본 연구는 국수 제조 시 전분의 첨가가 물리적 특성과 관능적인 기호도의 보완이 이루어질 것을 기대하여 국수 제조 시 전분의 종류(감자, 고구마, 옥수수)를 달리하여 첨가하여 제조하고, mixogram, 수분, 색도, texture, 인장강도 및 관능검사를 통하여 가장 품질이 우수한 전분의 종류를 밝혀내고자 하였다. Mixogram을 이용한 반죽의 특성에서 전분이 첨가되면 반죽 형성 시간이 단축되는 것으로 나타났고, 반죽 내구성을 나타내는 mixing tolerance는 대조군보다 감자전분, 고구마전분, 옥수수전분을 첨가한 국수시료들에서 높아 낮아 전분 첨가에 의해 반죽의 내구성이 증가함을 알 수 있었다. 전분을 넣어 제조한 생면의 수분함량은 감자전분, 고구마전분, 대조군, 옥수수전분 순이었고, 생면 중 명도가 가장 높은 것은 옥수수전분을 첨가한 시료이었고, 조리면의 경우에는 감자전분을 첨가한 국수이었다. 생면의 경도는 전분을 첨가하지 않은 대조군이 가장 컸고, 씹힘성의 경우 고구마전분 첨가 국수가 가장 컸으며, 조리면의 경도는 옥수수전분 첨가시료가 가장 컸고, 대조군이 가장 작았다. 생면의 인장길이는 전분을 첨가하지 않은 대조군이 가장 컸고, 인장 강도는 고구마전분을 넣은 것이 가장 컸다. 조리면의 인장길이 값은 생면보다 작았고, 인장강도는 조리면이 커졌다. 관능검사 결과 고구마전분을 첨가한 국수는 윤기, 구수한 맛, 쫄깃쫄깃한 정도 모두 가장 높은 것으로 평가되었으며, 기호도 검사결과, 고구마전분을 첨가한 국수는 향, 맛, 질감 및 전체적인 기호도의 항목에서 가장 선호되었다. 따라서 mixogram, 수분, 색도, texture, 인장강도 및 관능검사를 실시한 결과 밀가루에 고구마 전분을 첨가하여 제조한 국수의 품질이 가장 우수한 것으로 나타났다.
본 연구는 연잎가루를 0, 1, 2, 3, 4%를 첨가한 만두피를 제조하여 품질특성을 조사하였다. 만두피의 수분결합능력과 수분함량은 연잎가루 첨가량에 따른 유의적인 차이는 없었다. 50, 60, $70^{\circ}C$의 용해도는 연잎가루 첨가군이 대조군보다 유의하게 감소하였으며, 팽윤력은 연잎가루의 첨가량과 온도가 증가할수록 모든 군에서 증가하였다. 만두피의 조리 후 중량, 부피와 수분흡수율은 연잎가루 첨가량이 증가할수록 감소하였다. 국물의 탁도는 연잎가루 첨가량이 증가할수록 용출 성분들이 유의하게 증가하였다. 만두피 반죽에서의 L값과 b값은 연잎가루 첨가량이 증가할수록 감소하였으며, a값은 연잎가루 첨가량이 증가할수록 증가하였다. 경도와 부착성에서는 대조군이 가장 낮았으며 경도에서 WLL3이, 부착성에서는 WLL2가 가장 높았다. 응집성, 탄력성, 점착성과 씸힘성에서는 모든 시료간 유의적인 차이는 없었다. 관능검사에서 색, 향미, 점착성, 전반적인 기호도에서 3%첨가군이 높았고, 점착성, 부드러움, 씹힘성은 유의적인 차이가 없었다. 이상의 실험 결과 연잎가루 특유의 색과 맛을 가미한 연잎 만두피를 제조하는데 연잎가루 3% 첨가가 바람직할 것으로 사료된다.
