A Comparison of the analysis of the green and roast coffee of Arabica and Robusta compositions and regular instant coffee has been investigated by chromatography. The coffee oil were obtained by extracting the green and roast coffee with ethyl ether by soxhlet methood. Instant coffee samples were accurately weighted into 100ml beaker (ca. 0.5g regular coffee and 1.5g decaffeinated coffee) and add ca. 50ml water, heat and boil, remove from heat, and mechanically stried ca. 15min. and filtered of one sample and another sample were without filtrated and proceed with liquid chromatographic separation. The fatty acid compositions of green and roast coffee were compared by gas liquid chromatography and general chemical compositions of sample were analysed. Some similarities between green and roast coffee fatty acids were found in the case of green and roast coffee of both kinds acid methyl esters. They contained stearic, oleic, linoleic, and unknown fatty acid, and palmitic ana linoleic acid were rich.
This study evaluated the effects of chronic ethanol consumption and/or taurine supplementation on hepatic total, phospholipid fatty acid composition and the metabolism of rats fed one of three purified liquid diets for 8 weeks. the rats followed either the control diet (CD, ethanol-free and taurine-free diet); ethanol diet (ED, CD+ 50g ethanol/L) or ethanol-taurine diet (ETD, ED+3.75g taurne/L). Chronic ethanol consumption and/or dietary taurine supplementation were associated with altered hepatic total and phospholipid fatty acid composition. compared to the values for the control rats, ED or ETD significantly decreased the percentage of total monounsaturated fatty acids ($\Sigma$MUFA), and increased the percentage of total polyunsaturated fatty acids ($\Sigma$PUFA) of hepatic total lipids(p〈0.01). Percentages of 14:0(P〈0.01) and 16:0(p〈0.001) were sigificantly lower, and those of 18:0(p〈0.01), 20:0(p〈0.001), 20:3$\omega$6(p〈0.01) and 22:4$\omega$6(p〈0.01) in hepatic total fatty acid compositions were oserved in rats fed ETD versus those fed ED or ETD. No significant differences in hepatic total fatty acid compositions were observed in rats fed ETD versus those fed ED. Percentages of 24:0(p〈0.01), 16:1(p〈0.05), 20:1(p〈0.01), 18:2$\omega$6(p〈0.01) and 18:3$\omega$3(p〈0.05) in hepati phospholipids were significantly higher, and those of 14:0(p〈0.01), 16:0(p〈0.001), 20:3$\omega$3(p〈0.05) in hepatic phospholipids were significantly higher, and those of 14:0(p〈0.01), 16:0(p〈0.001), 20:3$\omega$3(p〈0.001), 22:6$\omega$3(p〈0.001) and $\Sigma$$\omega$3(P〈0.001) were significantly lower in rats fed ED or ETD compared to the values for the control rats. The Δ5 desaturation index(20:3$\omega$6⇒20:4$\omega$6) and elongation index (20:5$\omega$3⇒22:5$\omega$3) of hepatic phospholipid index (20:3$\omega$6⇒20:4$\omega$6) and decreased Δ4 desaturation index (22:5$\omega$3⇒22:6$\omega$3) compared to the values for the ED rats. These changes in hepatic fatty acid composition induced by chronic ethanol consumption and/or taurine supplementation might be associated with the modulations of physical properties of the hepatic cell membrane and its sensitivity to peroxidation damage.

To develop natural food preservatives, antimicrobial effect of the ethanol extract of leaf mustard against E. coli and S. aureus were examined in terms of compositions and leakage of cellular materials in the microorganisms treated with the extract. No effect of the concentration of ethanol extract on the fatty acid composition of E. coli and S. aureus at logarithmic phase was showen, but the content of palmitic and palmitoleic acid of E. coli slightly increased and decreased, respectively, and the content of palmitic and margaric acid of S. aureus slightly increased, when compared to each control. Ethanol extract did not affect most of the amino acids E. coli and S. aureus at logarithmic phase ; however, some of them(proline, glycine, valine and histidine of E. coli and proline, methionine and histidine of s. aureus) were elevated and some other amino acid(aspartic acid, glutamic acid, tyrosine and arginine of E. coli and aspartic acid, glutamic acid, glycine, alanine and lysine of Staph. aureus) found to be decreased. The amount of cell body protein leaked from E. coli and S. aureus increased to 1.02 and 0.22mg/g cell weight, respectively, as compared to controls. Similarly, the substances with absorbance at 260 nm from E. coli and s. aureus increased to 0.12 and 0.06mg/g cell weight, respectively.
