닭발 추출 젤라틴을 이용한 샐러드 드레싱의 품질 특성 (A Study on the Characteristics of Salad Dressings Containing Chicken Foot Gelatin)

  • This study was conducted to present fundamental data on the physicochemical properties and sensory qualities of salad dressings made with chicken foot gelatin. Preliminary experiments were performed to confirm the gelatin powder concentrations in preparing gelatin solutions. A 2% gelatin solution, including 0.5% agar, was prepared for use in the experiments that followed. Sensory evaluations were conducted to compare the organoleptic acceptance of dressings manufactured with differing concentrations of the additive in seasoning soybean sauce, mayonnaise, and sesame powder. The viscosities of the dressings significantly increased with increasing gelatin powder concentration. A decrease in turbidity was observed in the mayonnaise and sesame dressings. The color difference values of all dressings indicated no changes. In sensory evaluations of dressings prepared with gelatin solutions at different concentrations of 2 g (1%), 4 g (2%), and 8 g (4%) of gelatin powder, the 4 g (2%) sample received the highest score for overall acceptance. From this study, which was conducted to find an efficient use for chicken house wast product, it is anticipated that chicken feet will be utilized as a new raw material for producing collagen and gelatin, protein sources widely increasing in use with in the food and bio-industries.

치은 섬유아세포에 대한 치주포대 추출물의 세포동성에 관한 연구 (CYTOTOXIC EFFECTS OF SOLUBLE EXTRACTS FROM RERIODONTAL DRESSINGS ON HUMAN GINGIVAL FIBROBLASTS)

  • It is well known that the application of dressings after periodontal surgery have benefits to provide the comforts to patient and to promote the healing process with action of bleeding control and temporary stabilization for the operated mobile teeth. But until recently the relationship between periodontal dressings and cells which are composed of periodontium has not been clear. The purpose of this study was to evaluate the cytotoxic effect of soluble extracts from the four different kinds of periodontal dressings, two of them were eugenol type (K.H.pack, Wondrpak) and the others were non-eugenol type (Coe-pak, Periocare), on the human gingival fibroblasts in vitro. Human gingival fibroblasts were primarily cultured from gingiva around third molar during the extraction for preventive purposes. Extracts solution were prepared with culture medium by means of imersing the consistent size of periodontal dressing made from plastic mold. Cell were inoculated into the 24 well plate with $3\;{\times}\;10^4\;cells/well$ of medium at $37\;^{\circ}C$, 100% of humidity, 5% of $CO_2$, incubator for 24 hours. After discard of the supernatant of medium, those cells were cultured with original, 1/2, 1/5, 1/10 diluted soluble extract for 24, 48 and 72 hours, and counted the number of cells using the hemocytometer at each designed time and concentration. Also, the cytotoxic effect of soluble extract was measured by Wataha's MTT assay method. In briefly, cells were inoculated and cultured into 96 well culture plate with $2\;{\times}\;10^4\;cells/well$ for 24 hours. Soluble extracts were applied to cultured cells and incubated for 48 hours at same condition. $50\;{\mu}l$ of MTT solution and DMSO were added into each well for the detection of absorbance with ELISA reader. The measured data were calculated by value of colorimetric assay for survival rate. The results were as follows ; In the case of eugenol type of dressing, original, 1/2 and 1/5 diluted extracts of K.H.pack showed very low survival rate. And original extract of Wondrpak showed strong cytotoxic effect and 1/2 diluted extract showed moderate cytotoxic effect. In the case of Non-eugenol type of dressings, only original extract of Coe-pak revealed strong cytotoxic effect and Periocare had little cytotoxic effect. It is concluded that eugenol type of dressings showed more cytotoxic effect than non-eugenol types. This study suggest that use of non-eugenol dressings after periodontal surgery is recommended.

Non-comparative Study for the Observation of Clinical Efficacy and Safety of CheungYeolYiSeup-tang and Hwangbaek External dressings on Dampness-Heat Pattern Atopic Dermatitis

