This study investigated the effect of different dietary fats and fibers on colon tumor incidence and cell proliferation, the levels of eicosanoids and polyamines in colonic mucosa of DMH-treated rats. The experiment was conducted on male Sprague Dawley rats using a 2 $\times$3 factorial design with two fats (corn oil and DHA-rich fish oil) and two fibers (cellulose and pectin) and a fiber-free control. The rats were find an experimental diet containing 15% (w/w) dietary fat and 6% (w/w) fiber for 25 weeks. Tumor incidence was Bower in rats fed fish oil as opposed to corn oil. The levels of arachidonic acid (AA) and eicosanoids ($PGE_2, and TXB_2$) in normal colonic mucosa were significantly lower in rats fed fish oil and there was a concomitant increase of docosahexaenoic acid (DHA). The levels of eicosanoids and AA in tumor tissues were significantly higher than those of normal colonic mucosa. The level of polyamines in normal colonic mucosa was not affected by dietary fats but was significantly lower than that in rumor tissues. Dietary fiber did not have a significant effect on rumor incidence and the levels of AA, eicosanoids and polyamines. Overall, fish oil rich in DHA reduced cell prolifiration and thus inhibited colon carcinogenesis through its effect on the distribution of AA and production of eicosanoids in normal colonic mucosa. However, its effect on colon carcinogenesis revealed a lack of consistency depending on the type of dietary fiber in diet.

The growth and health of the fetus and neonate are directly influenced by the nutritional and physiological status of sows. Sows are often under catabolic conditions due to restrict feeding program during pregnancy and low voluntary feed intake during lactation. The current restrict feeding program, which aims at controlling energy intake during gestation, results in an inadequate supply of dietary protein for fetal and mammary gland growth. Low voluntary feed intake during lactation also causes massive maternal tissue mobilization. Provision of amino acids and fatty acids with specific functions may enhance the performance of pregnant and lactating sows by modulating key metabolic pathways. These nutrients include arginine, branched-chain amino acids, glutamine, tryptophan, proline, conjugated linoleic acids, docosahexaenoic acid, and eicosapentaenoic acid, which can enhance conception rates, embryogenesis, blood flow, antioxidant activity, appetite, translation initiation for protein synthesis, immune cell proliferation, and intestinal development. The outcome is to improve sow reproductive performance as well as fetal and neonatal growth and health. Dietary supplementation with functional amino acids and fatty acids holds great promise in optimizing nutrition, health, and production performance of sows and piglets. The resistance of docosahexaenoic acid (DHA) incorporated $L-{\alpha}-phosphatidyl$ -choline (PC) liposomes against autoxidation was studied for application to food and cosmetic industry. For the preparation of vitamin-C/calcium alginate gel entrapped DHA-PC-liposomes (AVDLs), DHA incorporated PC bilayer was hydrated with vitamin-C containing calcium alginate solution, and the fraction containing liposome was suspended in $CaCl_2$ solution. DHA loading efficiency was calculated by TLC scanning method The morphological examination of AVDLs was performed with transmission electron microscopy (TEM) and lipid peroxidation was measured with an assay for thiobarbituric acid reactive substance (TBARS). DHA loading efficiency was about 17 % of initial loading volume, and when AVDLr containing 0.2 % vitamin C, lipid oxidation was minimized.
Diacylglycerol-oil (DAG oil) and four kinds of fatty acids [C16:0, C18:0, perillar oil-hydrolyzate(C18:3, 59.7%) and docosahexaenoic acid(DHA, C22:6, 63.7%)] were enzymatically esterified with 1:0.5, 1:1 and 1:1.5 molar ratio (DAG oil: fatty acids) to produce structured DAG. The reaction mixture were catalyzed by addition of sn-1,3 specific Lipozyme RMIM with 10 wt% of total substrates, and reacted for 1, 3, 6 and 24 hr at $62^{\circ}C$ with 220 rpm on the shaking water bath. The produced DAG were analyzed by TLC. In the result, the proportion of each fatty acid [(C16:0, C18:0, perilla oil-hydrolysate(C18:3, 59.7%) and DHA(C22:6, 63.7%)] on DAG products were increased as molar ratios of substrate increased. Among them, DHA showed the least reaction rate in which 24.2 % of DHA was found in the structured DAG molecules after 24 hr reaction with 1:1.5 molar substrate amount ratio.

본 연구는 오리육의 출하 일령에 따른 수율 및 물리적 특성, 지방산 조성의 변화 구명하고자 수행하였다. 지방산에서 Oleic acid(C18:1, n9)는 45일에서 70일령으로 증가함에 따라50.87에서 51.32%로 높아졌다. Docosahexaenoic acid(C22:6, n3, DHA)는 가슴 육에서는 전혀 검출되지 않았으나 다리 육에서 $0.13{\sim}0.28%$로 미량이 검출되었다. 육색에서 적색 도를 나타내는 $a^{\ast}$값은 가슴부위에서 $16.67{\sim}17.92$를 나타냈고 다리는 $15.81{\sim}17.15$로 나타나 가슴 및 다리육의 적색도가 비슷한 경향을 나타냈다. 가열 감량은 가슴 육에서 $26.37{\sim}28.79%$이고 다리 육은 $30.32{\sim}31.32%$로 다리 육에서 가열감량이 $2{\sim}4%$증가한 것으로 나타났다. 전단력에서는 45일령이 2.20, 70일령 2.84로 사육일령이 증가함에 따라 함께 증가하였다. 우리나라 오리고기의 평균치인 2.1kg의 부분 육별 수율은 통 다리가 14.1%, 통 날개 8.7%, 통 가슴 12.5%로 통 다리와 통 가슴의 비율이 거의 유사하게 나타났다.
