The aim of the present study was to determine the influence of age of animal, hot carcass weight, pH, conformation and fat class on basic beef quality attributes (tenderness, sarcomere length, basic chemical composition, marbling and colour) in a group of purebred animals. The object of the study was beef of Limousin bulls (25 to 27 months, hot carcass weight - $432{\pm}31$ kg, "U" conformation class, "2"-"3" fat class). Analysed cuts were Infraspinatus muscle from the blade and Longissimus dorsi muscle from the cube roll and the striploin. Tenderness was analysed with universal testing machine, colour - chromometer analysis, sarcomere length - microscopic method, basic chemical composition - near-infrared spectroscopy and marbling - computer image analysis. No differences in tenderness and sarcomere length were observed within the age groups of Limousin bulls (age of 25, 26, 27 months) (p>0.05). Moisture (p = 0.0123) and fat (p = 0.0250) content were significantly different for meat of animals slaughtered at the age of 25 and 27 months. No influence of pH value on tenderness was observed, but at the same time, influence on sarcomere length (p = 0.039) and $b^*$ component of colour (0.045) was found. For "U" conformation class, in subclasses, as well as for fat classes "2"-"3", there were no differences in tenderness, sarcomere length and colour components. Higher fat content was observed in the higher fat class, rather than in lower, however this feature was not associated with marbling.
Total body fat measurement by means of skinfold thickness was performed in 295 middle school girls in Suwon, Korea. Skinfold thicknesses on 4 sites, namely, arm, back, abdomen, and waist were obtained and fat was calculated using mean skinfold thickness (MSF) and the following formulas. % Fat=0.747$\times$MSF (mm)+l6.21 Fat (kg) =0.619$\times$MSF (mm) +3.31. The following results were obtained. 1. In 85 (age. 13 yr) of the first year class girls skinfold thickness was: arm 6.9mm; back 8.2; abdomen 8.3; waist 10.7mm, mean thickness was 8.5mm. Fat was 22.6$\pm$1.56% body weight or 8.20±2.68kg. Lean body weight was 31.93$\pm$3.16kg. 2. In 107 (age : 14.2 yr) of the second year class girls skinfold thickness was : arm 7.6mm; back 9.7; abdomen 9.7; waist 12.4mm; and mean thickness was 9.8mm. Fat was 23.0$\pm$5.09% body weight or 9.36$\pm$1.87kg. Lean body weight was 34.29$\pm$1.76 kg. 3. In 103 (age : 15.1 yr) of the third year class girls skinfold thickness was : arm 7.6mm; back 10.3; abdomen 9.4; waist 11.9mm; and mean thickness was 9.8mm. Fat was 23.2$\pm$4.35% body weight or 9.36$\pm$1.18 kg. Lean body weight was 37.10$\pm$5.08 kg. 4. The ratio of mean skinfold thickness (mm) to body weight (kg) was 0.213 in 13 year old girls, 0.225 in 14 year, and 0.213 in 15 year old girls.

This study analyzed annual catch trend during 45 years and monthly catch of the least 10 years (2005~2014) for chub mackerel caught in the Korean coastal waters. To determine fishing status of chub mackerel, fork length measurements were conducted at least twice every week for 100 individuals randomly selected at the Busan Cooperative Fish Market from January of 2012 to December of 2014; and biological characteristics and proximate composition (moisture, protein, fat, ash) were analyzed by length class (I~IV) on a monthly basis from January to December of 2014. Monthly catch trend showed low level below 5,000 mt from February to July, whereas high level above 15,000 mt from October to December. For the period between 2012 and 2014, annual average catch proportion of juvenile were relatively high at 68.1%, 53.1% and 53.2% from January to April, before spawning season, while those were low at 21.5%, 20.7% and 29.12% from June to November. As for the change in the proximate composition per 100 g of muscle, protein and ash did not change much by seasons and length class, whereas fat and moisture contents showed large fluctuations and complementary relationship between the two factors. Regardless of length class, monthly average fat content, containing Omega-3, showed the lowest at 7.18 g in April and highest at 19.27 g in December, which exhibited 2.6 times difference from one another. Regardless of fishing seasons, fat content by length class were 19.06 g for the class I and 6.43 g for the class IV, which showed three times difference. Fat contents of the class I were high at 26.97 g and 27.19 g in November and December, while low at 8.37 g and 9.99 g in April and May. Especially, fat contents from January to May were 5.0 g, which was the lowest. Therefore, it is expected that consumer could indirectly contribute fisheries management through their understanding and wise consumption based on fishing status and fluctuation of proximate composition.
