New types of patties were prepared with surimi and crab paste, and then characterized. With an increase of additional ratios of crab paste, the moisture (64.8 to $61.5\%$) of the patties slightly decreased while the ash contents (2.3 to $3.7\%$) increased. The Hunter's color values of the patties decreased in lightness (L value, 58.79 to 54.27) but increased in redness (a value, -2.77 to 3.54). Thus, the patties that had added crab paste appeared slightly more reddish. According to the increasing of additional ratios of crab paste, sensory scores on color and flavor increased whereas the texture score decreased. From the above results, based on physical properties and sensory evaluation, the desirable additional ratio of crab paste for preparing patty was $15\%$. The calcium and phosphorus contents of the patties with the addition of $15\%$ crab paste were 148.8 mg/100 g and 139.6 mg/100 g, respectively, and their ratio (approximately 1:1) was the optimal range in body absorption efficiency. The calcium absorption rate with the $15\%$ additions was 4.9 times higher than that of the patty with no additions. Total amino acid content (16,302 mg/100 g) of the $15\%$ additions showed no difference to the patty without additions, and the major amino acids were aspartic acid, glutamic acid, leucine and lysine. Exceptionally, the cysteine content of the patty with the $15\%$ crab paste additions was 2 times higher than that found in the patty without crab paste. The major fatty acids were 16:0, 18:1n-9 and 18:2n-6 of the total lipids, and there was no difference between the patties with and without crab paste. The above results showed that crab paste can be used as a crab surimi gel source.
This study was conducted to compare extruded pellets (EP) and soft extruded pellets (SEP) with a raw fish-based moist pellet (MP) diet on the growth and flesh quality of Korean rockfish Sebastes schlegeli. Three groups of 20,000 fish (initial mean weight 133 g) per net-cage ($6{\times}12{\times}7m$) were fed commercial EP, SEP or MP for 16 months. The survival of fish fed SEP was higher than those of fish fed EP or MP. The highest growth performances were observed in the mean weight gain, total weight gain, and feed efficiency of fish fed MP, followed by those fed EP and SEP. Among the fish fed on extruded pellets, the total weight gain of fish fed SEP was higher than that of those fed EP, while fish fed EP grew faster than those fed SEP. No notable differences in body composition, sensory scores or textural properties of the dorsal muscle were observed in fish fed on EP, SEP or MP. Thus, it is suggested that extruded pellets, rather than raw fish-based moist pellets, could be fed to Korean rockfish without compromising flesh quality.
A web support open environment in which flexibility that allows it to be applied in the education field has gradually evolved but the WBI(Web Based Instruction) which compose it have many limitations and problems, as far as learning efficiency is concerned. In particular, existing web-based estimation systems just give information on whether learner's replies are 'correct' or 'incorrect' and offer the learners evaluations of results in terms of scores. Therefore it is difficult for the learners to get more detailed information about their shortcomings and errors. What is needed for the learners is that web based instruction systems diagnose learner's comprehension status, providing c causes: Why did the learners make the errors\ulcorner In this paper, we propose the development of a web-based instruction system that learners can access with their browsers at any time and no matter where they are. Our system has a facility that analyses learner's weak points and diagnoses error cause, giving advice to learners and more detailed error information than existing systems. By accumulating user behaviors, relevant individualized information on the learners can be given.
This study was done to determine the factors influencing smoking-cessation behavior in female university students. A total of 534 students participated in this cross sectional study by answering a questionnaire. The data collection was done between September 1 and October 31, 1997 The measurement tools used in this study were the self help change process scale (Cronbach's alpha=.9930 : developed by Oh & Kim, 1996) for smoking-cessation behaviors, the self efficacy scale(Cronbach's alpha=.8250 : developed by Sherer et al, 1982), the sex role acceptance scale (KR-20=.7757 : developed by Kim, 1991) and the social support scale(Cronbach's alpha=.9172 : developed by Park, 1985). The summarized results are follows : 1. The mean scores for smoking-cessation behaviors in smokers (N=150) was 91.72 that was considered a middle score compared to the total possible score of measurement tool (150.0). The mean score for smoking-cessation behaviors by smoking-cessation step showed significant different between the groups(F=11.71, p=.000). 2. The group with no experience in smoking(N=332) showed a high general self efficacy score (t=5.24, p=.000), and more openness to sex role acceptance(t=-2.15, p=.032) compared to the group with smoking experience (N=202). 3. General self efficacy, sex role acceptance, and social support were not different significantly between the groups according to the steps in smoking-cessation. 4. Significant factors influencing smoking-cessation behavior (total, sub concepts) were religion, sex role acceptance, social support, smoking duration, smoking attitude, time of smoking onset, amount of smoking, drinking, and perception of health status. 5. Smoking-cessation behaviors which explained 11% of the variance were smoking attitude, and smoking duration. In conclusion, this study identified factors influencing smoking-cessation behavior. Thereby it will help in the development of smoking-cessation intervention strategies. For future research, exploration other determinants of smoking cessation behaviors, evaluation of intervention efficiency, and comparative study by gender characteristics are needed.
