Fermentation Properties and Functionality of Yogurt added with Lycium chinence Miller (구기자(Lycium chinence Miller) 첨가에 따른 요구르트의 발효 특성과 기능성)

  • This experiment was carried out to examine the fennentation properties of yogurts with or without Lyeii fructus, Lyeii folium and Lyeii cortex extract as additives at concentrations of 1.0%. The effects on promoting the fermentation by Lycii fructus, Lycii folium and Lycii cortex additives were higher and pH was below 4.06 when Streptococcus salivarius ssp. thermophilus and Lactobacillus delbrueckii ssp. bulgaricus, Lactobacillus cosei, and Lactobacillus acidophilus, Bifidobacterium longum and Streptococcus salivarius ssp. thermophilus were used. The acid production was higher when S. salivarius ssp. thermophilus and L. delbrueckii ssp. bulgaricw were used. The average lactic acid bacteria counts was 2.62 ${\times}$ $10^9$ cfu/ml in the yogurt added with Lycii fructus extract and fermentation with S. salivarius ssp. thermophilus and L. delbrueckii ssp. bulgaricw. The lactose hydrolysis ratio was higher in the milk added with Lycii fructus extract(36.11%), Lycii folium extract(37.76%) and Lycii cortex extract(32.70%) when S. salivarius ssp. thermophilus and L. delbrueckii ssp. bulgaricus were used. The isobutylic acid concentration was(34.39 to 37.72 mM) with S. salivarius ssp. thermophilus and L. delbrueckii ssp. bulgaricus. The viscosity of yogurt was 1,615 to 2,030 cP in yogurts added with skim milk and L. acidophilus; B. longum and S. salivarius ssp. thermophilus were used. The sensory scores of colors, tastes and overall acceptability of yogurt with Lycii cortex extract were shown 3.34 to 3.77 when fermented by L. cosei, L. acidophilus, B. longum and S. salivarius ssp. thermophilus. The cholesterol reducing effects were 17.38${\sim}$32.08% in all the yogurts and especially, greater effect(25.75 to 32.08%) for yogurts fermented with L. acidophilus KCTC3150 and L. salivarius subsp. salivarius CNU27. The inhibitory effects on the pathogenic bacteria by lactic acid bacteria added with Lycii fructus, Lycii folium and Lyeii cortex lower on S. typhimurium M-15, but higher on E. coli KCTC1021 and L. monocytogenes.

Effect of Trichosanthes kirilowii Extract on the Inflammatory Response Induced by Lipopolysaccharide in Broiler Chickens (화분(Trichosanthes Kirilowii ext.)추출물이 LPS를 처리한 육계 병아리의 염증반응에 미치는 영향)

  • Effect of Trichosanthes kirilowii extract on the inflammatory responsse was investigated in the lipopolysaccharide (LPS)-treated broiler chickens. Plasma ceruloplasmin and ${\alpha}$-acidic protein concentrations of all the experiment groups were increased at 3, 9 and 24h after LPS treatment. Plasma ceruloplasmin and ${\alpha}$-acidic protein concentrations of Trichosanthes kirilowii extract groups were lower than those of control group. Plasma nitrogen oxide concentration of all the experiment groups was rapidly increased at 3h after LPS treatment. However, plasma nitrogen oxide concentration was decreased at 3 and 9h after LPS treatment with increasing amount of Trichosanthes kirilowii extract added. Liver IL-2 mRNA concentration of all the experiment groups was rapidly increased at 2h after LPS treatment, and then gradually decreased to the level similar to that before LPS treatment at 9h after LPS treatment. Liver IL-2 mRNA concentration of Trichosanthes kirilowii extract groups were lower than that of control group. Spleen IL-2 mRNA concentration was the highest at 4h after LPS treatment in all the experiment groups. Spleen IL-2 mRNA concentration of 0.2 and 0.3% Trichosanthes kirilowii extract groups were higher than that of 0.1% Trichosanthes kirilowii extract group and control group at 3 and 4h after LPS treatment. Liver and spleen IFN-${\gamma}$ mRNA concentrations were increased at 2 and 3h after LPS treatment, decreased at 4h after LPS treatment, and then reached to the level similar to that before LPS treatment at 9h after LPS treatment. Liver and spleen IFN-${\gamma}$ mRNA concentrations of Trichosanthes kirilowii extract group were lower than those of control group at 2h and 3h after LPS treatment. Liver and spleen iNOS mRNA concentrations were the highest at 3h after LPS treatment, and then decreased to the level similar to that before LPS treatment at 9h after LPS treatment. Liver and spleen iNOS mRNA concentrations of Trichosanthes kirilowii extract groups were lower than those of control group at 2, 3 and 4h after LPS treatment.

