Means and standard errors of 285 Taiwan's local chicken and 429 Single Comb White Leghorn pullets at 35 wk of age were: egg weight (g) $48.3{\pm}0.3$, $54.6{\pm}0.3$, shell index $73.39{\pm}0.26$, $73.20{\pm}0.18$, shell color $15.23{\pm}0.40$, $0.88{\pm}0.27$, shell whiteness $72.61{\pm}0.57$, $90.00{\pm}0.35$, shell strength ($kg/cm^2$) $3.77{\pm}0.07$, $3.35{\pm}0.05$, shell thickness (mm) $0.38{\pm}0.003$, $0.38{\pm}0.002$, Haugh units $85.26{\pm}0.50$, $91.81{\pm}0.38$ and yolk percent (%) $30.17{\pm}0.18$, $27.32{\pm}0.16$ respectively. Theestimated heritabiliities of Taiwan's local chicken based on sire and dam components of variance were as follows: egg weight 0.20, shell index 0.1, shell color 0.87, shell whiteness 0.79, shell strength 0.37, shell thickness 0.14, Haugh units 0.24 and yolk percent 0.16. Genetic correlations based on sire and dam components of variance and covariance were also estimated. Generically, the shell index was positively correlated with egg weight, shell strength and yolk percent, and egg weight was negatively correlated with shell thickness, Haugh unit and yolk percent.
About 6 to 8% of the eggs annually produced are broken or cracked between the hen and the consumer's carton. The majority of this breakage is due to interrelationships between egg shell quality and the many biological, environmental and managerial factors which have been individually identified as affecting breakage. Some of the factors associated with shell damage discussed in this review include age of hens, temperature ana humidity of the laying house, design of the cage systems and of the cage floors, type of material used to manufacture the cages frequency of daily egg collection in the laying house and, Probably most important, the frequency and quality of handling equipment maintenance. Age and genetic constitution of the hens, environmental temperature, and design and quality of equipment maintenance are the major factors that influence shell breakage. There is a curvilinear relationship between shell quality and shell breakage which explains why small changes in shell quality may be associated with large changes in the incidence of breakage. Published data indicate the incidence of breakage may range from as low as 1 to 2% to 35% or more for other egg producers.

This study was carried out to investigate the effects of age of laying hens and grade of shell abnormality on internal egg quality. At each week, 1,000 eggs were randomly selected from 21,000 eggs laid by Hy-Line hens (100,000 birds) aged from 56 to 62 wk. The samples were divided into normal and externally abnormal eggs by an official egg grader. Then, egg quality including egg weight, egg white height, Haugh unit and yolk color was evaluated from each normal and abnormal eggs. The production rate of externally normal and abnormal eggs was 81.22 and 18.78%, respectively. No difference found in the production rate by the increase of hen's age, but Haugh unit of eggs from hens of 60-wk-old was higher (p<0.05) than that of 56-wk-old. When the same age groups were compared, egg white height and Haugh unit were lower in eggs which were externally abnormal. When the grade of abnormality increased, egg white height and Haugh unit were decreased further (p<0.05). Among the externally abnormal eggs, malformation showed the lowest Haugh unit. In conclusion, the shell abnormality of eggs laid by hens aged 56 to 62 wk was closely related with internal egg quality. Therefore, the grading external egg quality in the present egg grading system is directly related with the internal egg freshness.
This study was conducted to investigate the effect of dietary supplementation of wild grape (Vitis coignetiae) on egg qualities. Laying hens were randomly assigned to three different dietary groups containing 0, 0.25, and 0.5% of wild grape and fed for 8 weeks, respectively. Eggs were collected after feeding period and stored at $4^{\circ}C$ for 7 days. Egg quality traits and cholesterol level of egg yolk were measured at 0 and 7 days of storage. There were no significant differences in total cholesterol content of egg yolk and egg shell thickness among the treatments. However, egg weights of wild grape-fed groups significantly increased compared to that of control. Dietary supplementation of 0.25% wild grape increased the shell and yolk colors compared to the control. Dietary supplementation of 0.5% wild grape significantly increased albumen height and Haugh unit and decreased egg shell hardness and pH values at day 0. However, no differences were found after 7 days of storage. Consequently, the dietary supplementation of wild grape improved the egg qualities on some extent including egg weights, shell and yolk color, albumen height, and Haugh unit.

Objective: Stripe marks, which occasionally occur on the shell, do not cause breakage to the shell and shell membranes of eggs. This study investigated the quality of intact eggs (IEs), minor stripe-marked eggs (MEs), severe stripe-marked eggs (SEs), and cracked eggs (CEs) during 3-week storage at $25^{\circ}C$. Methods: Shell eggs were collected the day after being laid and were washed. Among them, eggs without any visual cracks or stripe marks on the shells were evaluated as IEs by the plant employees using candling in a darkened egg storage room; the remaining eggs exhibited some eggshell defects. At day 3, the eggs were further categorized into IEs, MEs, SEs, CEs, and broken eggs (BEs) on the basis of the description given. Except BEs, which were discarded, the remaining eggs were stored at $25^{\circ}C$ (approximate relative humidity 50%) and then analyzed. Results: Stripe marks were observed primarily within the first 3 days after washing. At day 3, CEs had significantly (p<0.05) lower Haugh unit values, but all eggs had grades AA or A, according to the United States Department of Agriculture standard. As storage time increased, differences in egg quality between groups were more obvious. IEs had the highest eggshell breaking strength. During storage, the total plate counts and pathogens, namely Escherichia coli, Campylobacter spp., Staphylococcus aureus, and Salmonella spp., were not detectable in the internal content of IEs and SEs. Conclusion: In conclusion, cracks degraded egg quality severely and minor stripe marks only slightly influenced the egg quality.