Off-flavors and unfavorable odors in tuna fish oil were successfully removed and identified using supercritical carbon dioxide extraction, while retaining variable compounds, polyunsaturated fatty acids such as EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid). Samples of oil were extracted in a 100 mL semi-batch stainless steel vessel under conditions which ranged from 8 to 20 MPa and $20\;to\;60^{\circ}C$ with solvent ($CO_{2}$) flows from 10 g/min. GC-MS was used to identify the main volatile components contributing to the off-flavors and odors which included 2-methyl-1-propanol, 2,4-hexadienal, cyclopropane, and octadiene. Analyses of oil extracted at $40^{\circ}C$, 20 MPa showed a 99.8% reduction in dimethyl disulfide. Other significant off-flavors identified were 2-methyl-butene, 3-hydroxy butanal and ethylbenzene.
This study was designed to determine changes of serum glucose and lipid levels in noninsulin dependent diabetes mellitus patients during different doses of docosahexaenoic acid (DHA)-rich fish oil supplementation. All patients had a fasting blood glucose of less than 180mg/dl, a LDL-cholesterol of less than 160mg/dl, and a triglyceride of more than 160mg/dl. None had clinical evidence of renal, hepatic or coronary vascular disease. Sixteen patients served as control. Seven patients ingested 2.00g of fish oil(low dose group), consisting of 0.30g eicosapentaenoic acid(EPA) and 0.55g DHA. The group of modest dose(n=9) was provided 3.91g of fish oil, consisting 0.59g EPA and 1.08g DHA. After 4 weeks, serum triglyceride concentration showed a mild but nonsignificant elevation in control group, a 9% decrease(194 to 177mg/dl) in the group of low dose of fish oil and a 28% decrease(206 to 161mg/dl) in the group of modest dose. The level of high density lipoprotein(HDL), HDL2, HDL3 and total cholesterol in all groups were not changed. There was a mild increase in malondialdehyde and low density lipoprotein(LDL)-cholesterol concentration and decrease in $\alpha$-tocopherol concentration. However, these changes were not significant.
Squid is a sustainable source of long-chain omega 3 fatty acids. This study aims to assess the safety and triglyceride-lowering efficacy of refined oil derived from the squid(Todarodes pacificus) viscera. Male and female participants with elevated fasting serum lipids (i.e., total cholesterol of ≥5.2 mmol/L or fasting serum triglyceride of ≥1.65 mmol/L) were randomly allocated to the control (n = 52) or squid oil group (n = 52), and participants in the latter group were instructed to consume 3 g of squid oil daily for 60 days. None of the subjects reported adverse events associated with the consumption of squid oil. Baseline clinical chemistry and hematological parameter values and those toward the end of the treatment period were similar, and all values were within the normal range. Fasting cholesterol and triglyceride levels in the control and squid oil groups were similar; however, toward the end of the 60 day study period, these levels significantly reduced in the squid oil group relative to those in the control group (P< 0.01). However, high-density lipoprotein-cholesterol remained unchanged in both groups. Thus, it can be inferred that squid oil is a safe source of long-chain omega-3 fatty acids and has beneficial effects on the blood lipid levels. This is the first clinical study on squid oil usage, and suggests that it could be a sustainable source of omega 3 fatty acids.
Marine fungus, Thraustochytrium aureum ATCC 34034, was incubated in artificial sea water media in order to produce docosahexaenoic acid(DHA). Cultures were performed at $24^{\circ}C$ in light for 3 days with orbital shaker at 200rpm. Maximum cell productivity of 1.34g/L and DHA yield of 41.4 mg/L were obtained by using this method, which is almost the twice level of DHA yield obtained for the strains reported previously. This strain did not produce DHA in YM media and YPG media. The results indicate that salinity influenced cell growth and production of DHA.
This study was performed to determine whether the length of the feeding of the controlled experimental diet to the dam resulted in changes to the dam milk or pup brain fatty acid composition. As a first method, females have been obtained at 3 weeks of age and fed the experimental diet throughout their growth to adulthood including mating, pregnancy, and lactational periods. As a second method, in order to shorten this long and expensive process, time-pregnant dams were obtained as early as possible from a commercial supplier, on day 3 of gestation, and immediately switched to the experimental diet. At birth, the milk of dams prepared by these two different methods was compared by collecting the stomach contents of the pups. This showed a slight increase in docosahexaenoic acid (DHA) and arachidonic acid (AA) in the pup stomach contents from the time-pregnant dams. There were no significant changes in the brain fatty acid composition of pups between the two different lengths of the experimental diet intake. By the 10 days of age, there were only minor differences in the milk fatty acid composition of pup stomach contents from the two sets of dams. However, the pup brains of the time-pregnant groups at 10 days showed increased AA and DHA due to intake of the chow diet including AA, DHA and eicosapentaenoic acid (EPA). Thus, the history of the maternal feeding could affect the results under these particular circumstances, but the differences were minimal.
