한국, 중국, 일본, 미국산 시판 사과식초의 관능적 품질 비교를 위한 SPME-GC/MS, 전자코 및 전자혀 분석 (Comparative analysis of sensory profiles of commercial cider vinegars from Korea, China, Japan, and US by SPME/GC-MS, E-nose, and E-tongue)

  • 본 연구에서는 한국, 중국, 일본 및 미국산 시판 천연발효 사과식초의 객관적인 향미특성 평가를 위해 SPME-GC/MS, 전자코, 전자혀 및 관능적 분석 특성을 비교하였다. SPME-GC/MS 분석결과, 시판 사과식초의 공통된 휘발성분은 acetic acid 외 isovaleric acid, octanoic acid, phenethyl alcohol, phenethyl acetate 등으로 확인되었다. 한편, 한국산 식초에는 acid류가, 미국산 식초에는 acetic ester류가 주된 향기성분으로 확인되었고, 중국산 식초에는 ethyl acetate 성분이 높은 비율로 확인된 반면, 일본산에서는 acetic acid 비율이 낮았다. 한국산 및 중국산 식초는 전자코 패턴에서 독립된 패턴으로 구분되었고, 모든 식초에서 높은 함량으로 분리된 성분은 Kovats 분석을 통해 acetic acid로 예측되었다. 중국산 및 일본산 식초는 전자혀 분석에서 각각 뚜렷한 맛 패턴의 분리를 나타내었다. 관능평가에서 신맛이 높게 평가된 식초는 전반적 기호도에서 비교적 높은 평점을 보여주었고, 관능적 냄새, 신맛 및 단맛 항목은 각각 전자코 분석의 PC1, 전자혀의 SRS sensor 및 SWS sensor 값과 $r^2=0.83$ 이상의 높은 상관계수를 나타내었다. 이상의 결과, 시판 사과식초는 전자코 및 전자혀 패턴 분석을 통해 한국, 중국, 일본 및 미국산 시료로 구분될 수 있었고, 관능적 평점은 E-sense 분석결과와 높은 상관성을 보여주어, 관능검사를 대체할 전자코 및 전자혀 분석의 활용가능성을 확인하였다.

An Array-Based Sensor for Seafood Freshness Assessment

  • This paper describes the development of an automated, hand-held sensor for the fast assessment of seafood freshness. The sensor developed here combined: an array-based chemical sensor, composed of incrementally different conducting polymer elements deposited on a small chip; a highly sensitive, custom-made electronics for the detection of very small signal changes; precise temperature control of the sensor chamber; and an on-board microcontroller for data collection, storage, automation, and analysis. The instrument was used to successfully test seafood samples with different degree of freshness and spoilage. A linear relationship between microbiological count and e-Nose signal for three different fish fillet was developed. Once the linear relationship is included into the hand-held unit software, the e-Nose signal can be used for assessment of seafood freshness without performing the microbiological count technique.

전자코를 이용한 검정현미의 산지판별 (Application of Electronic Nose in Discrimination of the Habitat for Black Rice)

  • 검정현미에 내포한 특이한 향기성분을 토대로 수입산 또는 국내산인지의 여부를 전자코로 분석하였다. 주성분 분석 결과 전반적으로 수입산과 국내산의 판별이 뚜렷하게 구별 가능하였다. 또한 인공신경망 분석 프로그램을 이용하여 학습시켜 원산지를 모르는 시료를 분석한 결과 국내산 검정현미가 수입산인지 국내산인지를 구별할 수 있었다. E-Nose 5000을 이용한 결과는 69종의 국내산 검정현미를 국내산으로 판별한 경우가 64종으로 92.75%이었고, 13종의 수입산 검정현미를 수입산으로 판별한 경우는 11종으로 92.31%의 높을 확률로 metal oxide sensor로만 구성된 전자코의 판별정도보다 더 정확하게 구별할 수 있었다.

Laminate composites behavior under quasi-static and high velocity perforation

  • In this paper, the behavior of woven E-glass fabric composite laminate was experimentally investigated under quasi-static indentation and high velocity impact by flat-ended, hemispherical, conical (cone angle of $37^{\circ}$ and $90^{\circ}$) and ogival (CRH of 1.5 and 2.5) cylindrical perforators. Moreover, the results are compared in order to explore the possibility of extending quasi-static indentation test results to high velocity impact test results in different characteristics such as perforation mechanisms, performance of perforators, energy absorption, friction force, etc. The effects of perforator nose shape, nose length and nose-shank connection shapes were investigated. The results showed that the quasi-static indentation test has a great ability to predict the high velocity impact behavior of the composite laminates especially in several characteristics such as perforation mechanisms, perforator performance. In both experiments, the highest performance occurs for 2.5 CRH projectile and the lowest is related to blunt projectiles. The results show that sharp perforators indicate lower values of dynamic enhancement factor and the flat-ended perforator represents the maximum dynamic enhancement factor among other perforators. Moreover, damage propagation far more occurred in high velocity impact tests then quasi-static tests. The highest damage area is mostly observed in ballistic limit of each projectile which projectile deviation strongly increases this area.

