Comparison and analysis on sheep meat quality and flavor under pasture-based fattening contrast to intensive pasture-based feeding system

  • Objective: The objective of this study was to investigate the effect of 4-month intensive feeding on the meat quality, fatty acid profile, flavor, and growth performance of grazing Hulunbuir sheep (HBS). Methods: The HBS were selected 4-months after birth in a pasture rearing system as the experimental animals (n = 44, female, average body weight 23.8±2.2 kg) then divided equally into pasture-based grazing fattening (PAS) and concentrate-included intensive fattening (CON) groups for another 4-month finishing. When finished fattening, all animals were slaughtered to collect musculus longissimus dorsi subcutaneous adipose tissue and to investigate the influences on meat quality, fatty acid profile, flavor and growth performance. Results: The results showed lambs in CON group got significantly higher live weight, hot carcass weight, and dressing percentage. The CON group had significantly higher value of redness (a*), lightness (L*) and water holding capacity (p<0.05), significantly lower value of Warner-Bratzler shear force than the PAS group (p<0.05). The subcutaneous fat from CON group lambs demonstrated a significantly higher content of C18:1 and C18:2 (p<0.05), but lower C14:0 and C16:0, indicating an increased degree of unsaturated fatty acid. The content of 4-methyloctanoic acid, 4-ethyloctanoic acid and 4-methylnonanoic acid had increased 2 to 4 times, representing a more intense odor in the CON group. However, the values were still lower than most sheep breeds reported, indicating the indoor feeding system could not fundamentally deteriorate the excellent meat characteristic of HBS. Conclusion: It was evident that lambs in CON group exhibited a better meat production performance, improved in meat color, texture and healthier fatty acid profile through pasture-weaned concentrate included intensive fattening system, which offers a good alternative regimen for lamb finishing and has a wide prospection in the HBS meat industry.

Effects of supplementing sweet sorghum with grapeseeds on carcass parameters, and meat quality, amino acid, and fatty acid composition of lambs

  • Objective: Sweet sorghum is an important forage crop for ruminants, especially in low rainfall areas. Grapeseeds are an abundant by-product of wine-making and contain bioactive substances that can improve the antioxidant capacity of meat. We examined the effect of sweet sorghum forage with supplementary grapeseeds on carcass and meat quality in lambs. Methods: Twenty-eight Small-tailed Han lambs (body weight = 19.1±1.20 kg), aged 3 to 4 months, were penned, and fed individually. The lambs were divided into four groups (n = 7 each) and were offered one of four diets: i) sweet sorghum silage; ii) sweet sorghum silage + grapeseeds; iii) sweet sorghum hay; and iv) sweet sorghum hay + grapeseeds. The grapeseeds were added to the concentrate at 6% DM and the diets were fed for 100 d. Results: Sweet sorghum silage tended (p = 0.068) to increase hot carcass weight, while grapeseeds tended (p = 0.081) to decrease dressing percentage without affecting other carcass parameters. Lambs consuming supplementary grapeseeds increased (p<0.05) meat redness and tended to decrease (p = 0.075) concentration of methionine in meat. Lambs consuming sweet sorghum silage increased (p<0.001) water content of the meat and had a lower (p<0.05) concentration of n-6 polyunsaturated fatty acids (PUFA) and n-6:n-3 PUFA ratio than lambs consuming sweet sorghum hay. Saturated fatty acids content in meat was lowest (p<0.05) in lambs consuming sweet sorghum silage with grapeseeds. Lambs with supplementary grapeseeds tended (p<0.10) to increase eicosapentaenoic acid and docosahexaenoic acid and have a lower thrombogenic index than lambs not consuming grapeseeds. Conclusion: It was concluded that sweet sorghum with supplementary grapeseeds fed to lambs; i) improved the color of the meat to be more appetizing to the consumer; ii) tended to improve the fatty acids composition of the meat; and iii) lowered thrombogenic index of the meat.

