportion of flavor ingredients such as fusel alcohols, fatty acids, and fatty acid ethyl esters.

Effect of Chronical Ethanol Ingestion on the Levels of Fatty Acid Ethyl Esters (FAEEs) and Lipid Peroxidation in Rat Tissues (만성적으로 알코올을 섭취한 쥐의 조직 내 Fatty Acid Ethyl Esters (FAEEs)와 지질과산화물 형성에 미치는 영향)

  • The present study was designed to observe the effect of chronically ingested ethanol on the level of fatty acid ethyl esters (FAEEs), which is a non-oxidative metabolite of ethanol metabolism in tissues, and its correlation to the status of oxidative stress in rats. Forty male Sprague Dawley rats weighing 145 - 155 g were divided into 2 groups, Control and EtOH. All rats were fed Lieber-DeCarli liquid diet for 4 weeks by pair-feeding. An isocaloric maltose dextrin was added in replace of 50 g ethanol (36%kcal) in the control diet. Chronically ingested ethanol significantly increased the content of FAEEs in pancreas and liver, but not in brain. The level of 2-thiobarbituric acid reactive substances (TBARS) was significantly increased, but ${\alpha}-tocopherol$ level was significantly decreased in pancreas and liver. However, the levels of TBARS and ${\alpha}-tocopherol$ in brain were not significantly affected by ethanol ingestion. Therefore, chronically ingested ethanol might cause tissue damage by increasing the levels of FAEEs and TBARS and dissipating more ${\alpha}-tocopherol$ in tissues.

Synthesis of $\beta$-Sitosterol Esters with Conjugated Linoleic Acid and Medium Chain Fatty Acids by Using Lipase as Catalyst

  • Plant steryl esters have good effects on plasma cholesterol level and are used as functional food ingredient. Conjugated linoleic acid (CLA) presents mainly in animal foods and has a good benefit and medium chain fatty acids (MCFAs) are a rapid energy source for human. In this study, we produced the ${\beta}$-sitosterol esters from CLA and MCFAs using various lipases as catalysts. Among lipases, AYS (from Candida rugosa) was the most effective for synthesis of ${\beta}$-sitosterol esters in the presence of water (24.35% conversion) or hexane (25.33% conversion). The second esterification extent was obtained by lipase AK (from Pseudomonas sp), showing 10.26% conversion in water and 15.94% conversion in hexane, respectively. The reaction condition was 1:3 molar ratio (${\beta}$-sitosterol:fatty acid, 1:3) and stirred (175 rpm) at 55$^{\circ}C$ in water bath shaker for 48h.
