냉동생지의 해동.발효조건이 냉동 빵의 품질에 미치는 영향 (Effects of Thawing-Fermentation Condition of Frozen Dough on frozen Bread Quality)

  • When bread making, the condition of thawing-fermentation for frozen dough were tested in variable temperature, and measured thawing-fermentation time and volume of frozen dough. L-Ascorbic acid (L-Aa) was added in frozen dough for the comparison test of develop volume in bread staling degree of baking bread were measured additive frozen dough which was stoppages in freezing, staling degrees were tested hardness with Rheometer. The test for comparison of thawing-fermentation time in variable temperature was shown the condition of dough conditioner at 3$0^{\circ}C$ was most effective for bread making, Because That condition was required very short time(74 min) But, in this comparison of volume in final products was shown the products in the condition of thawing-fermentation at 3$0^{\circ}C$ was smaller than the products at 5$^{\circ}C$(418 ml). The baking volume of L-Aa additive frozen dough which has under gone thawing-fermentation at 3$0^{\circ}C$, were shown baking volume of 420 ml in 2 weeks storage terms to 100 mg/kg L-Aa additive dough and shown baking volume of 454 ml in 4 weeks storage terms to dough of 200 mg/kg additive weight. Staling degrees of L-Aa additive frozen bread were measured with Rheometer. The hardness of 100 mg/kg L-Aa additive frozen bread was sown low level hardness in 1~2 weeks freezing term, 150 mg/kg L-Aa additive frozen bread was shown low level hardness in 3 weeks freezing term. In 4 weeks freezing term, 200 mg/kg L-Aa additive frozen bread was shown low level hardness compared with non-additive L-Aa frozen bread. In comparison of frozen bread quality, non-additive L-Aa products was better than additive L-Aa products in equality of baking shape and external apparence. But in total quality in external and internal apparence, additive L-Aa products was better than non-additive L-Aa products.

  • 고파랑(高波浪)이 내습(來襲)하여 기존호안(旣存護岸)으로서는 방재(防災) 효과(效果)가 없을 경우, 기존호안(旣存護岸) 전면(前面)에 인공(人工)reef를 설치(設置)하여, 해안방재(海岸防災)와 해안환경(海岸環境) 보존(保存) 및 해안이용(海岸利用)을 동시(同時)에 갖는 다목적(多目的) 해안공간개발(海岸空間開發)이라는 취지(趣旨)에서 본(本) 연구(硏究)를 수행(遂行)하였다. 인공(人工)reef를 고정상(固定床)으로 제작(制作)하고, 불규칙파(不規則波)에 대(對)한 실험(實驗)과 기존이론(旣存理論)을 도입(導入)하여 월파량(越波量)과 쇄파율(碎波率)과의 관계(關係)를 밝혔다. 스펙트럼형상(形狀)이 월파량(越波量)에 미치는 영향(影響)을 규명(糾明)하기 위하여 수치(數値)simulation을 실시했다. 스펙트럼 형상(形狀)으로부터 파고(波高)와 주기(週期)의 결합(結合) 확률밀도(確率密度)를 분포(分布) 작성(作成)하여 인공(人工)reef의 제단면(諸斷面)이 월파량(越波量)을 저감(低減)시킬 수 있는 최적단면(最適斷面) 제시(提示)하였다.

효과적인 유역관리를 위한 CN기법 기반의 침투량 산정 및 기저유출량 분석 (Estimation of CN-based Infiltration and Baseflow for Effective Watershed Management)

  • Increased Non-permeable areas which have resulted from civilization reduce the volume of groundwater infiltration that is one of the important factors causing water shortage during a dry season. Thus, seeking the efficient method to analyze the volume of groundwater in accurate should be needed to solve water shortage problems. In this study, two different watersheds were selected and precipitation, soil group, and land use were surveyed in a particular year in order to figure out the accuracy of estimated infiltration recharge ratio compared to Web-based Hydrograph Analysis Tool (WHAT). The volume of groundwater was estimated considering Antecedent soil Moisture Condition (AMC) and Curve Number (CN) using Long Term Hydrologic Impact Assessment (L-THIA) model. The results of this study showed that in the case of Kyoung-an watershed, the volume of both infiltration and baseflow seperated from WHAT was 46.99% in 2006 and 33.68% in 2007 each and in Do-am watershed the volume of both infiltration and baseflow was 33.48% in 2004 and 23.65% in 2005 respectively. L-THIA requires only simple data (i.e., land uses, soils, and precipitation) to simulate the accurate volume of groundwater. Therefore, with convenient way of L-THIA, researchers can manage watershed more effectively than doing it with other models. L-THIA has limitations that it neglects the contributions of snowfall to precipitation. So, to estimate more accurate assessment of the long term hydrological impacts including groundwater with L-THIA, further researches about snowfall data in winter should be considered.