Growth and yield components of rice under different NPK rates in Prateah Lang soil type in Cambodia

  • The NPK are known as macro elements that affect crop growth and yield. In 1989, Cambodia Agricultural Research and Development Institute (CARDI) gave a recommendation rate of fertilizer on rice production based on soil types. This recommended rate of NPK seems however relatively low as compared to farmers' practices nowadays and the amount in the neighboring countries. The CARDI recommended rate for Prateah Lang soil type is 50kg N, $25kg\;P_2O_5$, $25kg\;K_2O\;ha^{-1}$ while recent farmers' practice rates are 55 - 64kg N, 24 - 46kg $P_2O_5$, $30kg\;K_2O\;ha^{-1}$. However, the overuse of chemical fertilizer will lead to un-preferable plant growth, insect pest, disease and economic yield. Thus, we examined the effect of different NPK application rates on the growth and yield components in Prateah Lang soil type in Takeo province to investigate appropriate rates for improving rice productivity with economic efficiency. This study was conducted from July to November during wet season in 2013. A multi-locational trial with 6 treatments (T0 - T5) of NPK rates in 5 locations (trial 1 - 5) with 3 replications was conducted. The different combinations of NPK application were employed from 0, 50, 60, 80, 100, $120kg\;N\;ha^{-1}$, 0, 25, 30 45, $60kg\;P_2O_5\;ha^{-1}$ and 0, 15, 25, 30, $45kg\;K_2O\;ha^{-1}$. Urea, DAP and KCl were used for fertilization. Split application was employed [basal: 20% of N, 100% of P and K, top dressing-1st: 40% of N (30DAT), 2nd: 40% of N (PI stage)]. Three-week-old seedlings of var. Phka Rumdoul were transplanted with 2 - 3 seedlings $hill^{-1}$ with $20cm{\times}20cm$ spacing. Plant length, tiller number at the maximum tillering stage and yield components were measured. The different rates of NPK application affected some yield components. The panicle number per hill was the most important key component followed by the spikelet number per panicle. However, the other parameters such as the filled grain percentage and 1000 grains weight had small effect or weak relation with the yield. Although the panicle number per hill had a significantly positive correlation with the stem number per hill, it was not correlated with the percentage of productive culms. The variation in the grain yield among the 5 trials was small and the difference was not significant. Although the yield tended to be higher at higher N and P application, there was no significant difference above 60kg N and $30kg\;P_2O_5$. The yield was the highest at 15, 30 and $45kg\;K_2O$ followed by $25kg\;K_2O$. The relationships between N, P and the stem number per hill were significantly linear positive, though it was not linear between K and the stem number. From these results, to increase rice productivity in the target area, farmers' effort to increase N and P input rather than CARDI recommendation up to 60kg N and $30kg\;P_2O_5$ will be sufficient considering economic efficiency. Besides, the amount of K application should be reconsidered.

Growth Performance, Carcass Characteristics and Plasma Mineral Chemistry as Affected by Dietary Chloride and Chloride Salts Fed to Broiler Chickens Reared under Phase Feeding System

  • Requirements of dietary chloride (dCl) and chloride salts were determined by using $4{\times}2$ factorial arrangement under four phase feeding program. Four levels (0.31, 0.45, 0.59 and 0.73%) and two sources ($NH_4Cl$ and $CaCl_2$) of the dCl were allocated to 1,472 chicks in eight dietary treatments in which each treatment was replicated four times with 46 birds per replicate. The four phase feeding program was comprised of four dietary phases: Prestarter (d 1 to 10), Starter (d 11 to 20), Grower (d 21 to 33) and Finisher (d 34 to 42); and diets were separately prepared for each phase. The cations, anions, pH, dissolved oxygen (DO), temperature, electrical conductivity (EC), total dissolved solids (TDS) and salinity were analyzed in drinking water and were not affected by dietary treatments. BW gain (BWG; $p{\leq}0.009$) and feed:gain (FG; $p{\leq}0.03$) were improved in $CaCl_2$ supplemented diets during d 1 to 10. The maximum response of BWG and FG was observed at 0.38% and 0.42% dCl, respectively, for d 34 to 42. However, the level of dCl for BWG during d 21 to 33 ($p{\leq}0.04$) and d 34 to 42 ($p{\leq}0.009$) was optimized at 0.60% and 0.42%, respectively. The level of dCl for optimized feed intake (FI; $p{\leq}0.006$), FG ($p{\leq}0.007$) and litter moisture (LM; $p{\leq}0.001$) was observed at 0.60%, 0.38% and 0.73%, respectively, for d 1 to 42. Water intake (DWI) was not affected by increasing dCl supplementation (p>0.05); however, the ratio between DWI and FI (DWI:FI) was found highest at 0.73% dCl during d 1 to 10 ($p{\leq}0.05$) and d 21 to 33 ($p{\leq}0.009$). Except for d 34 to 42 ($p{\leq}0.006$), the increasing level of dCl did not result in a significant difference in mortality during any phase. Blood pH and glucose, and breast and thigh weights (percentage of dressed weight) were improved while dressing percentage (DP) and gastrointestinal health were exacerbated with $NH_4Cl$ as compared to $CaCl_2$ supplemented diets ($p{\leq}0.001$). Higher plasma $Na^+$ and $HCO_3{^-}$ and lower $Cl^-$ and $Ca^{{+}{+}}$ were observed in $NH_4Cl$ supplemented diets ($p{\leq}0.001$). Increasing supplementation of dCl increased plasma $Cl^-$ ($p{\leq}0.04$; quadratically) and linearly reduced plasma $K^+$ ($p{\leq}0.001$), $Ca^{{+}{+}}$ ($p{\leq}0.003$), $HCO_3{^-}$ ($p{\leq}0.001$), and $Na^+$ ($p{\leq}0.001$; quadratically). Consequently, higher requirements of dietary chloride are suggested for feed intake; nevertheless, lower levels of dietary chloride are sufficient to support optimal BWG and FG with increasing age. The $NH_4Cl$ supplemented diets ameliorate breast and thigh meat yield along with overall energy balance (glucose).