The changes in fatty acid compositions of the each fraction of oil, that is, steryl ester, triglyceride, diglyceride and free fatty acid, were analyzed during the storage of sesame seed for 4, 9, and 15 months at four different storage conditions, that is, storage under light with linen pouch(LA), storage in dark with linen pouch(DA), storage under light with poly ethylene pouch(LS), and storage in dark with poly ethylene pouch(DS). In the fatty acid composition of steryl ester fraction, palmitic and stearic acid were decreased but linoleic acid was increased during the storage in all the storage conditions. The ratio of $C_{18}$ to $C_{16}$ fatty acids in steryl ester from DA and LA was higher than that from DS and LS during storage until 15 months. The palmitic and stearic acid content in triglyceride were decreased until 9 months of storage, then slightly increased until 15 months of storage in all the storage conditions, but reverse tendency was observed in the lineoleic acid content. The ratio of $C_{18}$ to $C_{16}$ fatty acids and unstaturated to saturated fatty acids in DS were slightly higher than these in DA and LA. In the fatty acid composition of free fatty acid, the content of palmitic and stearic acid were decreased until 9 months of storage, then increased until 15 months, but reverse tendency was observed in the oleic and linoleic acid: the ratio of unsaturated to staturated fatty acids in DA and LA was higher than that in DS and LS during the storage for 15 months.
The metabolites of marine mollusk Mytilus edulis were isolated and characterized, revealing the presence of the rare free fatty acids and proteinogenic amino acids together with a non-proteinogenic free amino acid, taurine. The free fatty acids in this organism were particularly interesting for the presence of both unusual n-6 acid [20:4 (n-6)] and triple bond containing acid (2,5-octadecadiynoic acid). In addition to the proteinogenic amino acids commonly found in proteins, non-proteinogenic free amino acid taurine was isolated and the structure was determined by its physicochemical properties. Recently taurine has been given much interest in the molecular level because of diverse biological activities and the medicinal properties. Furthermore, the result of the analyses of analyses of free amino acids showed that glycine, glutamic acid, serine and alanine, which were considered to be related to the taste of this organism, are predominantly present.

This study was designed to observe the effects of the feeding Platycodon grandiflorum, Codonopsis Ianceolata, perilla oil and safflower oil on the fatty acid composition in serum and liver of dietary hypercholesterolemic rats. Experimental groups mixed with 5% cellulose +10% lard (group 1, control group), 2% cholestyraemine +10% lard (group 2), 5% C. ianceolata+ 10% perilla oil (group 3), 5% P. grandiflorum+10% perilla oil (group 4), 5% C. ianceolata+10% safflower oil (group 5) and 5% P. grandiflorum+10% safflower oil (group 6) were administered to the male rats of the Sprague Dawley for 3 weeks. In the fatty arid compositions of serum total fatty arid, phospholipid, triglyceride and cholesteryl ester, the linoleic acid content was most in the PUFA and it was major fatty acid. Particularly, the other components except the phospholipid fraction in serum lipids were influenced by the fatty acid composition of the test lipids from the fact that linoleic acid content was remarkably more in the groups 5 and 6. In the fatty arid compositions of liver total fatty acid, phospholipid, triglyceride and cholesteryl ester, the linoleic acid content was more in the PUFA and so it was major fatty acid. Particularly, the arachidonic and eicosapentaenoic acid contents of phospholipid fraction in liver lipids were rather more. from the above research, fatty arid composition of serum and liver lipid components were influenced by the fatty acid composition of the test lipids from the fact that linoleic acid takes up the highest percentage.