유과의 저장성 향상과 기능성 효과가 있는 소재를 개발하기 위하여 구기자 분말(Lycii fructus powder)을 첨가한 유과를 제조하여 $50^{\circ}C$에서 40일 동안 저장하면서 유과의 저장과정 중 항산화효과와 품질특성을 조사한 결과는 다음과 같다. 구기자 첨가 유과 중 구기자 5% 첨가 유과의 밀도와 부피가 가장 높게 나타났고 대조군에 비해 구기자 첨가 유과의 퍼짐성과 수분함량이 더 많이 증가하였다. 색도에서 구기자 첨가량이 많을수록 L값은 낮게, a값과 b값은 높게 나타났으며 조직감은 구기자 함량이 증가할수록 높게 나타났다. 구기자 유과의 관능평가에서는 유과의 색, 맛, 풍미, 조직감에서 구기자 5% 첨가 유과가 가장 높은 점수를 보였으며 대조군이 전반적인 기호도에서는 가장 낮은 점수를 나타냈다. 저장 기간 중 구기자 유과의 산가를 살펴보면 저장기간이 경과함에 따라 모든 실험군에서 유의적으로 증가하였고 대조군보다 구기자 첨가군에서 훨씬 낮았으며 구기자 5%첨가 유과에서 가장 낮은 산가를 나타냈다. 과산화물가는 저장 20일까지는 약간씩 증가하다가 그 후 30일까지는 급격히 증가하다가 감소하는 경향을 보였으며 과산화물가 역시 구기자 5% 첨가 유과에서 가장 낮은 과산화물가를 나타냈다. TBA가는 대조군에 비해 구기자 첨가군이 낮은 값을 나타내 지방의 산화를 지연시켰음을 알 수 있었으며, 항산화 활성이 뛰어난 것을 확인할 수 있었다. 이와 같은 결과로부터 구기자 분말을 유과에 첨가 제조 시 저장성 향상과 기능성 효과를 갖는 소재로써의 가능성이 확인되었다.
Ninety six Rambouillet ${\times}$ Kaghani intact male lambs of 18 months of age were divided into 6 groups of 16 lambs each, groups being G-1, G-2, G-3, G-4, G-5 and G-6. Average liveweight of animals on different treatments at day 0 of the experiment was G-1 (24.68 S.D 3.35), G-2 (24.56 S.D 2.55), G-3 (24.53 S.D 2.90), G-4 (24.51 S.D 3.38), G-5 (24.58 S.D 3.58) and G-6 (24.81 S.D 3.43). Animals on treatment G-1 were fed only maize silage ad libitum, G-2 had been offered maize silage ad libitum plus 4.8 kg of commercial concentrate (Sona Vanda) per group, G-3 maize silage ad libitum plus 4.8 kg of crushed maize grain per group. G-4 lambs were fed oat silage ad libitum plus 4.8 kg of crushed maize per group, G-5 oat silage plus 4.8 kg of commercial concentrate per group and G-6 only oat silage ad libitum. The results showed highly significant differences (p<0.01) among treatment groups in silage intake throughout the feeding trial. G-2 group showed the highest silage intake while treatment G-4 showed the lowest silage intake for the first two months and treatment G-6 for the last two months. The results of growth rates (g/d/animal) showed that treatments G-1 and G-6, where no supplementation was given, had a weight loss throughout the feeding trial. However, weight loss in treatment G-6 was more severe than treatment G-1. Treatments G-2, G-3, G-4 and G-5 all showed weight gain however, treatment G-2 had the most gain. G-2 group also showed the highest wool production while G-6 the lowest. These results indicated that silage when made from full bloom crops of oats and silage fed alone without any supplementation causes weight loss in sheep. Supplementation with concentrates having 19% CP is far better than the crushed maize grain and maize silage is better than oats silage. Maize silage is superior than oat silage however, better performance could be expected if silages were made at the early bloom (dough) stage of plant maturity. The results indicate that treatment G-2 shows highest response while treatment G-6 the lowest. So the response of different treatments on both the parameters of weight gain and wool production is almost similar.
Three microorganisms and one chemical preservative were tested for their effects on the fermentation and aerobic stability of whole-crop wheat, sorghum and maize silages. Wheat at the early dough stage, sorghum at the late milk stage and maize at the one-third milk line stage were harvested and ensiled in 1.5-l anaerobic jars untreated or after the following treatments: control (no additives); Lactobacillus plantarum (LP) at $1.0{\times}10^6$ colony-forming units (CFU)/g of fresh forage; L. buchneri (LB) at $1.0{\times}10^6$ CFU/g; Propionibacterium acidipropionici (PA) at $1.0{\times}10^6$ CFU/g; and a formic acid-based preservative (FAP) at 3 ml/kg of fresh forage weight. Three jars per treatment were sampled on d 90 after ensiling, for chemical and microbiological analysis. At the end of the ensiling period, 90 d, the silages were subjected to an aerobic stability test lasting 5 d. In this test, $CO_2$ produced during aerobic exposure was measured along with chemical and microbiological parameters which serve as spoilage indicators. The silages inoculated with LP had higher concentration of lactic acid compared with the controls and the other treated silages (p<0.05). The controls and LP-inoculated silages spoiled upon aerobic exposure faster than LB, PA and FAP-treated silages. The controls and LP-inoculated silages spoiled upon aerobic exposure faster than LB, PA and FAP-treated silages due to more $CO_2$ production (p<0.05) in these two groups and development of yeasts unlike the other groups. In the experiment, the silages treated with LB, PA and FAP were stable under aerobic conditions. However, the numbers of yeasts was higher in the LP-inoculated wheat, sorghum and maize silages compared with the LB, PA and FAP-treated silages. The LB, PA and FAP improved the aerobic stability of the silages by causing more extensive heterolactic fermentation that resulted in the silages with high levels of acetic and propionic acid. The use of LB, PA and FAP as silage additives can improve the aerobic stability of whole-crop wheat, sorghum and maize silages by inhibition of yeast activity.
