Purpose: This study was conducted to obtain the fundamental data on prevention and management of musculoskeletal symptoms, and to assess the prevalence, risk factors and job characteristics of musculoskeletal symptoms in hotel employees. Methods: The work sampling analysis was carried out by OWAS, and the prevalence was surveyed in term of NIOSH diagnostic criteria and work related risk factors on 263 hotel employees in Busan, Korea, using structured self-administered questionnaire from Jan. 20 to Feb. 26, 2010. The collected data were analysed by the SPSS 18.0. Results: 1) The prevailing rate of musculoskeletal symptoms by NIOSH diagnostic criteria was 43.80% for total subjects and 27.91% for shoulders, 12.79% for neck, and 11.24% for back/waist, respectively. 2) Factors affecting the prevalence of musculoskeletal symptoms were examined and multivariate logistic regression analysis was performed. As a result, women, having a burden of musculoskeletal work, increased work time in case of a higher risk of the prevalence of musculoskeletal symptoms (P<0.1). 3) The body parts and the department with the prevalence of musculoskeletal symptoms showed a significant difference (P<0.05) compared with symptoms on shoulders, arms/elbows, and ankles/feet. Conclusion: The prevalence of musculoskeletal symptoms by NIOSH diagnostic criteria in hotel employees was relatively high showing 43.80% for total subjects and higher in departments of laundry, reservations, cooking, food&beverage, dishwashing, and room cleaning than others.
The following study was done to investigate foodservice management practice. Total subjects were 18 foodservices in social welfare facilities in Seoul. Among studied facilities, nine were the welfare facilities for children, five were the welfare facilities for elderly, two were the welfare facilities for a mentally and physically disabled person and the remaining two were vagabond care facilities. Methods used were mainly questionaires. These questionaires were answered by manager and interviews were also done for a same person. Equipments were evaluated by investigators using the evaluation form. The results of the study were summarized as follows. Number of cooks and assistant cooks among employee in foodservice establishment were about 2-6 persons. One dietitian is stationed in 2 places among 18 places. Food purchasing and menu plannings were mainly practiced by manager, secretary and other personnels, in more than 50% of social welfare facilities. The type of the menu in most facilities was the set menu. The period of turn over for cycle menu was a week in 50% of facilities. Seventy seven point eight percentage of the welfare facilities were used the weekly or monthly cycle. For the food preparation, there was almost no place using standard recipes. Foodstuffs were purchased in local market. Moreover, the preference test of served foods were done for residence of each facilities. But it was not applicated effectively. Conditions of most equipments in the kitchen were defective specially in dishwashing and sterilization step.

