The effects of high-fat diets composed of different animal and vegetable fat sources on the health status and tissue lipid profiles of male Japanese quail (Coturnix coturnix japonica)

  • Objective: The current study aimed to investigate the impact of high-fat diets composed of different animal and vegetable fat sources on serum metabolic health markers in Japanese quail, as well as the overall lipid content and fatty acid profiles of the edible bird tissues following significantly increased dietary lipid supplementation. Methods: Fifty seven male quail were divided into six groups and fed either a standard diet or a diet enriched with one of five different fats (22% coconut oil, lard, palm oil, soybean oil, or sunflower oil) for 12 weeks. The birds were subjected to an oral glucose tolerance test following the feeding period, after which they were euthanized and blood, liver, breast, and thigh muscle samples collected. Total fat content and fatty acid profiles of the tissue samples, as well as serum uric acid, triglyceride, cholesterol, total protein, albumin, aspartate transaminase, and total bilirubin concentrations were assessed. Results: High-fat diet feeding had no significant effects on the glucose tolerance of the birds. Dietary fatty acid profiles of the added fats were reflected in the lipid profiles of both the liver and breast and thigh muscle tissues, indicating successful transfer of dietary fatty acids to the edible bird tissues. The significantly increased level of lipid inclusion in the diets of the quail used in the present study was unsuccessful in increasing the overall lipid content of the edible bird tissues. Serum metabolic health markers in birds on the high-fat diets were not significantly different from those observed in birds on the standard diet. Conclusion: Thus, despite the various high-fat diets modifying the fatty acid profile of the birds' tissues, unlike in most mammals, the birds maintained a normal health status following consumption of the various high-fat diets.

Bypass Fat Production Using Acid Oil, Its Effect on In Vitro Rumen Fermentation and Effect of Its Feeding on In Sacco DM Disappearance in Sheep

  • Attempts were made in the laboratory to produce bypass fat using acid oil by precipitation and fusion methods. The degree of saponification by both of these methods was above 80 percent. Where heating facilities are not available, precipitation method could be used, otherwise, fusion method of bypass fat production is found to be more convenient, especially for commercial scale operations as handling of large volume of solutions is eliminated. Bypass fat thus produced was tested in vitro for rumen fermentation. Incorporation of acid oil in the incubation medium reduced TVFA conc. from 127.06 to 124.09 mM/l SRL and increased ammonia-N levels from 210.50 to 223 mg/l SRL indicating that the microbial activity was affected on incorporation of acid oil in the incubation medium. However, incorporation of bypass fat in the incubation medium did not significantly affect TVFA conc. as well as ammonia-N levels. In another experiment, nine rumen fistulated sheep in three groups of three each were fed bypass fat at two different levels. Dry matter disappearance in 24 h from the nylon bags suspended in the rumen of animals under different groups was found to be $47.74{\pm}1.10$, $47.55{\pm}0.21$ and $50.74{\pm}1.11$ in group I (control), group II (fed bypass fat 50 g/day) and group III (fed bypass fat 100 g/day), respectively. These studies indicated that it is possible to produce bypass fat from acid oils, a by-product of oil refining process, and its feeding did not affect rumen fermentation.

  • 본 연구에서는 C2C12 근육 세포의 분화 과정에 있어 IGF-I이 지방산의 수송을 담당하는 지방산 수송체인 FAT/CD36의 mRNA 및 단백질 발현에 미치는 영향에 대해 알아보았다. 그 결과 근육세포의 분화 과정에 있어 FAT/CD36의 단백질과 mRNA 발현이 분화 시간 의존적으로 유의하게 증가하였으며, IGF-I의 처리에 의해서도 유의하게 조절되었음을 알 수 있었다. 이는 IGF-I이 골격근 세포의 성장 및 분화를 촉진하여 근육 관련 유전자들의 발현을 조절하는 기능뿐만 아니라, 골격근의 주요 에너지원으로 사용되는 지방산의 수송을 담당하는 FAT/CD36의 발현에도 영향을 미친다는 것으로 해석할 수 있겠다. 향후 IGF-I이 골격근 세포에서 FAT/CD36의 발현에 영향을 미침으로써 골격근의 지방산 흡수와 산화율을 조절하는지, 그에 따라 지방대사에 어떠한 영향을 미치는지에 대한 연구가 필요할 것이며, 이와 관련된 신호전달 체계 및 기전에 대한 연구도 진행 되어야 할 것이다.