PVSS stands for publicly verifiable secret sharing. In PVSS, a dealer shares a secret among multiple share holders. He encrypts the shares using the shareholders' encryption algorithms and publicly proves that the encrypted shares are valid. Most of the existing PVSS schemes do not employ an ElGamal encryption to encrypt the shares. Instead, they usually employ other encryption algorithms like a RSA encryption and Paillier encryption. Those encryption algorithms do not support the shareholders' encryption algorithms to employ the same decryption modulus. As a result, PVSS based on those encryption algorithms must employ additional range proofs to guarantee the validity of the shares obtained by the shareholders. Although the shareholders can employ ElGamal encryptions with the same decryption modulus in PVSS such that the range proof can be avoided, there are only two PVSS schemes based on ElGamal encryption. Moreover, the two schemes have their drawbacks. One of them employs a costly repeating-proof mechanism, which needs to repeat the dealer's proof at least scores of times to achieve satisfactory soundness. The other requires that the dealer must know the discrete logarithm of the secret to share and thus weakens the generality and it cannot be employed in many applications. A new PVSS scheme based on an ElGamal encryption is proposed in this paper. It employs the same decryption modulus for all the shareholders' ElGamal encryption algorithms, so it does not need any range proof. Moreover, it is a general PVSS technique without any special limitation. Finally, an encryption-improving technique is proposed to achieve very high efficiency in the new PVSS scheme. It only needs a number of exponentiations in large cyclic groups that are linear in the number of the shareholders, while all the existing PVSS schemes need at least a number of exponentiations in large cyclic groups that are linear in the square of the number of the shareholders.
This study was conducted to investigate the effects of sex, environmental factors, and feeding system on the carcass traits of Hanwoo (Korean Native Cattle). Data were collected from 7,866 heads slaughtered in Chungnam province during one-year period. Using the collected carcass traits data which greatly influence a Hanwoo's carcass grade, the effects of sex class, slaughter season, and feeding system were estimated. Backfat thickness of steers was significantly higher than that of bulls (p < 0.05). Marbling score was also the highest in steers when compared with cows and bulls (p < 0.05). Live weight and carcass weight were significantly higher in winter than in summer (p < 0.05). However, backfat thickness was significantly lower in summer than in other seasons (p < 0.05). Marbling score was higher in spring and fall than in summer and winter (p < 0.05). In terms of feeding systems, TMR (Total mixed ration) and TMF (Total mixed fermentation feed) fed groups showed the highest carcass grade (p < 0.05). However, the group fed TMR and formula feed at the final fattening period showed the lowest performance (p < 0.05) and it is assumed that some stress was associated to the feed change. The results reconfirm that castration may be recommended in order to improve meat quality and marbling scores in bulls. There was no consistent trend of seasonal effects of slaughter on carcass traits although some traits were significantly affected. Regarding the feeding system, either TMR or TMF can be supplied to achieve high feed efficiency and good carcass characteristics in Hanwoo.
Consumers who purchase products from foreign countries and deliver them back to Korea are increasing. According to the Korea Fashion & Textile News (2015), overseas direct shopping reported 39% increase compared to 2013. Furthermore, clothes accounted for 19% of product category. Therefore, the service quality of overseas purchase sites is becoming more important, but studies have been limited. this research focuses on investigating the effects of consumers' shopping orientation on service quality and the effects of service quality on trust, satisfaction, and consumer loyalty. The survey was administered to consumers who had experiences in purchasing through overseas direct purchase websites. The results showed that the perception of service quality differed depending on the respondent's shopping orientation. Among the four shopping orientation groups(shopping confidence, shopping enjoyment, trend pursuit, and shopping follower groups), the shopping confidence group showed the highest mean for all service quality factors. All the groups showed the highest scores on product and trust among the factors of service quality. Next, the results revealed that service quality positively influenced consumers' trust on websites that provide overseas direct purchase services, which further improved customer loyalty. Therefore, the study gives managerial suggestions to online retailers that provide oversea shopping service. They need to provide higher site efficiency, security, product reliability, and responsiveness to cultivate international customers' trust and satisfaction. In particular, it will be important for them to offer accurate, reliable product information and various languages for overseas customers.