According to economical status, under-nutrition and over-nutrition coexist in preschool children in Korea. Subjects consumed more than RDA in most nutrients, and children in of the upper income class tended to have more nutrients than those of the low income class. Especially in case of energy, protein, fat, vitamin $B_2$, and P there were significant differences among the different classes. The mean calorie compositions of carbohydrates, protein and fat were $57{\sim}59:\;16{\sim}17:\;26{\sim}27$ and fat calorie percentage was higher than quantity recommended for Korean adults. Energy, protein, Fe, vitamin A, $B_1$ and C intakes were taken mostly from plant food sources. In the upper income class group, intakes of protein and vitamin $B_2$ from animal food sources were higher than in any other income classes. Intakes of iron, vitamin A, $B_1$ and C were largely provided by plant food group. Especially 44-45% of vitamin A were taken from vegetable and fruits group, which indicated that about 50% of vitamin A intake was the form of ${\beta}-carotene$. Also compared with other groups, in the upper income class group, the intakes of energy, protein, Ca, p, vitamin $B_1$ and vitamin $B_2$ from cereal and potatoes were significantly lower, and those of Ca and P from milks and meats, fishes & eggs were significantly higher(p<0.05). The mean fat intake in all subjects was $38{\sim}43g/day$. Regardless of income class, oleic acid($6.6{\sim}8.4g$) and linoleic acid($6.7{\sim}8.1g$) were the most abundant fatty acids contained in the diet. The upper class group consumed significantly more total saturated fatty acids and total monounsaturated fatty acids(p<0.05). In polyunsaturated fatty acids, there were no differences between 3 different income classes, but intakes of total ${\omega}6$ fatty acids in the upper class tended to be higher and those of total o3 fatty acids in low class tended to be higher. Therefore, ${\omega}6/{\omega}3$ tended to be higher in the upper class group. Regardless of income classes, P/M/S and ${\omega}6/{\omega}3$ ratios in all subjects were $0.9{\sim}l.3/1.0{\sim}1.1/1.0$ and $5.2{\sim}7.4/1.0$, respectively and were in a desirable range. Cholesterol intake of subject was 184-218 mg/day, which was comparable to the value of Korean adult intake.
Purpose: The primary goal of palatoplasty is to enable normal speech with harmonious growth of face. Some children who had palatoplasty display typical findings of transverse maxillary deficiency requiring orthodontic widening of the maxilla. Levi (2009) described a cleft palate repair coupled with pedicled buccal fat pad flaps to cover bone exposed areas of the hard palate. Hence we report clinical experiences of cleft palate repair using pedicled buccal fat pad flap. Methods: Four Veau class II and a Veau class I cleft palate patients underwent palatoplasty with buccal fat pad flap by single surgeon from April 2009 to August 2009. Two patients received 2-flap palatoplasty and three patients 1-flap palatoplasty, respectively. After the cleft palate repair, sharp mosquito scissors was placed in the superior buccal sulcus just lateral to the maxillary tuberosity and inserted directly through the mucosa resulting in buccal fat pad extrusion. The elevated flap was moved to cover mucoperiosteal defect in hard palatal area. Results: Five patients underwent primary palatoplasty using buccal fat pad flap. Flap harvest and inset took on average 9 minutes per flap. Mucosal epithelization took 18 days on average. No patients had complications related to the buccal fat pad flap. Conclusion: Buccal fat pad pedicled flap has significant potential to function as an added vascularized tissue layer in cleft palate repair and we can expect better growth of maxilla with this method although longer duration of follow-up was unavailable.
This study deals with the characterization of porcine PIK3C3 and association tests with quantitative traits. PIK3C3 belongs to the class 3 PI3Ks that participate in the regulation of hepatic glucose output, glycogen synthase, and antilipolysis in typical insulin target cells such as those in the such as liver, muscle system, and fat. On the analysis of full-length mRNA sequence, the length of the PIK3C3 CDS was recorded as 2,664 bps. As well, nucleotide and amino acid identities between human and pig subjects were 92% and 99%, respectively. Five SNPs were detected over 5 exons. We performed genotyping by using a SNP C2604T on exon24 for 145 F$_2$ animals (from a cross between Korean native boars and Landrace sows) by PCR-RFLP analysis with Hpy8I used to investigate the relationship between growth and fat depot traits. In the total association analysis, which doesn' consider transmission disequilibrium, the SNP showed a significant effect (p<0.05) on body weight and carcass fat at 30 weeks of age as well as a highly significant effect (p<0.01) on back fat. In an additional sib-pair analysis, C allele still showed positive and significant effects (p<0.05) on back fat thickness and carcass fat. Moreover, the effects of C allele on the means of within-family components for carcass fat and back fat were estimated as 2.76 kg and 5.07 mm, respectively. As a result, the SNP of porcine PIK3C3 discovered in this study could be utilized as a possible genetic marker for the selection of pigs that possess low levels of back fat and carcass fat at the slaughter weight.