볏짚 위주 사양 시 비육 흑염소의 농후사료 급여 수준이 발육, 도체특성 및 경제성에 미치는 영향 (Effects of Feeding Levels of Concentrate on the Growth, Carcass Characteristics and Economic Evaluation in Feeds Based on Rice-straw of Korean Black Goats)

  • 본 연구는 흑염소 비육에 있어서 조사료원이 볏짚 단용인 경우 농후사료 급여수준이 흑염소의 사료섭취량, 체중변화, 도체특성 및 경제성에 미치는 영향을 구명하기 위하여 실시하였다. 비육 흑염소 40두를 공시하여 농후사료 급여수준을 체중의 1.5% (T1), 2.0% (T2, 농가관행), 2.5% (T3) 및 자유채식구(T4)로 나누어 급여 하였고 조사료는 볏짚을 자유채식 시켰으며 그 결과는 다음과 같다. 볏짚인 조사료 섭취량은 농후사료 급여수준이 증가 할수록 감소하였으며, 흑염소의 일당증체량은 체중대비 농후사료 급여수준 1.5, 2.0, 2.5% 및 자유채식구가 각각 22, 50, 69 및 94 g으로 농후사료 급여수준이 증가할수록 유의적으로 증가하였다(p < 0.05). 비육 흑염소의 도체율은 농후사료 급여수준을 체중비 1.5, 2.0, 2.5% 및 자유채식 시켰을 때 각각 41.77, 42.78, 46.12 및 49.78%로 농후사료 급여 수준이 증가할수록 증가하였으며(p<0.05), 지방률도 농후사료 급여수준이 증가 할수록 유의적으로 증가하였다. 경제성 분석에서는 농후사료 급여수준이 증가할수록 소득은 증가하였으며, 자유채식구가 두당 34,270원으로 가장 소득이 높았다. 이상의 결과를 종합적으로 고려할 때 조사료 자원이 볏짚 단용일 경우 비육 흑염소의 농후사료 급여 수준은 자유채식 시키는 것이 사료이용성, 발육, 도체율 및 경제성에서 가장 유리할 것으로 사료되며, 흑염소의 비육을 위한 조사료 자원으로서 볏짚 단용은 농후사료비의 가중을 가져오므로 앞으로는 흑염소 비육을 위한 새로운 조사료 자원의 개발이 필요하다고 하겠다.

