Increasing conjugated linoleic acid (CLA) content in dairy products has been a research Interest due to the potential health benefits resulted from consuming CLA. Attempts were made to obtain high level natural CLA containing fatty acid fractions from milk fat through bovine feeding of sunflower oil (SO) and urea fractionation. SO feeding changed the fatty acid profile of milk fat. increasing the CLA content five-fold at eight weeks of trial. Milk fat obtained from S0-fed cows was hydrolyzed to free fatty acids, which were then fractionated with urea at various ratios. The profiles of fatty acids were also greatly influenced by urea fractionation. Long-chain unsaturated fatty acids, Including CLA, were concentrated in milk fat after the fractionation, whereas saturated long-chain counterparts were eliminated. The highest level of CLA was achieved by the fractionation at 2:1 urea/fatty acid ratio (UFR2). CLA level was elevated 2.5-fold, and the Cl8:1/C18:0 fatty acid ratio was increased 120 times after the fractionation. The level of CLA in high CLA-milk fat (24mg/g fat) obtained from the feeding study was further increased through urea fractionation up to 52mg/g fat, 10 folds as high as CLA in the control milk fat (5mg/g fat).
In this study, we investigated the effects of silybin on body weight and glucose tolerance in mice fed high fat diet mice. We found that body weight, plasma TG contents, fat size, glycerol, 3-hydroxybutyrate and total cholesterol were significantly decreased in silybin (500 mg/kg) supplemented groups compared to high fat diet group. Whereas, total food intake was not changed between high fat diet group and high fat diet plus silybin group. Futhermore, supplement of high fat elevated the glucose intolerance and was improved in silybin supplement group. Finally, we examined the effect of silybin on circulating adipocytokine level to explore the possible mechanism by which silybin improves high fat diet-induced obesity and diabetes. The silybin supplement significantly reduced the level of adipocytokine, such as leptin, resistin, IL-6, and MCP-1 induced by high fat diet. These results suggest that silybin can be used to improve obesity and diabetes.
Twelve docked and 12 intact Najdi lambs of equal numbers of males and females were slaughtered at 40 kg shorn shrunk body weight, Lipid in all empty body fat components; namely, subcutaneous, intermuscular, intramuscular, omental, mesenteric, channel, perirenal, pericardial, tail, viscera, bone and hide, were determined. Except for ram lambs, which had a lower percentage of lipid in intermuscular partition in loin cut, sex did not influence the relative proportion of subcutaneous or intermuscular fat in each wholesale cut. The data also showed that docking did not change the distribution of lipid in intermuscular and intramuscular fat partitions in each wholesale cut. Docked lambs tended to accumulate lower proportions of the lipid in subcutaneous fat component in the cuts located along the dorsal line than intact lambs. The total amount of lipid deposited in the empty body of ewe lamb was heavier in weight than that of ram lamb. Docking had no effect on the distribution of total lipid in the empty body, except for subcutaneous fat component, being greater in docked lambs than did intact ones. Generally, the highest proportion of fat was associated with subcutaneous depot followed, in order, by intermuscular, mesenteric, tail, intramuscular and omental fat partitions.

To investigate effects of ethanol and dietary fat on growth and bichemical indices of liver tissue and blood in rats 40 male rats of Sprague-Dawley wtrain weighing about 160g were divided into 5 groups (low-fat diet group ethanol-administered low-fat diet group high-fat diet group ethanol-administered high-fat diet group and commercial diet group) and fed expe-rimental diets for 8 weeks. Ethanol-administered groups consumed ethanol corresponding to 22 cal% which was considered as moderate drinking. Neither the ethanol intake nor the dietary fat level affected calorie intake. Nonetheless the low-fat diet group with ethanol had the lowest growth rate and 2-fold increase in the concentration of plasma triglyceride. There was no effect of ethanol and dietary fat level on contents of protein lipid and lipid composition of liver tissue. The level of lipid peroxide of liver tissue tended to be increased by ethanol intake but the increase was statistically insignificatnt. The low-fat ethanol group had lowered hepatic mitochondrial respiration rate and deformed structure of mitochondria of hepatocytes.