The purpose of this study was to find out the participation and perception on meal management of the junior and high school students and their fathers. Total of 446 junior and high school students in Pohang and Youngduk in Gyeongbuk were participated in the questionnaire survey. Among the 446 questionnaires collected, 385 questionnaires were analyzed for this study. The results of this study were summarized as follows. 1. Students participation frequency on meal management was quite insufficient, once or twice a month in average, and was differed by sex that female students participate more frequently than males. High school male students who have never been taught the home economics course showed the lowest participation. 2. Among the meal planning, grocery shopping, cooking, and dishwashing, 60% of the students chose cooking as the most preferred work. As whole, they chose the meal planning as the most difficult work, but high school male students chose cooking as the most difficult work. 3. Most of the students wanted to learn more about food purchasing, meal planning, cooking skill, table setting, food storage and table manners, the priority was given to table manners and cooking skill. 4. Participation score on meal management of student’fathers was even lower than that of students, only a little more often than once or twice a year. Because son usually identifies himself with his father, father should participate more often than now. 5. As for responsibility of meal management in the future, 78.2% of the male students and 91.8% female students answered that husband and wife must share the responsibility together when both husband and wife have jobs.
Background: Because a forward-leaning posture can cause increased back muscle activity and pain. Therefore, an innovative method to reduce back muscle activity and pain is required. Objects: This study aimed to investigate the effects of a head support on muscle activity and pain in a forward-leaning posture. Methods: A total of 14 male and 16 female students (average age, 21.65 ± 2.37 years; height, 166.15 ± 7.90 cm; and weight, 60.65 ± 9.00 kg) were recruited for the experiment. Two of them were excluded due to musculoskeletal disorders. The muscle activity and pain in the forward-leaning posture were assessed while participants washed dishes for 7 minutes with and without a head support. The condition of using a head support was randomly performed with a 5-minutes break. To confirm a lumbar flexion angle of 30° during the experiment, myoVIDEO was used, and surface electromyography was used to measure muscle activity. Pain was assessed using a 10-point visual analog scale (VAS). The Wilcoxon signed-rank test was used to analyze the data, with p < 0.05 indicating statistical significance. Results: The cervical, thoracic, and lumbar erector spinae muscle activities significantly decreased with the use of the head support, but there was no significant change in the gluteus maximus. There was a significant decrease in the VAS score for the lumbar erector spinae (p < 0.05), but there was no significant change in the VAS score for the cervical region. Conclusion: The use of a head support in a forward-leaning posture reduced cervical, thoracic, and lumbar erector muscle activity and pain. Therefore, it could be recommended during working in a forward-leaning posture, such as during dishwashing, cooking, and working as a factory employee.
BACKGROUND/OBJECTIVES: This study aimed to examine the association of Japanese schoolchildren's involvement in at-home meal preparation with food intake and cooking skill. SUBJECTS/METHODS: We included 1,207 fifth-grade children aged 10-11 years and one parent of each child. A cross-sectional survey was used to collect data on involvement in at-home meal preparation. Correspondence analysis was used to classify involvement in at-home meal preparation into three groups: food-related activities (cooking only or with other activities such as shopping, table-setting, clean up, and dishwashing), non-food-related activities (table-setting and/or clean up), and no (helping) activities. Food intake was assessed using a food frequency questionnaire. Logistic regression models were used to examine involvement in at-home meal preparation associations. RESULTS: The sample consisted of 1,207 fifth-grade children. Vegetable intake was lower in the no (helping) activities group than the food-related activities group (95% CI; boys: 1.2, 5.1, girls: 2.0, 8.9). Fewer children in the non-food-related activities group reported they were able to make a portion of their meals compared with the food-related activities group (95% CI; boys: 1.6, 3.5; girls: 1.5, 3.2). CONCLUSIONS: Children in the food-related activities group showed more favorable food intake and cooking skills than children in the no (helping) activities or non-food-related activities group.

This research used Analytic Hierarchy Process(AHP) to analyze the importance and priority of functional space and evaluation factors of each functional space of the military dining facility. Dining in the military is an important factor in restoring combat power and promoting morale. The military dining facility serves as a not only for meals, but also for watching TV, education and club activities. Workers working in dining facility spend most of their work hours in dining facility, perform tasks such as cooking, dishwashing, and leftover disposal, and take breaks. As such, the military dining facility is a space where various functions are performed, and space planning should take into account these various functions when planning the building of the dining facility. However, the criteria for defense and military facilities, which are the basis for planning the space of military dining facility, are calculated only by simply analyzing the standard floor plan to match the size of the person-to. Therefore, when there is space to be reduced in the total area, there are side effects such as leaving visible table space without consideration for priority or functional space, unseen office space, and adjusting the entire area through reduction of the lounge. Accordingly, based on the priority of the space that the staff of the military dining facility considers important, this research aims to analyze the characteristics of each functional space through classification according to its unique function. This can be an indicator that can be used as a basis for future revision of the building floor area standards of the defense and military facilities standards, and it can improve usability with an efficient space plan that takes into account the characteristics of the Korean military and the satisfaction of its workers. Furthermore, efficient use of the defense budget through rational building plans can contribute to budget reduction.

This study was conducted to determine the washing conditions in which surfactants were not detected after washing fruits and vegetables with detergent. Residual surfactants were analyzed using LC-MS/MS. The analyzed surfactants were LAS, SLES, AOS, SLS, CAPB, and LDAO. The survey found that 14% of the respondents used detergent correctly according to the directions indicated. After soaking the samples with 0.2% detergent, the average residual surfactant content was 2.61%. Soaking under 1% and 5% of the detergent, 4.68-5.50% of surfactant remained in the sample. In cherry tomatoes, the surfactants were below the LOD after rinsing twice. However, lettuce was rinsed three times. These results suggest that when using detergent for washing fruits and vegetables, following the labelled usage and rinsing at least three times in 30 seconds could minimize residual surfactants.