  • Objective : To observe the efficacy and safety of CheungYeolYiSeup-tang and Hwangbaek external dressings on dampness-heat pattern atopic dermatitis(AD) in a non-comparative study. Methods : 10 patients with AD were included for 4 weeks of treatment. Efficacy and safety assessment included the scoring atopic dermatitis index(SCORAD), typical signs and symptoms of AD, results of some laboratory tests related to toxicity, and the incidence of adverse events. Results : Improvements in efficacy parameters were observed and produced no significant changes in laboratory tests related to toxicity in these patients. Their SCORAD results significantly decreased after 4weeks(P value<.01, according to the Wilcoxon sum of ranks test). Similarly, significant reductions from baseline in subjective pruritus scores and (P value<.05 by the Wilcoxon sum of ranks test) and the mean average of individual signs and symptoms of AD were reported after 4 weeks(P value<.05, P<0.01 by the Wilcoxon sum of ranks test). There were no significant changes in eosinophil, neutrophil, lymphocyte, immunoglobulin E and ESR in blood serum by paired ttest. Conclusion :CheungYeolYiSeup-tang administration and Hwangbaek external dressings are an effective and safe treatment for the management of dampness-heat pattern atopic dermatitis.

Recent Advancements in Smart Bandages for Wound Healing

  • Wound healing is a complex and dynamic process, making the accurate and timely assessment of skin wounds a crucial aspect of effective wound care management, especially for chronic wounds. Unlike conventional wound dressings that simply cover the wound area once some form of medicine is administered onto the wound, recent studies have introduced versatile approaches to smart wound dressings capable of interacting with wound fluids to monitor physicochemical and pathological parameters to determine the wound healing status. Such electrochemical wound dressings can be integrated with on-demand, closed-loop drug delivery or stimulation systems and ultimately expanded into an ideal technological platform for the prevention, treatment, and management of skin wounds or illnesses. This article briefly reviews the wound healing mechanism and recent strategies for effective wound care management. Specifically, this review discusses the following aspects of smart wound dressings: sensor-integrated smart bandages to detect wound biomarkers, smart bandages developed to accelerate wound healing, and wireless, closed-loop automatic (on-demand) wound healing systems. This review concludes by providing future perspectives on effective wound care management.

구기자를 첨가한 드레싱의 관능적 특성 (Sensory Characteristics of Dressing made with gugija(Lycium chinense))

  • 본 연구는 구기자 추출물을 첨가하여 한국 사람의 기호에 부합하는 마요네즈, 요거트, 이탈리아 드레싱을 개발하고자 한다. 구기자 추출물 10%, 15% 그리고 20%를 첨가하여 드레싱을 만들고 드레싱의 수분 함량, pH, 색, 점도, 관능평가를 실시한 결과는 다음과 같다. 수분 함량은 구기자 추출물의 첨가량이 증가할수록 증가하였고, 당도는 감소하였다. 또한 드레싱의 pH는 구기자 추출물의 첨가량이 증가할수록 높아졌다. 구기자 추출물의 첨가량이 증가할수록 드레싱의 명도는 대조군보다 낮아졌고, 적색도와 황색도는 높아졌다. 드레싱의 점도는 대조군에 비해 구기자 추출물의 첨가량이 증가할수록 낮아졌다. 마요네즈 드레싱은 구기자 추출물이 20% 첨가된 MC3가 전반적인 기호도가 가장 높았고, 요거트 드레싱도 구기자 추출물이 20% 첨가된 YL3가 가장 선호되었다. 이탈리아 드레싱도 구기자 추출물이 20% 첨가된 GL3가 가장 선호되는 것으로 나타났다. 따라서 본 연구 결과 드레싱에 구기자 추출물을 첨가할 경우 드레싱의 색, 향, 맛, 전반적인 기호도에서 구기자 추출물을 첨가하지 않은 대조군 보다 선호됨을 알 수 있었고 한약재가 첨가된 건강한 드레싱의 개발이 가능하리라 생각된다.

과일을 이용한 드레싱의 품질특성 (Quality Characteristics of Fruits Dressing)