The objective of this experiment was determined to investigate the effect of the planting ratio of Male Sterility (MS) to Restorer Line (RL) and harvesting time on fatty acid compositions under $F_1$ seed production of Brassica napus L. For rapeseed seed production, two experiments were conducted in the open fields. One experiment studied planting ratios of MS to RL (4:2, 10:2, or 10:1) were planted and investigated fatty acid composition at 40, 45, 50, 55, and 60 days after flowering, the other $F_2$ seeds were analyzed on fatty acid compositions of harvested seeds at five sequential stages. The results showed that fatty acid compositions of developing seeds were influenced by MS:RL planting ratios and $F_2$ hybrid treatments and contaminated level of fatty acid compositions, erucic acid, were unaffected by planting ratio of MS to RL. Fatty acid compositions such as palmitic acid (C16:0), stearic acid (C18:0) and linoleic acid (C18:2) contents decreased during seed maturation period in $1^{st}$ and $2^{nd}$ experiments. In contrast, oleic acid (C18:1) content relatively increased up to 55days after flowering. At day 60 after flowering, oleic acid content was unaffected by MS:RL planting ratios and $F_2$ seeds treatments. Aspects of related gene expression of fatty acid synthesis such as SAD, FAD1 and FAD2 were followed exactly to changes of fatty acid composition during seed maturation. These results suggest that MS ratio may be enlarged and RL may be reduced, indicating this ratio will be useful for rape seed production.
This study was carried out to investigate the effects of various dietary lipid sources on the growth performance, body composition, and fatty acid profiles of juvenile fancy carp (Cyprinus carpio var. koi). Three replicate groups of fish (initial mean body weight, 15.1±0.18 g) were fed one of five experimental diets containing fish oil (SLO), soybean oil (SO), linseed oil (LO), lard (LA), or a mixture of SLO, SO, and LO (Mix) for 8 weeks. Fish fed the LA diet gained less weight than did fish fed the LO diet. The feed efficiency and protein efficiency ratio of fish fed the LA and Mix diets were lower than those of fish fed the SO and LO diets. The body lipid content of fish fed the SO diet was lower than those of the other groups. Whole-body fatty acid compositions reflected the fatty acid compositions of dietary lipid sources. Fish fed the SO diet had high concentrations of linoleic acid and arachidonic acid, whereas fish fed the LO diet were rich in linolenic acid. Fish fed the SLO diet had significantly higher levels of eicosapentaenoic acid and docosahexaenoic acid compared with fish fed the SO, LO, and LA diets. The results of this study suggest that SO or LO could be used as a replacement for SLO in the diets of juvenile fancy carp without any negative effects on growth and feed utilization when the dietary essential fatty acid requirements are satisfied for juvenile fancy carp.
Platycodon root contains abundant pharmaceutical substances and is widely used as a food and a medicinal herb. To identify the major components of the three-year-old and the 24-year-old platycodon roots cultivated in a local farm were analyzed and compared with their chemical compositions prior to their pharmaceutical substances, which were used as the fundamental data. There were no differences in chemical composition, inorganic compositions and fatty acid compositions between the 24-year-old and three-year-old roots. Total amino acid contents were 375.8 mg% and 891.6 mg% in the 24-year-old and three-year-old platycodcon roots, respectively. Sixteen species of amino acid were identified by amino acid autolyzer except cysteine both in the 24-year-old and three-year-old roots. Linoleic acid, which was the highest fatty acid contained both in the 24-year-old and three-year-old roots, was estimated to be 48.7% and 39.1% of total fatty acids, respectively.

An attempt was made to investigate the chemical compositions of the three plant types such as runner type(Yeoju landrace), semi-Spanish type(Suweon 15ho) and Spanish type(Wasedairu) of peanut. The proximate compositions were lipid 44.25~46.48% and protein 22.54~25.42% in various plant types of peanut, respectively. And the contents of purified free and bond lipids were 43.71~45.44% and 1.74~3.12%, respectively. The predominant fatty acids were oleic, linoleic, palmitic and arachidic acid in the free lipid, and linoleic, oleic and palmitic acid in t도 bond lipid. Pattern of 16 amino acid compositions in three plant types of peanut was shown to be similarity. Major amino acid were glutamic acid(75.30~104.66mg/g), arginine(57.30~74.27mg/g), aspartic acid(41.44~63.05mg/g) and leucine(30.80~39.00mg/g). The richest mineral contained in three plant types of peanut was noticed to be K and followed by Mg, Ca and Na. The lead content was below the authorized tolerance limits.