Evaluation of physicochemical and biological properties of python fat (Python bivittatus)

  • The main aim of this study was to determine python fat's several physicochemical properties, including dimensions, color, structure, acid value (AV), saponification value (SV), density, and recovery efficiency. The optimum yield obtained was approximately 80.40% at 180℃ for 60 min with an AV of 0.3366 and SV of 179.56 mg KOH/g. Fatty acids, comprising oleic acid (72.462%), palmitic acid (26.243%), linolenic acid (0.835%), and myristic acid (0.459%), were identified using gas chromatography-mass spectrometry (GC-MS). The python fat had a very weak antioxidant capacity and almost no antibacterial ability with gram-positive (Staphylococcus aureus - ATCC 25923 and Bacillus cereus - ATCC 10876) and gram-negative (Escherichia coli - ATCC 25922 and Salmonella enterica - ATCC 35664) bacteria (used the paper disc diffusion method for antibiotic susceptibility testing). Moreover, python fat is considered to be very resistant to high temperatures.

Milk Yield and Its Fat Content as Affected by Dietary Factors: A-Rewiew

  • Milk yield and its composition is governed by level of nutrition and the composition of diet. Higher concentrate input improves milk yield, whereas its input at moderate levels improves yield of milk fat. High level of dietary protein improves dry matter intake and milk production, however, CP content above 14% has less advantage. Milk yield is enhanced by the feeding of cottonseed and soyabean meal, whereas milk fat increases by the supplementation of cottonseed. Dietary fat increases energy intake, production of milk and milk fat. Quality and quantity of feeds consumed affect fermentation patterns in rumen. Among the rumen metabolites, volatile fatty acids (VFA) content and propionate proportion have been related positively with milk yield, whereas proportion of acetate and butyrate have been related positively with milk fat content. Dietary carbohydrates through the source of sugar, starch, roughage and fibre affect VFA concentration in rumen. Therefore, concentration of volatile fatty acids could be altered to the advantage of consumer through judicious manipulation of diet.

액상 요구르트 제조시 발효지연과 Na-Caseinate 분해물의 첨가에 의한 개선 (Retarded Fermentation in Making Liquid-Yoghurts and Improvement by Addition of Na-Caseinate hydrolysates)

  • This study was carried out to clear up the cause of low-acid producing phenomenon occurred In non-fat dry milk during liquid-yoghurt fermentation by Lactobacillus case, and to present its improving methods. All samples of non-fat dry milks which were low in TCA-soluble peptides showed low-acid production, but those high in TCA-soluble peptides showed high-acid production. The addition of trypsin-hydrolysate of Na-caseinate to non-fat dry milk showed some improving effect on acid production but that of papain-hydrolysate did not show any improving effect and that of bacterical neutral protease-hydrolysate showed some inhibitory effect. The improving effects on growth and acid production of lactic acid bacteria were more prominent when the trypsin-hydrolysate of Na-caseinate was added. to such fermenting system in which the levels of TCA-soluble peptides and the proteolytic ability of starter bacteria were abnormally low. The liquid-yoghurt made with non-hydrolysed Na-caseinate and defective non-fat dry milk showed precipitate occurrence but that with trypsin-hydrolysate of Na-caseinate and defective non-fat dry milk did not make any precipitate during storage as with normal non-fat dry milk.

닭튀김유의 품질 특성에 대한 Oil-water fryer의 효과 (Effect of an Oil-Water Fryer on Quality Properties of Deep Frying Oil Used for Chicken)

  • This study was investigated the effect of an oil-water fryer on quality properties of deep frying oil used for chicken. The acid and conjugated dienoic acid values of frying oil using an oil-water fryer were lower than those using a deep fat fryer, whereas the iodine value of frying oil using an oil-water fryer was higher than that using a deep fat fryer. The peroxide values of frying oil did not increase with frying number. Frying oil with an oil-water fryer had lower palmitic acid, stearic acid and oleic acid, and higher linoleic and linolenic acid contents than those with a deep fat fryer. The contents of trans-fatty acids in frying oil using a deep fat fryer and oil-water fryer after frying 110 chickens were 0.75% and 0.47%, respectively. The benzopyrene contents of frying oil using a deep fat fryer and an oil-water fryer after frying 110 chickens were 2.20 and $1.61{\mu}g/kg$, respectively.