The objective of this study was to develop the classification method of various organic wastes. Specifically, the effects of proximate composition on the biogas production and degradation rates of agricultural by-production was investigated and a new standards for mixture of various organic wastes based on proximate composition combination was developed. Agricultural by-products (ABPs) with medium total carbohydrate, medium crude protein and low fat contents demonstrated the single step digestion process. ABPs with low total carbohydrate, high crude protein and high fat contents demonstrated the two step digestion process of Diauxic growth. The single ABP (Class No. 15) and the mixed ABPs (Class No. 12+18, 6+12+22, 9+12+18) after 10days showed the similar biogas yield pattern. We can use the classification method for the more ABPs and organic wastes from factory and municipal waste treatment plant for the high efficient biogas production.
Objectives: Obesity is chronic condition which can severely influence health. People with a high percentage of body fat (%BF) have high prevalence of hypertension and hypercholesterolemia. Abdominal obesity (AO) seems to play a major role in the development of cardiovascular disease, diabetes and hyperlipidemia. This study investigated the %BF and AO of workers in the automobile manufacturing industry. Methods: The subjects were categorized by sex, age, job class, drinking history and smoking history. %BF and AO were measured by using bioelectrical impedance analysis (Jawon Medical, Seoul, Korea). We analyzed the relationship between age, sex, job class, drinking history, smoking history and %BF and WHR into frequencies, $X^2$-test using the SPSS Ver. 12.0. Results: Regarding the relationship between sex and %BF, AO, there was statistically significant difference as men had a significant higher level of %BF and AO than women. There was a positive correlation between age and both %BF and AO. Workers in their 40s especially ran level of AO up. In job class, office workers were apt to have a higherlevel of %BF and AO than production line workers. %BF and AO of the non-drinker group showed a lower level than the drinker group. On the other hand, the ex-smoker group had higher levels of %BF and AO than the non-smoker or current-smoker groups. Conclusions: The above results showed that men, the advanced in years, office workers, drinkers and ex-smokers had high levels of %BF and AO.
Objectives: This study was designed to analyze the results of body composition test by Oriental medical examination. The subjects were workers in the automobile manufacturing industry. Methods: The subjects consisted of 24,077 industrial workers who had received Oriental medical examination and completed questionnaires about drinking history and smoking history, during 9 months from March to November. They were categorized by sex, age, job class, drinking history and smoking history. The percentage of body fat(%BF) and abdominal obesity(AO) were measured by using bioelectrical impedance analysis (Jawon Medical, Seoul, Korea). We analyzed the relationship between sex, age, job class, drinking history, smoking history and %BF and AO using x$^2$-test of the SPSS Ver. 14.0. Results: Regarding the relationship between sex and %BF, AO, there was statistically significant difference as men had a significant higher level of %BF and AO than women. There was a positive correlation between age and both %BF and AO. Workers in their 40s especially showed a high level of AO. In job class, office workers and sales personnel were apt to have a higher level of %BF and AO than factory workers. %BF and AO of the drinker group showed a higher level than the non-drinker group. On the other hand, %BF and AO of the non-smoker group were higher than those of the smoker group. Conclusions: Companies should manage obesity closely and educate the workers to quit smoking for their health promotion. Furthermore, continuous health checkups need to be done systematically.
PIGK(phosphatidylinositol glycan, class K) is a subunit of GPI transamidase that cleaves the signal peptide in proproteins and replaces it with GPI. In addition, the structure and synthesis of GPI are critically involved in some of the cellular actions of insulin. Therefore, PIGK would be essential for mammalian development and many specific cellular functions as well as for metabolic activity of insulin associated with GPI. Two types of" full-length cDNAs of porcine PIGK were cloned through RT-PCR and RACE experiments. One is thought to be a normal form(consist of 395 amino acids) and the other is considered as an alternative spliced form(consist of 371 amino acids) which contains additional 63 bps in intron 7. Since a stop codon was contained within the insertion, the spliced form has a shorter coding sequence than that of normal form. A missense mutation (T314I) in exon 6 was detected and used for genotyping to estimate association with the growth and fat deposition traits for 545 $F_2$ animals(Korean native boars ${\times}$ Landrace). From the PCR-RFLP analysis using HpyCH4III, CT genotype showed highly significant relationship(P< 0.01) with carcass fat contents.