The interaction of 4 dietary crude protein (13, 16, 19 or 22%) and 4 metabolizable energy (2600, 2800, 3000 or 3100 kcal ME/kg) levels on egg quality performances of Starcross layers were assessed between 245 and 275 days of age. The egg weight increased significantly with the increasing dietary protein and energy levels. But egg shape index, albumen index, yolk index, yolk dry matter, yolk protein, yolk fat, albumen protein and shell tickness were similar at all dietary protein and/or energy levels. The egg specific gravity and albumen weight increased but the yolk, weight, Haugh unit and albumen drymatter decreased with the increase of dietary protein levels and showed irregular trend with energy levels. The albumen dry matter and egg shell weight, however, were not affected by energy and protein levels. Simultaneous increase of protein and energy increased specific gravity, albumen index and shell thickness at a greater rate than that increased by the increase of protein or energy alone.
This experiment was conducted to determine the effect of replacing limestone by sea shell on digestibility, egg strength and thickness, Ca and P of serum and Ca and P of tibia in layer hens. A total 54 brown layers was assigned to the treatments. There were six layers per replicate with three replicate per treatment. Treatments were layer diet with 7.5% limestone as control, 7.0% limestone and 0.5% sea shell in diet(SS0.5) and 6.5% limestone and 1.0% sea shell in diet(SS1.0). Digestibility of DM was significantly difference between SS0.5 and SS1.0(P〈0.05). Digestibilities of Ca and P were not affected by treatments(P〉0.05), however, SS1.0 tended to increase Ca and P digestibility compared to control. Egg thickness and egg strength were no differences among the treatments(P〉0.05). Differences of initial and finial period on Ca of plasma were significantly affected in the a.m. between SS0.5 and SS1.0(P〈0.05). However, there was no difference in Ca of plasma in the p.m. among the treatments and Ca of plasma in control had a tendency to decrease in the p.m. compared to that of treatments(P〉0.05). Ca of tibia was significantly increased by SS1.0 compared to control(P〈0.05). However, there was no difference in P of tibia among the treatments(P〉0.05). Based on these results, dietary supplemental sea shell mat have a role to improve the egg quality of layer hens.

A study was conducted to determine the effect of live weight of pheasants on egg production and egg quality characteristics. A total of 48 ring-necked pheasants were divided into control, heavy, middle and light BW groups. Live weights of the control were 1,187 g, 1,352.92 g for heavy group, 1,247.92 g for middle group and 1,003.33 g for light group. Egg production of groups were found as 47.32, 42.82, 45.79 and 46.51% respectively, in 10 weeks of period. There were no statistical differences on egg production among the groups. The effect of live weight on egg weight, shape index, specific gravity, shell weight, shell thickness, Haugh Unit, yolk weight and albumen weight were found statistically significant (p<0.05). The effect of live weight on albumen index, membrane weight and membrane thickness were found not important (p>0.05). On the other hand, other important factors to be effective on the egg quality of pheasants should be investigated. As a result of this study, live weight of pheasant hens is not an important factor to obtain high egg production in pheasants. But, body conformation of breeding materials should be in good conditions.
This study was conducted to evaluate the effects of mineral and vitamin-enhanced supplementation on egg production, egg quality and concentrations of calcium and phosphorus in serum of spent laying hens. A total of 240 (72-wk-old) Hyline brown commercial hens were used in the current trial for 4 weeks. Dietary treatments included 1) CON (basal diet), 2) ESS1 (basal diet + Egg shell strengthen 0.1%), 3) ESS2 (basal diet + Egg shell strengthen 0.2%) and 4) FESS (basal diet + Fe egg shell strengthen 0.2%). During the overall period, egg production was increased in CON and ESS2 treatments compared with ESS1 treatment (P<0.05). Egg shell breaking strength and final egg shell thickness were significantly higher in ESS2 treatment than CON and FESS treatments (P<0.05). Egg yolk color index was significantly lower in ESS1 treatment than other treatments (P<0.05). Moreover, Haugh unit was significantly lower in ESS1 and FESS treatments than CON treatment (P<0.05). Mineral- and vitaminenhanced supplementation did not affect either egg shell color or calcium and phosphorus concentration in serum. In conclusion, mineral- and vitamin- enhanced supplementations of laying hens diet are helpful in improving egg shell breaking strength and thickness by supplementation of Egg shell strengthener 0.2%.

This study investigated the effects of electron beam irradiation on pathogens, quality, and functional properties of shell eggs during storage. A 1st grade 1-d-old egg was subjected to electron beam irradiation at 0, 1, 2, and 3 kGy, after which the number of total aerobic bacteria, reduction of inoculated Escherichia coli and Salmonella Typhimurium, egg quality, and functional properties were measured. Electron beam irradiation at 2 kGy reduced the number of E. coli and S. Typhimurium cells to a level below the detection limit (<$10^2$ CFU/g) after 7 and 14 d of storage. Egg freshness as measured by albumen height and the number of Haugh units was significantly reduced by 1-kGy irradiation. The viscosity of irradiated egg white was also significantly decreased by increased irradiation, whereas its foaming ability was increased. Electron beam irradiation also increased lipid oxidation in egg yolks. These results suggest that electron beam irradiation reduces the freshness of shell eggs while increasing the oxidation of egg yolk and improving important functional properties such as foaming capacity. Electron beam irradiation can also be applied to the egg breaking process since the irradiation reduces the viscosity of egg white, which can allow egg whites and yolks to be separated with greater efficiency.