  • Pour Kierkegaard la condition de l'homme naturel est tragique. $D^{\prime}{\hat{e}}tre$ $s^{\prime}{\acute{e}}veiller$, ${\hat{e}}tre$ ignorant et $d{\acute{e}}nier$ sur son vrai ${\hat{e}}tre$, tous causent le $d{\acute{e}}sespoir$. En plus l'homme ne peut avoir une conviction sur son bonheur $jusqu^{\prime}{\grave{a}}$ la mort. Donc sa $th{\acute{e}}orie$ du bonheur ne se base pas sur le bonheur. Tous le monde vit dans une situation $o{\grave{u}}$ il y a une distance entre $l^{\prime}{\hat{e}}tre$ $pr{\acute{e}}sent$ et son vrai ${\hat{e}}tre$. La vie ${\grave{a}}$ la perspective ${\acute{e}}thique$ s'apparaît comme se diriger vers son vrai ${\hat{e}}tre$ et ceci signifie $d^{\prime}{\acute{e}}tablir$ son ${\hat{e}}tre$ $int{\acute{e}}rieur$ en s'echappant la vie $esth{\acute{e}}tique$ qui est la vie sensitive et directe, et aussi faire s'identifier son ${\hat{e}}tre$ $ext{\acute{e}}rieur$ ${\grave{a}}$ son ${\hat{e}}tre$ $int{\acute{e}}rieur$. Le $p{\acute{e}}ch{\acute{e}}$ signifie la $s{\acute{e}}paration$ de son vrai ${\hat{e}}tre$, cela est la source de tout mal. L'obtention parfait de $l^{\prime}{\hat{e}}tre-soi$ exisge ${\hat{e}}tre$ en $pr{\acute{e}}sence$ devant l'Asolu(Dieu) en tant qu'individu unique, et s'accorder avec l'Absolu. Mais du fiat $m{\hat{e}}me$ que ceci est impossible pour tous, tout le monde ne peut vivre qu'ayant un peu de $p{\acute{e}}ch{\acute{e}}$. Donc l'aspect de la vie ${\acute{e}}thique$ s'apparaît une vie dynamique qui $d{\acute{e}}passe$ $soi-m{\hat{e}}me$ sans cesse. En contradiction qu'avec l'analyse sur $l^{\prime}{\hat{e}}tre$ $pr{\acute{e}}sent$ qui est si tragique, la vertu de cette vie ${\acute{e}}thique$ est si optimiste. Elle est l'amour. Cet amour est $tr{\acute{e}}s$ excellent qui $d{\acute{e}}passe$ toute la vertu ${\acute{e}}thique$. En $v{\acute{e}}rit{\acute{e}}$ pour Kierkegaard, bien que le salut $lui-m{\hat{e}}me$ sera donner par la foi, le principe de cet amour est l'unique vertu qui ammene l'homme vers la foi et vers le salut. C'est pourquoi son ${\acute{e}}thique$ est essentiellement s'apparaît 'une ${\acute{e}}thique$ de l'amour', et la recherche sur cet amour, son principe et son aspect reste comme uneque $t{\hat{a}}che$ de $l^{\prime}{\acute{e}}thique$.
