Analysis of Antioxidants in Fatty Foods Using Gas Chromatography/Mass Spectrometry (식품 중 Gas Chromatography/Mass Spectrometry를 이용한 산화방지제의 분석에 관한 연구)

  • The prevention of oxidative degradation in fats and oils is largely controlled by the use of synthetic phenolic antioxidants. Antioxidants, BHA: 2-&-3-tert-butyl-4-hydroxyanisol, BHT: 3,5-di-tert-butyl-4-hydroxytoluene, TBHQ: tert-butylhydroquinone, PG: propyl gallate, PTG: pentyl gallate, OG:octyl gallate, were extracted from fatty foods with hexane and from hexane layer to presaturated acetonitrile with hexane. The polar phenolic hydroxyl groups of antioxidants were silylated with MSTFA and injected to Gas Chromatography/Mass Spectrometry. The calibration plots were linear in the investigated range, 0.1~10.0 $\mu\textrm{g}$/g. The limit of detection for 6 phenolic antioxidants was 0.1 $\mu\textrm{g}$/g. Recoveries and reproducibilities from samples fortified at 1.0 $\mu\textrm{g}$/g were in the range of 70~90% and 0.5~13%, respectively. The simultaneous determination of phenolic antioxidants in fatty foods using GC/MS-SIM mode and macro program was described.

A Study on Dietary Attitude of Male Employees of Higher Education according to Obesity (고학력 남자 직장인의 비만도에 따른 식생활 태도 조사)

  • The study purpose was to investigate pattern of dining-out and effects of obesity on the dietary attitude of the 213 male employees with high educational background. The results are as follows : Subjects were 20's bachelor and unmarried mostly. Mean height weight BMI and fat(%) were 172.1cm 70.5kg 23.8 and 21.3% respectively. The most frequency for dining-out was 3∼4 times/week Younger unmarried subjects had more dining-out. The most common meal for dining-out was dinner there being no connection with age, education level marrige and income. The most favorite food style among the subjects was Korean-style. Obese subjects answered that the took more consideration into nutritional balance regularity and proper amount of diet. Also they showed more food-intake especially animal protein and fats. all subjects had scores in dietary attitude there being no connection with obesity. Despite of high education they showed poor dietary attitude. Thus it is necessary to develop the nutritional education program for proper nutritional status of employees.

  • In these days, there has been increased focus on global warming and the exhaustion of resources caused by the heavy consumption of fossil resources. In order to resolve these problems, biomass is increasingly gaining international attention as a source of renewable energy. Biodiesel fuel produced by the transesterification of vegetable oils and animal fats is expected to be one of the eco-friendly biomass based alternatives to petrodiesel. This article reviews some of the research for effective of biodiesel production.

  • Moringa oleifera Lam. or munga is one of the most important plant widely cultivated in India. It belongs to family Moringaceae. This plant is widely used as nutritional herb and contains valuable pharmacological action like anti-asthmatic, anti-diabetic, hepatoprotective, anti-inflammatory, anti-fertility, anti-cancer, anti-microbial, anti-oxidant, cardiovascular, anti-ulcer, CNS activity, anti-allergic, wound healing, analgesic, and antipyretic activity, Moringa oleifera Lam. The plant is also known as Horse - radish tree, Drumstick tree. Every part of this plant contains a valuable medicinal feature. It contain rich source of the vitamin A, vitamin C and milk protein. Different types of active phytoconstituents like alkaloids, protein, quinine, saponins, flavonoids, tannin, steroids, glycosides, fixed oil and fats are present. This plant is also found in the tropical regions. Some other constituents are niazinin A, niazinin B and niazimicin A, niaziminin B. The present review discusses the phytochemical composition, medicinal uses & pharmacological activity of this plant.

  • Attempts were made to investigate on the fatty acids of Agaricus bisporus, a cultivated edible mushroom. Fats were extracted from it and saponified with alcoholic potassium hydroxide. Isolated fatty acids were methylated and were subjected to column chromatography and G.L.C. Eleven saturated fatty acids, i.e., dodecanoic, tridecanoic, tetradecanoic, pentadecanoic, hexadecanoic, heptadecanoic, octadecanoic, eicosenoic, uncosenoic, docosenoic, and tricosenoic acids, were identified. Especially palmitic and stearic acids were abundant. Nine unsaturated fatty acids appear to exist in the carpophore.

  • Milk was concentrated by commercial tubular membranes, The permeation rate reduction of hydrophilic membranes (sulfonated poly sulfone (SPSf), polyacrylonitrile (PAN), cellulose acetate (CA)) was found not to be large but hydrophobic membranes to be pronounced considerably, In the case of UF concentration total solids, proteins, fats and minerals were increased as concentrated but carbohydrates decreased. NF showed the same behavior except carbohydrates showing small reduction rate.

Detection of Radiation-induced Hydrocarbons and 2-Alkylcyclobutanones from Peanuts

  • Radiation-induced hydrocarbons and 2-alkylcyclobutanones are formed from the fatty acids of irradiated fats. Peanuts were irradiated with a dose of 0.1∼10 kGy. The method consists of the extraction of fat from peanuts, separation of hydrocarbons and 2-alkylcyclobutanones with florisil column chromatography and identification of hydrocarbons by the GC/MS method and 2-alkylcyclobutanones by GC/MS/selected ion monitoring (SIM). Concentrations of hydrocarbons and 2-alkylcyclobutanones were linearly increased with the dose levels of radiation. The major hydrocarbons in the irradiated peanut samples were 8-heptadecene and 1,7-hexadecadiene from oleic acid and 6,9-heptadecadiene and 1,7,10-hexadecatriene from linoleic acid. 2-(5'-Tetradecenyl)cyclobutanone, one of 2-alkylcyclobutanones, was the highest amount in the irradiated peanuts. Radiation-induced hydrocarbons in the peanuts were detected at doses of 0.5 kGy and over, and radation-induced 2-alkylcyclobutanones were detected at doses of 1 kGy and over. These compounds were not confirmed in unirradiate peanuts.

  • The paper is to investigate the effect of spreading of various kinds of oils on resistance to chloride attack of the normal strength concrete. Resistance to chloride attack was measured for 32 weeks and six different kinds of oils ere used. Test results indicated that resistance to chloride attack was improved in order of DSP, BD, ERBD and ERCO compared with that of Plain mixture due to filling effect of capillary pore by the use of oil.

  • Previously, in trying to prepare perovskite type oxide powders by microwave heating, we found out a non-equilibrium argon plasma is generated around the powders and discharge continues stable at atmospheric pressure. In this study, we tried the plasma decomposition of heat-stable higher organic compound such as palmitic acid which is the principal constituent of the fimger fats. It was proved that suitable amount of coexistence of oxygen radicals into the argon flow accelerates the decomposition of palmitic acid. The argon-oxygen mixed gas plasma was able to perform a complete elimination of higher organic compound.

  • Atherosclerosis is a widespread and chronic progressive arterial disease that has been regarded as one of the major causes of death worldwide. It is caused by the deposition of cholesterol, fats, and other substances in the tunica intima which leads to narrowing of the blood vessels, loss of elasticity, and arterial wall thickening, thus causing difficulty in blood flow. Natural products have been used as one of the most important strategies for the treatment and prevention of cardiovascular diseases for a long time. In recent decades, as interests in natural products including medicinal herbs have increased, many studies regarding natural compounds that are effective against atherosclerosis have been conducted. The purpose of this review is to provide a brief overview of the natural compounds that have been used for the treatment and prevention of atherosclerosis, and their mechanisms of action based on recent research.