Pale ale류에 속하는 맥주 신제품의 이화학적 특성 평가 (Assessment of Physicochemical Characteristics among Different Types of Pale Ale Beer)

  • Pale ale류에 속하는 수입산 시판 맥주 3종과 신제품 맥주를 대상으로 일반적 품질특성과 향기패턴 및 맛의 성향을 비교하였다. 그 결과 신제품은 4.35%의 알콜 함량을 나타냈으며 B.U.는 3.5, 색도는 34.43(EBC), sweetness는 $2.28^{\circ}P$, pH는 3.96, 총산은 5.21, 폴리페놀은 181.22 mg/L의 함량을 보였다. 전자코에 의한 향기패턴의 경우 시판 맥주와는 구분되어 다른 향기특성을 갖는 것으로 나타났으며, GC를 이용한 총 14종의 휘발성분 중 ethyl acetate, isobutanol, isoamyl acetate, isoamyl alcohol, ethyl hexanoate 함량의 차이를 보였고 그 외 물질들은 시판 맥주와 유사한 것으로 나타났다. 전자혀 분석에서는 시판 맥주에 비하여 NB의 신맛이 부족한 것으로 나타났으며 맥주의 주요한 쓴맛을 나타내는 성분 중 하나인 quinine을 정량 한 결과 시판 맥주에서의 농도는 1.5-1.8 mg/L 사이로 나타났다.

한국인 콧방울의 해부 (Anatomy of the Alar Lobule in Korean Nose)

  • This study is to provide details of the unique anatomical features on the alar lobule region in Korean nose. We hypothesized that the anatomy of this area differs according to the shape of the alar lobule. Based on the prominence and roundness of alar lobules, they were classified into horizontal and vertical types. A total of 20 fresh cadaver noses(10 for each type) were dissected. The anatomical differences between the horizontal and vertical types were investigated by gross and histologic studies. The alar lobule is composed of three layers, i.e., external skin, muscle, and vestibular skin. Profound differences between the two alar lobule types were evident in terms of the volume of the dilator naris anterior muscle, the insertion of the dilator naris posterior muscle, and the thickness of the external skin at the lateral end of the alar circumference. The horizontal type has a greater volume of dilator naris anterior muscle, an additional insertion of the dilator naris posterior muscle, and thicker external skin at the lateral end of the alar circumference than the vertical type. The Korean nose differs anatomically and morphologically from the Caucasian nose. This study shows that there are anatomic differences between the horizontal and vertical types of alar lobules in Korean nose.

  • Temperature is an essential process variable in nanoimprint lithography(NIL) where the temperature varies between room temperature and above the glass transition temperature. To simulate NIL process, we employ both the Nose-Poincare method for temperature controlled molecular dynamics(MD) and force field for polymer material i.e. polymethyl methacrylate(PMMA), which is most widely selected as NIL resist. Nose-Poincare method, which convinces the conservation of Hamiltonian structure and time-reversal symmetry, overcomes the drawbacks inherent in the conventional methods such as Nose thermostat and Nose-Hoover thermostat. Thus, this method exhibits enhanced numerical stability even when the temperature fluctuation is large. To describe PMMA, we adopt the force field which account for bond stretch, bending, torsion, inversion, partial charge, and van der Waals energy.

  • MPEG-V(ISO/IEC 23005) standardizes normative sensory effects metadata and sensory devices command for adapting the sensory effects between the virtual world and the real world. MPEG-V(Virtual) standardization has been carried out by 3DG(Dimensional Graphics) ad-hoc group inside MPEG Working Group(ISO IEC JTC1/SC29/WG11). For the scent effect, one of the sensory effects within MPEG-V, we proposed an olfactory interaction model including electronic nose and scent display to the ad-hoc group. Recently, we proposed types and elements related to the electronic nose as a sensor defined in MPEG-V standard for olfactory interaction. At the 114th MPEG meeting, the types and elements were consequently reflected on MPEG-V CD(Committee Draft) 4th edition. In this paper, we implement an electronic nose system applicable to MPEG-V standard by using MPEG-V schema, encoder, and decoder in order to assess their adequacy.

Sensor array optimization techniques for exhaled breath analysis to discriminate diabetics using an electronic nose

  • Disease discrimination using an electronic nose is achieved by measuring the presence of a specific gas contained in the exhaled breath of patients. Many studies have reported the presence of acetone in the breath of diabetic patients. These studies suggest that acetone can be used as a biomarker of diabetes, enabling diagnoses to be made by measuring acetone levels in exhaled breath. In this study, we perform a chemical sensor array optimization to improve the performance of an electronic nose system using Wilks' lambda, sensor selection based on a principal component (B4), and a stepwise elimination (SE) technique to detect the presence of acetone gas in human breath. By applying five different temperatures to four sensors fabricated from different synthetic materials, a total of 20 sensing combinations are created, and three sensing combinations are selected for the sensor array using optimization techniques. The measurements and analyses of the exhaled breath using the electronic nose system together with the optimized sensor array show that diabetic patients and control groups can be easily differentiated. The results are confirmed using principal component analysis (PCA).