The effects of indigestible dextrin on lipids in serum, tissue, and feces were investigated in two experiments carried out with 64 male Sprague-Dawley rats for eight weeks. Experiment I diet(normal fat diet) containing 5% corn oil and experiment II diet(high fat diet) containing 18% fat(13% beef tallow and 5% corn oil) and 1% cholesterol were divided into four groups with 0.5% cellulose(0.5CL : control), 10% cellulose(10CL), 10% Indigestible dextrin I(ID-I) and 10% indigestible dextrin II(ID-II), respectively. ID-I and ID-II diets produced a decrease in serum total lipid and cholesterol concentrations in both normal and high fat diets but more significantly in the groups fed high fat diet. ID-I, ID-II, and 10CL of high fat diet decreased serum glucose concentration. ID-I and ID-II diets also decreased liver cholesterol and triglyceride concentrations in rats fed normal and high fit diets. The fecal excretion of cholesterol in ID-II/high fat diet was significantly higher than that of 0.5CL diet. Bile acid excretion was increased in the rats fed 10CL and ID-II diets of normal and high fat diets. These observations indicat the hypolipidemic and hypocholesterolemic effects of indigestible dextrin on the rats. Purpose: Autologous fat graft is a widely accepted technique used for soft tissue augmentation. Nonetheless, the use of fat graft is limited by unpredictable survival rates and repeated grafting. To avoid repeated grafting, cryopreserved fat graft technique has recently been widely used. On the other hand, the number of patients with chronic infection(who received cryopreserved fat injection) has currently been increasing. Therefore, this study was focused on the safety of cryopreserved fat injection from the infection. Methods: We collected 150 samples from local aesthetic clinics to examine the safety of cryopreserved autologous fat. To test for microbacterial contaminations of the cryopreserved fat specimens, microbacterial cultures & antibiotics sensitivity tests were performed. Then, we examined possible correlation between the preservation period and donor sites, focused on the results of microbacterial culture. Results: Cultures were positive for Staphylococcus epidermidis in 5 samples(methicillin - resistant Staphylococcus epidermidis in 4 samples), Micrococcus species in 3 samples. An average duration of preservation was 191 days and there was no significant correlation between the duration of preservation and microbacterial growth. Conclusion: Staphylococcus epidermidis was the leading cause of cryopreserved fat contamination, and the resistance to methicillin is common. Based on the above results, aseptic handling of fat during harvesting and preservation appeared to be most important.
This study was performed to develop low-fat/reduced-salt sausages (LFRSS; <3% fat and <1.5% salt) containing milk protein (whey protein concentrate, WPC, or sodium caseinate, SC) that showed the similar cooking yield and textural characteristics to those of regular-fat/salt sausage control (RFC; 20% fat and 1.5% salt) or low-fat sausage control (LFC; <3% fat and 1.5% salt). Low-fat sausages (LFS) were formulated with a 2.5% fat replacer (konjac flour:carrageenan:soy protein isolate=1:1:3) and various salt levels (0.75, 1.0, 1.25, and 1.5%). LFS had differences in color and expressible moisture (EM, %) values as compared to those of RFC. A minimum salt level of 1% and addition of nonmeat proteins were required to manufacture LFRSS that have similar characteristics to those of RFC. However, LFS with 2% milk proteins reduced the hardness and gumminess as compared to LFC. These results indicated that 1% milk protein in combined with 1% salt was a proper level for manufacturing of LFRSS.
The relationship between chemical compositions, meat quality traits, and palatability attributes in 10 primal cuts from Hanwoo steer carcasses were assessed. Sensory palatability attributes of Hanwoo beef were more closely related with fat content than to moisture or protein content. Among the chemical compositions, only fat had a significant correlation with juiciness (0.67, p<0.001), tenderness (0.32, p<0.05), and overall palatability (0.56, p<0.001). Oleic acid (%) was not significantly related with overall palatability (p>0.05). Overall palatability was negatively correlated with drip loss (−0.32, p<0.05), cooking loss (−0.36, p<0.05), and shear force (−0.54, p<0.01). The correlation between fat content and overall palatability was increased when higher fat cuts (Ansim, Dungsim, Chaekeut, Yangjee, and Kalbi) were analyzed, compared to lower fat cuts (Moksim, Abdari, Udun, Suldo, and Satae). Also, the correlation between shear force and overall palatability was decreased in lower fat cuts compared to higher fat cuts. Our results suggest that the palatability of Hanwoo beef can be improved by increasing fat content in muscles, as increased fat content leads to an increase in sensory tenderness, flavor, and juiciness.
Objectives : This study was performed to find out the relationships between abdominal fat and eating attitude in obese climacteric women. Methods : 42 obese climacteric women were recruited in August 2007. Anthropometry has been done and abdominal fat distribution had been assessed by CT scan at the level of L4-5 and eating attitude was measured using Korean Eating Attitude Test-26. Results : There were significant correlations between body mass index, percent of body fat and eating attitude. Total abdominal fat and visceral fat also increased with KEAT-26. Conclusions : There were relationships among eating attitude total fat, abdominal fat and visceral fat in obese climacteric women.
The influence of fat level and dietary fiber on serum and liver lipid concentration of the rat was investigated. Groups of rats were fed respectively 3%, 5%, 20% fat containing and free fiber diet until 5th week. From 5th week to 9th week high fat diet groups of rates were devided high fat diet group, high fat pectin supplemented diet group and high fat celulose supplemented diet group. Pectin and cellulose at 10% was supplemented to high fat diets. After rats were fed for 9 weeks, all rats were sacrificed to collect the liver and blood samples by heart puncture. Serum and liver lipids were determined on all rats and compared the histochemical lipid staining method with the biochemical analysis of serum and liver lipids. A high fat diet caused increased level of the total lipids, total cholesterol and free cholesterol contents in the liver and the serum. Rats fed pectin reduced body weight, werum lipid and liver lipid but cellulose had no effect to reduce serum and liver lipid concentration. These results indicate that dietary fat level led to changes in the lipid metabolism of rats and that pectin was more effective in lowering serum and liver lipid than cellulose.