산지초지를 이용한 방목유형별이 유기흑염소의 발육과 육질에 미치는 영향 (Effects of Different Grazing Types of Hilly Pasture on Growth and Meat Quality in Organic Korean Black Goats)

  • 본 연구는 유기흑염소 생산에 기초적인 자료를 얻고자 유형이 다른 산지초지에 방목하여 흑염소의 발육과 육질에 미치는 영향을 조사하였다. 공시축은 흑염소 40두를 4처리구 (개량목초구, 유기목초구, 산야초구, 수엽류구)로 나누어 처리구당 10두씩 공시하여 2007년 5월 15일부터 2007년 11월 5일까지 174일간 농촌진흥청 축산과학원 가축유전자원시험장 방목지에서 수행하였다. 그 결과는 다음과 같다. 일당증체량은 개량목초구가 다른 시험구 보다 유의하게 높았다(p<0.05). 도체율은 개량목초구와 유기목초구가 산야초구와 수엽류구 보다 유의하게 높게 나타났다(p<0.05). 정육율은 개량목초구가 유의하게 높게 나타났다(p<0.05). 흑염소 고기의 조지방은 산야초구가 높은 경향이었다. 고기의 리놀레산과 리놀렌산은 개량목초구 보다 유기목초구, 산야초 및 수엽류구가 높은 경향이었으며, 아라키돈산은 산야초와 수엽류구가 다른 시험구 보다 높은 경향으로 나타났다. 전단력은 산야초구가 낮은 경향이었으며, 관능검사 결과 중 다즙성과 연도는 유기목초구와 산야초구가, 풍미는 산야초구와 수엽류구가 우수한 경향으로 나타났다. 이상의 결과를 종합해 보면, 산지에 방목 사육된 유기흑염소는 관행구에 비해 다소 생산성과 도체특성은 낮으나 육질 및 물리적 특성이 뒤떨어지지 않은 것으로 나타나, 안전성 높은 유기축산물 생산으로 농가소득 증대 뿐 만이 아니라 소비자 요구충족에도 가능성이 높은 것으로 기대된다.

한우 암소에서 도체형질과 도체가격간의 상관관계 (The Influence of Carcass Traits on Carcass Price in Mature Hanwoo Cow)

  • 본 연구는 성숙한 한우 암소 도체에서 몇 개의 도체형질들이 경락단가나 도체가격과 같은 가격변수의 변이에 미치는 영향력을 파악하기 위하여 도체형질과 가격변수들 간의 상관관계 추정, 다중회귀분석 및 경로분석 등을 실시했다. 자료는 강원도 홍천지역 한우 사육농가에서 번식우로 사용되다 2008년도에 도축된 96두의 도체 판정결과를 이용하였다. 도축된 암소들의 도축시 평균 나이는 약 51개월 령이었으며, 도살시 생체중, 냉도체중, 등지방두께, 등심면적, 9단계로 구분하여 평가한 근내지방도 및 도체율의 평균치는 각각 556.81 kg, 319.24 kg, 10.95 mm, $78.08\;cm^2$, 3.92 및 57.19%였다. 그리고 도체경락단가와 도체가격은 각각 12,681원 및 4,070천원이었다. 경락단가와 상관계수가 큰 형질은 MAR, DP 및 EMA 등이었고 육량지수는 상관계수가 제일 작았다. 도체 경락단가를 종속변수로 CWT, BFT, EMA MAR 및 DP등 5개의 도체 형질을 독립변수로 적합시켜 추정한 다중회귀 방정식에서 모형 방정식의 결정계수는 69.86%였고, 도체가격을 종속변수로 하여 추정한 모형 방정식의 결정계수는 85.43%였다. 다중회귀 분석에서 CWT, BFT, EMA, MAR 및 DP의 표준화 편회귀계수는 AP를 종속변량으로 한 방정식에서 각각 -0.028, -0.106, 0.107, 0.814, 0.075, 그리고 CP를 종속변량으로 하는 방정식에서는 각각 0.561, -0.060, 0.083, 0.590, 및 0.051으로 나타나 AP의 변이에 큰 영향을 미치는 형질은 MAR 이었고, CP의 변이에 큰 영향을 미치는 형질은 CWT와 MAR이었던 것으로 판단된다. 경로분석 결과에서도 AP의 변이에 큰 영향을 미치는 형질은 MAR로서 직접효과와 간접효과를 합친 MAR의 기여도는 0.668이었다. 그리고 CP의 변이에 영향을 미치는 MAR의 기여도는 0.408 그리고 CWT의 기여도는 0.397이었다. 이상의 결과를 종합해보면 육량지수는 AP나 CP에 큰 영향을 미치지 않으며 AP의 변이에 영향을 크게 미치는 것은 MAR이고 CP에 영향을 크게 미치는 형질은 MAR과 CWT였다.