  • 본 연구는 기존의 마요네즈보다 칼로리와 염분의 함량이 낮으면서 색과 영양적 가치가 우수한 드레싱 개발의 일환으로 키위, 오렌지, 딸기, 사과 등의 과일을 이용한 드레싱을 제조하여 그 품질특성(수분 및 회분 함량, 색도, 무기성분, 관능검사 등)을 분석 비교 검토하였고 선행연구로 인식도 조사를 행하였다. 그 결과는 다음과 같다. 1. 과일드레싱에 대한 인식 정도는 5점 만점에 평균 3.39점으로 약간 높게 나타났으며 '편리한 음식이다'가 3.90점으로 가장 높은 인식점수를 보였다. 2. 수분함량은 49.3~59.4%의 범위로 사과드레싱이 59.4%로 가장 많은 함량을 나타내었고 그 다음으로 키위드레싱(57.2%)>딸기드레싱 (55.9%)>오렌지 드레싱(49.3%)의 순이었다. 조회분함량은 0.8~1.4%이었으며 오렌지드레싱이 1.4%로 가장 높은 함량을 나타내었고 그 다음이 딸기드레싱>키위드레싱>사과드레싱의 순이었다. 3. 색도면에서는 명도 L값은 사과드레싱이 가장 높았고 녹색도 a(-)값은 키위드레싱, 적색도 a값(+)은 딸기드레싱, 황색도 b값은 오렌지드레싱이 가장 높았다. 이들 다양한 색은 식욕촉진에 효과를 주는 것으로 나타나 그 가치가 인정된다고 여겨진다. 4. 무기성분 분석 결과, Ca의 함량은 6.7~20,4mg, Mg은 6.5~20.5mg, K은 67.2~182.6mg의 범위였고 오렌지드레싱의 Ca, Mg, K의 함량이 가장 높았다. Na의 함량은 168.8~551.7mg의 범위로 식품성분표(1999년)에서 제시한 마요네즈의 Na의 함량(551mg)보다는 대체로 낮은 편이었고 특히 키위드레싱(168.82mg)은 약 30%에 불과하여 성인병예방 차원에서 볼 때 바람직한 결과로 보인다. Ca : P 함량의 비율은 대략 1.17 : 1 수준으로 과일드레싱자체만으로도 칼슘 흡수에 매우 이상적인 비율을 갖춘 식품이었다. 5. 관능검사는 키위드레싱이 맛과 전반적인 기호도(p<0.05)에 있어 가장 좋은 평가(3.50점)를 나타냈으며 색, 냄새, 질감, 상큼한 맛은 과일의 종류에 따라 유의적인 차이가 나타나지 않았다. 이상의 결과로 볼 때 파일드레싱은 색이 아름다우면서 칼로리가 낮고 저염식으로서 그 영양적 가치가 우수하여 상품으로의 개발 필요성이 요구되며 특히 키위를 이용한 드레싱의 이용이 가장 좋을 것으로 사료된다.

Study on biopolymer delivery system and effect of wound healing with polysaccharide extracted from Agaricus blazei Murill

  • Polysaccharide-based dressings have increasingly become viable alternatives to somewhat less biocompatible and often problematic cotton or viscose gauzes traditionally used for wound dressings. Polysaccharide which is particularly abundunt in Agaricus blazei Murill is known as the bioactive materials. Polysaccharide extracted from Agaricus blazei Murill enhances the recovery of the damaged epidermal tissue and the production of epithelial cell growth factors which are necessary to heal the burn and wound on the epidermal tissue. In this study, the biopolymer delivery system of polysaccharide extracted from Agaricus blazei Murill into epidermal tissue was elucidated using the skin permeating enhancer in vitro. The enhancing effects of various penetration enhancers and some other enhancers on the permeation of ${\beta}-glucan$ were evaluated using Franz diffusion cell. Permeation of polysaccharide in nomal and burn skin was compared. Polysaccharide was studied for the burn and wound healing activity in the epidermal tissue on rats.

캐슈드레싱의 품질 및 관능특성 (The Quality and Sensory Characteristics of Cashew Dressing)

  • This study was conducted to find an efficient use for cashew. It presents fundamental data on the quality and sensory characteristics of dressings made with cashews. The color L, a value of the dressing significantly decreased with increased storage time. Color b value and viscosity of the dressing significantly increased with storage time. The acceptance of cashew dressings and foods was evaluated. The C45-3 sample received the highest score for overall preference in a sensory evaluation of the dressing. The foods received a relatively high acceptance rating. Chicken and fish cutlets received higher scores than other food. It is anticipated that cashew will be utilized as a new raw material for healthy dressing.

  • In the case of occlusive dressings currently used in dressings for burn treatment, it is impossible to confirm the replacement time, so replacement is delayed, resulting in additional infection. To solve this problem, liposomes capable of bacterial sensing were prepared using 5(6)-Carboxyfluorescein, Phosphatidylcholine, 1,2-Dipalmitoyl-sn-glycero-3-phosphocholine, Cholesterol, and 10,12-Tricosadiynoic acid. In this study, evaluation of changes in drug encapsulation rate in liposomes according to changes in three types of phosphatidylcholine phospholipids during liposome production, high-performance phosphatidylcholine phospholipids selected through vesicle size analysis, low and high temperature stability evaluation, bacterial sensitization ability evaluation, animals cell responses were assessed.