Background: This study aims to analyze the job stress of dental hygienists and the factors affecting somatization and to provide basic data for effectively managing job stress and somatization of dental hygienists. Methods: In this study, the data collected from 208 dental hygienists working in Jeollabuk-do Province were analyzed. Job stress was investigated using a questionnaire with 43 questions. In addition, the degree of somatization was evaluated through a simplified psychotherapy examination (Symptom Check List-90-Revision). Results: Age, employment history, position, average monthly income, night duty execution status, and perceived health status were significantly associated with job stress (p<0.05). The job stress sub-items scores based on general characteristics showed significance in 'workload' for those working a five-day workweek and perceived health status (p<0.05). Age, average monthly income, and perceived health status were noted in 'role conflict as a professional'. In 'lack of expertise and skill', it was noted that age, employment history, position, income, and night clinic were implemented. In 'improper treatment and interpersonal issues', level of education and perceived health status were significant (p<0.05). The higher the job stress, the higher the somatization symptom score (p<0.05), and the higher the job stress component, the higher the somatization symptom score (p<0.01). Conclusion: The job stress of dental hygienists should be reduced, and the symptoms of somatization should be mitigated. To improve the quality of medical services and the work efficiency of dental hygienists, proper treatment and compensation systems should be implemented for them to take pride as professional. Further, programs and regulations on mitigating job stress and somatization symptoms should be developed.
This study was designed to develop a microencapsulated, water-soluble isoflavone for application into milk and to examine the hypocholesterolemic effect of such a milk product in a rat diet. The coating material was medium-chain triglyceride (MCT) and the core material was watersoluble isoflavone. The microencapsulation efficiency was 70.2% when the ratio (w/w) of coating material to core material was 15:1. The isoflavone release from the microcapsules was 8% after 3-day storage at $4^{\circ}C$. In in vitro study, 4.0-9.3% of water-soluble isoflavone in simulated gastric fluid was released in the pH range of 2 to 5 after 60 min incubation; however, in simulated intestinal fluid at pH 8, 87.6% of isoflavone was released from the capsules after 40 min incubation time. In sensory analysis, the scores of bitterness, astringency, and off-taste in the encapsulated isoflavone-added milk were slightly, but not significantly, different from those in uncapsulated, isoflavone-added milk. In blood analysis, total cholesterol was significantly decreased in the isoflavone-added group compared with that in the control after 6-week feeding. Therefore, this study confirmed the acceptability of MCT as a coating material in the microencapsulation of water-soluble isoflavone for application into milk, although a slight adverse effect was found in terms of sensory attributes. In addition, blood total cholesterol was lowered in rats which had been fed a cholesterol-reduced and microencapsulated, isoflavoneadded milk for 6 weeks.
The purposes of this study were to investigate the median frequency (MDF) between initiation and termination of muscle contraction through surface electromyographic (sEMG) analysis and to propose the basis of clinical treatment for movement problems in early hemiparetic upper limbs. Thirteen patients who had stroke with onset less than 3 months prior to the study and seven control subjects participated in the study. The median frequency in initiation and termination of muscle contraction was recorded from wrist flexor and extensor muscles using the sEMG, with 3 second beeper signals, during maximal isometric wrist flexion and extension. Flexion and extension must be done as quickly and forcefully as possible. The results of the study were as follows: 1. The MDF of the onset and offset sections were significantly lower on the paretic than the nonparetic and control sides. 2. The MDF of the offset section significantly decreased on the paretic and nonparetic sides. Consequently, this study showed that the lowering of the MDF was due to the hemiparetic wrist motor impairment and muscle weakness. These results are also related to Fugl-Meyer motor assessment (FMA) scores in hemiparetic upper limbs. This study also suggests that since muscle weakness of early stroke patients affects the functional decrease of upper limbs, further studies must focus on the treatment to improve muscle agility and muscle fiber recruitment efficiency that can induce the functional recovery correlated to motor control.