옥수수 첨가 TMR 사료 급여가 거세흑염소의 발육과 육질에 미치는 영향 (Effects of Total Mixed Rations with Corn on Growth and Meat Quality of Castrated Korean Black Goats)

  • 본 연구는 TMR 사료내 옥수수 첨가비율이 비육 흑염소의 발육과 육질에 미치는 영향을 조사하기 위하여 실시하였다. 사양시험은 전라남도 농업기술원축산연구소에서 평균 3개월령 이유 거세흑염소 32두(평균체중 15.9 kg)를 대상으로 총 14개월간 수행하였다. 시험설계는 TMR 사료에 옥수수 15.0% 첨가 (T1), 옥수수 25.0% 첨가 (T2), 옥수수 35.0% 첨가 (T3), 대조구는 시판 배합사료를 급여하였으며 처리당 8두씩 시험축을 임의배치 하였다. 연구결과, 출하체중은 T2구에서 58.9 kg으로 가장 높았으며 대조구 53.1 kg 순이었다. 일당 증체량 및 사료섭취량은 T2구에서 각각 100.2 g, 1,346 g으로 가장 높았으나, 사료요구율은 T2구에서 오히려 13.4로 가장 낮았다. 도체중은 T2구에서 35.3 kg으로 가장 많았으며, 도체율은 T3구에서 61.5%로 가장 높았다. 육질특성 중 지방함량이 T2구에서 6.54%로 가장 높았으며, 가열감량은 대조구에서 15.2%로 가장 낮았으며 향미는 대조구에서 5.3으로 가장 높았다. 지방산 성분 중 oleic acid (C18:l)와 palmitic acid (C16:0)은 T2구에서 각각 48.6%, 22.4%로 가장 높았으며, stearic acid (C18:0)는 T1구에서 14.5%로 가장 높았다. 불포화지방산은 대조구에서 58.8%로 가장 높았으며 T3구 58.2%, T2구 57.8, T1구 54.4 순이었다. 이상의 결과를 종합하면 흑염소의 생산성 향상 및 육질개선을 위해서는 흑염소 TMR 사료에 옥수수를 25% 첨가하는 것이 가장 효과적인 것으로 판단된다.

  • 본 시험은 거세시기가 흑염소의 발육, 육질 및 지방산 조성에 미치는 효과를 구명하기위하여 흑염소 육성축 수컷 45두를 공시하여 거세시기를 각각 달리하여 2008년 3월 21일부터 2008년 10월 31일까지 225일간 실시하였으며 그 결과는 다음과 같다. 일당증체량은 거세시기별로 차이는 없었으나 3개월령과 5개월령에 거세한 것이 다소 높은 경향이었고, 비거세가 거세보다 높은 것으로 나타났다(P<0.05). 도체율은 15일령 거세가 7개월령 거세보다 높았고(P<0.05), 정육율은 거세시기별로 차이가 없었으나 비거세가 거세보다 높았다(P<0.05). 지방율은 거세시기가 빠를수록 높았고 거세가 비거세보다 높았다(P<0.05). 흑염소고기의 일반조성분인 수분함량은 거세시기가 빠를수록 감소하는 경향이었고, 조단백질과 조지방 함량은 거세시기가 빠를수록 증가하는 경향이었다. 육질의 물리적 특성인 전단력, 가열감량 그리고 보수력은 거세시기별로 차이가 없었으며 관능검사 결과 다즙성과 연도는 5개월령 거세가 다소 우수한 경향이었고, 향미는 7개월령 거세가 15일령과 3개월령 거세보다 우수하였다(P<0.05). 포화지방산 함량은 5개월령 거세가 높았고 3개월령 거세가 낮았다(P<0.05). 불포화지방산 함량은 반대로 3개월령 거세가 가장 높았고 5개월령 거세가 낮았으며(P<0.05) 거세와 비거세간에는 차이가 없었다. 단가불포화지방산 함량은 거세기기별로 차이가 없었으나 3개월령 거세가 비거세보다 높았다(P<0.05). 이러한 결과를 종합적으로 고려하면 흑염소의 발육과 육질 개선에 유리한 거세시기는 3~5개월령이 적정할 것으로 사료된다.