Surfactants are organic compounds that have both hydrophilic and non-polar parts in one molecule, classified as non-ion, anion, cation, and amphoteric surfactants according to the charge of hydrophilic parts in aqueous state. A trace amounts may remain when vegetables and fruits are washed using type1 detergent (Vegetable and fruit detergent), and there is a possibility of exposure to the human body through ingestion. This study developed the simultaneous analysis method for 5 surfactants with LC-MS/MS for analysis of detergent residues after washing vegetables and fruits with detergent. The mobile phase used distilled water and acetonitrile containing 50 mM ammonium formate and 0.1% formic acid and was analyzed using a gradient method using XBridge BEH C8 column. The accuracy of the established method was 83.9-112.1%, and the precision was less than 20%. The detection limit was 7.0 (SLS) to 29.0 (SLES-N3) ㎍/L, and the correlation coefficient (r2) of calibration line regression was greater than 0.99, it is considered suitable for the analysis of trace amounts of surfactant components remaining in vegetables and fruits.
This study was performed to investigate the possibility of water purification by a wild train of Oenanthe javanica DC. Three commercially available dishwashing detergents and a standard surfactant, linear alkylbenzene sulfonate (LAS), were used for this study. The experiment was done in 1.5 ι transluscent aquariums. The plants were distributed into various concentrations of detergents and various kinds of detergent in the separate aquariums. The wet weight of the plants was significantly decreased (p<0.05), and the visual vitality of the plants also decreased in 2 days. The higher the concentration of detergent was, and the more time the plants were exposed to the detergents, the more decrease of growth was observed. The pH value of the culture media decreased in 2 days and in 4 days, then slightly increased in 6 days. However, the pH value of the media did not return to the initial neutral level of pH in 6 days. The pH value of the culture media containing the LAS remarkably increased in 6 days and increased to a neutral pH value in 18 days (p<0.01) as the pH of the other culture media. The chemical oxygen demand (COD) of the culture media gradually increased over the 4 days. A decrease of COD was observed in 6 days, but no tendency was observed between 12 and 18 days. The detergent in the culture media was highly significantly decreased in 2 days (p<0.01) and gradually decreased after this. After 6 days the remaining detergent was 12.4∼23.7% from the various levels of initially added concentration, and 22.4 ∼34.2% from the flour kinds of detergents. These results show that the reduction of detergent was caused by Oenanthe javanica and the effect was significant during the first 6 days when the plants were still growing well. These results indicate that the plant purifies contaminated water for several days and the effect could be variable according to the level of contamination and the environment in which the plant grows.

This study was conducted in order to understand nutrition teachers (dietitians)' perceptions of barriers to implementation of HACCP system in school foodservices in Gyeongnam, Korea. Questionnaires were distributed to 350 nutrition teachers (dietitians) from November to December of 2009, and 214 were collected and analyzed. The results of this study were as follows. First, nutrition teachers (dietitians) recognized the following as barriers in implementing the HACCP system: 'the status of facilities and utilities'> 'monitoring'> 'work satisfaction'> 'foodservice employees'> 'cooperation of HACCP team'> 'cooperation of persons concerned besides foodservice employees'> 'understanding the HACCP system'. Second, total working experience was found to be the factor most affecting 'cooperation of HACCP team (p<0.01)', 'cooperation of persons concerned besides foodservice employees (p<0.01)', 'foodservice employees (p<0.05)', and 'work satisfaction (p<0.05)'. Further, 'the status of facilities and utilities' was significantly affected by 'construction/reconstruction of kitchen (p<0.01)', 'division of kitchen area (p<0.01)', 'existence of preliminary preparation room (p<0.01)', and 'existence of dishwashing room (p<0.01)'. Third, dietitians perceived the following concerning hindrance factors of the HACCP system according to CCP stage: 'CCP 1'> 'CCP 3'> 'CCP 2, 'CCP 6'> 'CCP 4'> 'CCP 8'> 'CCP 7'> 'CCP 5'. In conclusion, this study showed that nutrition teachers (dietitians) in the Gyeongnam area recognized 'the status of facilities and utilities' from HACCP areas and 'CCP 1 (menu planning)' from CCP stages as the greatest barriers to implementing the HACCP system in school foodservices. To implement the HACCP system successfully in school foodservices, facilities and utilities should be properly equipped, and menu planning training for nutrition teachers (dietitian) should be conducted.
