Effect of Processing Method on Change of Water Soluble Dietary Fiber of Fagopyrum tataricum

  • Seed, stem and sprout of F. tataricum were separately milled using the ultra fine mill under the same condition to investigate the effect of roasting or extruding on the particle size, microstructure and water solubility of dietary fiber. The mean particle size of MR (roasting) is increased in stem and sprout, and that of ME (extruding) is increased in seed, compared to that of control. The microscopic views of seed show that control has the spherical shape but ME the larger and irregular shape, and those of stem and sprout show that control has the needle like shape but ME more rounded shape. Water solubility index of ME is much higher than that of control or MR in seed, stem and sprout. It shows that seed, stem and sprout are damaged more in extruding than in roasting, and the starch and cell wall structure must be destroyed to change the water insoluble dietary fiber into the water soluble dietary fiber.

Characteristics of F$_2$Hybrids from Crosses between Korean Cultivars and Canadian Cultivars in Buckwheat(Fagopyrum esculentum Moench.)

  • Korean cultivars of buckwheat(Fagopyrum esculentum Moench.) was crossed with Canadian cultivars in order to improve seed yield as well as leaf production of buckwheat for using as food and medicine. The agronomic characteristics and rutin contents of F$_2$ hybrids are investigated for further selection of superior lines. Dry weight per plant was the highest in a line 1110(6.71g) and leaf weight per plant was the highest in a line 1110(1.91g). Hybrid seeds were 0.55 - 0.70cm long and 0.37 - 0.47cm wide on average. 100 seeds weight ranged from 2.57g to 3.58g. Line 1076 produced the longest seeds(0.70cm) and line 1186 was the longest in seed width. Line 1196 showed the highest 100 seeds weight(3.58g). The highest frequency of the LWR(length/width rate) was 0.66~0.70, indicating that seed shape of the hybrids was mostly oval. Line 1087 showed the highest contents of rutin(77.26ppm). Lines 1090 and 1181 contained respectively rutin of 54.76ppm and 54.35ppm in the seeds. From the yield and rutin point of view, the most superior lines was line 1087 among the lines used for this study.

  • This experiments were carried out to develop for food in some plants seeding. Plant materials were Raphanus sativus, Perilla frutescens var. acuta, Perilla frutescens var. japonica, Scutellaria baicalensis, Angelica dahurica, Angelica gigas, Ligusticum acutilobum, Peucedanum japonicum, Platycodon grandiflorum, Codonopsis lanceolata, Allium monanthum and Fagopyrum esculentum. The results obtained are summarized as follows ; germination rate was the highest in Raphanus sativus and germination vigor was excellent in Perilla frutescens var. acuta Total overall acceptability was the best in Perilla frutescens var. acuta