Detection for Non-Milk Fat in Dairy Product by Gas Chromatography

  • The aim of this study was to evaluate the potential use of fatty acids, triacylglycerols, and cholesterol in the detection of adulterated milk fat. The fatty acid, triacylglycerol, and cholesterol profiles of the mixtures of milk and non-milk fat (adulteration ratios of 10%, 30%, 50%, 70%, and 90%) were analyzed by gas chromatography. The results showed that concentrations of the fatty acids with oleic acid (C18:1n9c) and linoleic acid (C18:2n6c), triglycerides with C52 and C54, and cholesterol detected are proportional to the adulteration ratios remarkably. Oleic acid (C18:1n9c), linoleic acid (C18:2n6c), C52, and C54 were lower in pure milk fat than in adulterated mixtures. In contrast, pure milk has a higher cholesterol concentration than all adulterated mixtures (adulteration concentration in the range 10-90%). Thus, we suggest that oleic acid (C18:1n9c), linoleic acid (C18:2n6c), C52, C54, and cholesterol are suitable indicators and can be used as biomarkers to rapidly detect adulterated milk fat by gas chromatography. This study is expected to provide basic data for adulteration and material usage. Moreover, this new approach can detect the presence of foreign oils and fats in the milk fat of cheese and can find application in related studies.

국내 시장에서 유통되는 국내·외 초콜릿의 지방산 조성 및 triacylglycerol 조성 분석 (Fatty acid composition and triacylglycerol species of the domestic and foreign chocolates collected from the market)

  • The fat content, fatty acid composition, trans fatty acid content and triacylglycerol (TAG) composition of 22 chocolates (domestics 8, foreigns 14) collected from the Korea distribution markets were investigated. The crude fat was extracted by acid hydrolysis method and analyzed by gas chromatography (GC) and reversed-phase HPLC for fatty acid and TAG compositions, respectively. The crude fat content of all chocolates varied between 30.11% and 49.59%. The major fatty acids in most of the chocolates were palmitic acid (19.36~31.15 wt%), stearic acid (5.11~36.32 wt%) and oleic acid (18.77~36.68 wt%). Whereas lauric acid (approximately 35.43 wt%) was detected in chocolate fat of sample No. 18. High oleic acid content was observed for the sn-2 position fatty acid with a range from 64.91% to 86.93%. Trans fatty acid contents in domestic chocolates (sample No. 1~8) and foreign chocolates (sample No. 9~22) were 0.03~0.59 wt% (0.01~0.19 g/100g chocolate) and 0.05~6.32 wt% (0.02~1.99 g/100g chocolate), respectively. In TAG composition, TAGs such as POP/PPO(1,3(2)-palmitoyl-2(3)-oleoyl glycerol, PN=48), POS/PSO(palmitoyl-oleoyl-stearoyl glycerol or palmitoyl-stearoyl-oleoyl glycerol, PN=50), SOS/SSO(1,3(2)-stearoyl-2(3)-oleoyl glycerol, PN=50) were mainly detected in most of the chocolates. The peaks of TAG with low PN (ex, 32-34, 36-38, and 40-42) were detected in No. 18 chocolate fat because of containing short chain fatty acid such as lauric acid.

식물성유 유화물로 대체한 저지방 돈육 패티의 품질 특성 (Quality Characteristics of Low-Fat Plant Oil Emulsion Pork Patties)

  • 본 연구는 동물성 지방 대체제로서 식물성유 유화물인 올리브유(OPP), 대두유(SPP) 및 카놀라유(CPP) 유화물을 첨가한 돈육 패티의 품질 특성을 조사하였다. OPP, SPP 및 CPP의 수분 함량이 CON보다 높고, 지방 함량은 낮았다. OPP, SPP 및 CPP는 CON보다 보수력, 수율, 수분 보유율, 지방 보유율이 높았으며, 직경 감소율과 수축율은 낮았다. 가열 전후의 돈육 패티의 백색도와 적색도는 CON이 OPP, SPP 및 CPP보다 높고, 가열 전 돈육 패티의 황색도는 OPP가 가장 높았다. 돈육 패티의 포화지방산은 palmitic acid가 가장 많이 함유되어 있었다. 불포화지방산은 CON (42.84%), OPP (65.41%), CPP (48.63%)의 경우 oleic acid가 가장 많았으며, SPP는 linoleic acid (41.17%)가 가장 많이 함유되어 있었다. 돈육 패티의 불포화지방산 함량은 식물성유 유화물의 대체로 증가하였다. 경도, 응집성 및 저작성은 시료들 사이에 차이가 없었으며, 탄력성은 CON보다 OPP, SPP 및 CPP가 높았다. 맛, 풍미, 전체적인 기호도는 OPP 및 CPP가 CON 및 SPP보다 높게 나타났다. 따라서 식물성유를 겔화시켜 동물성 지방을 대체하면 이화학적·관능적 특성이 향상되고 지방산 조성이 개선되어 소비자들이 요구하는 건강에 유익한 저지방 육제품의 제조가 가능하다.