직결형 회전교차로의 적용 가능성과 도입 기준에 관한 연구 (A Study on the Applicability and Introduction Standards of Cut-through Roundabouts)

  • 본 연구의 목적은 혼잡 교차로에 직결형 회전교차로의 적용 가능성을 평가하고 적용 가능한 교통량 범위를 산정하여 도입기준을 마련하는데 있다. 이를 위해 진입 교통량 및 주 부도로 교통량 비율, 좌회전 교통량 비율에 따라 다양한 시나리오를 작성하고 직결형 회전교차로와 회전교차로, 신호교차로에 대한 시뮬레이션을 수행하여 지체시간을 비교 분석하였다. 분석 결과 주 부도로 교통량 비율이 6:4인 경우의 차로당 교통량이 400대/시에서는 좌회전 비율 30%까지, 500대/시에서는 20%까지, 600대/시에서는 10%까지 직결형 회전교차로의 지체시간이 가장 작게 나타났다. 주 부도로 비율이 7:3인 경우에는 차로당 교통량이 400-600대/시에는 6:4와 동일하게 나타났으나 300대/시의 좌회전 비율 30%, 700대/시인 경우의 10%에서 직결형 회전교차로가 가장 작게 나타났다. 주 부도로 비율 8:2인 경우에는 차로당 교통량이 400-500대/시, 700대/시인 경우에는 7:3과 동일하게 나타났으나 300대/시의 10-30%, 600대/시에는 좌회전 비율이 20% 인 경우에도 가장 작게 나타났다. 종합해보면 주 부도로의 교통량 비율 차이가 커질수록 좌회전 교통량 비율과 교통량이 적을수록 직결형 회전교차로의 교통 처리 능력이 높게 나타났다. 따라서 주 부도로 교통량 차이가 크고 주도로 직진교통량 비율이 큰 혼잡교차로에 직결형 회전교차로의 도입 시 효과가 클 것으로 기대된다.

운전자 행태를 고려한 VMS의 실시간 경로안내 정보제공에 관한 연구 (A Study on Providing Real-Time Route Guidance Information by Variable Massage Signs with Driver Behavior)

  • ITS 의 한 분야인 첨단교통정보체계 (ATIS: Advance Traveler Information System)는 운전자들에게 통행 전 (pre-trip). 통행 중 (en-route) 교통정보를 제공함으로서 운전자의 경로선택과정에 영향을 미쳐 도로망의 교통량 분산효과를 추구하는 시스템이다. 이중 도로상에서 운전자가 진행하는 방향에 대한 직접적인 정보를 제공하는 VMS 는 ATIS의 정보제공방안중 가장 효과적인 수단이 될 수 있다. 이러한 때 VMS의 정보제공목표는 단순현황정보만을 제공하는 운전자 편의측면과 교통수요를 관리하여 시스템의 성능을 증진시키는 시스템 제어측면으로 구분이 가능하다 하지만 보다 효율적인 도로전광표지의 정보제공을 위해서는 시스템제어 측면의 정보제공이 이루어져야 할 것이다 이러한 교통관리시스템(traffic management system)으로서 VMS 핵심적인 관리전략은 혼잡 (traffic congestion) 또는 돌발 상황(incident)발생 시 지체 (delay)를 최소하기 위한 교통우회전략(Traffic Diversion Strategy)이라 할 수 있다 이를 효과적으로 운영하기 위해서는 첫째, 교통상황 (network traffic condition)에 따라 적정한 우회교통량 (diversion traffic volume) 의 산정이 선행되어야 하고 둘째, 이러한 우회교통량을 제어하기 위해서는 VMS 정보내용 (VMS massage contents)에 따른 운전자의 행태(driver response behavior)가 반영된 정보제공전략 (providing information strategy)이 수립되어야 한다. 이에 본 연구에서는 돌발 상황 발생에 의해 혼잡이 야기될 때 VMS 실시간 경로안내 정보제공에 대해 초점을 맞추었다 이를 위해 첫째로, CA(Cellular Automata) 기반 교통류 사율레이션을 모형을 이용뼈 통행시간 및 대기행렬의 변화가 반영된 시간대별 시스템 최적경로 전환율을 산정하였다. 둘째로, 이항로짓 모형을 이용하여 운영자가 제어할 수 있는 정보특성에 대한 경로전환행태 모형 (route choice behavior model) 을 만들었다 마지막으로 시스템 최적상태 (system Optimum)의 달성을 위한 VMS의 시간대별 정보내용 및 강도를 결정하였다.