Over 2,000 ha of rice fields in the western and southern coastal region of Korea were flooded with sea water during the spring tide, on August 19-21, 1997, and the rice plant at heading stage was injured. The field surveys were undertaken at the sea water flooded paddy fields in Chonbuk Province, to identify the injury symptoms and rice yield damage subjected to different flooding condition and desalinization methods. Five days after sea water flooding at heading stage, the flag leaves of rice plants flooded with 30 ㎝ deep sea water withered from the tip, the withering progressed to the lower leaves in deeper flooding. The spikelets were spotted black and discolored from the tip at 50 ㎝ deep flooded rice, and some panicles changed to white at 80 ㎝ deep flooded rice. Most of the rice leaves submerged completely for an hour were withered and most of panicles changed to white. The milled rice yield, percentage of ripened grain, and 1000 grain weight of flooded rice decreased with deeper flooding water, higher water salinity and longer flooding time. Even under the same flooding conditions, the damage of rice yield varied with the growth stage: heading stage>dough stage>booting stage. Rice yield damage was less in the fields on the upper riverside than those of the fields on the estuary and seaside, because of lower water salinity. In a flooded field, the rice yield damages were reduced as the distance increased from the levees where the sea water inflowed and increased as the distance increased from the fresh water irrigation gate. The desalinization treatments consisting of frequent exchange of irrigation water and spraying with fresh water soon after flooding effectively reduced the rice yield damage.
Whole forage sorghum (saccharatum) cultivar FS5 was harvested at the soft dough ($303{\pm}9g\;kg^{-1}$ DM) stage of maturity. The sorghum was chopped into approximately 20 mm pieces and ensiled under laboratory conditions in 1.5 L Weck glass jars. At ensiling, it was treated with two commercial silage inoculants: Pioneer 1188 (Inoculant A) and Eco-corn (Inoculant B). The inoculant A and B was applied at ca $2{\times}10^5$ or $2{\times}10^4$ colony forming units $g^{-1}$ DM., respectively. Silage with no additives served as a control. Three jars per treatment were opened on days 2, 4, 8, 15 and 60 post-ensiling to study fermentation dynamics. After 60 days of ensiling the silages were analyzed and subjected to an aerobic stability test lasting 5 days. Results showed that both inoculants caused a more rapid rate of pH decrease and a higher amount of lactic acid production. All the silages were well preserved and were stable upon exposure to air. Inoculants did not influence (p>0.05) the ash and total N contents, but tended to reduce acetic acid (p<0.05), butyric acid (p<0.01) and propionic acid (p<0.01) contents, and to increase the lactic acid content (p<0.01). The lower DM content of silages treated with Inoculant A agrees with the greater gas loss resulting from the DM loss, which was in good agreement with the higher yeast counts upon aerobic exposure. Silage treated with inoculant B had the highest DM (p<0.05) and lactic acid contents (p<0.01), and the lowest acetic acid content (p<0.05), which agrees with the rapid reduction of pH and smaller gas loss. Inoculant B reduced the ADF (p<0.01), ADL and NDF (p<0.05) contents, which also indicates smaller losses of organic soluble material. The control silages contained the highest levels of volatile fatty acids but no lactic acid, indicating secondary fermentation. It was concluded that both inoculants may improve the fermentation process, since silages from all treatments were stable upon aerobic exposure, noadvantage could be attributed to any of the inoculants used.