전산유체역학을 이용한 실규모 오존 접촉에서의 수리거동과 유효 체적 평가에 관한 연구 (Evaluating Effective Volume and Hydrodynamic Behavior in a Full-Scale Ozone Contactor with CFD Simulation)

  • An Ozone reaction model combined with CFD(Computational Fluid Dynamics) technique was developed in this research, in the simulation of ozonation, hydrodynamic behavior as well as reaction model is important because ozone is supplied to treated water as gas ozone. In order to evaluate hydrodynamic behavior in an ozone contactor, CFD technique was applied. CFD technique elucidated hydrodynamic behavior in the selected ozone contactor, which consisted of three main chambers. Three back-mixing zones were found in the contactor. The higher velocities of water were observed in the second and third compartments than that in the first compartment. The flow of the opposite direction to the main flow was observed near the water surface. Based on the results of CFD simulation, the ozone contactor was divided into small compartments. Mass balance equations were established were established in each compartment with reaction terms. This reaction model was intended to predict dissolved ozone concentration, especially. We concluded that the model could predict favorably the mass balance of ozone, namely absorption efficiency of gaseous ozone, dissolved ozone concentration and ozone consumption. After establishing the model, we discussed the effect of concentration of gaseous ozone at inlet, temperature and organic compounds on dissolved ozone concentration.

실제기체 상태방정식을 이용한 왕복동압축기의 성능해석 (Performance Analysis of a Reciprocating Compressor Using a Real Gas Equation of State)

  • This paper addresses performance analysis of a reciprocating compressor. A computer simulation model has been developed to predict and estimate the compressor performance. Instead of using ideal gas equations, real gas equations are used in describing the state of gas. The compressor simulation model consists of a cylinder control volume, suction system and discharge system. Conservation laws of mass and energy are applied to the cylinder section only, The suction and discharge system are described by the Helmholtz resonator modeling. Some of input data required for the simulation have been obtained from experiments. These experimentally obtained input data are effective flow area, effective force area and dynamic characteristics of valves. Simulation results of real gas equations have been compared with those of ideal gas equations. It has been found that the simulation with real gas equations yields lower cylinder temperature and heat transfer compared with those of ideal gas equations. Differences in pressure, mass flowrates, valve motions and gas pulsations are found quite small.

  • The purpose of this study is to investigate the effectiveness of academic achievements, science process skill and scientific attitude. The subjects of this study were 68 fourth-grade elementary school students who were 33 students for the 5E learning cycle instruction and 35 students for traditional instruction. The control group was taught with traditional teaching method, while the experimental group was taught 'the change to the volume of material due to heat' unit of 4th grade with the developed learning cycle model. The results were as fellows: First, the learning cycle instruction is more effective for understanding of a concept related to the change to the volume of material due to heat. Second, the learning cycle model seems more effective for the expansion of both scientific inquiry ability and scientific attitude.

  • A Volume Integral Equation Method (VIEM) is applied for the effective analysis of elastic wave scattering problems and plane elastostatic problems in unbounded solids containing general anisotropic inclusions. It should be noted that this newly developed numerical method does not require the Green's function for anisotropic inclusions to solve this class of problems since only Green's function for the unbounded isotropic matrix is involved in their formulation for the analysis. This new method can also be applied to general two-dimensional elastodynamic and elastostatic problems with arbitrary shapes and number of anisotropic inclusions and voids. Through the analysis of plane elastodynamic and elastostatic problems in unbounded isotropic matrix with orthotropic inclusions and voids, it will be established that this new method is very accurate and effective for solving plane elastic problems in unbounded solids containing general anisotropic inclusions and voids.