Purpose: Treatment of diabetic foot infection due to methicillin-resistant Staphylococcus aureus (MRSA) remains challenging. Applying vancomycin-impregnated cement is one of the best methods of treatment. Vancomycin-impregnated cement has been used worldwide; however, to date, there is a limited number of studies regarding its use. We evaluated the duration of antimicrobial activity of vancomycin-impregnated cement stored at room temperature after manufacturing. Materials and Methods: The vancomycin-impregnated cement was manufactured by mixing 1 g of vancomycin with 40 g of polymer and adding 17.90 g of liquid monomer. The cement dough was shaped into flat cylinders with diameter and height of 6 mm and 2 mm, respectively. Another cement of the same shape without mixing vancomycin was prepared as the negative control. All manufactured cements were sterilized with ethylene oxide gas and stored at room temperature. Each cement was placed on Mueller Hinton agar plate lawned with standard MRSA strain. Standard vancomycin disk and gentamicin disk were placed together. After 24 hours, the diameter of inhibition zone was measured, and if the diameter was less than 15 mm, vancomycin-impregnated cement was regarded as a loss of antimicrobial activity. The study was repeated every 2 weeks until vancomycin-impregnated cements lost their antimicrobial activity. Results: Vancomycin-impregnated cement stored for a duration of 16 weeks created a 14 mm inhibition zone, while vancomycin disk created a 15 mm inhibition zone. Vancomycin-impregnated cement stored for a duration of 17 weeks created 7 mm and 9 mm inhibition zones, while vancomycin disk created 16 mm and 15 mm inhibition zones, respectively. Conclusion: We found a decrease of antimicrobial activity in vancomycin-impregnated cements after 16 weeks. After 17 weeks, they showed definite loss of antimicrobial activity. Therefore, we recommend not using vancomycin-impregnated cement spacers that has been stored for more than 16 weeks at room temperature.
본 연구는 전남 신안군 비금도 간척 논에서 백수현상이 나타난 벼를 조사료 자원으로 활용하기 위해 백수 벼 사일리지의 사료가치 및 유기산 등 품질을 조사하기 위해서 수행하였다. 벼 백수현상이 가장 심한지역의 총체 벼의 수량은 정상지역보다 약 800 kg/ha 정도 감소되었다. 그리고 벼 백수현상이 가장 심한지역에서의 총체 벼의 조단백질 함량 및 TDN 함량은 벼 백수현상이 없는 정상생육 지역 보다 약간 높은 함량을 보였으나 ADF 및 NDF 함량은 현저하게 감소되었다 (p<0.05). 벼 백수현상이 가장 심한지역과 정상지역의 총체 벼 사일리지 pH는 4.0~5.0을 나타냈으며 젖산균 접종에 의해 pH가 저하되었다. 벼 백수지역과 정상생육 지역 모두 젖산균 접종에 의해 젖산함량은 증가하였으며 초산과 낙산함량은 감소되었다(p<0.05). Flieg법에 의한 총체 벼 사일리지의 품질등급은 젖산균을 접종함으로써 2~3단계 상승되었다. 따라서 본 연구의 결과에서 나타난 바와 같이 백수현상이 나타난 벼도 조사료원으로 활용될 수 있다.
제분방법별(Pin mill, Colloid mill, Micro mill, Jet mill)로 제조한 쌀가루의 특성과 쌀 수제비 제조후 식미에 미치는 영향을 조사하였다. 지방, 회분, 단백질은 제분 방법에 따라 큰 차이를 보이지 않았다. 제분방법별 쌀 가루의 청값, 열수가용성 아밀로오스 함량, 그리고 전분 손상도는 Jet mill, Micro mill, Colloid mill, Pin mill의 순으로 높았음을 나타내었다. 수분흡수지수, 수분용해지수 및 보수력을 측정한 결과 전분손상도가 증가함에 따라 전체적으로 증가하였다. 또한 시료농도 15%의 겔을 형성하였을 때 Pin mill의 경우 강도에 있어서 가장 높음을 보여주었다. 아밀로그램을 이용한 호화개시온도와 최고점도는 입자가 미세하여 짐에 따라 점차 낮아지는 경향을 보였으며 Differential Scanning Colorimetry 측정에 의한 측정값도 아밀로그램에서와 동일한 양상을 나타내어 호화흡열의 면적에서 산출한 호화엔탈피$({\Delta}H)$가 Jet mill의 경우 0.83 kcal로 가장 낮았다. 즉 전분의 손상도가 증가함에 따라 호화엔탈피는 감소하였다. 쌀수제비 제조실험 결과는 Jet mill이 관능검사 결과 가장 우수한 것으로 판명되었고 반죽상태도 양호함을 보여주었다.

② 유료서비스를 이용하려는 회원은 정해진 요금체계에 따라 요금을 납부해야 합니다.
제 5 장 계약 해지 및 이용 제한
제 15 조 (계약 해지)
회원이 이용계약을 해지하고자 하는 때에는 [가입해지] 메뉴를 이용해 직접 해지해야 합니다.
제 16 조 (서비스 이용제한)
① 당 사이트는 회원이 서비스 이용내용에 있어서 본 약관 제 11조 내용을 위반하거나, 다음 각 호에 해당하는
경우 서비스 이용을 제한할 수 있습니다.
- 2년 이상 서비스를 이용한 적이 없는 경우
- 기타 정상적인 서비스 운영에 방해가 될 경우
② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
